Homemade Dark Chocolate Ice Cream

This Homemade Dark Chocolate Ice Cream recipe has been a long time coming! As I mentioned in my Homemade Chocolate Ice Cream post, I have been trying to emulate Capogiro’s scuro gelato – a beautifully dark chocolate gelato that I have missed since the day Capogiro closed years ago.

Homemade Dark Chocolate Ice Cream

This recipe for Dark Chocolate Ice Cream is just that. It’s ice cream, not gelato. Gelato tends to have less egg yolks and is churned at a lower speed. Regardless of the technicality, this Dark Chocolate Ice Cream is silky, decadent, and decidedly dark chocolatey!

Homemade Dark Chocolate Ice Cream

Ingredients:

  • 2 cups heavy cream
  • 2 cups whole milk
  • 1 1/4 cups sugar
  • 1 1/4 cups dark chocolate cocoa powder (paid link)
  • 1/4 teaspoon salt
  • 6 egg yolks
  • 1 tablespoon coffee extract (paid link)

To make the Dark Chocolate Ice Cream, begin by adding the heavy cream, whole milk, sugar, cocoa powder, and salt to a pot over medium heat.

Whisk until the cocoa powder and sugar and fully combined into the heavy cream and milk. Heat, stirring frequently, until the mixture is steaming.

While waiting for the cream mixture to steam, separate your egg yolks from your egg whites. Reserve the egg whites for another use. Whisk the egg yolks.

When the cream mixture is steaming, slowly pour in 1/2 cup of the cream mixture into the bowl with the egg yolks, whisking as you do so.

Add this mixture back to the pot with the remaining steamed cream mixture, stirring to combine.

Continue to heat, stirring occasionally, until the mixture reaches between 170 and 175 degrees F. (An instant read thermometer – paid link – comes in handy here.)

Remove from heat and pour through a fine mesh sieve (paid link) into a bowl.

Stir in the coffee extract (paid link) and let cool.

Cover and refrigerate overnight. If your ice cream maker requires you to do so, add in your ice cream maker bowl (paid link) to your freezer.

The next day, remove the mixture from your fridge and your ice cream bowl from your freezer.

Add the ice cream bowl to the ice cream maker and pour in the cream mixture.

Follow the manufacturer’s instructions to churn into ice cream (mine took about 15 minutes).

Scoop the mixture into a freezer safe container (paid link).

Add to your freezer and freeze for at least 4 hours before serving.

Oh gosh I’ve missed this flavor!

Although this is not quite scuro level, it definitely gives me my dark chocolate fix.

The egg yolks add a nice richness to the dark chocolate ice cream and the coffee extract helps really bring out that dark chocolate flavor!

This is so decadent that a quart of this will go a long way! I loved it on its own or topped with whipped cream and sprinkles.
