Lamb Stuffed Mediterranean Peppers

I’m not going to lie, I didn’t love stuffed peppers when I was younger. However, as I realize that there are multiple ways to make them, like these Tex-Mex Stuffed Peppers and this recipe for Lamb Stuffed Mediterranean Peppers I’m about to share, I’ve come around on how awesome they can really be!

This recipe is based off one a friend gave me years ago that I used to make Mediterranean Stuffed Mini Peppers. The recipe was so darn good, I figured it was about time I shared a main-meal version!

Ingredients:

  • 6 bell peppers, tops removed and seeded
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 garlic cloves, minced or pressed
  • 1 lb ground lamb
  • 1  teaspoon cinnamon
  • 1 teaspoon cumin
  • 1/2 teaspoon cloves
  • Salt and pepper, to taste
  • 2 plum tomatoes, seeded and chopped
  • 2  tablespoons tomato paste
  • 1/2 cup golden raisins
  • 1/4 cup toasted pine nuts
  • 1 cup cooked farro (substitute rice to make gluten free)
  • 1/2 cup Feta, crumbled (omit to make dairy free)

Farro with Vidalia Onion and Asparagus

Note: I was sent a box of Vidalia onions to make this post for Farro with Vidalia Onion and Asparagus. Opinions are mine alone.

I’m still working through my box of Vidalia onions. No complaints here, they are incredibly versatile! These sweet onions are perfect for low and slow cooking that allow the sugars to caramelize and develop another layer of flavor.

I know it’s difficult to even see the Vidalia onions in the final photos of this Farro with Vidalia Onion and Asparagus, but I promise you, they are the star of this dish — their flavor is in each and every bite, and results in one of the best sides I’ve made in a long time!

This recipe for Farro with Vidalia Onion and Asparagus from Trisha Yearwood is definitely a keeper. Plus, it comes together pretty easily!

Winter Risotto with Farro and Arborio Rice

A couple of weeks ago, I was invited on a Chevy Farm-to-Table Road Trip, which was SO much fun! Chauffeured in snazzy Chevrolets, the group first went to Terrain in Glen Mills for lunch at their cafe and then went wine tasting down the road at Chaddsford Winery. All of the food was fantastic at Terrain, but I cannot stop thinking about their fabulous Farro and Arborio Risotto with sweet potato puree and autumn vegetables. So, naturally, I decided to try to make my own version! This recipe is pretty involved but it sure is worth it!

This recipe can be easily made vegan (noted below) and is vegetarian if vegetable stock is used instead of chicken stock. This recipe, however, is not gluten free because farro does contain some gluten. 

 

Ingredients:

Veggies:

  • 2 cups peeled and cubed butternut squash
  • 1 cup halved Brussels sprouts
  • 3 Sweet potatoes, divided
  • 2 Shallots, halved
  • 2 tablespoons olive oil
  • 1/2 tsp fresh thyme leaves
  • 1/4 teaspoon fresh chopped rosemary
  • Salt and pepper, to taste
  • 2 tablespoons unsalted butter (or margarine to make vegan)

Risotto

  • 3 cups water
  • 1 cup uncooked farro
  • 6 cups chicken stock (or vegetable stock to keep vegetarian)
  • 2 tablespoons olive oil
  • 1 large shallot, minced
  • 2 garlic cloves, minced
  • 2/3 cup Arborio rice
  • ½ cup white wine
  • 2 tablespoons Parmesan cheese (omit for vegan version)
  • Salt and pepper, to taste
  • Rosemary and thyme for garnish

Farro Berry and Walnut Salad

This recipe from Cooking Light is actually supposed to be a side dish. But I thought this Farro Berry and Walnut Salad would make a great summer lunch! I have been looking for something that can be made the night beforehand and transports easily so this salad seemed perfect. I added in some blueberries because my boyfriend is allergic to cherries and I wanted him to still be able to enjoy a fruit within the salad (he’s fine with cherries being in something, he just has to pick them out).

