Balsamic Bruschetta Chicken

I honestly don’t know why I don’t make more dinners that involve chicken. I guess I just never have any on hand. This week, we were celebrating one of my friend’s birthdays by making her dinner and we settled on a chicken dish. I was really at a loss for what to make, so luckily Budget Bytes came to the rescue with her recipe for Balsamic Bruschetta Chicken. (Please excuse the photos in this post. I wasn’t exactly planning on making a post about it so they aren’t that fantastic. But this recipe is too good not to share!)
Balsamic Bruschetta Chicken

Ingredients:

For Chicken:

  • 4 thin chicken breasts
  • 1/4 cup balsamic vinegar
  • 1/2 tablespoon olive oil
  • 1 large garlic clove, minced
  • Salt and pepper to taste
  • Basil, thinly sliced
  • Parsley, chopped

 

For Bruschetta:

  • 4 medium roma tomatoes
  • 1 small sweet onion
  • 1 medium garlic clove, minced
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup shredded mozzarella

Add 1/4 cup balsamic vinegar, 1/2 tablespoon olive oil, 1 clove minced garlic, and salt and pepper to a ziplock bag. Add the chicken and shake to mix. Refrigerate until ready to use.

Preheat your broiler. Dice your tomatoes and onion and mince your garlic.
Combine with 2 tablespoons balsamic vinegar and 1 tablespoon olive oil. Season with salt and pepper.
Using a countertop grill or a grill pan, grill the chicken until cooked through, about 4 minutes each side.

Transfer to a baking sheet covered with tin foil. Top each piece of chicken with 1/4 cup of the tomato bruschetta and 1/4 cup cheese.

Broil for about 5 minutes or until the cheese begins to char.
Top with thinly sliced basil and parsley if desired.
Balsamic Bruschetta Chicken
Budget Bytes really has a winning dish with this recipe. I only marinated the chicken for 15 to 20 minutes but it still managed to have a ton of flavor, I can only imagine how delicious this would taste with proper preparation! Looking at the photos on Budget Bytes’ site, this can also be a gorgeous dish with the proper presentation.
I had plenty of bruschetta leftover, so I’d suggest serving this with crusty bread or a baked potato so that you can incorporate the extra bruschetta into the rest of the meal.
My friends and I enjoyed this so much, we basically ate in silence hehe. So be sure to make extra in case people want seconds!

    This sounds great! But you simply must try some Himalayan pink salt. I get mine from Sustainable Sourcing https://secure.sustainablesourcing.com. The flavor is so much better than regular salt! Thanks for sharing this recipe—I can’t wait to try it!

    You can’t go wrong with fresh roma tomatos, garlic and basil. I made this dish using all ingredients from my garden, except the chicken. Delicious!

    Excellent! Very flavorful. I did find it helpful to rearrange the order of the ingredients to be closer to the order in which they were used, and listed (on my copy) the toppings in a separate section for clarity. I do not understand why the bruschetta recipe specifies inappropriate amounts of everything. I had at least twice, if not three times, more than I needed. I personally think it should be scaled to fit the amount of chicken used. I used Monterey Jack (out of Mozzarella) cheese, and broiled the chicken on HI, as close to the element as possible. The timing was good. I added a little bit extra oil and vinegar to the bruschetta. It was wonderful! Both my husband and I loved it, and he “pigged out”. Very moist, flavorful, and tender! Thanks.
