Spiced Walnut Peach Mini Bundt Cakes or Muffins

One of the best perks of being a food blogger is the ability to receive and review cookbooks. Not only are they a great source of inspiration for me and my cooking journey, but they also provide a little peek into other fellow passionate cooks and bakers.

This latest cookbook, Muffins (paid link) by Cyndi Duncan and Georgie Patrick, focuses on one of my favorite foods. Muffins are one of my go-to choices for food prepping for the week.

From comforting favorites to spicy surprises, Muffins cookbook includes delicious recipes for more than 70 nourishing breakfast staples, fruity bites for brunch, and savory morsels that go great with soups and salads. The cookbook also includes ingredient substitutions, helpful baking methods, and other useful kitchen tips.

 

As my husband was paging through the cookbook, their recipe for Spicy Peach and Nut Muffins caught his attention. I used that recipe as inspiration to make these Spiced Walnut Peach Mini Bundt Cakes. Mini Bundt Cakes are essentially fancy muffins anyway, don’t you think?

And, if you have no interest in my fake fancy muffins, no worries! I’ve included info below to make these as normal muffins by using a cupcake pan.

Ingredients (makes approximately 12 mini Bundt cakes or 18 cupcake-sized muffins):

Cakes/Muffins:

  • 1 (15 oz) can peaches
  • ~3/4 cup buttermilk (see directions below)
  • 3 tablespoons butter, melted and cooled
  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground ginger
  • 1 1/2 cups sugar
  • 2 eggs, at room temperature
  • 1/2 cup chopped walnuts

Glaze:

  • 4 tablespoons reserved peach juice
  • 1 cup powdered sugar

Coconut Lemon Poppy Seed Muffins

I have been trying to get back in the habit of making a few make-ahead meals on weekends to make weekdays a bit more manageable. While looking through old recipes, I came across a recipe I made nearly a decade ago for Coconut Lemon Poppy Seed Muffins. I decided to revisit the recipe, adding a bit more lemon flavor through the addition of lemon extract (paid link). These yummy little guys are the result!

Ingredients (makes 12 cupcake-sized muffins or 6 large muffins):

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/8 teaspoon salt
  • 6 tablespoons coconut oil, melted and allowed to cool slightly
  • 1/2 cup sugar
  • 2 eggs, at room temperature, or 1/2 cup unsweetened applesauce to make vegan
  • 1/2 teaspoon lemon extract
  • 1 cup whole milk, or coconut milk to make dairy free/vegan
  • the zest of 2 lemons
  • 2 tablespoons poppy seeds

Peanut Butter Banana Muffins

I try to do a few make ahead recipes when I have the time on my weekends to make weekdays a bit easier. I tend to focus on dinners for busy weeknights, but from time to time I’m able to whip up some make ahead breakfasts as well. My favorite make ahead breakfasts? Muffins, of course! So I decided to make Peanut Butter Banana Muffins!

Not only are muffins an easy way to make a huge batch of future breakfasts, but they also freeze well! We always have bananas around the house, so when we end up with some overripe bananas, I love to use them in muffins. This recipe adds in some PBfit powder for peanut butter-y goodness!

PBfit is peanut butter powder made by pressing roasted peanuts, grinding those peanuts and mixing in some coconut palm sugar, and a pinch of salt. The result is a delicious peanut butter powder that has 87% less fat and 1/3 the calories of traditional peanut butter. Because it’s in powder form, it works great in baked goods!

Ingredients – makes 24 cupcake sized muffins, or 12 large muffins (get all ingredients here)

  • 2 1/2 cups flour
  • 1 1/2 cups powdered peanut butter, such as PBfit
  • 1/2 teaspoon salt
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 3 cups mashed bananas (about 6 bananas)
  • 1 1/2 cups sugar
  • 1/2 cup milk
  • 4 eggs
  • 2 teaspoon vanilla extract

Coconut Matcha Muffins

I’ve been on a bit of a muffin kick recently. I’m trying to make sure we have as many “quick meals” as possible on hand during the busy fall season!

