Who doesn’t love carnitas? Tender, juicy, and crispy all at the same time, they are definitely a favorite of mine!
They tend to come off as not exactly home-cook friendly though, because the meat used (typically pork shoulder) can take quite a bit of time to prepare.
This recipe for Pressure Cooker Carnitas using a multi-pot with a pressure cooker considerably cuts down the time, although I still consider this a make-ahead meal — perfect to make on a weekend and enjoy on a weeknight.
Ingredients:
1 teaspoon olive oil
1 medium onion, chopped
4 cloves garlic, peeled and minced
1 chipotle in adobo, finely chopped
1 teaspoon sauce from chipotle in adobo
1 (3 lb) boneless pork shoulder
1 pound pork belly (you can also just buy a 4lb boneless pork shoulder and omit the pork belly)
2 teaspoons ground cumin
1 1/2 teaspoons salt
1 teaspoon chili powder
1/2 teaspoon black pepper
1/2 cup chicken broth
For serving:
corn tortillas (my photos show blue tortillas because that’s what I had on hand. I suggest using traditional yellow corn tortillas)
Note: I was sent a Cosori Premium 6qt multicooker in order to write this post. Opinions are mine alone.
I’m not going to lie, pressure cookers have always kind of intimidated me. I was under the impression that they were difficult to use, and easy to mess up.
Well, after trying out the Cosori Premium 6qt pressure cooker over the past couple of weeks, I’m here to tell you they are actually quite easy to use!
Pressure cookers are definitely having a moment right now, but they’ve actually been around since the 1600’s in some form or another. Pressure cookers use steam pressure to help cook food faster. When cooking tough meat, pressure cookers help tenderize the meat and cook it surprisingly quickly in the process.
The Cosori Premium 6qt pressure cooker is actually a multicooker – it’s a pressure cooker, hot pot, steamer, slow cooker, food warmer, sauté pan, yogurt maker, and rice cooker – all in one! The unit has 17 smart cooking programs, but you can also adjust the cooking time, temperature, and pressure cooking levels to customize your cooking.
I couldn’t wait to test the pressure cooker out! I immediately thought of barbacoa – super tender and shredded meat (typically lamb or beef) with seasonings, so it’s time to try making Pressure Cooker Barbacoa Beef Tacos!
We eat a lot of tacos in my house, so I knew this would be a perfect test of the pressure cooker’s ability. This recipe actually uses two of the features available -” sauté/brown” and “meat/stew” pressure cooking. The Cosori premium pressure cooker is quite large (6 quarts!), so I decided to make a huge batch for future dinners. (It’s always helpful to have a full freezer for busy fall weeknights.)

Ingredients: (makes 12 servings)
6 garlic cloves
1 medium onion, peeled and quartered
1 chipotle in adobo, plus 3 tablespoons chipotle in adobo sauce
2 tablespoons ground cumin
2 tablespoons ground oregano
1 teaspoon ground cinnamon
½ teaspoon ground cloves
zest and juice of 1 lime
2 tablespoons apple cider vinegar
2 cups beef broth, plus a tablespoon or two, divided
My fiance is obsessed with leftovers. For whatever reason, he seems to think that most food tastes better the second time around. So I typically make a few more servings than we need so that he has his beloved leftovers the next day.
OXO makes cooking and storing food/leftovers super simple with their new 14 Piece Glass Bake, Serve & Store Set (paid link). The set is awesome to prepare foods beforehand, or to easily refrigerate/freeze any leftovers. It includes a Glass 3 Qt Baking Dish with Lid, Glass 2 Qt Baking Dish with Lid, Glass Loaf Pan, Glass Pie Plate, 1 Cup Round SNAP Container, 2 Cup Round SNAP Container, and 4 Cup Round SNAP Container.
For make ahead recipes, this glass bakeware is a huge time saver: they are made of thermal shock-resistant borosilicate glass, which allows dishes to be taken directly from the freezer to the oven or microwave — no need to fully thaw. The glass can withstand up to 250 degrees F of temperature change! Generous handles make removing dishes from the oven super easy, even when wearing oven mitts.
This set is perfect for recipes on the go as well; the baking dishes and SNAP containers come with raised slosh-proof lids for easy transportation. The SNAP Glass Food Storage is also microwave safe for reheating leftovers (just undo the tabs of the lid first), and provides a leak-proof seal, so it’s great for lunches to take to work!
I made this recipe for Chicken Chilaquiles Casserole recently for dinner using OXO’s 3 quart baking dish (9×13). Chilaquiles are actually typically a breakfast recipe, using lightly fried tortillas and salsa. This version is a casserole take on the traditional, and uses grilled corn tortillas baked with a quick homemade tomatillo salsa, rotisserie chicken, and cheese.
