Frog in a Hole with Blueberry Pancakes

Did you know that February is Hot Breakfast Month? If your schedule is anything like mine, the closest you get to a hot breakfast on a week day is instant oatmeal. So why not switch up a weeknight dinner and serve breakfast instead?

Coinciding with National Hot Breakfast Month in February and to make sure everyone can regularly enjoy both the simplicity and fun of breakfast for dinner, Krusteaz has officially named every Wednesday Night in February “Breakfast Night.”

Frog in a Hole with Blueberry Pancakes

To make Breakfast Night super simple, Krusteaz sent me some of their Baking Mixes so I could have breakfast for dinner!

My fiance absolutely loves breakfast, so he was so excited for us to switch it up and have a sweet and savory dinner. I used Krusteaz’ Blueberry Belgian Waffle Mix to make pancakes (I don’t have a Belgian waffle maker), and cut out the center of each pancake to make a spin on Frog in a Hole with Blueberry Pancakes. (Frog in a Hole is usually made with a piece of toast that has the center cut out to make room for an egg.) I added some crumbled bacon for good measure on top as well.

You only need to add water, oil, and eggs to the Krusteaz Blueberry Belgian Waffle Mix to have your batter ready to go, the blueberries are already in there!  Krusteaz was also kind enough to allow me to host a giveaway. You can receive a bunch of their yummy mixes, including:

  • 1 box of Buttermilk Pancake Mix
  • 1 box of Blueberry Belgian Waffle Mix
  • 1 box of Chocolate Chunk Muffin Mix
  • 1 box of Honey Wheat Pancake Mix
  • Krusteaz coupons for free product

More details and how to enter after the recipe!

Ingredients:

  • 4 strips of bacon
  • 1 tablespoon unsalted butter at room temperature
  • 1 tablespoon maple syrup
  • 3 cups Krusteaz Blueberry Belgian Waffle Mix
  • 6 eggs, divided
  • 1 1/4 cup water
  • 1/3 cup canola or vegetable oil
  • cooking spray
  • salt and pepper, to taste

Begin by cooking your bacon. I prefer to make mine in the oven, but you can also cook it in a saute pan or microwave if you’d prefer. If cooking in the oven, preheat your oven to 375 degrees and add the 4 strips of bacon to a baking sheet. When the oven is preheated, add the bacon to the oven and cook for 15 minutes or until crisp. Remove the bacon from the oven and add to a plate lined with paper towels.

Add the butter and maple syrup to a small bowl, mixing to combine. Set aside.

While waiting for the bacon to cook, combine the waffle mix, 2 eggs, 1 1/4 cup water, and 1/3 cup canola or vegetable oil in a medium sized bowl.

Preheat a large saute pan over medium heat and spray with cooking spray. Add about 1/3-1/2 cup of the batter to the pan.

When bubbles begin to form on top (about 2 minutes), carefully flip the pancake over and cook for another 1-2 minutes or until browned.

IMG_0694

Remove the pancake and transfer to a plate. Repeat with remaining batter; you’ll need at least 4 pancakes (but no one will complain if there are extra!)

IMG_0695

When all of the pancakes are finished, use a round dough or cookie cutter to cut out a hole in the center of each pancake. (You can always use a fun shaped cookie cutter or use a knife to cut out a hole in the center.)

IMG_0699

Reserve the cut out portion, they are still yummy to eat!

Add one of the prepared pancakes back to the saute pan over medium heat.

IMG_0701

Carefully crack one egg into a small bowl and season with salt and pepper.

IMG_0700

Add the egg to the center of the pancake, cover, and let cook until the egg whites are cooked through.

IMG_0702 IMG_0703

Crumble one slice of bacon over the Frog in a Hole. Repeat with the remaining pancakes, eggs, and bacon strips. Top with some of the maple butter.

Frog in a Hole with Blueberry Pancakes

I love sweet and savory dishes. The blueberry flavor is really yummy with the eggs and bacon! This is the perfect amount of food for me too, I wish this was an option at diners — I always want just one pancake, an egg, and some bacon!

I would love to try the Krusteaz Blueberry Belgian Waffle Mix so I can make your Frog in a Hole recipe 🙂 I don’t have a waffle maker either…I’m curious as to why you use the Belgian Waffle Mix instead of the Pancake Mix :?)

Hi Elizabeth! I used the Belgian Waffle Mix because that’s what came in the kit (rather than Krusteaz’ blueberry pancake mix) and I figured it would work out just fine! 🙂 Krusteaz’ blueberry pancake mix would be a very easy substitute in this recipe!
