Rosemary White Beans with Onions and Tomatoes

This recipe for Rosemary White Beans with Onions and Tomatoes has quickly become a staple in my house this winter.

It is quick to prepare, I tend to have most of these ingredients already on hand, and it is so darn comforting! It is also a one pot meal so there are less dishes to clean up when you’re done cooking and enjoying your meal!

I adapted this recipe from NYT Cooking slightly.

Ingredients:

  • 1/2 cup olive oil, divided
  • 1 large onion, thinly sliced
  • salt, to taste
  • 8 garlic cloves, thinly sliced
  • 1 tablespoon minced fresh rosemary
  • 1/2 teaspoon red pepper flakes
  • 2 (15 oz) cans cannellini beans, drained and rinsed
  • 3 plum tomatoes, chopped (about 1 cup)
  • the zest of 1 lemon
  • 1 cup chopped fresh parsley leaves
  • 1 loaf Italian bread, sliced

Slow Cooker Short Ribs

Well. It became fall weather basically overnight, which means it is time for more slow cooker recipes! This recipe for Slow Cooker Short Ribs is melt-in-your-mouth tender and is basically the most comforting meal ever made when served over mashed potatoes.

This recipe is adapted from Delish and will definitely serve a crowd or can be made ahead of time and frozen.

Ingredients:

  • 5 lbs bone-in beef short ribs, sliced crosswise
  • salt and pepper, to taste
  • 1 tablespoon vegetable oil
  • 1/2 cup low sodium soy sauce (or coconut aminos to make gluten free)
  • 1/2 cup water
  • 1/4 cup light brown sugar, packed
  • 1/4 cup rice vinegar
  • 2 teaspoons sesame oil
  • 1 teaspoon red pepper flakes
  • 3 medium carrots, peeled and chopped into thirds
  • 1 onion, cut into half moons
  • 5 garlic cloves, crushed
  • 1/2 teaspoon ginger paste
  • mashed potatoes, for serving

Leek and Potato Soup

I know it is quite late in the season for a soup recipe, but I made this Leek and Potato Soup recently and just had to share it. This is a fairly traditional Irish Leek and Potato Soup, but the simplicity means you can really make it your own with some tweaks if you wanted.

Leeks are in season late winter to early summer, so this soup is great for those slightly cooler days, or when you’re looking for something simple to make that is ultimate comfort food.

This recipe uses under 10 ingredients and can be made in under 30 minutes!

Ingredients:

  • 4 tablespoons salted butter
  • 1 yellow onion, chopped
  • 3-4 leeks (depending on their size), sliced
  • 1 pound Yukon gold potatoes, peeled and cut into cubes
  • 3 1/2 cups vegetable stock
  • 1 bay leaf
  • 1/2 cup heavy cream
  • salt and pepper, to taste

Bratwurst and White Beans with Sage

As we transition into fall, I start craving comfort food-type dishes, especially ones that don’t take all day to make, because despite still working from home, I find that I have even less time to cook!

This recipe for Bratwurst and White Beans with Sage is a quick and easy dinner that also only uses one pan, so it has quickly become a favorite of mine.

The recipe has under 10 ingredients too, so it’s an easy one to add to your grocery list.

Easy Fettuccine Alfredo

Fettuccine Alfredo is essentially glorified mac and cheese (or more accurately, mac and cheese is a less glamorous fettuccine alfredo). I had a craving for some fettuccine alfredo on one of the multiple snow days we just saw in Philadelphia, and luckily I had everything on hand to make this ultimate comfort food, so it’s about time I shared a recipe for easy fettuccine alfredo!

This recipe for easy fettuccine alfredo uses just 9 ingredients, including salt and pepper. It doesn’t exactly reheat well though, so it’s not the best make ahead meal, but I have a good feeling it will be polished off in no time!

Ingredients (serves 4):

  • 1 (16 oz) box fettuccine
  • salt, to taste
  • 4 tablespoons unsalted butter
  • 2 garlic cloves, minced or pressed
  • 1 egg yolk
  • 1 1/2 cups heavy cream

Homemade Pierogis

During these stay-at-home orders, there have been a few foods that I’ve been craving that I would order frequently from local restaurants. One of my biggest recent cravings was for Messina Social Club‘s pierogis. So, when I accidentally ordered 10 pounds of potatoes (?!), I figured it was the perfect time to try to make my own Homemade Pierogis.