 

 

Ingredients:

  • 5 cups water
  • 1 1/2 cups uncooked farro
  • 1/2 teaspoon salt, divided
  • 3/4 pound sweet cherries, pitted and halved (about 2 cups)
  • 1/3 cup blueberries
  • 2/3 cup diced celery
  • 1/2 cup coarsely chopped walnuts, toasted
  • 1/4 cup packed fresh flat-leaf parsley leaves
  • the juice of one lemon (about 2-3 tablespoons)
  • 1 tablespoon whole-grain Dijon mustard
  • 1 tablespoon honey (or agave nectar)
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoons extra-virgin olive oil

Mediterranean Stuffed Mini Peppers

I am less than one month away from attending Eat Write Retreat in Philadelphia and am getting so excited for it! Not only is the lineup awesome, but I get to meet a ton of other bloggers, what could be better? As we get closer to the big weekend, the attendees were sent a secret ingredient and were asked to try to incorporate into an appetizer recipe. I received California raisins, which people tend to think of more for sweet foods, but play off savory dishes oh so well. It goes without saying that I haven’t been able to get California Raisins’ classic commercial out of my head since I received them! OXO generously also sent us a few spiffy tools to help create our recipe; I can never have enough of their products!

Raisins are a great addition to a meal to add some sweetness without any added sugar. The dried fruit is loaded with antioxidants and fiber while being fat free and cholesterol free. Did you know that one serving of raisins (just 1/4 cup) has more potassium than a banana?

 I have a friend that absolutely raves about Mediterranean Stuffed Peppers that her grandmother used to make for her, with rice, nuts, spices, and golden raisins. I decided to make an appetizer version, using mini sweet peppers. My version of these Mediterranean Stuffed Mini Peppers are stuffed with a lamb-farro mixture that includes tomatoes, raisins, pine nuts, and a touch of lemon zest (using my new snazzy OXO zester (paid link)). The peppers are then topped with feta cheese and broiled to make this recipe for Mediterranean Stuffed Mini Peppers!

Ingredients (serves 8):

  • 16 mini sweet peppers, seeded
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped (no more than ½ cup)
  • 2 garlic cloves, minced
  • ½ lb ground lamb
  • 2/3  teaspoon cinnamon
  • 1/3 teaspoon cumin
  • Salt and pepper, to taste
  • 1 plum tomatoes, seeded and chopped
  • 1  tablespoon tomato paste
  • the zest of 1 lemon
  • 2 tablespoons golden raisins
  • 2 teaspoons raisins
  • 2 tablespoons toasted pine nuts
  • ½ cup cooked farro – I used Tuscan Fields vegetable farro
  • ¼ cup Feta, or to taste

Wild Mushroom Farro Risotto

I’ve made a couple of farro recipes on this blog before and I just love it. If you haven’t tried it yet, I strongly suggest it. I really like it as a substitute for Arborio rice in risotto dishes; farro adds a nice bite to the creamy risotto that I just love.

So I was super excited when Tuscan Fields, a delicious brand of organic farro, gave me and 49 other bloggers the opportunity to not only try their farro, but to create a recipe using the farro in the hopes of winning a scholarship to the Eat Write Retreat conference this year which is being held in my hometown of Philadelphia!

The nutty flavor of farro would be perfect with the earthiness of mushrooms so I decided to make a wild mushroom farro risotto with Tuscan Fields’ Farro Perlato. I added a bit of bacon to really heighten the flavor of the risotto as well.

