Mexican Hot Chocolate Brownies

Do I have a tasty recipe for you today! I was contacted recently by Plugrá Kitchens with a delicious sounding brownie recipe (these Mexican Hot Chocolate Brownies) using some of my favorite ingredients, so I knew I had to share it. This brownie recipe is based off the flavors of Mexican Hot Chocolate, which is a hot chocolate that is spiced with cinnamon and sometimes a little bit of chili to bring additional warmth and heat. 

Plugra Kitchens was nice enough to send me a package with the best goodies to make these brownies, including (of course) Plugrá Premium Unsalted Butter, Spice House Ground Saigon Cinnamon, Nielsen-Massey Madagascar Bourbon Pure Vanilla Extract, and Balrhona Manjari 64% Dark Chocolate.

Plugrá Butter is an awesome ingredient to use for baking. Made by Dairy Farmers of America, its slow-churn and extra creaminess has the perfect balance of moisture and fat for use in baking. The Spice House‘s Vietnamese “Saigon” Cassia cinnamon is the strongest and sweetest cinnamon in their collection. The Vietnamese cinnamon bark is ground in house to produce a dark, rich texture that is fiery and fragrant, making it perfect for these brownies. My love of Nielsen-Massey‘s Madagascar Bourbon is well known to those that frequent this blog. Their Madagascar Bourbon Pure Vanilla extract is made from premium, hand-selected vanilla beans cultivated in Madagascar, the world’s leading supplier of high-quality vanilla. It then utilizes a slow, cold extraction process to gently draw out and preserve all 300 natural vanilla flavor notes to create the richest tasting vanilla. Madagascar Bourbon Pure Vanilla has a flavor profile that is full, sweet, creamy, and mellow with velvety after-tones. With ingredients like that, you know this recipe is going to taste good! I adapted the recipe a bit, but the overall gist is still there. These Mexican Hot Chocolate Brownies are soft and chewy, with a subtle warmth and heat that pairs really well with the richness of the chocolate.

Ingredients (makes 18 servings):

  • 1 (8 oz) bar unsalted butter, like Plugrá® European Style Butter
  • 2 cups sugar
  • 4 large eggs, at room temperature
  • 2 teaspoons vanilla extract, like Nielsen-Massey Madagascar Bourbon Pure Vanilla Extract
  • 1 cup all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1 tablespoon ground cinnamon, like Saigon cinnamon from the Spice House
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon baking powder
  • ¼ teaspoon ground cayenne pepper
  • 1 cup dark chocolate, like Valrhona Manjari 64% Dark Chocolate, chopped

Elote (Mexican Grilled Corn)

One of my favorite summer foods is corn. A nice grilled corn on the cob just makes my day!

But I had never tried Elote before, so I figured it was time to do so!

Elote, or corn on the cob in Spanish, is a Mexican grilled corn brushed with a creamy mixture of mayo, sour cream, cotjia cheese, chili powder, and cilantro.

The result is absolutely crave-worthy!

Ingredients:

  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup grated Cotija cheese, plus more for serving
  • 1/2 teaspoon chili powder, plus more for serving
  • 2 garlic cloves, finely minced
  • 1/4 cup finely chopped cilantro, plus more for serving
  • 4 ears corn, shucked (if possible, keep an inch or so of the stalk for easy eating)
  • 1 lime, cut into wedges, if desired

Mexican Spaghetti Squash Egg Boats

Every Sunday night is pasta night in my house. Most of the time, that means taking out a batch of tomato sauce from the freezer and cooking whatever dry pasta we have one hand, but it’s nice to switch it up every now and then, like making this recipe for Mexican Spaghetti Squash Egg Boats.

I have never worked with spaghetti squash before, so I thought Sunday night would be a great time to try it.

This recipe for Mexican Spaghetti Squash Egg Boats tops the spaghetti squash with a flavorful chunky salsa, plus an egg that is cooked to over-easy (slightly runny), and then (if you are in the mood) topped with cheese and avocado slices.

