I love a handheld party appetizer. And I also love a charcuterie or cheese board. So it should come as no surprise that I think Antipasto Skewers are absolutely delightful.

Rovagnati sent me samples of two of their Trios: The Charcuterie Trio and The Salami Trio.

  • The Charcuterie Trio includes sliced Prosciutto Crudo, Salame Milano, and Salame Napoli
  • The Salami Trio includes Salame Milano, Hot Soppressata, and Salame Napoli

Both Trio’s are the perfect size for making Antipasto Skewers; one 6 oz container is enough for about 9 skewers. I used the Charcuterie Trio below, but you can easily substitute in the Salami Trio.

Equipment (paid links):

Ingredients (makes approximately 18 skewers, multiply as needed):

  • 1 (9 oz container) cheese tortellini
  • 1/4 cup Italian dressing (homemade or store bought)
  • 1/2 cup balsamic vinegar
  • 1 (16 oz jar) roasted red peppers
  • 2 (6 oz containers) Rovagnati Charcuterie Trio
  • 1 pint cherry tomatoes
  • ~1/2 cup fresh basil leaves
  • 1 (12 oz jar) marinated artichoke hearts
  • 1 (12 oz container) marinated mini mozzarella balls
  • 1 (8 oz container) pitted olives (I used Castelvetrano olives)

Italian Sausage Bread

Some recipes, like this one for Italian Sausage Bread, are so easy and yet are oh so satisfying. My mother-in-law seems to have an endless supply of sausage bread prepared at her house, so I never really thought to make it myself until this past year. Now that I have, I know it is the perfect make-ahead option to keep in your freezer!

This sausage bread can be made with either hot Italian sausage or sweet Italian sausage. I suggest changing the color of the pepper you use inside so that when you have it out for snacking, everyone knows what they are about to bite into. (I used red in these photos because I was making one with hot Italian sausage; I use green in my sweet Italian sausage breads.)

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 or 2 bell peppers, chopped
  • 1 lb hot or sweet Italian sausage
  • 1 (13.8 oz) tube of refrigerated pizza crust
  • 1 (8 oz bag) shredded mozzarella
  • 1 egg, beaten

Slow Cooker Baked Ziti

A friend reached out to me with a food challenge: how to make baked ziti that will be hot and ready when they come back from a christening. A Slow Cooker Baked Ziti recipe seemed like the perfect solution!

Naturally, I had to do some experimenting so that I could give her a recipe to use that I know will work for her needs.

This recipe for Slow Cooker Baked Ziti involves layering ingredients in your slow cooker (paid link). letting it cook for 2 1/2 hours, and then adding some mozzarella cheese on top for ultimate cheesiness!

Ingredients:

  • 1 (28 oz) can crushed tomatoes
  • 1 (28 oz) can tomato puree
  • 1 (15 oz) can tomato sauce
  • 1 tablespoon tomato paste
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 (15 oz) container ricotta cheese
  • 2 large eggs
  • 1/2 cup chopped fresh basil leaves
  • salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 (16 oz) box ziti pasta
  • 1 cup grated parmesan cheese
  • 1 cup shredded mozzarella cheese

Lamb and Eggplant Casserole

I have made this Lamb and Eggplant Casserole, adapted from Maureen Abood’s Eggplant with Lamb, Tomato and Pine Nuts recipe, multiple times. And there is only one word for my feelings about this recipe: obsessed.

This Lebanese dish made with layers of eggplant, spiced lamb, and tomato sauce topped with cheese is going to become one of your absolute favorites!

Ingredients:

  • 3 lbs eggplant, cut into ½-inch slices
  • 4 tablespoons extra virgin olive oil
  • 2 teaspoons salt
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 pound ground lamb
  • 1/2 teaspoon ground cinnamon
  • ground pepper, to taste
  • 1 tablespoon unsalted butter
  • 1/2 cup pine nuts
  • 1 (28-ounce) can tomato sauce

Homemade Pierogis

During these stay-at-home orders, there have been a few foods that I’ve been craving that I would order frequently from local restaurants. One of my biggest recent cravings was for Messina Social Club‘s pierogis. So, when I accidentally ordered 10 pounds of potatoes (?!), I figured it was the perfect time to try to make my own Homemade Pierogis.

