Make Ahead Breakfast Casserole

We hosted friends recently at our house for the weekend. Whenever we have guests, I prefer to do as much of the prep work ahead of time as possible. So it should come as no surprise that I lean on recipes like this make ahead breakfast casserole as a go-to breakfast option when entertaining people for the weekend.

Not only is this recipe super versatile, but you can assemble it entirely ahead of time and then pop it into your oven when ready to eat!

The vegetables and protein in the below Make Ahead Breakfast Casserole recipe are honestly more of a suggestion than a rule; I was using up a bunch of vegetables I had on hand, so feel free to use whatever sounds good to you as well!

Ingredients (serves 8):

  • 1 (10 oz) loaf sourdough bread, cut into cubes
  • 1 tablespoon olive oil
  • 1 pound breakfast sausage, casings removed
  • 1 medium onion, chopped
  • 2 bell peppers, chopped
  • 4 garlic cloves, minced
  • 1 (16 oz) container sliced mushrooms
  • 1 (6 oz) bag baby spinach
  • salt and pepper, to taste
  • 1 dozen eggs, large
  • 1 cup whole milk
  • 1 (8 oz) bag shredded cheddar cheese

Vegetarian Shepherds Pie

You may have noticed I have quite a few Irish (and Irish-American) recipes on this blog. I truly love traditional Irish cooking; it is pure comfort food to me.

But Irish food has come a long way from just traditional meat and potatoes, and Judith McLoughlin’s A Return to Ireland (paid link) showcases some beautiful modern interpretations of classic Irish cooking.

As a Shepherd’s Pie fanatic, I was intrigued by a recipe within the cookbook for a meatless version that substitutes a mixture of lentils and mushroom for the traditional ground beef or lamb, and then enhances the traditional mashed potato topping with a mixture of other mashed root vegetables.

The result is a wonderfully hearty and delicious Vegetarian Shepherds Pie!

Ingredients (serves 6):

  • Vegetable Base
    • 6 tablespoons butter (substitute olive oil to make vegan / dairy free)
    • 1 (8 oz) container sliced mushrooms
    • 2 medium onions, chopped
    • 1 leek, chopped
    • 4 garlic cloves, minced
    • 3 ribs celery, finely chopped
    • 1/4 cup tomato paste
    • 2 teaspoons sugar
    • 2 tablespoons soy sauce (or coconut aminos to make gluten free)
    • 2 1/2 cups green lentils
    • 1 teaspoon dried thyme
    • 1 teaspoon dried rosemary
    • 1 bay leaf
    • 6 cups vegetable broth
    • 2 teaspoons salt
    • 1/2 teaspoon pepper
  • Mashed Topping
    • 2/3 lbs celery root, peeled and chopped
    • 2/3 lbs parsnips, peeled and chopped
    • 2/3 lbs carrots, peeled and chopped
    • 1 teaspoon salt
    • 1/2 cup plain Greek yogurt
    • 4 tablespoons butter (or olive oil to make vegan / dairy free)
    • 1 tablespoons fresh parsley, chopped

Wild Boar Tenderloin with Mushrooms

This recipe for Wild Boar Tenderloin with Mushrooms is my first time using wild boar! According to the Crowd Cow website, “Wild Boar meat is similar to domestic pork, but the flavor has a slightly sweet and nutty taste to it, derived from their wild foraging diet. Our Wild Boar Tenderloins are lean with low fat content. Searing, roasting and grilling work well, but be careful not to overcook and dry out these lean cuts of meat.”

To enhance the flavor of the wild boar, I sautéed mushrooms in the same pan that I cooked the meat in with some onions and garlic.

Boneless Leg of Lamb with Roasted Vegetables

I will have future posts highlighting some of my other purchases, but today, it’s all about the boneless leg of lamb. Boneless leg of lamb is surprisingly easy to make, and doesn’t require a bunch of ingredients to make a great meal. This one-pot recipe cooks the leg of lamb, then tosses some vegetables in the drippings and roasts them to perfection!