These Mexican Spaghetti Squash Egg Boatss are very hearty without being too heavy. They take some time to prepare, so these are good for a weekend meal rather than trying to make these on a busy weeknight.

Ingredients:

  • 2 spaghetti squash, halved
  • 1 small yellow onion
  • 2 plum tomatoes, diced
  • 1 green bell pepper, diced
  • 1 jalapeno, minced
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 2 teaspoons oregano
  • 1 teaspoon chili powder
  • salt and pepper, to taste
  • 1 (15 oz) can black beans, rinsed and drained
  • 1/2 cup grated cheddar cheese, optional
  • 2 avocados, sliced
  • Cilantro, to taste

With the big tournament upon us, having yummy snacks to share with a crowd is a must! I love party appetizers that can be set on the coffee table in front of the TV and enjoyed as a group.

This recipe for Seven Layer Dip Nachos adds the ingredients of a seven-layer dip right on top of tortilla chips to make a convenient and super yummy loaded nachos recipe.

I went to my local Walmart to pick up the ingredients and was really excited to find a can of RO*TEL Mexican Lime & Cilantro Diced Tomatoes in the canned aisle.

I was planning on using Original or Mild RO*TEL Diced Tomatoes to make a quick and easy guacamole and pico de gallo (no dicing of tomatoes, woo hoo!), so having the flavors of lime and cilantro already combined in the diced tomatoes was an awesome find!

The Mexican Lime and Cilantro Diced Tomatoes mix vine-ripened tomatoes, with jalapeno peppers, garlic, cilantro, and lime juice, making it the perfect ingredient for this recipe!

These nachos are topped with seven layers of deliciousness: cheese, refried beans, guacamole, pico de gallo, lettuce, sour cream, and sliced olives. You may need to double the recipe though, they are super tasty!

 

Ingredients:

  • 1 (10 oz) bag corn tortilla chips
  • 6 oz shredded Mexican blend cheese (or a mixture of Monterey Jack and cheddar cheeses)
  • 1 (10 oz) can RO*TEL Mexican Lime and Cilantro Diced Tomatoes, drained, divided
  • 1/2 medium sized red onion, diced, divided (about 4 tablespoons)
  • 1 large ripe avocado, diced
  • the juice of 1 lime, divided
  • 1 tablespoon finely chopped jalapeno
  • 2 teaspoons cilantro, chopped, divided
  • 1 (16 oz) can refried beans
  • 1 cup thinly sliced lettuce (I used green leaf)

Chilean Sea Bass Tacos with Chipotle Cream

I have never made a taco recipe from Cooking Light that I didn’t love. Honestly, how do they manage to deliver fantastic recipe after fantastic recipe? This one for Chilean Sea Bass Tacos with Chipotle Cream is no different, although the original recipe was made with red snapper. I’ve been having really bad luck recently coming across the fish I want when I go to the market, so I had to sub in Chilean sea bass instead.
Ingredients:
  • 1/2 cup fat-free sour cream
  • 1/8 teaspoon salt
  • 1 canned chipotle chile in adobo sauce, seeded and minced
  • 1 1/2 cups chopped onion, divided
  • 1 1/2 cups chopped tomato, divided
  • 2 tablespoons butter
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 4 garlic cloves, minced
  • 3 tablespoons chopped fresh cilantro
  • 1 pound Chilean sea bass
  • 1 teaspoon grated lime rind
  • 2 tablespoons fresh lime juice