Ingredients:
meat from 1 rotisserie chicken, shredded (~3 cups)
1 cup 1% low-fat milk
1/3 cup packed fresh cilantro leaves
1 (26 oz) can whole tomatillos, drained
1 (4.5 oz) can chopped green chilies, drained
1/2 cup chopped scallions
1 cup finely chopped Monterey Jack cheese, divided

I think I may be a taco addict. I don’t think I’ll ever have enough recipes! Most of my taco recipes are pretty meat-heavy, so I’m so excited to share this simple meatless taco recipe using Nasoya Chipotle TofuBaked!
A new flavor from the leading producer of tofu, Nasoya’s Chipotle Tofubaked is low calorie but high in protein, 8 grams per serving. I don’t cook with tofu terribly often, so I was pret-ty excited that this new flavor is pre-marinated and ready to eat, with no pressing required!
The chipotle flavor brings a little heat and a lot of flavor to these tacos, which is balanced out with the avocado cream. These tacos would be great feeding a crowd while watching the game, don’t you think?
Nasoya was also kind enough to send some free product coupons to share with one lucky reader! Details after the recipe.

Now that it’s January, Football Fever seems to be everywhere! If you are planning on hosting friends and family for the big game, I have a great way to feed a crowd without forcing you to be in the kitchen all day (and all game).
With the help of Farm Rich’s Boneless BBQ Chicken Bites, you can make simple but delicious food for a group! The Chicken Bites are made with all white-meat chicken and are breaded to deliver that much needed crispy crunch, then are tossed in a tangy BBQ sauce. Farm Rich Snacks are Real-Life GoodTM and make game day meals a cinch to prepare!
These BBQ Chicken Tacos with Corn Salsa come together in no time, and allow even the pickiest eaters to customize their meal to their liking.
I picked up all of the ingredients needed for the tacos and corn salsa at Walmart. You can find Farm Rich products in the frozen food aisle.
What really makes the corn salsa stand out is roasting the corn in the oven beforehand, which can be done while also cooking the Boneless BBQ Chicken Bites. You can have a little taco bar ready to go in just 30 minutes!
Ingredients (serves 4, multiply as needed):
For Roasted Corn Salsa:
1/2 of (8 oz) package frozen corn kernels, thawed
1/2 tablespoon olive oil
salt and pepper, to taste
1/2 cup canned black beans, rinsed and drained
1 jalapeno, ribs and seeds removed, minced
1/2 red onion, diced (about 1/2 cup)
1/4 pint cherry tomatoes, cut into eighths (about 1/2 cup)
This weekend, my fiancé went fishing with a friend and his friend’s father. They had quite a successful trip, and came home with a ton of Rockfish! Rockfish, also known as striped bass, is a mild whitefish that can be prepared many different ways, so I was jazzed!
We had some that night on the grill (yum!), but there was plenty left over, and my fiance’s friend was nice enough to send us home with more fish. I had a hankering for fish tacos, so these Rockfish Tacos are the end result! Rockfish, or striped bass, is the perfect balance of flaky and meaty, so it works wonderfully in tacos.
Ingredients:
1 cup cherry tomatoes, diced
1 tablespoon minced jalapeno
1 tablespoon minced shallot
1 tablespoon cilantro chopped, plus more for garnish
the juice and zest of 1 lime
salt and pepper, to taste
1 tablespoon olive oil
1 large fillet rockfish (striped bass), skin removed (~1.5 lb)
This is another recipe from the Cooking Light Diet Plan. These tacos are great for a weeknight meal because it’s an under 30 minute recipe– it’s honestly mostly assembly.
As a reminder, if you’d like to try the Cooking Light Diet Plan along with me, use the code DIETSAVE20 to receive a special discount!
Ingredients:
1 pound skinless, boneless chicken breasts, cut into 1/4-inch strips
When I first spotted this recipe in the August issue of Cooking Light, I knew I wanted to make it. I have never used watermelon in a savory recipe before and it sounded like a perfect summer dinner! This recipe comes together in no time (and is really simple to make), making it a great weeknight meal option.
The rub on the steak is only four ingredients: salt, black pepper, white pepper, and red (cayenne) pepper. If you don’t have white pepper you can just substitute in more black pepper. But each pepper does bring it’s own taste to the rub.
Black and white pepper comes from the same pepper plant but white peppercorns have the outer layer removed, leaving the seed inside. White pepper has a more subtle flavor than black pepper. Red pepper, or cayenne pepper, is ground from hot peppers so it has a nice level of heat to it. The three together add a nice spiciness to the steak without being overwhelming.
I altered this recipe a little bit but the general idea is there. If you’re interested in seeing the original version, check it out here.
Ingredients:
1/2 teaspoon plus 1/8 teaspoon kosher salt, divided
1/4 teaspoon freshly ground black pepper
1/4 teaspoon ground white pepper
1/4 teaspoon ground red pepper
1 (1-pound) flank steak, trimmed and halved lengthwise
Working late really messes with my dinner making plans. When I get home later than expected, I can’t justify making a big meal, mainly because I’m already hungry and just want to eat as soon as possible. This recipe for Chicken and Guacamole Tostadas is perfect for nights like that, it uses shredded rotisserie chicken so that the recipe comes together in no time!