This recipe is a very basic version, but once you try it out, you can add different stuffings to create different flavor profiles.

They also freeze really well, so feel free to double the recipe and stock your freezer for future meals!

Ingredients:

Dough:

  • 2 cups all purpose flour
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup sour cream
  • 4 tablespoons butter, at room temperature

Filling:

  • 1 cup mashed potatoes (I halved the recipe and substituted in sour cream for the Greek yogurt)
  • 1 cup shredded mozzarella cheese

Optional toppings:

  • sauteed shallots
  • butter
  • sour cream

Creamy Chicken Paprikash Over Buttered Egg Noodles

Comfort food can take on many forms, but generally, comfort food seems to always have a bit of nostalgia attached to it. Foods from my childhood have become some of my favorite adult comfort foods, like Creamy Chicken Paprikash Over Buttered Egg Noodles. Chicken Paprikash is a Hungarian dish of chicken, cooked in a creamy paprika-flavored sauce. My mom used to make this Creamy Chicken Paprikash for us on cold winter nights, and always spooned it over egg noodles to make the most of the yummy sauce.

Now that it’s February, I think it’s the perfect time to share this childhood favorite recipe! Cold winter months are the perfect time to enjoy old comfort food favorites or to try new ones, like my take on Creamy Chicken Paprikash.

Ingredients:

  • 3 pounds boneless skinless chicken thighs
  • salt and pepper, to taste
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter, divided
  • 1 large yellow onion, chopped
  • 4 garlic cloves, minced
  • 3 tablespoons paprika, sweet or hot (I’d suggest using a combo, maybe 1/2 of each for a subtle spice)
  • 3 tablespoons flour
  • 1 tablespoon tomato paste
  • 1 (15 oz) can crushed tomatoes
  • 2 cups chicken broth
  • 1 (12 oz) bag Egg Noodles

Colcannon

I realized this weekend as I was making some of my favorite St. Patrick’s Day foods that I have not written a post on Colcannon!

Colcannon is mashed potatoes with sautéed greens mixed in, typically either cabbage or kale.

 

It’s pretty awesome Irish comfort food in my opinion. It’s so engrained in Irish cooking that it even has it’s own song!

Did you ever eat Colcannon, made from lovely pickled cream?
With the greens and scallions mingled like a picture in a dream.
Did you ever make a hole on top to hold the melting flake
Of the creamy, flavoured butter that your mother used to make?

This version uses shallots, leeks, and kale, but this recipe can easily be adapted to incorporate any green you prefer.

Ingredients:

  • 2-3 lbs russet potatoes (4-5 potatoes)
  • 2 tablespoons salt, plus more to taste
  • 1 stick (8 tablespoons) butter, divided
  • 1 leek, chopped
  • 2 shallots, chopped
  • 4 cups chopped lacinato kale
  • 1 cup heavy cream
  • thinly sliced scallions, for garnish

Baked Ziti

As I’ve mentioned in the past, pasta night is a very important night in my house. Both my husband and I come from (partially) Italian backgrounds, so pasta once a week is basically a necessity.

There is something about pasta dishes that is so comforting. It’s the meal that my grandmother would make for me every time my sister and I visited, and it’s the meal we most look forward to when visiting my husband’s parents. Pasta dishes always feel like they are cooked with love, don’t they?

I also have quite a love of cheese, so baked ziti ranks pretty high on my list of favorite pasta dishes. Pasta + love + cheese = the perfect comfort food!

Food, especially cheesy food is one of the best ways to show love for those who are special to you. This weekend, I made a super cheesy, meaty, baked ziti for my husband and me, with the help of Borden® Cheese. This casserole-style dish is the perfect way to know you’ll have leftovers for later in the week, or to feed a large (or hungry) family!

This baked ziti is tossed in a ricotta-tomato mixture with ground meat. It is then topped with Borden® Cheese Mozzarella Shreds, which results in a wonderfully gooey, cheesy dish.

