Prosciutto Asparagus and Quail Egg Tarts

I love a recipe that looks fancy, but really takes minimal effort, like this recipe for Prosciutto Asparagus and Quail Egg Tarts, adapted slightly from a Spring Creek Quail Farms recipe, created by Chef Andrea Monzon. When Spring Creek Quail Farms contacted me with a bunch of quail egg recipes, I jumped at the opportunity!

Ingredients:

  • 1 sheet puff pastry
  • 1 (4 oz log) goat cheese
  • ~40 pencil asparagus spears
  • 4 slices prosciutto, torn into pieces
  • 1 tablespoon milk
  • 8 quail eggs
  • chives, chopped, to taste

Grilled Salmon and Asparagus Foil Packets

I absolutely love grilling. When given the chance, I’d choose it over cooking on the stovetop or in my oven. So I am thrilled that the weather is turning and I can get back to using my favorite appliance as much as possible. To start the season off, here’s a recipe for Grilled Salmon and Asparagus Foil Packets that tastes awesome and is super easy to clean up!

This recipe is also really adaptable, so I’ve given a couple of suggestions below, but definitely make this your own!

Ingredients (serves 2, multiply as needed):

  • 2 (8 oz) salmon fillets
  • salt and pepper, to taste
  • 1 lb asparagus, woody ends removed
  • 2 tablespoons olive oil
  • one lemon, divided
  • 1 teaspoon hot sauce or your favorite mustard
  • 1 shallot, minced
  • 3 garlic cloves, minced or pressed
  • 4 tablespoons unsalted butter, cut into small pieces
  • fresh parsley, for garnish

Farro with Vidalia Onion and Asparagus

I’m still working through my box of Vidalia onions. No complaints here, they are incredibly versatile! These sweet onions are perfect for low and slow cooking that allow the sugars to caramelize and develop another layer of flavor.

I know it’s difficult to even see the Vidalia onions in the final photos of this Farro with Vidalia Onion and Asparagus, but I promise you, they are the star of this dish — their flavor is in each and every bite, and results in one of the best sides I’ve made in a long time!

This recipe for Farro with Vidalia Onion and Asparagus from Trisha Yearwood is definitely a keeper. Plus, it comes together pretty easily!

Spring Vegetable Penne with Lemon Cream Sauce

This time of year delivers some pret-ty great produce. All of the green veggies are in season! This recipe from Cooking Light for Spring Vegetable Penne with Lemon Cream Sauce makes the most of some spring vegetables, asparagus and peas.

The pasta recipe is a “two pot meal” so it comes together pretty quickly without giving you too make dishes afterwards!

Ingredients:

  • 1 tablespoon extra-virgin olive oil
  • 1 Vidalia or other sweet onion, chopped
  • 1 (10-ounce) package presliced mushrooms
  • 1 tablespoon chopped fresh thyme
  • 2 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup half-and-half
  • 1 cup fresh or frozen green peas
  • 1/4 cup plus 2 tablespoons shaved Parmesan cheese, divided

Butterfly Shrimp over Asparagus Pasta

We all have nights that you don’t have time to run to the grocery store before heading home for dinner. These nights happen to me more than I’d like to admit, but I try to keep myself prepared for them by keeping my freezer stocked and my pantry full.

This recipe for Butterfly Shrimp over Asparagus Pasta is a great “pantry meal;” almost all of the ingredients are made with things from your freezer or ingredients you almost always have on hand. The star of the recipe is those deliciously breaded SeaPak® butterfly shrimp on top of the pasta, because, let’s be honest, most dinners are better with a little bit o’ shrimp!

I picked up a Party Size box of SeaPak Butterfly Shrimp from my local Walmart, which you can find in the freezer section. (There are a few SeaPak varieties available, so for good measure, I also grabbed a Party Size box of Coconut Shrimp, yum!) Walmart may not typically be your first thought for frozen section seafood products, but SeaPak delivers solid quality seafood in a bunch of varieties (plus, they are super tasty). To save even more, there is a coupon for $0.75 off any SeaPak product available now!

The party size is great because you can either serve a crowd easily, or make as much as you want and freeze the rest for later. One box delivers 7 servings, so my fiance and I have them on hand for multiple meals!

 

Ingredients (serves 4):

  • 1/2 of the party size box of Seapak Butterfly Shrimp
  • 1/2 box (~6 oz) spaghetti
  • 1 8 oz package frozen asparagus spears
  • 4 tablespoons unsalted butter
  • salt and pepper, to taste
  • 1/2 cup chicken or vegetable broth
  • 1/4 cup heavy cream
  • 1/4 cup shaved Parmesan cheese
  • the juice of 1/2 lemon (save the other 1/2 for serving)
  • 1/4 cup parsley, chopped (optional)

Cook pasta according to package directions for “al dente.” Drain, saving about 1/3 cup of the pasta water. Set aside.