 

I was recently contacted by Tenzo Tea, a matcha green tea company that is based in Los Angeles. They were kind enough to send me some Tenzo Matcha to try in a recipe.

 

Matcha is finely powdered green tea leaves. To make into a tea, you just add a teaspoon of matcha powder to hot water and whisk until frothy. Because you ingest the whole tea leaves (rather than just steeping leaves in normal tea), there are a bunch of health benefits attributed to matcha.

I have never tried matcha before, but my sister is a huge fan, so I figured it was worth my time. Coconut matcha lattes seem to be quite a popular way to enjoy matcha, so I decided to turn that into a muffin I could enjoy during the week.

 

I based this recipe off of Smitten Kitchen’s Double Coconut Muffins, with a few tweaks.

Pistachio Muffins

I love pistachios. So when my friend and I were determining what freezer-friendly recipes to make for a cooking marathon last weekend, I immediately suggested we make pistachio muffins.

Luckily, my friend was willing to make a batch with me!

As I mentioned in an earlier post, Bob’s Red Mill sent us a goodie box of ingredients to help with our cooking day, which included their Unbleached White All-Purpose Flour.

We used a recipe I found on Food.com to make these muffins.

Ingredients (makes one dozen muffins):

  • 1 1/3 cups all purpose flour (I used Bob’s Red Mill unbleached white all-purpose flour)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cardamom
  • the zest of 1 lemon

Blueberry Almond Flour Muffins

I have a busy week ahead of me, so I wanted to do some food prep this weekend.

Weekday breakfasts for me are typically on-the-go, if I have breakfast at all.

So when I have the chance to make breakfast ahead for the week, I try to make it a healthier option.

Bob’s Red Mill sent me a few of their products recently, including Almond Flour. I love the  subtle flavor almond flour adds to baked goods.

Blueberries are a tasty complement to almonds so I decided to make Gluten-Free Blueberry Almond Flour Muffins for the week. They are topped with Bob’s Red Mill’s Gluten-Free Rolled Oats to add some texture.

Banana Chocolate Chip Hemp Muffins

Because it’s Sunday, I have my mind on the week ahead. I really struggle to have an on-the-go breakfast option that actually tastes good and doesn’t load on the calories. I love making homemade muffins because then breakfast is set for the week, but it’s kind of tough to justify much nutritional value in most muffins.

  • 1 1/2 cups almond meal

Banana Bread Muffins

When I have time on Sundays (which isn’t terribly often), I like to make a batch of muffins so I have breakfast for the week. Because I had some overripe bananas, this week I decided to make Banana Bread Muffins. I was recently sent some coupons to try Kretschmer Wheat Germ products so I thought adding some of the Honey Crunch would add some nice texture and flavor to the muffins.

So what exactly is wheat germ? Wheat germ comes from the wheat kernel, which is the part removed when refining whole grains into white flour. Wheat Germ is a great source of Vitamin E, B vitamins and folic acid. You can find it in the cereal aisle. Wheat germ can be used in recipes calling for flour or breadcrumbs so its quite versatile. I’ve also used it in smoothies.

Ingredients (makes 12 cupcake-sized muffins, of 6 large muffins):

  • 1 1/2 cups flour

Mini Orange & Cardamom Muffins

This weekend, I am co-hosting a Tiny Food Party with Bridges, Burgers & Beer, another Philly food blogger, using recipes from Teri Lyn Fisher and Jenny Park’s cookbook: Tiny Food Party. A bunch of the recipes we are making use mini muffin tins. I wanted to try out my new min muffin tins at least once before making food for the party, so I found this recipe for Mini Orange & Cardamom Muffins from a book I received last year and have used once before for a recipe (see it here) called 1 Mix, 100 Muffins.
The flavors of these muffins sounded absolutely delicious. It was a lot of prep though: you have to juice and zest the oranges for the recipe. It’s well worth it, the citrus-y flavor is perfect with the cardamom seeds.
Ingredients: (makes 48 mini muffins)
2 oranges
1/2 cup milk (maybe less)
6 whole green cardamom pods
2 cups all purpose flour
1 tablespoon baking powder
1/8 teaspoon salt
1/2 cup sugar
2 large eggs
6 tablespoons butter, melted and cooled

