Homemade Pancake Mix

Now don’t get me wrong, there is nothing wrong with store-bought pancake mix. However, are you aware of how easy it is to make your own at home? This recipe makes 16 pancakes; you can store the dry mix in a cool, dry place for up to 6 months. I found this recipe on allrecipes.com.
Homemade Pancake Mix
Ingredients:
4 cups all-purpose flour
2 cups whole wheat flour
2/3 cup sugar
2 tablespoons baking powder
1 tablespoon baking soda
To make the dry mix, just add all of the ingredients to a bowl.
Whisk to combine.
Pour into an air tight jar.

Simple, right? I actually made this for a friend as a bit of a belated Christmas present.

To make pancakes, add 1 egg and 3/4 cup milk to a bowl. Add 1 cup of the pancake mix and mix to combine. Pour batter onto a lightly greased griddle or pan. Cook until bubbles form on top, then flip using a spatula. Cook until both sides are golden.

 

You can customize the pancakes however your little heart desires: blueberries, strawberries, bananas. Cinnamon, powdered sugar. You can even substitute buttermilk for the normal milk.

    I am always surprised when folks are AMAZED that I make pancakes from scratch. I always tell them they’re just buying flour with a bit of baking powder and soda in it…and PRESERVATIVES! It’s a big money saver and making it a batch at a time is a great idea!

    Cool! I’ve never made pancakes from scratch, or made a mix at home, mainly because American pancakes are completely different from German ones, and are a big, vast mystery to me. 😉 Looks great!

    I love this idea. Perfect for a gift basket full of this, maple syrup, spatula, etc. I wonder what the shelf life of the mix is though….any thoughts?

    Shannon, the recipe at allrecipes said it can be stored for up to 6 months but I have a feeling it won’t be sitting around that long! 🙂

    I LOVE this. Why would you buy pancake mix when it is really this simple to make it? And the pancakes just taste better when they are homemade too. Great!

    This sounds easy enough to make and I’m sure it’s going to get me in a bit of trouble. Pancakes are a trigger food for me. At least if I eat more than I should I can take comfort in the fact that there are no preservatives.