While waiting for the pasta to cook, bake the butterfly shrimp. Preheat your oven to 425°f. Add half of the shrimp in a single layer to a baking sheet. When the oven is preheated, add to the oven on the middle rack. Bake for 11-12 minutes, turning the shrimp over half way through.

Steam the frozen asparagus according to package directions, but cook for only half the time given on the package (they will finish cooking in the dish). Remove, and when cool enough to do so, chop into bite sized pieces (about 1 inch long).

Add the butter to a large saute pan over high heat. When melted, add the asparagus, stirring to coat.

Season with salt and pepper and cook for 2 minutes. Add in the broth and pasta. If there doesn’t seem to be enough liquid, add a bit of the reserved pasta water until you think there is enough liquid. Cook for another minute, stirring to combine.

Add in the heavy cream and Parmesan cheese, stirring to evenly coat everything in the mixture. Remove from heat and squeeze the lemon juice over the dish.

If using, sprinkle with parsley and mix to combine. Spoon into 4 separate bowls and top with the SeaPak butterfly shrimp.

What I like best about this recipe is that you can adjust it to substitute whatever you have on hand! Throw in some frozen peas or broccoli instead of the asparagus, or use a different type of pasta (rotini? bowties? whatever you want!). Just don’t forget the shrimp on top!

Grilled Citrus Salmon

Lemony Chicken Fricassee with Shallots and Morel Mushrooms

When making dinner on weeknights, I am always looking for a recipe that I can have made in 30 minutes or less. But that doesn’t mean I’m willing to compromise on flavor! This Food and Wine recipe braises the chicken in a shallot and more sauce and then is topped off with some lemon juice. Serve it with steamed asparagus for a delicious spring-themed dinner!

Asparagus with Tomato and Feta

It can be tough to prepare a side dish to go with your dinner on busy weeknights. It’s just one more step you probably don’t want to deal with when you get home and you just want to eat. But this recipe for Asparagus with Tomato and Feta is so simple, you can easily make this delicious side to go with sauteed chicken breasts or seared salmon in no time!

This side can be made in about 15 minutes and cooks in the oven, leaving the stovetop free for you to cook the rest of your meal.

Cedar Plank Fired Salmon

As the weather cools down, I want more and more comfort food. I gravitate towards pastas, all forms of a warm meal, and food with a little spice to it to keep me feeling toasty, like this Cedar Plant Fired Salmon.

Carrabba’s must know I’m not alone. They have recently launched a new Fire Finished menu and I was lucky enough to do a tasting of it! Last week, I  headed over to a local Carrabba’s and tried the following:

  • Fire Roasted Mushrooms stuffed with sausage, red bell peppers, fennel, sauteed onions, brioche breadcrumbs, artichoke hearts, and romano cheese.

  • Cedar Plank Fired Salmon first pan-seared then topped with a crab cake and fire-roasted on a cedar plank then finished off with a lemon butter sauce. Served with roasted asparagus mushrooms and red bell peppers.

  • Bistecca Ardente: Center-cut sirloin wood-grilled then topped with blue cheese, roasted tomatoes, and basil.

  • Rigatoni al Forno: Rigatoni tossed in housemade marinara sauce, romano and mozzarella cheese and topped with Italian fennel sausage, mozzarella and fresh ricotta cheese finished off in a wood-burning oven.

  • Nonna Testa: Penne pasta with wood-grilled chicken in a housemade pesto cream (basil, pine nuts, walnuts) with spinach and zucchini, topped with mozzarella and baked in a wood-burning oven.
  • Creme Brulee prepared with Madagascar vanilla bean topped with torched turbinado sugar, whipped cream, and strawberries.

The fire-roasted mushrooms were a great start to the meal. I love fennel so I was happy this flavor came through. The mixture is lightly stuffed in the mushrooms so they remain nice and light. Really tasty!

The cedar plank-fired salmon was one of my favorite dishes. I loved it so much, I tried to recreate it! The salmon was perfectly cooked and the crab cake was a great addition. The cedar flavor shown through without being overpowering. Check out my recipe below to make at home.

The Bistecco Ardente was so juicy, especially for being cooked to medium-well. The blue cheese can be a tad overpowering though so I scooped a bit off so that I could get the taste of the steak, tomatoes, and basil as well.

The Rigatoni al Forno gave me more of my beloved fennel flavor. I liked that the pasta on top got crispy from the wood-burning oven, but would’ve liked more sauce to complement the pasta.

