Minnie Cupcakes

My niece turned three recently, and she is absolutely obsessed with a certain cartoon mouse with a bow. These Minnie Cupcakes felt like the perfect way to celebrate my niece while still making a delicious dessert!

These Minnie Cupcakes are made with a vanilla cupcake topped with strawberry frosting. Mini Oreos work at little mouse ears, finished off with a cute polka dotted fondant bow.

Ingredients (makes 12 cupcakes):

Vanilla Cupcakes:

  • 1 2/3 cup flour
  • 1 cup sugar
  • 1/2 tablespoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup (1 1/2 sticks) unsalted butter, at room temperature
  • 3 egg whites, at room temperature
  • 1/2 cup sour cream
  • 1/2 cup whole milk
  • 1 tablespoon vanilla extract

Strawberry Buttercream Frosting:

  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1 cup freeze-dried strawberries (paid link)
  • 4 cups confectioners’ sugar
  • 1/4 cup heavy cream, plus more if needed
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon salt

For decorating:

  • 24 mini Oreos (paid link)
  • 12 polka dotted fondant bows (I purchased mine off Etsy)

Cajun Mac and Cheese

I love a classic mac and cheese. But I also love a spin on a classic, like this recipe for Cajun Mac and Cheese!

This Cajun Mac and Cheese recipe is made of elbow pasta with onions, bell peppers, celery, and andouille sausage, baked in a creamy, spiced cheese sauce.

Ingredients:

  • 1 tablespoon salt
  • 1 (16 oz) box elbow pasta
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 2 celery stalks, finely chopped
  • 1 (12 oz – 16 oz) package Andouille sausage, chopped
  • 2 cups milk
  • 2 tablespoons flour
  • 1 tablespoon Cajun seasoning
  • 4 oz cubed sharp cheddar cheese
  • 4 oz cubed gouda cheese

Spritz Cookies

I’m back with another cookie recipe using some of my favorite OXO tools, specifically OXO’s cookie press, disk set, and Ceramic Pan!

Every year, OXO supports Cookies for Kids’ Cancer and the fight against pediatric cancer. Before I share my cookie recipe for Spritz Cookies, I want to share a bit about Cookies for Kids’ Cancer.

Cookies for Kids’ Cancer (CFKC) is a nonprofit founded by two OXO employees after their son, Liam, was diagnosed with pediatric cancer. Through grassroots bake sales across the country, CFKC raises funds to develop new, improved and less toxic treatments for childhood cancer. Liam Witt’s legacy lives on as the organization works toward a cure for pediatric cancer, helping children and families everywhere.

Every year, OXO supports CFKC by encouraging people to bake and share.

Spritz Cookies:

  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 egg, at room temperature
  • 1 teaspoon almond extract
  • 2 1/2 cups flour
  • food coloring, if desired
  • sprinkles, for decorating

Optional Glaze:

  • 1/2 cup powdered sugar
  • 1/2 tablespoon corn syrup
  • 1/4 teaspoon almond extract
  • 1 tablespoon milk, or as needed

Homemade Halloween Candy Ice Cream

Every year, without fail, I end up with a ridiculous amount of candy leftover after the trick-or-treaters have gone. I have made Day After Halloween Brownies in the past, but this year, because it is still so warm, I decided to make Homemade Halloween Candy Ice Cream using my leftover candy!

This recipe for Halloween Candy Ice Cream can be adapted for any candy you would like in your ice cream. I went with an assortment of chocolate candy: mini candy bars, Reece’s, M&M’s, Kit-Kats, and Snickers, because that’s what I had on hand.

Feel free to add in whatever candy you have leftover, just make sure it ends up being about 2 cups of chopped candy.

Ingredients:

  • 3/4 cup sugar
  • 1 cup whole milk
  • 2 cups heavy cream
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups various Halloween candy, chopped

Iced Latte

We had a little bit of a respite from the heat, but those August temperatures are back! So it’s the perfect time to test out DREO‘s BaristaMaker Milk Frother’s Cold Foam option; Iced Latte time!

This Iced Latte recipe includes a recipe for an espresso simple syrup to add some sweetness to the latte without taking away from the bold coffee flavor. You can make the espresso syrup ahead of time and store in your fridge until ready to use.

