Lucky Charms Marshmallow Treats

I have quite a few St. Patrick’s Day recipes on here, but I thought it was worth adding in one decidedly untraditional and whimsical recipe: Lucky Charms Marshmallow Treats!

Lucky Charms Marshmallow Treats

The treats are made the same way as other chewy bars from your childhood but have the extra fun of colorful marshmallows! To keep the marshmallows mostly intact, this recipe adds the marshmallows back in at the end.

Lucky Charms Marshmallow Treats

Ingredients:

  • 5 cups Lucky Charms cereal, divided
  • 6 tablespoons unsalted butter
  • 1 (10 oz) bag mini marshmallows
  • 1/2 teaspoon vanilla extract
  • pinch of salt

Line an 8×8 square baking dish with parchment paper, spraying the parchment paper with some nonstick spray. Set aside.

If desired, separate the dried marshmallows from the cereal. Set aside in two separate bowls.

Add a large pot over medium heat. Add in the butter and melt.

Once melted, add in the marshmallows, stirring, until the marshmallows completely melt.

Remove the pot from heat and stir in the vanilla extract and salt. Follow with the cereal.

If you separated the marshmallows, finish by stirring those in.

Pour into the prepared baking dish. Lightly spray a flat spatula and press the mixture into the pan gently.

Let cool for at least an hour, then use the parchment paper to lift the treats out to cut them into squares.

Simple and cute right? If you’re a fan of Lucky Charms, you’re going to absolutely love these treats!

The flavor of the cereal comes through and the dried marshmallows add a little extra texture. Don’t stop with Lucky Charms though… try any of your favorite childhood cereals substituted in!
