A couple of years ago, I made some Gingerbread Fudge and was amazed at how easy it was to make!
So when I had a craving recently for some boardwalk fudge and I was nowhere near the beach, I figured I’d just make my own!
This recipe for Homemade Peanut Butter Fudge uses just six ingredients to make a rich, creamy, peanut butter-y treat.
Ingredients:
- 3 1/2 cups confectioners sugar, sifted
- 1/2 cup (1 stick) unsalted butter, melted
- 1 (16 oz package) light brown sugar
- 1/2 cup whole milk
- 3/4 cup creamy peanut butter
- 1 teaspoon vanilla extract
Prepare an 8×8 baking pan by adding parchment paper that hangs over the sides.
Sift the confectioners sugar into a large bowl. (I didn’t do this and found it difficult to stir away all of the lumps in the sugar.)
Melt the butter in a small pot over medium-low heat.
Add in the brown sugar and milk, stirring to combine.
Bring to a boil and let boil for 1 minute, stirring the entire time, until the sugar completely dissolves into the mixture.
Remove from heat and stir in the peanut butter and vanilla extract.
Pour the peanut butter mixture over the sifted confectioners sugar.
Stir until fully combined and smooth.
Pour into your prepared 8×8 dish and refrigerate for at least 2 hours, or until firm.
Remove the fudge from the dish by lifting the parchment paper out.
Cut into bite-sized squares. I ended up with about 30 squares.
If you’d like, you could use chunky peanut butter, or stir in some chopped peanuts at the end to add some crunch!