Slow Cooker Short Rib Ragu

This Slow Cooker Short Rib Ragu is the ultimate comfort food and is perfect for busy fall weeknights!

It is definitely feeling like fall in Philadelphia now. The days are getting shorter, and there is a chill in the air. Which means my slow cooker is back in full force!

I absolutely love my slow cooker (paid link). It makes me so happy to come back to an awesome comfort food meal at the end of the day. This recipe for Slow Cooker Short Rib Ragu is basically a really thick meat sauce, made with shredded boneless short ribs. And. It’s fantastic.

This can be served over pasta, egg noodles, polenta, or even mashed potatoes (I went with pappardelle pasta for this round). The recipe makes quite a bit, so you can stock your freezer for nights you just don’t feel like cooking.

Ingredients:

  • 3 pounds boneless short ribs
  • salt and pepper, to taste
  • 2 tablespoons olive oil
  • 3 large carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 yellow onion, chopped
  • 5 cloves of garlic, minced
  • 3 tablespoons tomato paste
  • 1 (28 ounce) can whole tomatoes, undrained
  • 1 cup red wine
  • 3 cups beef broth
  • 1 tablespoon corn starch
  • 1 tablespoon dried parsley
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Slow Cooker Beef and Bean Chili

We have had a pretty moderate fall so far, but the cold weather isn’t too far off. This time of year, I like to fill my freezer with different meals so I always have comfort food on hand for busy weeknights. One of my favorites, of course, is chili.

 

I was sent Rubbermaid’s Easy Find Lids 20-Piece Storage Set to try out, so it was the perfect time to make my annual batch of chili!

 

Rubbermaid Easy Find Lids are a life saver – I typically just keep the containers from take out and they are all just shoved into a cabinet net to my stove, with no organization to them whatsoever. So i spend a good 10 minutes finding the right top to go with whatever container I’ve chosen. Rubbermaid’s storage set takes the annoyance out of trying to find the right top — the Lids snap on to the bottom of their respective containers so you can find them in no time! The containers also nest inside each other so you can have a small stack of all of your containers and lids in one spot.

 

The 20-piece set comes with  3 (0.5 Cup), 3 (1.25 Cup), 1 (2 Cup), 2 (3 Cup), 1 (5 Cup), and 10  respective Easy Find Lids. The plastic is dishwasher, freezer, and microwave safe and is also BPA-free.

 

On to the recipe! This time around, I went for a classic – ground beef and beans with some bratwurst meat for additional flavor (I used beef bratwurst, but you can use any type you’d like).

 

Ingredients:

  • 1 tablespoon unsalted butter (omit for dairy free)
  • 1 tablespoon olive oil
  • 2 pounds ground beef
  • 1 pound bratwurst, removed from its casing
  • 5 garlic cloves, minced
  • 1  onion, chopped
  • 1 chipotle from can of chipotles in adobo sauce, finely chopped (seeds removed if preferred)
  • 1 tablespoon adobo sauce from can of chipotles in adobo
  • 2 red bell peppers, chopped (or whatever color you prefer)
  • 2 (15.5 oz) cans red kidney beans, drained
  • 1 (15.5 oz) can black beans, drained
  • 1 (28 oz) can crushed tomatoes
  • 1 (28 oz) can diced tomatoes, undrained
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon ground chili powder
  • 1 teaspoon cumin powder
  • 1/2 tablespoon dried parsley
  • 1/2 tablespoon dried basil
  • 1/2 teaspoon cayenne
  • 1 cup beef stock
  • 1 tablespoon espresso grounds
  • For garnish: 1 tablespoon fresh cilantro, chopped; 4 oz sour cream; 4 oz cheddar or pepper Jack cheese, shredded

Freezer Friendly Spinach and Ricotta Stuffed Shells

I live in Philadelphia, and last week I was kind “stuck” at home because of the pope’s impeding arrival. So I used the opportunity to cook up a storm! (Seriously, I managed to make Saucy Chicken Over Rice, Chicken Tacos Bowls, Tomato Sauce, this recipe shared below, and a bunch of other yummy freezable dishes. My slow cooker and stove had quite the week!)