Ingredients (serves 6):

Boneless Leg of Lamb

  • 4 to 5 lb boneless leg of lamb
  • 2 tablespoons olive oil, divided
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 tablespoons dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Roasted Vegetables:

  • 2 lbs potatoes, cut into bite-sized pieces
  • 3 medium-sized carrots
  • 1 small onion, chopped

Mushroom and Spinach Frittata

My husband is a big fan of breakfast, so every now and then, we like to have breakfast for dinner.

Frittata’s are particularly good for dinner – savory, filling, and can be served with day old bread, so I recently decided to make this Mushroom and Spinach Frittata for dinner!

This frittata is an easy Mushroom and Spinach version, but you can substitute in whatever vegetables you’d like.

Ingredients:

  • 2 tablespoons olive oil, divided
  • 1 10 oz container pre-sliced mushrooms
  • salt and pepper, to taste
  • 4 garlic cloves, minced
  • 8oz baby spinach
  • 8 eggs
  • 1/4 cup grated parmesan cheese

Pressure Cooker Mushroom Bourguignon

I’ve mentioned many times before how much I love my multi-cooker. I tend to use it a lot on weekends to help prep meals for the week, but it’s also a life saver on weeknights — you can get a delicious meal that tastes like it’s been cooking all day on the table in 45 minutes or less!

So when I heard about a new cookbook that is going to be published soon (September 24, 2019 to be exact) that has a ton of awesome multi-cooker recipes, I was excited to check it out.

I think most people know how great pressure cookers can be for tough cuts of meat, so I wanted to try one of the meatless options in the cookbook. This Pressure Cooker Mushroom Bourguignon is a simplified (and meatless) version of a French classic — typically a beef stew braised in red wine / beef broth.

Ingredients (serves 4):

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter (or margarine to make dairy free)
  • 1 (8 oz) container sliced mushrooms
  • 1 (8 oz) container whole mushrooms, cut in half
  • 1 (4 oz) container gourmet mushroom blend
  • 1 medium yellow onion, chopped
  • 2 medium carrots, peeled and sliced into rounds
  • 1 celery rib, chopped (or kept in larger pieces if you intend to remove)
  • salt and pepper, to taste
  • 1/2 teaspoon dried thyme
  • 2 cloves garlic, grated
  • 1 tablespoon balsamic vinegar
  • 1 cup dry red wine
  • 1 cup water
  • 3/4 cup beef or vegetable stock, divided
  • 1 oz dried mushrooms
  • 1 tablespoon cornstarch
  • 2 tablespoons tomato paste
  • cooked egg noodles (optional, substitute mashed potatoes for gluten free)
  • fresh parsley, chopped, for garnish

Mandu (Korean Dumplings)

A few weeks ago, I became an aunt! My sister and brother-in-laws are new parents to a beautiful baby girl. My husband went up to visit them recently, so I sent him up with some frozen food options to stock their freezer, including some of these Mandu Korean Dumplings.

I thought dumplings would be a perfect freezer friendly meal that also doesn’t add much to the cook time. You can cook mandu straight from the freezer, no need to thaw!

This version has a mixture of ground beef, pork, and vegetables, but the recipe can easily be adapted to fit whatever you have on hand, or have a craving for.

Ingredients:

  • 1.5 cups finely chopped green cabbage
  • 1 medium sized zucchini, finely chopped
  • 1 (4 oz) package sliced shiitake mushrooms, finely chopped
  • 1 small onion, finely chopped
  • 2 scallions, white and light green pieces finely chopped, dark green pieces sliced
  • 3 garlic cloves, minced
  • 2 teaspoons minced ginger
  • 1/2 lb ground pork
  • 1/4 lb ground beef
  • 1 large egg
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • salt and pepper, to taste
  • 2 packages dumpling skins (I found these in my local Asian grocery store)

Pressure Cooker Coq Au Vin

When I first began learning to cook, Coq Au Vin was one of the first recipes I attempted to make. And boy, did I fail miserably. So I’ve stayed away from the recipe since — I haven’t tried to make it in over a decade!

