I don’t eat many peanut butter and jelly sandwiches these days. But on the rare occasion that I make myself one, I’m in heaven. There are few combinations as good as sweet jelly and salty peanut butter! Which is why I’m so excited to share this recipe for Peanut Butter and Jelly Sandwich Cookies!
I have a recipe for peanut butter cookies passed down from my great grandmother that I make every Christmas. So when I had a recent craving for PBJ, I figured a cookie version of it would be a fantastic adaptation! The cookie recipe below is based off of my great grandmother’s original recipe but is adapted slightly (I’m pretty sure peanut butter chips didn’t exist when she made this recipe!) Ingredients:
1 cup shortening
1 cup granulated sugar
1 cup brown sugar, firmly packed
2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup crunchy peanut butter
2 eggs
1 cup peanut butter chips
2 (12 oz) jars jelly of your choice (I went with blackberry jelly. Feel free to use your favorite flavor)

Happy National Pancake Day! Also known as Shrove Tuesday, coincides with Mardi Gras, the end of Carnevale, and the beginning of Lent. It’s a day to indulge, but you can indulge while still eating something nutritious!
To celebrate National Pancake Day, Krusteaz sent me a box of their new Buttermilk Protein Pancake & Flapjack Mix. This mix is packed with 15 grams of protein per serving! This pancake mix needs just water to become light and fluffy pancakes. For added protein, you can substitute in milk and add eggs to the mix as well!
I decided to up the nutrition of these pancakes with the addition of mashed sweet potato. Not only does it add a bit of sweetness to the pancakes, sweet potatoes are a great source of Vitamins A and C.
With all of the protein and vitamins in this recipe, a little bit of browned butter won’t hurt, right? 🙂 I topped these pancakes with a bit of browned butter chopped pecans and a drizzle of maple syrup to make these Sweet Potato Pancakes with Brown Butter Pecans.
For whatever reason, I do not cook with broccoli. In fact, the last recipe I posted on my blog that included broccoli was in 2012!
I don’t exactly love broccoli, but I started feeling bad about my lack of broccoli in my cooking. So. Here’s a simple but delicious pasta recipe that comes together fast enough for busy weeknights!

Happy New Year! There are a bunch of food traditions for New Year’s Day, including eating Black Eyed Peas to bring prosperity in the new year. Last year, I made Black Eyed Peas with Collard Greens. This year, I thought I’d make a brunch recipe that’s hearty enough for New Year’s Day – Black Eyed Peas Hash with Chorizo and Eggs.
This recipe for Black Eyed Peas Hash is made with potatoes, onions, bell peppers, black eyed peas, chorizo, eggs, and tomato.

I ended up using 3 of the 5 utensils in this recipe and found them to be really handy. I’m trying to do more food prep on weekends for busy weekdays. Breakfasts are relatively easy; I make a batch of muffins and freeze the extras for future weeks, or make overnight oats or chia seed pudding in individual jars. For dinner, I tend to make something in my slow cooker and/or pressure cooker and then buy ingredients for short weeknight-friendly meals for the rest of the week. But lunch can be a bit of a challenge. We make salads from time to time, but I wanted to branch out a bit and make something we could add to a sandwich – shredded chicken salad.
I made this from scratch using my Pressure Cooker, but you could also use shredded rotisserie chicken.
Ingredients (makes 4 servings):
Chicken:
3 pound whole chicken
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup chicken broth
Chicken Salad:
if not making your own chicken: 1 (3 lb) rotisserie chicken
Who doesn’t love a “one pot” meal? No one wants to do a ton of dishes after dinner!
I love cooking with my cast iron skillet, which is actually my grandmothers. Cast iron does a great job of evenly heating food and searing meat, and stands the test of time. Every meal I make in my cast iron feels kind of special, knowing my grandmother also used to cook in the same skillet.
This recipe, adapted from Epicurious, is a nice comfort food dinner, with juicy chicken thighs, sautéed fennel and leeks, and hearty orzo, and is perfect for chilly nights.
As the weather gets a little cooler, I begin to gravitate toward more comfort food recipes. Not necessarily bad-for-you recipes, recipes that are simple but flavorful and filling.
To me, there are very few things as comforting as this stew with ground sausage, cannellini beans, and kale. (I’m referring to this as a stew, but there is very little broth. It’s meant to be that way.) Something magical when these ingredients are cooked with onions and garlic!
This recipe is adapted from Simply Recipes, where it was originally intended to be a side. My version is pretty similar, but I make enough for it to be a nice dinner on its own; just serve with a side of crusty bread to sop up that wonderful sauce!
Ingredients:
2 tablespoons olive oil
1 large white onion, thinly sliced
4 large garlic cloves, thinly sliced
1 pound hot Italian sausage, casings removed (for gluten-free, make sure to use gluten-free sausage)
2 (5 oz) containers baby kale, divided
1 1/4 cups beef stock, divided
2 (15 oz) cans cannellini beans, rinsed and drained (or any white beans you prefer)
Romanesco is an intriguing little veggie. I don’t come across it terribly often, but when I do, I love using it in recipes like this recipe for Pasta with Roasted Romanesco and Capers.
Romanesco is similar to normal broccoli and cauliflower, and can be prepared the same ways. However, the flavor of Romanesco is much more muted. I personally love it roasted and tossed with pasta. The below recipe is heavily inspired by Bon Appetit’s Pasta with Roasted Romanesco and Capers recipe.