This recipe is a very basic version, but once you try it out, you can add different stuffings to create different flavor profiles.

They also freeze really well, so feel free to double the recipe and stock your freezer for future meals!

Ingredients:

Dough:

  • 2 cups all purpose flour
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup sour cream
  • 4 tablespoons butter, at room temperature

Filling:

  • 1 cup mashed potatoes (I halved the recipe and substituted in sour cream for the Greek yogurt)
  • 1 cup shredded mozzarella cheese

Optional toppings:

  • sauteed shallots
  • butter
  • sour cream

Thanksgiving Leftover Skillet Pizza

It probably goes without saying that Thanksgiving is my favorite holiday. I love spending time with my family and digging in to awesome food! My aunt and uncle have hosting Thanksgiving for years now, and they always make a point to make more than we could ever eat so we have leftovers.

I could eat Thanksgiving leftovers every day, but sometimes its nice to switch up the presentation a bit.

This recipe for Thanksgiving Leftover Skillet Pizza makes the most of whatever leftovers you have on hand!

Ingredients:

  • 1 cup shredded cooked turkey
  • 3-4 tablespoons cranberry sauce
  • 3/4 cup each shredded mozzarella and shredded cheddar cheese, divided
  • All-purpose flour
  • 8 ounces prepared pizza dough, at room temperature (or cauliflower crust to make gluten free)
  • 3 tablespoons olive oil, divided
  • 1 cup mashed potatoes
  • salt and freshly ground black pepper
  • 3/4 cup cooked vegetables, (I used Brussels sprouts)
  • 1/2 cup crumbled stuffing
  • Pinch crushed red pepper flakes

Grilled Caprese Polenta Rounds

Have you ever purchased an ingredient at the supermarket that you have no clue how you’re going to end up using it? Months ago, I purchased a tube of prepared polenta and honestly just forgot I even had it. During a recent cleaning of my “pantry” (also known as a cabinet that holds dry goods), I came across it again and decided it was time to find a use for it! So now, I present you Grilled Caprese Polenta Rounds!

Prepared, or tubed, polenta is firm and can be sliced into rounds which makes it perfect for grilling. I figured it would make a great summery appetizer, topped with melted mozzarella, fresh tomatoes, and a balsamic reduction!

Ingredients:

  • 1/2 cup balsamic vinegar
  • 1 (16 oz) tube prepared polenta, sliced into 16 rounds
  • 1 tablespoon olive oil, plus more for drizzling
  • 1 (8 oz) container cherry tomatoes
  • 1/4 cup fresh basil leaves, cut into chiffonade (directions below)
  • 1/2 lb fresh mozzarella, sliced into 16 rounds
  • salt and pepper, to taste

Charred Ramp Arancini

Tomorrow is one of my favorite events of the year: Flavors on the Avenue! I’ve written past posts about this event, but this year, they are switching things up a bit. The event, usually held under a tent, is coming out onto the street to make for what should be a pretty awesome five block street festival tomorrow, April 30 from noon to 5 pm.  The event will be held around the Singing Fountain at the intersection of S 11th, Tasker and Passyunk.

Tickets aren’t required to attend the event, although they are strongly encouraged. Cost is $50 each and include all of the dishes, two glasses of beer or wine, and valet parking – a $130 value. You can also pay as you go; each dish will be priced at $3 to $6. Further details can be found here.

East Passyunk Avenue is known for its fantastic restaurants, and a bunch of them (27!) are participating in this event. There will also be free kids’ activities and a crafter’s market. I had the opportunity to go on a media tour a try a bunch of these bites. Noord’s Bitterballen remains one of my favorites (they serve it every year, and every year I love them). New to Flavors is Sate Kampar, and all of their offerings are fantastic! Absolutely go try the Achat, Sago Hula Melaka, and Chicken Sate.

