Fresh Salmon Burgers

Everyone loves a good hamburger at a summer barbecue, but sometimes you just want something a little different. Salmon burgers are a really delicious option and are healthier too. Homemade salmon burgers are really easy to make and blow the frozen ones in the supermarket out of the water. This recipe from Coastal Living takes about 5 to 10 minutes to prep and then just another 5 minutes to cook. To snazz up the salmon burger a bit, I also made a Greek yogurt topping and added some lemon and garlic to the buns before toasting.

Fresh Salmon Burgers

Ingredients:

Salmon Burgers:

  • 1 slice white bread
  • 1/4 cup milk
  • 1 1/2 pounds salmon fillet
  • 1 teaspoon salt
  • 2 tablespoons fresh dill finely chopped
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon freshly ground black pepper
  • sliced cucumbers, optional

Buns:

  • 4 hamburger buns
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • the zest of one lemon
  • 1 teaspoon dill, chopped

Greek yogurt sauce:

  • 1 cup Greek yogurt
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon dill, finely chopped
  • the zest and juice of 1 lemon

To make the burgers, add the bread slice to a small bowl and pour in the milk. It will almost immediately absorb it. Set aside.

Remove the salmon meat from the skin and roughly chop.

IMG_4227

Add to a food processor and pulse several times.

IMG_4230

Add the bread slice, salt, dill, Dijon mustard, and pepper.

IMG_4231

Pulse several times until well blended.

IMG_4232

Form the salmon mixture into 4 patties. (I did a terrible job of this and ended up with 3 oversized patties.) Place on a plate that has been drizzled with olive oil. Cover with plastic wrap until ready to grill.

IMG_4233

Combine the 1 tablespoon olive oil, garlic, lemon zest and dill in a small bowl. Set aside.

IMG_4234

Combine the Greek yogurt, salt, pepper, dill, zest, and juice in a separate bowl. When ready to grill, preheat the grill to medium-high and spray the grill with cooking spray. (I didn’t spray mine and boy did they stick to it!) Grill the burgers for 3 minutes on each side or until done.

IMG_4236 IMG_4238 IMG_4240

Take each burger bun and brush with the olive oil mixture. When you flip the burgers after 3 minutes, add the burger buns oiled side down to grill.

Add the salmon burgers to the buns and top with the Greek yogurt sauce and cucumbers.

Fresh Salmon Burgers

Despite sticking to the grill (oops), these burgers still had a wonderful grilled flavor to them. The homemade salmon burgers taste considerably more fresh than store-bought options and I especially loved all the dill in this recipe.

Fresh Salmon Burgers

The recipe also takes no time to prepare so it’s perfect for a weeknight meal!
