Tahini Millionaire Bars

Jump to Recipe Print Recipe

Before I share the recipe for these absolutely amazing Tahini Millionaire Bars, I first wanted to describe what a traditional Millionaire Bar is. Millionaire Bars, or Millionaire Shortbread, are layered bars consisting of shortbread, caramel, and chocolate.

Tahini Millionaire Bars

I love making millionaire bars as a make ahead dessert for parties.

Tahini Millionaire Bars

Recently, I was experimenting with the concept of millionaire bars, but wanted to try to incorporate a new flavor into the mix – tahini!

Tahini Millionaire Bars

Tahini is made from ground sesame seeds and has a consistency a bit thinner than peanut butter. The nutty flavor works great with chocolate and caramel!

Tahini Millionaire Bars

This recipe for Tahini Millionaire Bars also uses almond flour to bring out even more nuttiness, so these bars are also gluten free!

Tahini Millionaire Bars

Ingredients:

Almond Flour Crust:

  • 3 cups almond flour
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup light brown sugar, packed
  • 1 large egg yolk
  • 1 teaspoon almond extract

Tahini Caramel:

  • 1 (14 oz) can sweetened condensed milk
  • 2 cups sugar
  • 1/3 cup corn syrup
  • ¼ tsp cream of tartar
  • ½ cup tahini paste
  • 2 tablespoons unsalted butter
  • ½ teaspoon salt

Chocolate Ganache:

  • 1 (12 oz) bags semisweet chocolate chips
  • 3/4 cup heavy cream
  • Sea salt, for sprinkling

To make your Tahini Millionaire Bars, preheat oven to 350 degrees F. Line a 13×9 baking pan with higher sides (paid link) with parchment paper. Combine almond flour and salt in a large bowl.

Add butter and brown sugar to a separate bowl and beat with an electric mixer until light and fluffy. Add egg yolk and almond extract and mix to combine.

Gradually beat in flour and salt mixture, scraping down the sides of the bowl as needed.

Add the dough to your prepared pan and evenly spread dough into the bottom of the pan.

Bake at 350 degrees F for 20-25 minutes or until the edges and top of the shortbread are lightly browned. Remove from heat and let cool completely.

When ready to make your tahini caramel, add the condensed milk, sugar, cream of tartar, and corn syrup to a pot over medium-high heat, stirring to dissolve the sugar.

Bring to a boil and cook until the sugar begins to caramelize a bit (it will turn a light tan color).

Stir with a heatproof spatula and cook until it turns the color of butterscotch, about 7 to 10 minutes.

Reduce the heat to medium low and cook until it is a caramel color, about more 5 minutes.

Remove from heat and whisk in the tahini, butter, and salt until fully combined.

Pour evenly over the prepared crust. Add to your refrigerator and cool for 1 hour at least one hour, or overnight.

When ready to make the ganache, combine the chocolate chips and heavy cream in a pan over medium low heat.

Stir constantly until chocolate is melted and smooth.

Remove from heat and pour over the cooled tahini caramel.

Let sit for 5 minutes then sprinkle with sea salt.

Add back to the refrigerator for at least 30 minutes before cutting.

Cut into 28 squares and serve.

Tahini Millionaire Bars

Oh man, these Tahini Millionaire Bars are GOOD.

Tahini Millionaire Bars

The almond flour, tahini caramel, and chocolate ganache are a match made in heaven!

Tahini Millionaire Bars

You can cut these Tahini Millionaire Bars pretty small – they are wonderfully decadent so you don’t need a huge serving to enjoy them!