One of the restaurants on the media tour was Brigantessa. If you follow me on Instagram you may have seen my high praise for their Charred Ramp Arancini. They were absolutely delicious. Unfortunately, Brigantessa is not serving these for Flavors, but is serving Chorizo Cotto with Whipped Ricotta and Peas that sounds right up my alley as well. There will be plenty of arancini available though, a few restaurants are serving it.

I wanted to try my hand at making the Brigantessa Aracini, so here goes! I adapted this recipe to include charred ramps, which adds a slight onion flavor to the cheesy rice ball.

Baked Ziti

As I’ve mentioned in the past, pasta night is a very important night in my house. Both my husband and I come from (partially) Italian backgrounds, so pasta once a week is basically a necessity.

There is something about pasta dishes that is so comforting. It’s the meal that my grandmother would make for me every time my sister and I visited, and it’s the meal we most look forward to when visiting my husband’s parents. Pasta dishes always feel like they are cooked with love, don’t they?

I also have quite a love of cheese, so baked ziti ranks pretty high on my list of favorite pasta dishes. Pasta + love + cheese = the perfect comfort food!

Food, especially cheesy food is one of the best ways to show love for those who are special to you. This weekend, I made a super cheesy, meaty, baked ziti for my husband and me, with the help of Borden® Cheese. This casserole-style dish is the perfect way to know you’ll have leftovers for later in the week, or to feed a large (or hungry) family!

This baked ziti is tossed in a ricotta-tomato mixture with ground meat. It is then topped with Borden® Cheese Mozzarella Shreds, which results in a wonderfully gooey, cheesy dish.

I found my Borden® Cheese at my local Acme, but check out this store locator to find Borden® Cheese near you. Borden® Cheese has a bunch of tasty cheese options, including Borden® Cheese Finely Shredded Four Cheese Mexican Shreds that I also picked up to use for tacos later in the week.

Ingredients:

  • 1 (16 oz) box ziti
  • 1 tablespoon olive oil
  • ½ cup finely chopped onions
  • 4 garlic cloves, minced
  • 1 lb ground beef
  • 1 lb hot Italian sausage, removed from its casing
  • 2 (28 oz) cans crushed tomatoes
  • 1 cup beef stock
  • 1 tbsp dried parsley
  • 1 tbsp dried basil
  • 1 tbsp dried oregano
  • ½ tsp salt
  • ½ tsp pepper
  • 16 oz ricotta
  • ½ cup parmesan cheese, plus more for garnish
  • 1 egg

One Pot Cheesy Pasta Bake

There are some nights where I just don’t want to cook, mainly because I don’t want to clean up after I cook — so many dishes!

On such nights, I reach for a one-pot meal. This Cheesy Pasta Bake from this month’s Cooking Light is all made in one pot and has dinner on the table in 30 minutes. I doubled the recipe so that it would work for a normal sized box of pasta (16 oz), so now I have lunch for the week too!

 

Ingredients (serves 8):

  • 2 tablespoons olive oil
  • 1 yellow onion, chopped
  • 12 ounces 90% lean ground beef
  • 1 1/2 teaspoon dried oregano
  • 2 1/2 cups unsalted chicken stock
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper
  • 1 (14.5 oz can) unsalted crushed tomatoes
  • 16 ounces uncooked penne pasta
  • 1 (28 oz) can tomato puree
  • 10 ounces fresh baby spinach
  • 8 ounces preshredded part-skim mozzarella cheese (about 2 cups)

Freezer Friendly Spinach and Ricotta Stuffed Shells

I live in Philadelphia, and last week I was kind “stuck” at home because of the pope’s impeding arrival. So I used the opportunity to cook up a storm! (Seriously, I managed to make Saucy Chicken Over Rice, Chicken Tacos Bowls, Tomato Sauce, this recipe shared below, and a bunch of other yummy freezable dishes. My slow cooker and stove had quite the week!)

