Election Cake

I had no clue that Election Cake used to be a thing until I saw an article recently about this lost tradition! Recipes for Election Cake are found back to the late 18th century, but apparently the tradition has fallen off in recent years.

This yeasted spiced bundt fruitcake was traditionally prepared prior to Election Day and served to hungry voters.

For years, I was the machine inspector for every general and primary election in my South Philly polling location, so any attention I can bring to voting is super important to me! I am also down for any and all food holidays so let’s bring back Election Cake!

I don’t have a ton of experience using yeast, so I looked up a recipe from NY Times Food. Because of the yeast, there are two proofing times in this recipe, so set aside 4 to 6 hours to make this cake.

Ingredients (serves 10):

  • 8 tablespoons (1 stick) unsalted butter, room temperature
  • 4 cups flour
  • 1 cup dark brown sugar, packed
  • 1 cup whole milk
  • 2 (¼-ounce) envelopes active dry yeast
  • 1 teaspoon sugar
  • 1 lemon, divided
  • 2 eggs, room temperature, lightly beaten
  • ¼ teaspoon ground nutmeg
  • 2 teaspoons salt
  • 1/4 cup brandy, divided
  • ⅔ cup golden raisins
  • ½ cup dried cranberries
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground allspice
  • ¼ teaspoon ground cloves
  • 2 cups confectioners’ sugar

Homemade Spiced Nuts

I hope you’ll allow me one more festive holiday recipe. Honestly, these Holiday Spiced Nuts are so tasty, they can (and should!) be enjoyed all year!

Around Thanksgiving, I was in Lancaster, PA and popped into Lancaster Central Market. While there, I stumbled upon Totally Nutz, which sells various cinnamon glazed nuts. They were so addicting, I wanted to try my own at home!

This recipe includes a bit more of the “holiday” spices than just cinnamon and includes four different types of nuts: pecans, walnuts, almonds, and cashews for a tasty sweet and spiced mixture!

Ingredients:

  • 1 cup shelled pecans
  • 1 cup shelled walnuts
  • 1 cup roasted unsalted almonds
  • 1 cup unsalted roasted cashews
  • 1/3 cup pure maple syrup
  • 3 tablespoons brown sugar, lightly packed
  • 2 tablespoons ground cinnamon
  • 1/2 tablespoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground nutmeg

Spiced Walnut Peach Mini Bundt Cakes or Muffins

One of the best perks of being a food blogger is the ability to receive and review cookbooks. Not only are they a great source of inspiration for me and my cooking journey, but they also provide a little peek into other fellow passionate cooks and bakers.

This latest cookbook, Muffins (paid link) by Cyndi Duncan and Georgie Patrick, focuses on one of my favorite foods. Muffins are one of my go-to choices for food prepping for the week.

From comforting favorites to spicy surprises, Muffins cookbook includes delicious recipes for more than 70 nourishing breakfast staples, fruity bites for brunch, and savory morsels that go great with soups and salads. The cookbook also includes ingredient substitutions, helpful baking methods, and other useful kitchen tips.

 

As my husband was paging through the cookbook, their recipe for Spicy Peach and Nut Muffins caught his attention. I used that recipe as inspiration to make these Spiced Walnut Peach Mini Bundt Cakes. Mini Bundt Cakes are essentially fancy muffins anyway, don’t you think?

And, if you have no interest in my fake fancy muffins, no worries! I’ve included info below to make these as normal muffins by using a cupcake pan.

Ingredients (makes approximately 12 mini Bundt cakes or 18 cupcake-sized muffins):

Cakes/Muffins:

  • 1 (15 oz) can peaches
  • ~3/4 cup buttermilk (see directions below)
  • 3 tablespoons butter, melted and cooled
  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground ginger
  • 1 1/2 cups sugar
  • 2 eggs, at room temperature
  • 1/2 cup chopped walnuts

Glaze:

  • 4 tablespoons reserved peach juice
  • 1 cup powdered sugar

Spiced Fig and Pear Jam

Early fall is my favorite time of year. I love that it’s still warm enough to enjoy the outdoors, the selection of produce available is awesome, and the back-to-school vibe fuels me to get things done.

It’s also an awesome time of year to can some jellies and jams, like this delicious Spiced Fig and Pear Jam!

