I love frozen dessert. No dinner is complete without a little treat from the freezer!

I wanted to make a little treat this weekend, so I went to Walmart to pick up some of So Delicious® Dairy Free’s Frozen Treats: Cashew Salted Caramel Cluster, Cashew Dark Chocolate Truffle, and Coconut Vanilla Bean.

I made dairy-free cookies to make frozen treat sandwiches with these yummy flavors — Dark Chocolate Cookies for the Cashew Salted Caramel Cluster and Dark Chocolate Chip Cookies for the Cashew Dark Chocolate Truffle. I threw in some Coconut Vanilla Bean sandwiches for the purists out there as well 🙂

Ingredients:

Dark Chocolate Cookies:

  • 1/2 cup (1 stick) margarine, softened
  • 1 cup light brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup flour
  • 1/2 cup dark chocolate cocoa powder (or regular cocoa powder)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • (optional) 1/2 cup chopped walnuts
  • 1 pint So Delicious® Dairy Free Cashew Salted Caramel Cluster Frozen Treat

 

Dark Chocolate Chip Cookies:

  •  1/2 cup (1 stick) margarine, softened
  • 1 cup light brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup dark chocolate chips (dairy-free)
  • 1 pint So Delicious® Dairy Free Cashew Dark Chocolate Truffler Frozen Treat

 

To make the Dark Chocolate Cookies, preheat your oven to 350 degrees F. Add the margarine and sugar to a large bowl and mix until fully combined.

Add the egg and and vanilla extract and beat until combined.

In a separate bowl, mix the flour, cocoa powder, baking soda and salt, whisking to combine.

Add the dry ingredients to the large bowl, mixing until just combined. Stir in walnuts if you are using them (I kept forgetting to add them but a nice crunch in these cookies would be delicious!)

Drop the dough onto a cookie sheet covered in parchment paper, about 2 inches apart. You want the cookies to be generally the same size, so if you have a cookie scoop, use it.

Bake at 350 degrees for 10-12 minutes. Remove from the oven and let cool completely.

To make the Dark Chocolate Chip Cookies, preheat your oven to 350 degrees F. Add the margarine and sugar to a large bowl and mix until fully combined.

Add the egg and and vanilla extract and beat until combined.

In a separate bowl, mix the flour, baking powder, baking soda and salt, whisking to combine.

Add the dry ingredients to the large bowl, mixing until just combined. Stir in the chocolate chips.

Drop the dough onto a cookie sheet covered in parchment paper, about 2 inches apart. You want the cookies to be generally the same size, so if you have a cookie scoop, use it.

Bake at 350 degrees for 10-12 minutes. Remove from the oven and let cool completely.

When the cookies are completely cooled, you can assemble your sandwiches. Match up similarly sized cookies together, so they make an even sandwich.

 

Take your pint of So Delicious® Dairy Free Frozen Treat and place on a cutting board. Using a sharp knife, slice the pint into ~1/2 inch slices.

Peel off the carton and add the slices to a cookie sheet;  place in the freezer until you’re ready to assemble. Repeat with the remaining pints.

To make the Dark Chocolate Cashew Salted Caramel Cluster Frozen Treat Sandwiches, place one dark chocolate cookie on a plate upside down. Add a slice of the Cashew Salted Caramel Cluster Frozen Treat and top with another dark chocolate cookie.

Repeat with the remaining cookies and slices. (You can substitute in some Coconut Milk Vanilla Bean Frozen Treat as well).

 

To make the Dark Chocolate Chip Cashew Dark Chocolate Truffle Frozen Treat Sandwiches, place one dark chocolate chip cookie on a plate upside down. Add a slice of the Cashew Dark Chocolate Truffle Frozen Treat and top with another dark chocolate chip cookie.

The dark chocolate cookies are a nice contrast to the flavor of the salted caramel cluster frozen treat and make for a truly delicious (and grown up)frozen treat sandwich. I figured it couldn’t hurt to have a touch more chocolate to go along with the Cashew Dark Chocolate Truffle Frozen Treat and the Dark Chocolate Chip Cookies deliver!

If you wanted a bit more crunch, you could coat the sides of the sandwich in your favorite chopped nut as well, yum!