Cumin Spiced Fish Tacos with Avocado Mango Salsa

With Cinco de Mayo this past weekend, I couldn’t stop thinking about making some kind of Mexican-themed meal this weekend. So I was pretty excited when my boyfriend suggested Fish Tacos on Sunday. My trusty Cooking Light obviously had the perfect recipe to fulfill our craving. These Cumin Spiced Fish Tacos with Avocado Mango Salsa get an extra boost of flavor from toasting the cumin seeds before grinding. If you can’t find cumin seeds, ground cumin will work for the recipe as well, just skip the toasting part.
Ingredients:
  • 1 tablespoon cumin seeds
  • 3/4 teaspoon salt, divided
  • 1/2 teaspoon paprika
  • 1/4 teaspoon freshly ground black pepper
  • 2 garlic cloves, minced
  • 1 pound tilapia fillets
  • 1 tablespoon coconut oil
  • 1 cup sliced peeled avocado
  • 2/3 cup finely chopped peeled ripe mango
  • 1/4 cup chopped green onions
  • 1/4 cup finely chopped red onion
  • 2 tablespoons finely chopped fresh cilantro

Black Bean Tostadas

Tostada normally refers to any meal in which a tortilla is deep fried or toasted. They were originally in response to tortillas that had started to get stale but could still be eaten. The toasted or fried tortilla is topped with beans, cheese, sour cream, lettuce, onions, salsa and then topped off with chicken or pork. Today, you can find all types of tostadas: seafood, vegetarian, vegan, etc.I found a recipe for a quick tostada in the Cooking Light Fresh Foods Superfast  cookbook and altered it a bit to remove most pre-made products (I don’t usually get to supermarkets). The result was still a quick and really delicious weeknight meal.

Ingredients:
1 can of black beans
5 tablespoons fresh salsa
3 tablespoons chopped cilantro
1/8 cup reduced-fat sour cream
1/8 cup chopped cilantro
2 tablespoons water
1/4 teaspoon black pepper
2 8-inch flour tortillas
Cooking spray
3/4 cup shredded Romaine lettuce
1/2 an avocado, sliced

Preheat the broiler.
Drain and rinse the black beans. Add to a saute pan coated in cooking spray. Heat on medium heat, pressing on the black beans so they mush a bit.
Add the salsa. If you do not have time to make your own salsa, you can pick up fresh salsa at the supermarket or specialty grocery stores. Add the chopped cilantro and stir.
Cook for 2 minutes until heated through. Remove from heat. Combine the sour cream, cilantro, water and pepper in a separate bowl.
Shred the lettuce and slice the avocado.
When the broiler is preheated. Spray the tortillas on each side with cooking spray and add two tortillas to a cookie sheet. Broil for two minutes or until charred. Mine puffed up a bit in the oven, so I just pushed down the center to make room for the beans.
Add the beans evenly to each tortilla.
Top with lettuce.
Drizzle with the sour cream mixture.
Top with avocado.
This was so satisfying! I loved the crunch of the tortilla to contrast the creaminess of the filling.

If the salsa is pre-made or store bought, this is a really quick meal, about 15-20 minutes from start to finish.

I loved the flavor, but this could certainly handle a little bit of heat, maybe some chopped jalapeno mixed in with the salsa.

After a bite or two, I went back to the salsa and added another tablespoon to my tostada to give it a bit more flavor. If you like salsa, I suggest doing this.

This could easily be altered to use chopped beef or sauteed chicken if you’d like. However, it was absolutely delicious with the black beans.

