Rigatoni with Halibut Tomato and Basil

This recipe for Rigatoni with Halibut Tomato and Basil is loosely adapted from Marc Vetri’s cookbook, Rustic Italian Food. Last Friday, I went to Vetri for the first time. And it was hands down the best meal I’ve ever had, both food and service. I was also so terribly awkward that I’m not quite over it. Marc Vetri is one stellar chef. He opened Vetri in 1998 and 14 years later continues to wow people with the food he turns out. I was swooning over each and every plate that came out. I brought my parents for their 30th anniversary and honestly, I feel like it ended up being as much a present to myself as it was for them (sorry mom and dad!).
Vetri even came over to our table, wished my parents a happy anniversary, and signed his cookbook for me! (This is the stage where I got truly embarrassing. I absolutely turned red during this encounter. Eep). So naturally, I can’t think of anything but those delicious meals. I decided to use a recipe from his cookbook, Rustic Italian Food. I ended up using Halibut because the store I was at was out of swordfish (boo).
Ingredients:
  • 1 (16 oz) box dried rigatoni
  • 2 tablespoons olive oil
  • 1/2 cup finely chopped onion
  • 4 cloves garlic, smashed
  • 2 (12 oz) containers heirloom tomatoes, halved lengthwise
  • Salt and freshly ground pepper, to taste
  • 2 pound halibut, cut into large chunks
  • Juice of 1 lemon
  • 1/2 cup basil leaves, hand torn, plus additional basil leaves for garnish

Caprese Tomato Bites

I know, I know. It’s January. What the heck am I doing posting a Caprese recipe? I had a craving for a Caprese salad and I can’t bring myself to buy large tomatoes so out of season. Cherry tomatoes always seem to be around the same level of taste all year long, so I thought this might hold me over until the spring. The recipe incorporates all ingredients found in a traditional Caprese salad, while making it into a cute appetizer bite. I found this recipe on Taste of Home and mainly stuck to the recipe, with  a few changes based on what I could find.
Ingredients:
  • 1 pint heirloom cherry tomatoes, halved
  • 3 tablespoons heavy whipping cream
  • 1/2 pound fresh mozzarella cheese, torn into smaller pieces
  • 6 fresh basil leaves
  • 2 garlic cloves, minced
  • Salt and pepper, to taste
  • 1 tablespoon balsamic vinegar

Shredded Chicken Tacos with Tomatoes and Grilled Corn

Tacos are one of my favorite “quick dinners.” For the most part, it all comes down to assembly. I tend to make tacos more as a way to clean my fridge of various vegetables (lettuce, tomatoes, corn, avocados, etc.) but this recipe from the August issue of Cooking Light sounded so tasty I couldn’t wait for a fridge-cleaning day, went out, and bought these ingredients.

 

Ingredients:
2 ears shucked corn (or 1 cup frozen corn kernels, thawed)
1 package baby heirloom tomatoes
Salt and pepper, to taste
8 (6-inch) corn tortillas
1/4 rotisserie chicken
1 peeled avocado, cut into 16 slices
8 lime wedges

Preheat your broiler. Place the corn on a pan and broil the corn for 18 minutes, rotating every 6 minutes to allow for an even char. If you are using frozen corn kernels, allow them to thaw. No cooking/broiling needed — you can skip down to combining the kernels with the tomatoes.

 

While the corn is cooking, quarter the tomatoes. Shred your chicken.
Cut the kernels from the corn.

 

Place the kernels in a bowl and mix in the tomatoes. Sprinkle with salt and pepper.

 

Heat the tortillas.  Divide the chicken evenly among the tortillas.

Top each with 1/4 cup of the corn mixture and 2 avocado slices. Serve with lime wedges.

I loved the flavors in this dish. However, I don’t feel like the flavor of the corn had the chance to shine through, so I’d suggest using defrosted corn kernels to speed up the process. The colors of this are so pretty too! Heirloom tomatoes add extra pizazz, but using plain old cherry or grape tomatoes would get the job done.