Ingredients:
¼ cup sliced almonds
¼ cup plus 3 tablespoons olive oil; plus more for drizzling
2 tablespoons drained capers, divided

½ teaspoon crushed red pepper flakes, plus more for serving
½ cup dry white wine (or chicken/vegetable broth, if preferred)
I’ve been trying to think up more bring-to-work lunch ideas recently. We tend to just eat leftovers or traditional salads for lunch, which can get boring quickly.
So when my Hungry Harvest (note: this is a referral link) came with absolutely huge cucumbers, I figured I could make a slightly different lunch (or a make ahead side for dinner) with it!
This dish has chickpeas to make it a bit more hearty, red onions for flavor (and color), and of course, cucumbers. I tossed all of those in a lemony, zesty ranch Greek yogurt mixture.

The school year has begun. I don’t have kids, but I am married to a teacher, so this time of year gets pretty hectic. Which means it’s about time I started stocking my fridge and freezer on weekends so weeknight dinners are a bit more manageable.
These Tex Mex Stuffed Peppers are a super tasty (and easy) make-ahead meal. You can cook these over the weekend and reheat during the week, or freeze before cooking, thaw, and cook when ready to eat!
Ingredients:
1 pound ground beef
4 tablespoons taco seasoning
1 cup jarred salsa (mild or medium)
1 (15 oz) can black beans, rinsed and drained
1 (8 oz) box of yellow rice, cooked according to package directions
As much as I wish that I could meal plan and cook every night of the week, I have times where my job is too busy and I just don’t have time. During these busy periods, I usually order Blue Apron meals so that at least the meal planning and grocery shopping is done for me.
One of the meals a few months back had a side of black lentils with sauteed kale and onions that was absolutely fantastic. Since then, a version inspired by the original recipe has become a staple in my house.
Lentils in general are an awesome source of protein, and black lentils are no different. Sometimes called beluga lentils, they are named for their likeness to caviar. Black lentils hold their shape better than some other types of lentils, so they add great texture to meals.
The spice used in this recipe, ras el hanout, is a Moroccan spice blend that differs depending on the shop, so your version may come out slightly different than mine. The name, which means “head of the shop” (which is similar to the English expression “top-shelf”) is a mixture of the best spices the seller has to offer. As such, there is no definitive ras el hanout recipe. Common ingredients include cardamom, cumin, clove, cinnamon, nutmeg, allspice, ginger, coriander, paprika, and turmeric. I’m a huge fan of this spice blend, mainly because it takes a lot of the guess work out of seasoning — plus it tastes amazing! You may remember me using it in my One Pot Moroccan Chicken recipe earlier this year.
Now that grilling season is in full swing, I am grilling anything and everything I can, and yes, that includes Grilled Clams in Lemon Butter Sauce!
This recipe for grilled clams is SO easy, and can be made completely on your grill (just make sure you have a cast iron or other grill-safe pot for the sauce, if not, you can make it on your stovetop).
It’s an awesome appetizer to share with friends, just don’t forget the crusty bready for dipping!
Ingredients:
3 dozen clams
2 sticks salted butter (1 cup)
the juice and zest of 1 lemon
2 garlic cloves, finely minced or pressed through a garlic press

I’m still working through my box of Vidalia onions. No complaints here, they are incredibly versatile! These sweet onions are perfect for low and slow cooking that allow the sugars to caramelize and develop another layer of flavor.
I know it’s difficult to even see the Vidalia onions in the final photos of this Farro with Vidalia Onion and Asparagus, but I promise you, they are the star of this dish — their flavor is in each and every bite, and results in one of the best sides I’ve made in a long time!
This recipe for Farro with Vidalia Onion and Asparagus from Trisha Yearwood is definitely a keeper. Plus, it comes together pretty easily!

So, be prepared for plenty of grilling recipes this summer! I wanted to start off a bit simple – an easy grilled marinated chicken recipe.
This does involve some prep time, you want the chicken to sit in the marinade for a few hours at least. For the most flavor, add the chicken to the marinade the night before.

We are big fans of spicy foods in my house. So whenever I am given the opportunity to try a new hot sauce or paste, I always jump at the chance.

This Spicy Cucumber Salad really shows off the flavors of Chabé® Sambal Chili, and would be awesome as a side at a barbecue. It’s also great as a snack!
Ingredients (makes 4 servings, multiply as needed):
8 mini seedless cucumbers
1/2 cup chopped scallions, plus more for garnish
2 tablespoons chopped cilantro, plus more for garnish
To make, cut the cucumbers in half lengthwise and then chop crosswise into bite-sized pieces.
Add to a medium-sized mixing bowl along with the scallions, cilantro, and chopped peanuts. Toss to combine.
In a separate bowl, mix together the Sambal Chili, toasted sesame oil, white wine vinegar, salt, and garlic cloves.
Pour the mixture over the cucumber mixture, tossing to combine.
Cover and let stand for 30 minutes. Add to a serving bowl and top with more chopped scallions, cilantro and peanuts. Add a pinch of red pepper flakes on top, and serve.
I really love spicy cucumbers. The crunch of the cucumbers with the spicy dressing is just so satisfying!
The Sambal Chili is the start of this dish. It complements the freshness of the cucumbers nicely. The peanuts add another layer of crunch and flavor as well.
You can make this ahead of time, just keep in mind the longer it sits the more time the sauce has to soak into the cucumbers.
