Peanut Butter Cookies

I’m a bit late posting this cookie recipe after Christmas and all but who really gets upset about a cookie recipe?

Peanut Butter Cookies

For as long as I can remember, Peanut Butter Cookies have been a part of my Christmas celebrations. They are just the best. And luckily, they are really easy to make too!

Peanut Butter Cookies

This recipe is from Food Network and can be made in under 30 minutes; you don’t even have to refrigerate the dough before baking!

Peanut Butter Cookies

Ingredients (makes approximately 2 dozen cookies):

  • 1 cup sugar
  • 1 (4 oz) stick butter, at room temperature
  • 1 large egg
  • 1 cup smooth peanut butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 1/2 cups flour
  • 1/4 cup semi-sweet chocolate chips (optional)

Preheat your oven to 375 degrees. Add the butter and sugar to a large bowl and mix using an electric mixer until thoroughly combined.

Add the egg and mix to combine.

Mix in peanut butter and vanilla until smooth and creamy.
Combine the salt, baking soda, and flour in a separate small bowl.
Slowly add the flour mixture to the peanut butter mixture until combined.

Roll the dough into one-inch balls. Place 12 at a time on a greased baking sheet (or a baking sheet with a silicone mat).
Flatten the balls with the tines of a fork, crisscrossed to create the design shown below.

Bake at 375 degrees for 12-15 minutes (you want the bottoms to be turning slightly brown). Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to completely cool.

Repeat with remaining dough. Recipe makes about 2 dozen cookies.

So after I made a batch of these (and my boyfriend “taste tested” probably half a dozen of them), he mentioned that they would be great with some chocolate chips. So I made a second batch and added 1/4 cup chocolate chips after the flour. The chocolate chips made pressing the dough down a bit more difficult but it was a really tasty addition to the cookies!

The non-chocolate chip ones hold their own though. There is nothing like a creamy peanut butter cookie, especially with a glass of milk!