I figured it was time to finally try making it again, and use my trusty multi-cooker to make it fail-proof!

This one-pot-wonder for Pressure Cooker Coq au Vin takes about 80 minutes to prepare, so I’d suggest saving this for a weekend. I made this on a Sunday and saved it to eat during the week.

Ingredients:

  • 2 tablespoons olive oil, plus more if needed
  • 4 ounces pancetta, diced
  • 2.5 lbs chicken, assorted pieces (I used bone-in and boneless chicken thighs and legs)
  • salt and pepper
  • 2 large carrots, peeled and cut into 1-inch pieces
  • 1 (8 oz) container sliced mushrooms
  • 1 large shallot, thinly sliced
  • 3 garlic gloves, minced
  • 1/4 cup brandy
  • 1/2 (375 ml) bottle dry red wine
  • 1 cup chicken broth
  • 10 fresh thyme sprigs
  • 2 tablespoons unsalted butter, melted
  • 1 1/2 tablespoons all-purpose flour
  • freshly chopped parsley, for garnish
  • buttered egg noodles, cooked (optional)

This recipe for sauteed hen of the woods mushrooms caught my eye. I love mushrooms, especially hen of the woods mushrooms. Also known as maitake mushrooms, these mushrooms have a feathery texture but pack some hearty flavor.

Ingredients:

  • 1 pound hen of the woods mushrooms
  • Salt and pepper, to taste
  • 3 cups baby arugula
  • ¼ cup olive oil, plus more for drizzling
  • 2 garlic cloves, sliced
  • 6 tablespoons aged balsamic vinegar
  • Shaved slices Parmigiano Reggiano cheese
  • 1 tablespoon minced fresh chives

Grilled Vegetable Pasta Salad

My mom makes a mean pasta salad. Her mayo-less version is a mostly traditional Italian pasta salad which marinates in an Italian salad dressing for a few hours before enjoying.

This Grilled Vegetable Pasta Salad version is based on hers, but I decided to make it all the more summery but adding grill-friendly vegetables.

This is mostly a make ahead recipe. Right before serving (or while grilling up the main dish), you just add the veggies to the grill, then toss into the pasta.

I made this Grilled Vegetable Pasta Salad for friends with my recipe for Grilled T-Bone Steak with Gremolata.

Ingredients:

  • 2 boxes tri-colored pasta
  • 1 pint cherry or grape tomatoes
  • 1 onion, chopped
  • 2 bell peppers, any color, chopped
  • 1 (8 oz package) sliced baby bella mushrooms
  • 1 zucchini, chopped
  • 1 yellow squash, chopped
  • 3 garlic cloves, roughly chopped

Marinade

  • 2 tablespoons garlic salt
  • 2 tablespoons onion powder
  • 2 tablespoons dried parsley
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 2 teaspoons ground black pepper
  • 2 teaspoons salt
  • 1/2 teaspoon celery salt
  • 1 cup white wine vinegar
  • 2 cups olive oil

Slow Cooker Braciole

My mom recently put in a request for braciole. And by put in a request, I mean she went to Esposito’s in the Italian Market, purchased braciole, and told me I was going to make it. So. Slow Cooker Braciole it is!

I was excited to try; I’ve never made braciole before. Braciole is a thinly pounded meat that is topped with a filling and then rolled up and secured either with string or toothpicks. The rolled meat is browned and then added to a tomato sauce to cook.

I have to let you know. Braciole is a labor of love. There is so much prep work! The version I am sharing below is a recipe from a family friend that my parents have been using for years. I decided to make it in my slow cooker so that I could leave and run some errands while it cooked. Because of the prep work involved though, this is definitely a weekend meal.