Black Bean and Cheese Enchiladas with Ranchero Sauce

I have had quite the hankering for Mexican recently, so I was so happy that the October issue of Cooking Light included a bunch of delicious sounding Mexican inspired vegetarian meals. I decided to go for the Black Bean & Cheese Enchiladas, because they can easily be frozen for future lunches and dinners. I substituted a few of the ingredients for what I already had, but you can find the original recipe here.
Ingredients:
2 Cajun peppers, stemmed, seeded and chopped
2 teaspoons olive oil
1 cup chopped yellow onion
5 garlic cloves, minced
1/4 teaspoon kosher salt
3 cups chicken broth, divided
2 tablespoons chopped fresh parsley
2 tablespoons no-salt-added tomato paste
1/2 teaspoon ground cumin
The juice of 1 lime
1/8 teaspoon cayenne
1 (15-ounce) can black beans, rinsed and drained
2 cups pre-shredded Mexican-blend cheese, divided
3 thinly sliced green onions, divided
Cooking spray
10 (6-inch) corn tortillas
5 tablespoons light sour cream
Preheat oven to 400°.  Prepare the peppers, onion and garlic cloves. Heat the olive oil in a medium saute pan over high heat. Add onion and cook for 1 minute.
Reduce heat to medium and add the garlic and salt. Cook for 5 minutes, stirring occasionally.
Add 2 cups broth, parsley, tomato paste, and cumin.
Cook for 10 minutes, or until it thickens slightly, stirring occasionally.
While this is cooking, add the extra cup water and the chopped peppers to a food processor. Pour the onion mixture into the food processor when finished cooking. Blend until smooth. Stir in lime juice and cayenne.
Combine the beans, 1 cup of cheese, and half the green onions in a bowl.
Add 1/2 of the sauce to the bottom of a cookie pan coated with cooking spray. Add 3 tablespoons of the bean mixture to to each tortilla.
Roll up, placing the seam side down.
Add to the cookie pan.
Pour the remaining sauce over the tortillas.
Top with the remaining cheese.
Bake for 15 minutes.
Sprinkle with remaining green onions and serve with sour cream.

This recipe has so much flavor! I was really pleasantly surprised with how this turned out. I am pretty sure I didn’t allow the sauce to reduce enough, but it thickened up in the oven and still tasted wonderful.

A serving is two enchiladas, so I actually have 4 meals left over after making this. As I mentioned before, enchiladas freeze really well, so 3 are going into the freezer and one will be my lunch tomorrow, win!

To make this recipe more effective for a weeknight, you can make the ranchero sauce ahead of time an refrigerate it until ready to use. The recipe took about an hour from start to finish.

Cheesy Corn and Black Bean Quesadillas

I love corn, but after three weeks of having 6 ears of corn in my CSA share, I’m running out of ways to use all of it. I adapted this recipe from All You to use fresh corn kernels.

Ingredients:
1 can black beans, rinsed and drained
2 ears of corn
1 tablespoon canola oil
1 small onion, chopped
1 jalapeño, seeded and finely chopped
2 cloves garlic, minced
3 ounces pepper Jack, shredded
3 ounces cheddar cheese, shredded
Salt and pepper, to taste
4 10-inch flour tortillas

Begin by cutting the kernels from the cob.

Prepare your garlic, onion, and jalapeño pepper.

Rinse and drain the black beans and add to a bowl.

 

Using a potato masher (or a fork), coarsely mash the beans.

Heat the corn over medium-high heat for about 4 minutes stirring occasionally until the corn begins to brown.

Add corn to the bowl with the black beans. Heat the oil in a saute pan. Add the onion and jalapeño and cook for 2 minutes.

Add garlic and cook for 1 more minute.

Add to the beans and corn. Allow to cool, about 10 minutes.

While the mixture is cooling, shred your cheese. If you can find it, grab pre-shredded cheese from the supermarket to speed up the process.

Add the cheese to the mixture and season with salt and pepper.

Heat up a griddle or a saute pan if you don’t have a griddle. Place a 1/2-cup portion of the bean mixture on half of a side of a tortilla.

Fold the tortilla in half and place on the griddle or in the saute pan over medium-high heat.

Cook for 6 minutes (3 minutes on each side if using a saute pan) or until golden brown and crispy. Cut into wedges and serve. Repeat with remaining tortillas.

Despite the jalapeno and the pepper Jack cheese, there really wasn’t much heat at all. If you want to turn it up a notch, either use another chopped jalapeno or use 1 serrano pepper instead.

This would be quite good with some fresh salsa if you have time, but this dish works well on its own as well.