 

Here’s one of my favorite “freezer friendly” meals, with directions on how to store in your freezer and how to reheat when ready.

 

These Spinach and Ricotta Stuffed Shells are easy to make, and are great to pack away for future meals (or eat immediately, that’s totally allowed too).

 

Ingredients:

  • 30 cooked jumbo pasta shells
  • 1 15 oz container ricotta
  • 2 cups shredded mozzarella, divided
  • 1/2 cup (2 ounces) shredded Parmesan cheese
  • 1 teaspoon Italian seasoning

Vegetarian Stuffed Zucchini Boats

These Zucchini Boats were my favorite part of my Farm-to-Table Meal last weekend. Stuffed with mushrooms and mozzarella cheese, the boats were nice and hearty and had great flavor!

Baked Chicken Parmesan

Happy Carnevale! Carnevale is celebrated in Italy 40 days before Easter. It is the last hurrah before Lent begins. (It’s similar to Mardi Gras). The word “carnevale” actually means “no meat” in Latin, so the best way to celebrate this holiday is with some protein before fasting begins for Lent.

Redpack Tomatoes sent me a package of assorted canned tomatoes to get me in the spirit of Carnevale, and included some tasty recipes to go along with it. I decided to make Chicken Parmesan, one of my favorite comfort foods. I adapted the recipe from Redpack, but decided to bake the chicken rather than pan fry it, so here is my recipe for Baked Chicken Parmesan.

Margherita Pan Pizza

The September Issue of Cooking Light has a super yummy looking pizza on the front. The pizza shown was a Deep Dish Mushroom and Onion Pizza but the photo made me think of pan pizzas I used to love as a kid. So I decided to try to make my own in my cast iron pan but give it a more “grown up” twist by making a Margherita Pan Pizza.

The result was a nice thick and chewy crust with the perfect amount of tangy tomato sauce, creamy melted mozzarella, and fresh basil! The dough is so simple to make but it does need to rise overnight so prepare ahead.

Ingredients: For the dough:

  • 2 cups flour
  • 1/4 teaspoon fresh active yeast
  • 2 teaspoons salt
  • 1 cup water
  • 1 tablespoon olive oil

For the tomato sauce:

  • 1 15 oz can tomato puree
  • 1 tablespoon fresh basil, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon onion powder
  • 1 bay leaf
  • salt and pepper, to taste
  • 1 garlic clove, minced

Toppings:

  • 8 oz mozzarella cheese, sliced
  • 3 tablespoons fresh basil, chopped or julienned

Pasta Rustica with Smoked Mozzarella

If you follow my Facebook page, you may have seen that my recipe for Wild Mushroom Truffled Pizza Topped with a Runny Egg won a recipe contest hosted by Cooking Planit and sponsored by Formaggio Cheese! Not only is my recipe now available through Cooking Planit, but I also won some snazzy prizes, including an amazing assortment of Formaggio products. My fridge is now happily filled with cheese, so I will be posting a few cheesy recipes over the coming weeks.

One of the first products I noticed in the basket was Smoked Mozzarella. I’ve had smoked mozzarella in the past and found the flavor to be a bit… overwhelming… so I was interested to see if I could get it to work well in a recipe instead of becoming the only flavor you can taste. But Formaggio’s smoked mozzarella was a pleasant surprise! The smoky flavor is present without being overpowering and works to enhance other flavors instead of covering them up.

I found this recipe for Pasta Rustica with Smoked Mozzarella on Bon Appetit and altered the amounts of the ingredients to fit my taste.

 

Ingredients:

  • 16 oz package frozen cheese tortellini
  • 4 tablespoons olive oil
  • 1 medium onion, sliced
  • 12 oz cherry tomatoes, halved
  • 2 garlic cloves, minced
  • 1 cup dry vermouth