Begin by melting the butter over medium-low heat. Allow to cool.
Preheat your oven to 350 degrees. Line the mini muffin pans with paper liners.
Grate the rind from the oranges and juice the oranges.
Add the milk to the orange juice until you have 1 cup total of liquid. Add the orange rind.
Remove the seeds from the cardamom pods (I just cut into them and poured them out).
Combine the flour, baking powder and salt in a large bowl. Stir in the sugar and cardamom seeds.
Lightly beat the eggs in a separate bowl. Add the orange/milk mixture and the cooled butter.
Make a well in the center of the dry ingredients.
Add the wet ingredients to the dry and mix until just combined.
Spoon the batter into the muffin pans (I used a coffee scoop to measure them out, it worked really well).
Bake for 15-20 minutes or until risen and golden brown. Allow the muffins to cool in the pan for 5 minutes then transfer to a wire rack.
So the original recipe said to bake these at 400 degrees for 20 minutes. When I did that they turned out quite dark and slightly burned on the bottoms. (in the photo above, they are the ones in the background)
Next batch I tried at 400 degrees for 15 minutes. Not as browned but still too dark bottoms (that’s the one in the foreground of the above photo).  So I suggest trying 350 degrees instead, checking on them at 15 but probably baking for 20 minutes.
The muffins were wonderfully floral from the cardamom, which was balanced out by the citrus of the orange. I’m glad these were mini muffins, if not I’d probably consume at least 2 normal sized versions, I loved how they tasted!

Coconut Lemon Poppy Seed Muffins

Muffins are the perfect Sunday baking activity to set yourself up for breakfasts throughout the week. I haven’t made a batch in so long so I’m happy I finally had time to do so! I was given the opportunity to try Tropical Traditions Coconut Oil and I thought the best way to try the oil out would be in baking. (I adapted this recipe for Coconut Lemon Poppy Seed Muffins from the 1 Mix, 100 Muffins cookbook.)

 

Coconut oil can be used like butter in its solid state and like oil in its liquid state. It does have a slight coconut flavor to it so it’s a great way to enhance the flavor of many dishes. These Coconut-Lemon Poppy Seed Muffins have just a hint of coconut that is really complementary to the Lemon flavor.

Ingredients (this recipe makes a dozen muffins):
2 cups all-purpose flour, leveled with a knife
1 tablespoon baking powder
1/8 teaspoon salt
2 eggs
1 cup milk
6 tablespoons Coconut Oil, melted and allowed to cool slightly
the zest of 2 lemons
1/2 cup sugar, plus 1 tablespoon sugar
2 tablespoons poppy seeds

Note: The method I will list below is the one I ended up using for this recipe. And the reason I used this method was because I completely forgot to add in the sugar and poppy seeds at the correct time! Anyways, the muffins turned out fine. Whew.
Preheat your oven to 400 degrees. Line a cupcake/muffin pan with 12 paper liners. Add 6 tablespoons coconut oil to a small saute pan over medium heat until completely melted. Remove from heat and reserve.
Sift the flour, baking powder, and salt. (If you have a stand mixer, add the dough hook and turn it on low for a minute or two. It will break up all the chunks, just as good as sifting!)

 

In a separate bowl, lightly beat the eggs.

 

Add the milk, melted coconut oil, and lemon rind. And mix with a whisk to combine.

 

Make a well in the flour mixture and add the wet mixture to the bowl.

 

Stir until just combined (I used the lowest setting on my stand mixer. You can just use a spatula.)