Shredded Chicken Tacos with Tomatoes and Grilled Corn

Tacos are one of my favorite “quick dinners.” For the most part, it all comes down to assembly. I tend to make tacos more as a way to clean my fridge of various vegetables (lettuce, tomatoes, corn, avocados, etc.) but this recipe from the August issue of Cooking Light sounded so tasty I couldn’t wait for a fridge-cleaning day, went out, and bought these ingredients.

 

Ingredients:
2 ears shucked corn (or 1 cup frozen corn kernels, thawed)
1 package baby heirloom tomatoes
Salt and pepper, to taste
8 (6-inch) corn tortillas
1/4 rotisserie chicken
1 peeled avocado, cut into 16 slices
8 lime wedges

Preheat your broiler. Place the corn on a pan and broil the corn for 18 minutes, rotating every 6 minutes to allow for an even char. If you are using frozen corn kernels, allow them to thaw. No cooking/broiling needed — you can skip down to combining the kernels with the tomatoes.

 

While the corn is cooking, quarter the tomatoes. Shred your chicken.
Cut the kernels from the corn.

 

Place the kernels in a bowl and mix in the tomatoes. Sprinkle with salt and pepper.

 

Heat the tortillas.  Divide the chicken evenly among the tortillas.

Top each with 1/4 cup of the corn mixture and 2 avocado slices. Serve with lime wedges.

I loved the flavors in this dish. However, I don’t feel like the flavor of the corn had the chance to shine through, so I’d suggest using defrosted corn kernels to speed up the process. The colors of this are so pretty too! Heirloom tomatoes add extra pizazz, but using plain old cherry or grape tomatoes would get the job done.

Portobello and Black Bean Quesadillas

I have been really panicking about using all of my CSA ingredients this week. I am headed to the beach next week and can’t stand the idea of these ingredients going to waste! Thankfully, Cooking Light had a recipe that incorporated a lot of the ingredients I received this week.

Ingredients:
4 flour tortillas
Cooking spray
2 portobello caps, chopped
2 tablespoons balsamic vinaigrette (recipe below)
1 cup black beans, rinsed and drained
1 teaspoon minced green chilis
1 cup  preshredded 4-cheese Mexican blend cheese
1/4 cup chopped red onions
Fresh Salsa
Sour Cream, optional

 

Ingredients for the balsamic vinaigrette:
(you’ll have some leftover for a salad later)
1/4 cup balsamic vinegar
2-3 cloves of garlic, minced (I used 1 garlic scape… came with my CSA share)
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
3/4 cup olive oil

To make the vinaigrette, add the vinegar, garlic, salt, and pepper to a bowl and whisk until the salt dissolves. Add the oil in a slow steady stream, whisking constantly. You can also just add the ingredients to a jar and shake to combine.
Place your tortillas on a plate and cover with a damp paper towel. Microwave for 1 minute and leave in the microwave while preparing the rest of the dish.
Cook your mushrooms in a saute pan coated with cooking spray. If you don’t have cooking spray, use a bit of olive oil, maybe a teaspoon. Saute the mushrooms for 2 minutes, or until tender.
Add the vinaigrette, black beans, onions and green chile. Cook for 1 to 2 minutes, until the liquid evaporates. Mash the mixture slightly. If you have a potato masher, Cooking Light suggests using that. I don’t, so a fork will have to do!

Spoon 1/4 of the mixture onto each tortilla.

Divide the cheese equally among the tortillas.

Fold the tortillas in half.
I have a panini grill/griddle, so I used that to cook the quesadillas. If you do not have one, just use the same saute pan you used to make the black bean mixture, just wipe it down well before! Coat with cooking spray and place two quesadillas on the griddle/pan. Cook 2 to 3 minutes on each side or until the cheese is melted. If using a griddle, I cooked them for about 5 minutes.  Repeat with remaining quesadillas.
Cut each quesadilla into three wedges. Serve with salsa and sour cream.