Nonna Testa was another of my favorites. Man this was good. The wood-grilled chicken was really juicy and flavorful and there was the perfect amount of pesto cream on the pasta (lightly dressed so it’s not overly heavy). I love spinach and zucchini so I couldn’t have been happier with this dish!

Now I’m pretty sure I’ve never met a creme brulee I didn’t like but this version was really really tasty. The vanilla flavored custard was so creamy and I loved the light touch of torched sugar to give a very thin crust to the dish without overpowering the custard with too much sugar.

Needless to say, I left super full and really happy with the tasting. The staff at the Springfield Carrabba’s were so attentive and helpful too! Thanks for a great meal!

CRABCAKES (makes 9, only use 2 and save the rest for up to one day):

  • 1 red bell pepper, finely diced
  • 1/2 small onion, diced
  • 1 lb jumbo lumb crab meat
  • 1/3 cup panko
  • 1/2 cup mayo
  • 1 tablespoon Old Bay seasoning
  • 1/4 teaspoon ground pepper
  • the zest of one lemon

CEDAR PLAN FIRED SALMON

  • 1 tablespoon butter
  • 2 8-oz salmon fillets
  • salt and pepper, to taste
  • 1 cedar plank board

LEMON BUTTER SAUCE

  • 1 stick (8 tablespoons) butter, divided (I used ghee, a clarified butter)
  • 1/2 onion, diced
  • 2 garlic cloves, smashed
  • 1/3 cup white wine
  • the juice of two lemons

Seared Wild Striped Bass with Sauteed Spring Vegetables

Spring has some of the best vegetables and it’s about time I put some of them to use! Anne Burrell has this fantastic recipe for Seared Wild Striped Bass with Sauteed Spring Vegetables using some of bright green veggies available right now and pairs it with a method for cooking seared wild striped bass that gets the skin super crispy without it curling up.

Seared Scallops and Steak with Manhattan Sauce

I tend to make dinner based on what I’m in the mood for and my boyfriend just has to at least pretend to enjoy it. That involves a lot of fish, pasta, and rice which I’m sure can get a bit boring. So I thought it might be nice if I finally made some steak. But, naturally, I still included some scallops, because I’m still the one cooking! This recipe for Seared Scallops and Steak with Manhattan Sauce from Rachael Ray is simple, quick, but absolutely delicious. It’s a perfect date night meal.

Ingredients (serves 2):

Summer Lemon-Vegetable Risotto

As I hear rumblings of all things pumpkin just around the corner (yay!), I realized that my days of beautiful, fresh vegetables are numbered (boo). Which means I needed a recipe that used some of summer’s best. This risotto recipe from Cooking Light fit the bill: Asparagus, Sugar Snap Peas, Zucchini, Yellow Squash.. mmm.
Ingredients:
  • 8 ounces asparagus, trimmed and cut into 1-inch pieces
  • 8 ounces sugar snap peas, trimmed and cut in half
  • 5 teaspoons extra-virgin olive oil, divided
  • 1 (8-ounce) zucchini, halved lengthwise and cut into 1/2-inch-thick slices
  • 1 (8-ounce) yellow squash, halved lengthwise and cut into 1/2-inch-thick slices
  • 4 3/4 cups organic vegetable broth
  • 1/2 cup finely chopped shallots

Grilled Duck with Warm Mushroom Salad and Truffle Vinaigrette

Happy Memorial Day weekend! Grilling is synonymous with Memorial Day in my mind, so I was so happy to receive a Grilling Cookbook from Cooking Light a few days ago.  The cookbook: Cooking Light Way to Cook Grilling: The Complete Visual Guide to Healthy Grilling is pretty darn snazzy. The photos are gorgeous, so um, please don’t compare my crummy photos for this recipe to the ones in the book, that will make me sad. Anyways, when I saw a recipe for grilled duck, I wanted to try it. I love duck, it’s a go-to for me at restaurants. But, I’m beyond terrified to cook it myself. It’s a tough meat to cook, and if overcooked, can be super crummy. Plus, it’s not exactly cheap! But grilling? I think I can handle that…
This recipe sounded like it was written just for me and my boyfriend. Before even opening the cookbook this was our conversation:
“We should try grilling a meat we’ve never made before, I’m not in the mood for a normal burger”
“Yeah, and maybe we can grill up some asparagus and mushrooms as well. I do want a meat as part of the meal though.”
We turn to this recipe, which managed to incorporate all of our requirements, and we were sold. The only thing we weren’t sold on? The marinating time. The original recipe suggested marinating the duck overnight, up to two days. We wanted duck, and we wanted it well before tomorrow, so our marinating was closer to 3 hours instead. There are also some pretty pricey ingredients in this dish, so this would definitely be a special occasion type of meal.