I am fairly serious about my coffee. I genuinely cannot think of the last time I did not start my day with a home brewed coffee, or a coffee or espresso-based beverage from a local cafe. I am still trying to master my latte art making with the snazzy BaristaMaker (and am having a ton of fun trying!), but wanted to share a recipe that shows how easily you can make a cafe-quality cafe au lait with minimal effort.

I wanted to try out the BaristaMaker’s blending abilities as well as highlight the Hot Thick Foam option. I’m pretty sure an Ube au Lait isn’t a “thing,” but it’s too pretty and tasty to not share! (Plus, “ube au lait” is super fun to say.)

This Ube au Lait recipe is so simple to make and tastes as good as it looks! Ube is one of my favorite flavors to incorporate into, well, anything I can. If you’ve never had ube before, the flavor is similar to vanilla, with a bit more nuttiness, so it is a perfect complement to coffee.

Ingredients (makes 2 coffees)

  • 1 cup (8 oz) milk of your choice (I’ve used whole milk and oat milk)
  • 1 teaspoon ube powder (paid link)
  • 1 teaspoon vanilla extract or ube extract

Make Ahead Breakfast Casserole

We hosted friends recently at our house for the weekend. Whenever we have guests, I prefer to do as much of the prep work ahead of time as possible. So it should come as no surprise that I lean on recipes like this make ahead breakfast casserole as a go-to breakfast option when entertaining people for the weekend.

Not only is this recipe super versatile, but you can assemble it entirely ahead of time and then pop it into your oven when ready to eat!

The vegetables and protein in the below Make Ahead Breakfast Casserole recipe are honestly more of a suggestion than a rule; I was using up a bunch of vegetables I had on hand, so feel free to use whatever sounds good to you as well!

Ingredients (serves 8):

  • 1 (10 oz) loaf sourdough bread, cut into cubes
  • 1 tablespoon olive oil
  • 1 pound breakfast sausage, casings removed
  • 1 medium onion, chopped
  • 2 bell peppers, chopped
  • 4 garlic cloves, minced
  • 1 (16 oz) container sliced mushrooms
  • 1 (6 oz) bag baby spinach
  • salt and pepper, to taste
  • 1 dozen eggs, large
  • 1 cup whole milk

Pureed Rutabaga

Pureed Rutabaga is a staple of basically every extended family gathering I have ever been to. But my family always refers to this dish as Turnips, which used to confuse me quite a bit because, well, there is also a vegetable called a turnip.

Apparently, rutabagas are also known as yellow turnips which is where this confusion comes from. Rutabagas are actually a hybrid of a turnip and a wild cabbage!

Anywho, I love pureed rutabaga / turnips. They are fluffy, creamy, with a little bit of spice.

This recipe is particularly perfect for large gatherings because you don’t have to use your stovetop or oven at all, saving space for other dishes.

Ingredients (serves 4, multiply as needed):

  • 1 large rutabaga
  • 1 cup vegetable broth
  • 2 tablespoons unsalted butter
  • 2 tablespoons whole milk or heavy cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon pepper (preferably white pepper)

No Bake Chocolate Eclair Cake

It’s that time of year where there are plenty of barbecues and outdoor gatherings again. Whenever our friends host, I never want to come empty handed so I like to have a bunch of dessert recipes on hand, especially no bake dessert recipes!

This No Bake Chocolate Eclair Cake is perfect for summer meet ups – you don’t have to turn on your oven and overheat your own home, and it can be made ahead and served chilled or at room temperature.

The cake is super simple to make. It is layers of graham crackers, whipped cream pudding, and chocolate frosting, mimicking the flavors of a chocolate eclair. If you don’t want to make your own frosting, you can also buy store bought and just use that.

Ingredients:

  • 1 pint heavy whipping cream
  • 1 tablespoon vanilla extract
  • 1 (16 oz box) plus 2 tablespoons confectioners’ sugar, divided
  • 2 (3.4 oz) boxes instant vanilla pudding mix
  • 3 cups whole milk, divided
  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1 cup cocoa powder
  • 1/2 teaspoon salt
  • 1 tablespoon coffee extract

Walnut Whiskey Cake

Whiskey Cake is something that has shown up to family gatherings since before I can even remember. My mom makes this cake for basically all extended family celebrations, and it has become a favorite of mine. Recently, we were celebrating a friend’s birthday and I thought a Walnut Whiskey Cake would be the perfect birthday cake for him!