 

I was afraid this wouldn’t have much flavor, but the vinaigrette and slight spice from the green chilies added just enough interest without going over the top.  I couldn’t get enough of this dish!  The salsa was a perfect complement as well. I am definitely adding this to my list of repeat meals.

 

Fresh Salsa

I wanted to make quesadillas, and it called for salsa. I realized I had all of the ingredients needed to make my own on hand, so I decided to try coming up with my own salsa.

Ingredients:
3 chopped and seeded tomatoes
1 red onion, finely chopped
1 garlic scape, finely chopped (or 2 garlic cloves)
1/4 cup chopped fresh cilantro
3 tablespoons fresh lime juice
1/2 teaspoon kosher salt
1/4 cup corn kernels (I just used frozen)

I have no clue why I put olive oil in the pic, sorry

To make the salsa,  first rinse the chopped onions under very cold water. This will help remove some of the bite associated with raw onions.

To seed the tomatoes, cut off one end of the tomato and use a spoon to scoop out the seeds.

Dice the tomato.

Chop the scape as finely as possible

Cut the cilantro.

Combine the onions, garlic, chopped tomatoes, cilantro, lime juice, corn, and salt. Allow to refrigerate for a few hours to get the best flavor, or overnight.

 

The corn will defrost in the fridge
There is nothing like fresh salsa. This recipe can be adapted to what makes you happy as well; feel free to add some jalapenos or another hot pepper to add some spice. As I’ve said before, a lot of color in a dish makes me so happy. The red, green and yellow brighten up the whole meal. There is enough flavor in this salsa to serve at a party with some tortilla chips, but I can’t wait to try it with my quesadilla!

Mexican Night

With Thanksgiving right around the corner, I need to clean out my fridge to make room for all of the leftovers I plan on hoarding from my relatives. (I love that they end up feeding me for the whole weekend) The best (and tastiest) way to do this is to make tacos for dinner.

Ingredients

  • Chicken
  • Taco Seasoning (recipe below)
  • Yellow Rice
  • Lettuce
  • Tomatoes
  • Onions
  • Green Pepper
  • Guacamole (recipe below)
  • Cheese (I used pepper jack and cheddar)
  • Taco shells or soft tacos
I usually have most of the above lying around, which is why this is my favorite recipe to get rid of a bunch of ingredients. As a side note: I live alone, so I just buy a bunch of chicken on sale, put the pieces in individual freezer bags, and pull them out the day before to defrost in the fridge.

Preheat oven to 350 degrees. Cook the rice according to directions. While the rice is cooking, put 1 tablespoon olive oil in a pan on medium heat. While that warms up, season the chicken with the taco seasoning.

  Taco Seasoning Recipe

Taco Seasoning
    •  4 parts chili powder
    • 4 parts ground cumin
    • 2 parts paprika
    • 2 parts salt
    • 2 parts black pepper
    • 1 part garlic powder
    • 1 part onion powder
    • 1 part crushed red pepper flakes
    • 1 part dried oregano

     Mix. Store remaining spice mix in an airtight container.

Brown the chicken on both sides and place in the oven for 20 minutes. While the chicken and rice are cooking, chop all vegetables (tomatoes, green peppers, onion and lettuce)
To make the guacamole, cut avocados removing the seed. Put in a bowl and mash with a fork. Add onion, some chopped cilantro, chopped onion, 1 teaspoon lime juice, 1 teaspoon lemon juice, 1/2 teaspoon salt, a dash of black pepper, and some of the chopped tomato. Mix.
Homemade Guacamole
Make sure to leave yourself enough onion and tomato to have as a topping for your tacos. Once the chicken is finished cooking, cut into bite size pieces and serve.
Not to shabby of a spread!
Each person can build their own taco to their liking. I usually take the leftovers and combine them for lunch the next day too. Yum!