 

Ingredients:
  • 2 tablespoons chopped fresh rosemary
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon olive oil
  • 4 (6-ounce) boneless duck breast, skinned
  • 3 garlic cloves, minced
  • 1/2 teaspoon salt, divided
  • 1/4 teaspoon freshly ground black pepper, divided
  • Cooking spray
  • 3 cups thinly sliced shiitake mushroom caps (about 5 ounces)
  • 2 cups thinly sliced portobello mushroom caps (about 5 ounces)
  • 3/4 cup (1/4-inch) diagonally cut asparagus
  • 1 1/2 tablespoons Champagne vinegar
  • 1 1/2 teaspoons truffle oil

Creamy Spring Pasta

I was talking to my mom on the phone earlier this week and she mentioned she was making a creamy pasta with peas (her favorite) for dinner. Naturally, I had some taste bud jealousy and decided that I needed to have that as well this week. Cooking Light’s most recent issue had this Creamy Spring Pasta which sounded fantastic so I was able to!
Ingredients:
3 quarts water
2 ounces French bread baguette, torn into pieces
1 tablespoon butter
3 garlic cloves, minced and divided
1 batch of asparagus, cut diagonally into two inch pieces
1 cup frozen peas and carrots mixture
6 ounces fresh spinach fettuccine
2 teaspoons olive oil
1/3 cup finely chopped sweet onion
1 tablespoon all-purpose flour
1/4 cup fat-free, lower-sodium chicken broth
1 cup 1% low-fat milk
3 ounces 1/3-less-fat cream cheese
1 ounce Parmigiano-Reggiano cheese, grated (about 1/4 cup packed)
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 tablespoons chopped fresh tarragon

Bring 3 quarts of water to a boil in a large pot. Add the torn bread to a food processor (I just used my Magic Bullet) and process until it becomes coarse crumbs.
Melt the butter in a large saute pan over medium heat. Add one minced garlic clove to the pan and cook for 1 minute.  Add the breadcrumbs and cook for 3 minutes, sitting frequently. Remove from pan and set aside. Wipe the pan down so that you can use it again.
Your pot should now be boiling. Add the asparagus and peas and carrots to the boiling water and cook for 3 minutes.
Use a slotted spoon to remove from the water (you need the water to cook the pasta). Add the vegetables to a colander and rinse with cold water.
Add the olive oil to the saute pan over medium heat. Add the onion and garlic cloves and cook for 3 minutes, stirring frequently. While the onion and garlic are cooking, add the flour to a small bowl and gradually whisk in the chicken broth. Add this to the saute pan. Also stir in the milk, stirring constantly. Bring to a boil, reduce heat and cook for 1 minute.
Add the pasta to the boiling water. Cook for 2-3 minutes. Drain and reserve.
Remove the milk mixture from heat. Add the Parmesan cheese, cream cheese, salt and pepper, stirring until the cheeses melt.
Add the pasta and reserved vegetables and toss to coat.
Sprinkle with breadcrumbs and tarragon and serve.

The sauce does a really great impression of a cream sauce. I honestly don’t think I’d be able to tell the difference between this sauce and one made with heavy cream.
I wish I had added some of the tarragon to the sauce as well to get more of that flavor, but it was still nice as little bites of tarragon flavor.
Asparagus this time of year is just perfect. It was still crisp and bright so it stood out through the cream sauce.
And the toasted bread crumbs were awesome. An extra crunch to top off the dish!

Pecan Crusted Halibut with Roasted Asparagus and Potatoes

I have a confession. Despite cooking most nights a week (and making leaps and bounds over the past year and a half as to what I am able to cook) I still struggle to pull an entire meal together at one time, i.e. a protein and two sides. Unless it is a one-pot kind of meal, I tend to just make the protein and be done with it, or I make a huge batch of the side and have that as my dinner. So with Cooking Lightt’s April issue including 40 Meals Under 40 Minutes, I thought it was the perfect opportunity to tackle making an entire meal. I used their Hazelnut-Crusted Halibut with Roasted Asparagus and Roasted Red Potatoes as a base for this meal – Pecan Crusted Halibut with Roasted Asparagus and Potatoes.
Ingredients:
  • 1 tablespoon butter
  • 2 teaspoons extra-virgin olive oil, divided
  • 2 (6-ounce) halibut fillets, skin still on
  • 1 egg white, lightly beaten
  • Salt and pepper, to taste
  • 1/2 cup finely chopped pecans
  • 2 garlic cloves, thinly sliced
  • 1 pound asparagus, trimmed
  • Cooking spray
  • 1 teaspoon chopped fresh thyme
  • 2 lemon wedges
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 2 shallots, thinly sliced
  • 2 handfuls of small potatoes (I used red, fingerling, and purple) – Very scientific, I know