Ingredients:

  • 1 package Tuscan Fields Farro Perlato
  • 2 cups beef broth
  • 4 slices bacon
  • 2 tablespoons butter, divided
  • 2 large shallots, finely chopped
  • 2 garlic cloves, minced
  • ½ teaspoon dried sage
  • ½ teaspoon dried thyme
  • ½ cup dry white wine
  • 1 tablespoon olive oil
  • 1 lb assorted wild mushrooms
  • Salt and pepper, to taste
  • 1/3 cup grated parmesan cheese, plus more for garnish
  • Fresh sage and thyme, chopped, for garnish

Duck Breasts with Cider-Farro Risotto

So, I found myself in the odd position of craving farro. Yes, farro. So after some searching, I came across a Cooking Light recipe that sounded fantastic. The recipe not only has farro, but it also uses apple cider (how autumnal!) AND it’s a risotto! I’ve never thought of using farro in a risotto but, better late than never.

 

 

Ingredients:

Risotto:

  • 1 cup farro
  • 1.5 cups fat free, less sodium chicken broth
  • 1.5 cups apple cider
  • 1 tablespoon butter
  • 1 cup chopped fennel bulb (1 small fennel bulb should cover you)
  • 3/4 cup dry white wine
  • 1/2 cup water (if needed)
  • grated lemon rind from one lemon
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground cinnamon

Duck:

  • 4 6-ounce boneless duck breast halves, skinned
  • 1/2 teaspoon salt
  • 1/2 teaspoon chopped fresh thyme
  • 1/4 teaspoon freshly ground black pepper
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil, divided

Mushroom, Green Bean, and Farro Salad with a Poached Egg and Warm Bacon Vinaigrette

One of the highlights of the Kennett Square Mushroom Festival was catching a cooking demonstration by Antonia Lofaso of Top Chef. She made this wonderful mushroom and green bean salad with a poached egg and bacon vinaigrette. How fantastic does that sound? I didn’t have any arugula on hand, which was in Chef Antonia’s recipe, so I decided to sub in farro instead. (Farro is a grain that you cook like rice). I also kinda sorta forgot how she made most of the stuff, but it still turned out great. This is also the first time I’ve ever poached an egg because I’ve been terrified to do so but it was much more simple than expected!
Ingredients:
2 cups water
1 cup farro
1 garlic clove, minced
1 shallot, minced
8 ounces mushrooms, chopped (if you can, go for some wild mushrooms)
Salt and pepper, to taste
1/2 pound green beans, trimmed, and cut into bite sized pieces
3 strips bacon, finely chopped
3 tablespoons olive oil, divided
3 tablespoons apple cider vinegar, plus 1 teaspoon, divided
1 teaspoon Dijon mustard
4 eggs

Begin by cooking your farro. Bring the 2 cups water and 1 cup farro to a boil in a pot. Cover, reduce the heat, and cook for 20 minutes or until the water has evaporated.
Also bring another pot of water to a boil. Liberally salt the boiling water (Chef Antonia says that your water should “taste like the ocean”). While waiting for the water to boil, prepare your green beans and mushrooms. Add the green beans to the water for 3 minutes. Remove with a slotted spoon and reserve. Keep the water at a simmer (you’ll use it again soon).
Finely chop the bacon and add to a saute pan over medium high heat.
Cook until the bacon begins to brown and crisp.  Remove from heat, reserve the pan.
Add the olive oil, 3 tablespoons cider vinegar and Dijon mustard to the bacon and whisk to combine. Set aside.
Return the saute pan to the stove and heat 1 tablespoon olive oil over medium heat. Add the shallot and garlic and cook for 1 minute. Add the mushrooms and season with salt and pepper. Cook until the mushrooms give off some water and it evaporates. Remove from heat.
Combine the green beans, farro, and mushrooms.
To poach the eggs, add 1 teaspoon of the cider vinegar to the simmering water. Drop the eggs in one at a time.
Cook for 3 minutes and remove with a slotted spoon.
Top the green beans, farro, and mushroom mixture with the poached egg. Drizzle with the bacon vinaigrette.
The textures of this dish are fantastic. Farro has the texture of a more al dente rice, which was really nice with the crunchy green beans and the meaty mushrooms.

The bacon vinaigrette set this dish right over the top. Little bites of smokiness were an awesome touch. This is definitely a winning dish!