Figs and pears are in season at the moment, two of my favorite fruits, so what better time to make (and can) this Spiced Fig and Pear Jam?

Ingredients (makes about 6 8oz cans):

  • 1 1/2 pounds Bartlett pears, peeled, deseeded, and cut into small bite sized pieces
  • 1 1/2 pounds fresh mission figs, cut into eighths
  • 3 1/2 cups sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground cardamom
  • the juice and zest of 1 navel orange

Slow Cooker Spiced Blueberry Plum Butter

This may sound silly, but I woke up a few days ago and realized that summer is nearly over, and I had not canned anything! Blueberries have been particularly lovely this year, so I wanted to make a fruit butter using them as the main ingredient. I added in some plums I had and then spiced them with some autumnal flavors to mark the impending change of seasons.

The result is this Slow Cooker Spiced Blueberry Plum Butter!

Fruit butter is a jam-like product that doesn’t use any pectin, so it spreads easier than a normal jam or jelly. Fruit butters are best made by cooking the fruit low and slow, so a slow cooker is the perfect tool to make them! Although you are using a slow cooker, this recipe does require you to stir it every now and then, so you still have to stay close by.

I adapted this recipe from Food in Jar’s recipe for Slow Cooker Blueberry Butter. There are a few tools I find super helpful when canning, so I will link to those throughout this recipe, in case you wanted to know what I use.

Ingredients (makes about 5 pints, or 10 half pint jars):

  • 6 pints blueberries
  • 8 plums, quartered, pits removed
  • 3 cups sugar
  • the juice and zest of 2 lemons
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cardamom

Indian Spiced Chicken and Potatoes in Tomato Cream Sauce

I’m on a pretty good streak of making a bunch of meals on weekends so that we have quick and easy meals on weeknights. Last weekend, I came across this recipe for Indian Spiced Chicken with Tomato and Cream and knew it would reheat nicely. It takes some time to make, so it’s best for cooking on a weekend. But it’s a one pot meal!

This adapted version is awesome over cooked rice. If you like a thicker sauce, you may want to add some water mixed with cornstarch at the end to thicken.

Ingredients:

  • 3 tablespoons butter
  • 8 drumsticks
  • salt and pepper
  • 1 medium onion, chopped
  • 4 garlic cloves, grated
  • 2 tablespoons grated peeled ginger
  • 2 tablespoons tomato paste
  • 1 tablespoon ground cumin
  • 2 teaspoons ground turmeric
  • 3/4 teaspoon ground cayenne pepper
  • 3/4 teaspoon ground cardamom
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground allspice
  • 8 cups low-sodium chicken broth
  • 1 (14 oz) can tomato puree
  • 3/4 cup heavy cream
  • 1 pound Yukon Gold potatoes, thinly sliced
  • Plain Greek yogurt, for serving
  • Fresh mint, chopped, for serving
  • Naan, for serving (omit for gluten free)
  • Cooked rice, for serving

Spiced Lamb with Saffron Couscous

Because I usually have a recipe in mind when I go food shopping, it’s pretty rare that I come home with a rogue ingredient. But recently, while picking up ground beef and sausage for my Meatballs and Tomato Sauce at Primal Supply, I noticed that they had ground lamb, and felt compelled to buy it.

I didn’t exactly have a goal for the ground lamb, but decided to work with ingredients that I know work well with the flavors of lamb: cumin, saffron, mint, and cinnamon.

The result was Spiced Lamb with Saffron Couscous: saffron couscous, topped with flavorful ground lamb, pistachios, feta, dried apricots, and fresh mint!

Ingredients:

Couscous:

  • 1 1/4 cups chicken broth
  • 1/4 teaspoon saffron threads, crushed between your fingers
  • 1/2 teaspoon ground turmeric
  • 1 cup couscous
  • 1/2 teaspoon salt
  • 1 tablespoon unsalted butter

Spiced Lamb:

  • 1 tablespoon ground cumin
  • 1 tablespoon ground cinnamon
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons onion powder
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1/2 cup chopped shallots
  • 2 lbs ground lamb

For topping:

  • 1/4 cup chopped pistachios
  • 2 ounces crumbled feta cheese
  • 1/4 cup dried apricots
  • 1/4 cup chopped fresh mint
  • fresh lemon juice

Spiced Apple Two Bite Tarts

I love fall treats, but I can’t really justify making a whole apple pie for just my boyfriend and I; we would be eating it for days! So I love that this month’s Cooking Light had a recipe for mini spiced apple two bite tarts that I can also share with friends. I adapted the recipe slightly, adding some more fall spices. I also didn’t have any 1% milk on hand so I substituted heavy cream. I also topped mine with mascarpone instead of crème fraîche because I thought it would taste great with these tarts.