 

Add the sugar and poppy seeds, stirring until just combined.

 

Add the batter to the muffin pan. To get equal sized muffins, use a small ladle or an ice cream scoop to portion out the batter.

 

Bake the muffins for 20-22 minutes; you want the muffins to have risen and be slightly golden brown on top, or when a toothpick inserted into the center of the cupcake comes out clean.

 

Allow to cool for 5 minutes in the pan and then remove.

 

So everyone knows how delicious normal Lemon Poppy Seed Muffins are.  The coconut oil brings the muffins from good to great!

 

They are so fragrant. I was having trouble photographing them because I kept trying to eat them!

 

There is definitely a taste of coconut present without it being overwhelming; I find that coconut can really overtake a dish sometimes.

 

The lemon still shines through and is wonderfully sweet (due to all that sugar!)

Meatloaf Muffins

I don’t think I’ve ever had a craving for meatloaf. Honestly, I’m pretty sure I’ve only had meatloaf once. So I never actively seek out making meatloaf, much to my boyfriend’s disappointment. However, we both had long, exhausting work weeks, so I thought he deserved a comfort-food meal. Cooking light had a recipe for Meatloaf Muffins that I thought would work great; he could eat as much as he wanted and then have perfectly portioned “muffins” that I could freeze.

Ingredients:
1 teaspoon olive oil
1 cup finely chopped onion
1/2 cup finely chopped carrot
3 bell peppers (I used one orange, yellow & red), chopped
1 teaspoon dried parsley
1 teaspoon dried basil
2 garlic cloves, minced
1 cup ketchup, divided
1/2 teaspoon sriracha
1  pound ground beef, extra lean
1/2 pound sweet Italian sausage, cut out of its casing (I used 2 sausages)
1 cup panko breadcrumbs
2 tablespoons Dijon mustard
1 teaspoon Worcestershire sauce
1/4 teaspoon freshly ground black pepper
2 large eggs
Cooking spray

Preheat your oven to 350 degrees. Prepare your onion, carrot, garlic, and peppers. Heat a saute pan over medium heat. Add the onion, carrot, basil, parsley, garlic and peppers. (Note: I completely forgot about the peppers and had to go back and saute them on their own. Just pretend they are in the photos. Shh.)

 

 

Cook for 2 minutes. Remove from heat and allow to cool. Add the sausage, cut out of the casing, beef, 1/2 ketchup, sriracha, panko, mustard, Worcestershire sauce, ground pepper, eggs, and the cooled onion mixture in a large bowl.

 

 

Coat a muffin tin with cooking spray.  Add the mixture to the muffin tins. (I used large muffin tins so there were only 6. This recipe also works with the standard size 12. For the large, 1 muffin is a serving. For the standard, 2 muffins are a serving.)

 

Top each with two teaspoons ketchup. (I got bored/creative)

 

Bake for 25 minutes or until a thermometer registers 160 degrees. (The larger muffins ended up taking about 35 minutes total).

 

Serve with sauteed green beans and baked potato wedges if desired.

So what’s the review from my boyfriend? Very good! There was a slight hint of sriracha without making the meatloaf spicy. The sausage added a smoky taste to the meatloaf, and the peppers added a slight crunch to the meal. He ate the meatloaf with a side of ketchup mixed with hot sauce and seemed to really enjoy it.

The best part of this dish is the remaining “muffins” can be frozen for future meals.

Total Time: 45 minutes

Pumpkin Walnut Muffins

VisitPhilly.com’s Philly Homegrown section recently posted fall recipes from local eateries in Philadelphia. All of them sounded amazing and I hope to try them all in the coming weeks, but my pumpkin obsession took priority. Metropolitan Bakery’s Pumpkin Walnut Muffins were calling me. I’ve adjusted the recipe a bit, but the general idea is still very much there.

The recipe made two dozen large muffins, or 4 dozen cupcake-sized muffins. Your friends and coworkers will like you a whole lot after you make this recipe!