You’ll still notice that the photos are, well, crummy. I was super hungry and had to eat ASAP; the tostadas looked so good!
Ingredients:
1 ripe peeled avocado
1 cup plus 2 tablespoons finely chopped tomato, divided
3 tablespoons minced fresh onion, divided
1/4 teaspoon ground cumin
the juice of 2 limes, divided
1/2 teaspoon salt, divided
1 tablespoon chopped fresh cilantro, plus more for garnish
My poor slow cooker never gets a break. Even in the summer, I use it quite a bit! Slow cooker meals are great because they don’t heat up your entire kitchen, and usually make at least 8 servings, great for a party or for leftovers. Plus, you can put the ingredients in a slow cooker, go to work, and have dinner nearly finished when you return!
But I need some variety every now and then, so I decided to finally try my hand at making some. This recipe for carnitas from myrecipes.com is really simple. All of the ingredients can be found in your local grocery store.
Ingredients:
1 (3-pound) boneless pork shoulder
10 whole garlic cloves, peeled
2 teaspoons ground cumin
1 teaspoon dried oregano
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
3/4 cup fresh orange juice
2 chipotle chiles canned in adobo sauce, drained and chopped
20 (6-inch) corn tortillas, warmed
2/3 cup chopped onion
2/3 cup fresh salsa (I have a Fresh Salsa recipe on my blog. Just omit the corn.)
I had corn tortillas left over from making the Fish Tacos with Tomatillo Sauce. I needed another taco recipe that was completely different flavor-wise than the fish tacos, so I went for Cooking Light’s Steak Tacos with Lime Mayo in the May issue. (Note: the May issue has a ton of taco recipes, even a dessert one!)
I’m having a busy week at work, so I need some quick meals that still taste delicious but I can make in no time. My go-to for quick meals are Cooking Light’s tacos. I don’t know how they do it, but their taco recipes are awesome. Here’s one of their newest, from this month’s issue.
There is something so fun about having breakfast for dinner. Not only is it an easy way to whip up a meal with things you probably already have on hand, but it is so nice to have something so familiar and yet out of the ordinary.
Lindsay Landis and Taylor Hackbarth (of Love and Olive Oil) have compiled a cookbook filled with breakfast treats with a spin, making them perfect for dinner. The cookbook, Breakfast for Dinner: Recipes for Fritatta Florentine, Huevos Rancheros, Sunny-Side-Up Burgers, and More! is plain drool-worthy. The photos are fantastic and each recipe sounds better than the last! It has a little bit of everything in its pages, including main dishes, appetizers, and desserts. Each recipe has an inventive twist on a traditional breakfast dish, which made it so difficult to decide which recipe to try first! When I asked my boyfriend to help choose, he responded, “Mmm… can’t we just make every one of them?”
We were finally able to decide on the Huevos Rancheros Tacos because we are big taco fans (I have 7 listed on this blog as of this post) and I loved the idea of turning Huevos Rancheros into delicious dinner!
Ingredients:
Ranchero Sauce
1 tablespoon extra-virgin olive oil
1/2 medium yellow onion, chopped
2 garlic cloves, minced
1 large jalapeno, seeded and chopped
1 (15 ounce) can fire-roasted diced tomatoes
1/2 cup vegetable broth
1 tablespoon chopped fresh cilantro
2 tablespoons chopped fresh oregano
1 chipotle pepper in adobo sauce, seeded and chopped, plus 1/2 tablespoon adobo sauce
1/4 teaspoon salt
freshly ground pepper, to taste
For tacos
1 (15 ounce) can refried black beans
3 tablespoons vegetable oil, divided
8 corn tortillas
1/3 cup shredded cheddar cheese
8 large eggs
2 tablespoons chopped fresh cilantro or oregano
Note: this recipe is reproduced from the Breakfast for Dinner cookbok
I have no idea who decided that different foods should get taco-fied, but I am all for this movement. I love tacos, and Cooking Light comes up with the best taco recipes. These Kung Pao Chicken Tacos are everything I want in a meal: quick and easy to make, colorful, a hint of spice, and full of many ingredients I already had on hand.
Kung Pao chicken is a spicy stir-fry Chinese dish that includes peanuts, vegetables, chili peppers, and chicken. It is usually served over rice, but Cooking Light took some inspiration from Korean taco trucks and added the Kung Pao chicken to corn tortillas.
Ingredients:
6 skinless, boneless chicken thighs, cut into bite-sized pieces
3 tablespoons lower-sodium soy sauce, divided (or coconut aminos to make gluten free)
With Cinco de Mayo this past weekend, I couldn’t stop thinking about making some kind of Mexican-themed meal this weekend. So I was pretty excited when my boyfriend suggested Fish Tacos on Sunday. My trusty Cooking Light obviously had the perfect recipe to fulfill our craving. These Cumin Spiced Fish Tacos with Avocado Mango Salsa get an extra boost of flavor from toasting the cumin seeds before grinding. If you can’t find cumin seeds, ground cumin will work for the recipe as well, just skip the toasting part.
