I’m not even going to pretend to care about football. I have no clue what is going on on the field, nor do I honestly want to. Not even going to school with Flacco could peak my interest in the sport. But I do care about the food aspect of watching football, to no one’s surprise.
So with the season in full swing, I figured it was about time for me to figure out how to make ribs. I “surprisingly” do not have a smoker in my tiny apartment, so I went in search of a slow cooker recipe. This Bourbon BBQ Baby Back Ribs recipe fit the bill.
Ingredients:
- 5 lbs baby back ribs, cut to fit in your slow cooker
- 1 1/2 teaspoons salt
- 1 teaspoon pepper
- 1 cup ketchup (or tomato puree)
- 1 cup lightly packed light brown sugar
- 1/2 cup bourbon
- 1/4 cup horseradish
- 1/2 teaspoon hot sauce (I used Sriracha)
Preheat your oven to 475 degrees. Add the ribs to a large roasting pan (I didn’t have one so I used a cookie sheet). Season the ribs with salt and pepper. Bake the ribs for 30 minutes at 475 degrees.
 Combine the ketchup, brown sugar, bourbon, horseradish, and hot sauce in a bowl.
Add the ribs in a 6 quart slow cooker. Add the sauce on each layer of ribs.
Cover and cook on low for 8 hours (or on high for 4 hours). Remove the ribs from the slow cooker and cover to keep warm. (You can add them to a plate and tent with tin foil).
Pour the drippings and sauce from the slow cooker into a saute pan. Bring to a boil, reduce heat, and simmer over medium heat for 20 minutes, or until the sauce thickens. Serve the ribs with the sauce.

The ribs were oh so tender. The smell was absolutely fantastic. I want to note that despite the horseradish and the hot sauce, the ribs weren’t even slightly spicy. They had a deep barbecue flavor that was perfect with the ribs.
It’s amazing how simple this recipe was. The hardest part was having to smell the ribs and still having a few hours left to cook! If you have a programmable slow cooker, I suggest adding the ribs to the slow cooker overnight and having it turn to “keep warm” after 9 hours. Then you’ll only have to cook the sauce before serving for the game.

To make into a really hearty meal, serve with mashed potatoes, cooked polenta, or cornbread.

I’m a HUGE rib fan. Normally I only cook them on the grill, but with our schedule these days, that’s just not possible. I did a huge happy dance when I saw the words slow cooker! In the final minutes before serving these, I’d probably slather the sauce on and throw the ribs under the broiler to caramelize it, but that’s just my preference for sauce. They look amazing!