These are really easy to make; the most difficult part (a.k.a. most time consuming) is dicing the apples. But you definitely want to cut them nice and small so that they fit in the tarts. You also need a mini cupcake tin for this, but you can adapt it to make normal cupcake sized ones if you wanted, just increase the baking time.

Ingredients:

CRUST

  • 1/3 cup sugar
  • 1/4 cup unsalted butter
  • 2 tablespoons canola oil
  • 1 tablespoon heavy cream
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 4.5 ounces all-purpose flour (about 1 cup)
  • 1/3 cup very finely chopped toasted pecans
  • Baking spray with flour

FILLING

  • 2 cups finely diced peeled Granny Smith apple (~4 apples)
  • 2 teaspoons fresh lemon juice
  • 2 tablespoons sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon ground cardamom
  • 1/8 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 tablespoon unsalted butter
  • 1/2 teaspoon cornstarch
  • 1 tablespoon water
  • 1/4 cup mascarpone

Grilled Mission Figs with Mascarpone and Spiced Honey

I mentioned in my previous post (Prosciutto, Fig, and Arugula Flatbread with Balsamic Reduction) that I have quite a few fresh figs at the moment. No complaints here, but I do want to use them all and not waste any, figs are delicious, and grilled mission figs are the best!

Not only are grilled mission figs super tasty, but they are good for you too. (I love when that happens!) According to California Figs, one serving of fresh figs (1/2 cup or 3-4 medium figs) delivers 5 grams of fiber (20% of your suggested daily value), 354mg potassium (10% DV), and 53mg calcium (6% DV) with just 120 calories. Figs are also fat, sodium, and cholesterol free.

Dried figs are available all year round, but fresh figs have a shorter availability period. Mission Figs, which I am using in this recipe, are available longer than most figs and can be found fresh from late May through as late as November.  Because they are mostly a summer produce, I just have to add them to the grill!

I also received a bunch of really awesome kitchen gadgets while at the conference. As I’ve mentioned in the past, I’m a huge fan of OXO and already had my own set of graters, so I actually have an extra set to give away! (Update: I actually have TWO sets to give away so there will be two lucky winners!) I use my set of graters all the time. The zester is my favorite, mainly because every time I work with any form of citrus, I make sure to zest it before juicing to add extra flavor to the dish. The coarse grater comes in handy with soft and semi-soft cheese, but can be used for anything that needs a larger grate. The medium grater is perfect for carrots, chocolate, and the like. This recipe for Grilled Mission Figs with Mascarpone and Spiced Honey is based off a recipe on Whole Living. The only large difference is that I grilled the figs beforehand.

  • 4 large fresh, ripe figs, stems trimmed, halved lengthwise
  • olive oil (about 1 tablespoon)

Cumin Spiced Fish Tacos with Avocado Mango Salsa

With Cinco de Mayo this past weekend, I couldn’t stop thinking about making some kind of Mexican-themed meal this weekend. So I was pretty excited when my boyfriend suggested Fish Tacos on Sunday. My trusty Cooking Light obviously had the perfect recipe to fulfill our craving. These Cumin Spiced Fish Tacos with Avocado Mango Salsa get an extra boost of flavor from toasting the cumin seeds before grinding. If you can’t find cumin seeds, ground cumin will work for the recipe as well, just skip the toasting part.
Ingredients:
  • 1 tablespoon cumin seeds
  • 3/4 teaspoon salt, divided
  • 1/2 teaspoon paprika
  • 1/4 teaspoon freshly ground black pepper
  • 2 garlic cloves, minced
  • 1 pound tilapia fillets
  • 1 tablespoon coconut oil
  • 1 cup sliced peeled avocado
  • 2/3 cup finely chopped peeled ripe mango
  • 1/4 cup chopped green onions
  • 1/4 cup finely chopped red onion
  • 2 tablespoons finely chopped fresh cilantro
  • the juice of one lime