My version is a bit different than the one my mom makes, but the general gist is still there. I added some candied walnuts on top because, why not, but feel free to omit them.

The best part of this recipe is it is made with cake mix and instant vanilla pudding mix, making this cake both super easy to make and incredibly moist! Using a Bundt pan makes this cake look like it took you all day to make, but the hardest part of this recipe is patiently waiting for the glaze to soak into the cake before removing it from the Bundt pan.

Walnut Whiskey Cake Ingredients:

Cake:

  • 1 tablespoon flour
  • 1 cup chopped walnuts
  • 1 (15.25 oz) box yellow cake mix
  • 1 (3.4 oz) box instant vanilla pudding
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil or canola oil
  • 2 oz whiskey or bourbon

Glaze:

  • 4 tablespoons unsalted butter
  • 3/4 cup brown sugar
  • 1/2 cup (4 oz) whiskey or bourbon
  • the juice of 1/2 orange
  • 1 teaspoon vanilla extract

Candied Walnuts:

  • 1/4 cup chopped walnuts
  • 1 tablespoon maple syrup

Coconut Lemon Poppy Seed Muffins

I have been trying to get back in the habit of making a few make-ahead meals on weekends to make weekdays a bit more manageable. While looking through old recipes, I came across a recipe I made nearly a decade ago for Coconut Lemon Poppy Seed Muffins. I decided to revisit the recipe, adding a bit more lemon flavor through the addition of lemon extract (paid link). These yummy little guys are the result!

Ingredients (makes 12 cupcake-sized muffins or 6 large muffins):

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/8 teaspoon salt
  • 6 tablespoons coconut oil, melted and allowed to cool slightly
  • 1/2 cup sugar
  • 2 eggs, at room temperature, or 1/2 cup unsweetened applesauce to make vegan
  • 1/2 teaspoon lemon extract
  • 1 cup whole milk, or coconut milk to make dairy free/vegan
  • the zest of 2 lemons
  • 2 tablespoons poppy seeds

Homemade Peanut Butter Fudge

A couple of years ago, I made some Gingerbread Fudge and was amazed at how easy it was to make!

So when I had a craving recently for some boardwalk fudge and I was nowhere near the beach, I figured I’d just make my own!

This recipe for Homemade Peanut Butter Fudge uses just six ingredients to make a rich, creamy, peanut butter-y treat.

Ingredients:

  • 3 1/2 cups confectioners sugar, sifted
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 (16 oz package) light brown sugar
  • 1/2 cup whole milk
  • 3/4 cup creamy peanut butter

Mocha Frappe

Some mornings, I wake up and want to treat myself to something a little bit more special than my typical morning coffee.

Now that I’ve been working from home full time for 18 months, I don’t really go to coffee shops anymore, so in order to have a fancy coffee treat, I have to make it myself!

A frappe is perfect for those mornings where you need a pick me up. It is a blended coffee drink served cold, typically topped with a nice dollop of whipped cream, and is surprisingly easy to make. This Mocha Frappe recipe uses just 7 ingredients to make a chocolatey, frothy coffee concoction.

I suggest preparing the espresso the night before so that you can make it and enjoy it quicker the next morning.

Ingredients (makes 2 servings, multiply as needed):

  • 1 heaping teaspoon instant espresso powder
  • 1/2 cup boiling water
  • 1 cup ice cubes
  • 1/4 cup milk
  • 1 tablespoon sugar
  • 1 tablespoon chocolate syrup, plus more for garnish

Mushroom and Spinach Frittata

My husband is a big fan of breakfast, so every now and then, we like to have breakfast for dinner.

Frittata’s are particularly good for dinner – savory, filling, and can be served with day old bread, so I recently decided to make this Mushroom and Spinach Frittata for dinner!

This frittata is an easy Mushroom and Spinach version, but you can substitute in whatever vegetables you’d like.

Ingredients:

  • 2 tablespoons olive oil, divided
  • 1 10 oz container pre-sliced mushrooms
  • salt and pepper, to taste
  • 4 garlic cloves, minced
  • 8oz baby spinach
  • 8 eggs
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons milk