 

Here’s one of my favorite “freezer friendly” meals, with directions on how to store in your freezer and how to reheat when ready.

 

These Spinach and Ricotta Stuffed Shells are easy to make, and are great to pack away for future meals (or eat immediately, that’s totally allowed too).

 

Ingredients:

  • 30 cooked jumbo pasta shells
  • 1 15 oz container ricotta
  • 2 cups shredded mozzarella, divided
  • 1/2 cup (2 ounces) shredded Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 (10-ounce) package frozen chopped spinach, thawed, drained, and squeezed dry
  • 1 large egg
  • 1 garlic clove, minced

New Jersey Style Loco Moco

One of my favorite cookbooks is Love and Olive Oil‘s Breakfast for Dinner. (I did a post highlighting their Huevos Rancheros Tacos a while back.) So it’s probably not surprising that I make a few recipes from this cookbook on a regular basis. One that I love to make in particular is their version of the Hawaiian dish Loco Moco.

 

 

Typical Loco Moco is usually made with white rice, topped with a hamburger patty (or spam), a fried egg, and brown gravy. Love and Olive Oil’s version substitutes coconut sticky rice for the white rice, uses ground pork instead of the hamburger patty, and finishes the dish off with a sweet-spicy-salty soy sauce reduction rather than brown gravy.

I decided to alter their recipe slightly to give it a local spin; this version is topped with pork roll (or Taylor ham) instead of the ground pork, and this recipe for New Jersey-style Loco Moco was born!

Pork Roll is originally from Trenton, New Jersey (hence the name of this post), but can also be found in parts of Pennsylvania, Delaware, and Maryland. The pork product is thinly sliced and pan fried and is a staple in most breakfast places in the area.

Ingredients:

Coconut Rice:

  • 2 cups white sticky rice
  • 1 cup coconut milk

Soy Reduction:

  • 1/2 cup low-sodium soy sauce (or low sodium coconut aminos to make gluten free)
  • 1/4 cup light brown sugar, packed
  • 1 teaspoon sriracha

Toppings:

  • 4 slices pork roll
  • 1 teaspoon vegetable oil
  • 4 large eggs
  • ground pepper, to taste
  • 4 green onions, thinly sliced
  • 4 tablespoons roughly chopped fresh cilantro

 

Note: White sticky rice is sold as sweet rice and can be found at specialty grocers and Asian food stores. I was able to find it at Wegman’s.

Winter Risotto with Farro and Arborio Rice

A couple of weeks ago, I was invited on a Chevy Farm-to-Table Road Trip, which was SO much fun! Chauffeured in snazzy Chevrolets, the group first went to Terrain in Glen Mills for lunch at their cafe and then went wine tasting down the road at Chaddsford Winery. All of the food was fantastic at Terrain, but I cannot stop thinking about their fabulous Farro and Arborio Risotto with sweet potato puree and autumn vegetables. So, naturally, I decided to try to make my own version! This recipe is pretty involved but it sure is worth it!

This recipe can be easily made vegan (noted below) and is vegetarian if vegetable stock is used instead of chicken stock. This recipe, however, is not gluten free because farro does contain some gluten. 

 

Ingredients:

Veggies:

  • 2 cups peeled and cubed butternut squash
  • 1 cup halved Brussels sprouts
  • 3 Sweet potatoes, divided
  • 2 Shallots, halved
  • 2 tablespoons olive oil
  • 1/2 tsp fresh thyme leaves
  • 1/4 teaspoon fresh chopped rosemary
  • Salt and pepper, to taste
  • 2 tablespoons unsalted butter (or margarine to make vegan)

Risotto

  • 3 cups water
  • 1 cup uncooked farro
  • 6 cups chicken stock (or vegetable stock to keep vegetarian)
  • 2 tablespoons olive oil
  • 1 large shallot, minced
  • 2 garlic cloves, minced
  • 2/3 cup Arborio rice
  • ½ cup white wine
  • 2 tablespoons Parmesan cheese (omit for vegan version)
  • Salt and pepper, to taste
  • Rosemary and thyme for garnish