Ingredients:

For Braciole:

  • 3 eggs, hardboiled, diced
  • 2 russet potatoes, boiled and diced
  • 1 green bell pepper, finely diced
  • 1 onion, finely diced
  • 1 lb mushrooms, finely chopped
  • 1/3 cup chopped parsley
  • 1/4 cup grated Romano cheese
  • 1/4 cup Italian breadcrumbs
  • 8 pieces of braiole, or 2 lbs top round, cut into half inch thick slices
  • 8 slices prosciutto
  • 1 tablespoon olive oil

For Sauce:

  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 4 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1/3 cup dry red wine
  • 1 tablespoon dried parsley
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon onion powder
  • 1 bay leaf
  • 2 (26 oz) cans crushed tomatoes
  • 1 (26 oz) can strained tomatoes

Grilled Chicken Cacciatore

One of my favorite things to throw on the grill are vegetables, something magical and delicious happens when vegetables are grilled. One night, we were doing a bit of a fridge cleaning meal and ended up with ingredients for chicken cacciatore — mushrooms, peppers, chicken, etc. But, we wanted to use my Coyote Outdoor Grill, so Grilled Chicken Cacciatore was born.  I didn’t have 2 big enough grill-safe pots, so this entire recipe isn’t made on the grill, but it can be if you’d like!

I threw in some summer squash and zucchini too, because it’s summer and we had some in the fridge. Feel free to omit.

Ingredients:

For the grill:

  • 2 bell peppers, any colors, chopped into bite-sized pieces
  • 1 yellow onion, chopped
  • 1 (8 oz) container sliced baby bella mushrooms
  • 1 zucchini, thinly sliced
  • 1 summer squash, thinly sliced
  • 2 garlic cloves, smashed
  • 4 chicken breasts (or chicken tenders like I used)
  • 4 chicken drumsticks
  • olive oil, to taste
  • salt and pepper, to taste

For the stovetop (unless you have oven-safe pots):

  • 1 cup rice
  • 1 3/4 cup chicken broth
  • 1 tablespoon olive oil
  • 1 tablespoon tomato paste
  • 1 (28 oz) can tomato puree
  • 1 (14.5 oz) can diced tomatoes
  • 1/2 cup red wine
  • 1 tablespoon dried oregano
  • 1 tablespoon dried parsley
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon crushed red pepper
  • 1/4 teaspoon fennel seeds
  • fresh parsley, for garnish

Spring Vegetable Penne with Lemon Cream Sauce

This time of year delivers some pret-ty great produce. All of the green veggies are in season! This recipe from Cooking Light for Spring Vegetable Penne with Lemon Cream Sauce makes the most of some spring vegetables, asparagus and peas.

The pasta recipe is a “two pot meal” so it comes together pretty quickly without giving you too make dishes afterwards!

Ingredients:

  • 1 tablespoon extra-virgin olive oil
  • 1 Vidalia or other sweet onion, chopped
  • 1 (10-ounce) package presliced mushrooms
  • 1 tablespoon chopped fresh thyme
  • 2 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup half-and-half
  • 1 cup fresh or frozen green peas
  • 1/4 cup plus 2 tablespoons shaved Parmesan cheese, divided
  • the zest of 1 lemon

Vegetarian Stuffed Zucchini Boats

These Zucchini Boats were my favorite part of my Farm-to-Table Meal last weekend. Stuffed with mushrooms and mozzarella cheese, the boats were nice and hearty and had great flavor!

Lime-Teriyaki Salmon Rice Bowls

I posted a recipe for a Salmon Teriyaki Stir Fry a while back and was craving something similar but not the exact same recipe. I found this recipe for an Asian Salmon Bowl with Lime Drizzle on Epicurious and doctored it up to suit my tastes.

This rice bowl is super satisfying and comes together really quickly. Feel free to experiment with different mix ins and toppings!

Ingredients:

  • 1 cup cooked rice, white or brown
  • 2 teaspoons olive oil, divided
  • 1 package (8 ounces) sliced baby bella mushrooms
  • 1/4 teaspoon salt
  • 1 tablespoon unsalted butter
  • 2 large garlic cloves, minced
  • 1/2 teaspoon red pepper flakes
  • 1/3 cup pure maple syrup
  • 1/3 cup fresh lime juice
  • 1/3 cup reduced-sodium soy sauce (or coconut aminos to make gluten free)
  • 2 teaspoons cornstarch
  • 4 salmon fillets (4 ounces each)
