Seared Tuna with Orange Fennel Salad

About a year and a half ago, I was sent an affiliate box from Sitka Salmon Shares, and I loved the quality of the seafood so much that I have had a Premium Seafood Subscription Box ever since. I love the variety as well, but some of the seafood I am not as familiar with how best to cook it. Luckily, Sitka Salmon Shares has some seriously amazing recipes on their website, including this one for Seared Tuna with Orange Fennel Salad.

To make this recipe easier to come together, I strongly suggest using a mandoline (I love the one that comes in Oxo’s Mini Complete Grate and Slice Set [paid link]) to slice the fennel and red onion. I am quite accident prone, so I also strongly suggest purchasing a cut-resistant glove (paid link) so that you keep all of your fingers cut-free.

Ingredients:

  • 2 (8 to 10 ounce) portions albacore tuna
  • 3 1/2 tablespoons extra virgin olive oil, divided
  • 1 tablespoon ground coriander
  • salt, to taste
  • ground pepper, to taste
  • 1 large navel orange
  • 1 fennel bulb, trimmed and very thinly sliced
  • 1/2 red onion, very thinly sliced
  • 1/2 cup coarsely chopped pitted Castelvetrano olives (I like to keep half of them whole and chop the other half)
  • the juice of 1 lemon
  • 2 tablespoons reserved fennel fronds, plus more for garnish
  • 3 tablespoons freshly chopped parsley, plus more for garnish

Seared Scallops with Chestnut Puree

 I absolutely love scallops. My fiance on the other hand does not. So I rarely make them. But when I found myself with a fiance-free dinner recently, it was clear what I was going to make!
This recipe for Seared Scallops with Chestnut Puree from Cooking Light makes use of winter-y ingredients such as chestnuts and blood oranges to make a simple but seemingly fancy dinner.
 The scallops are seared and placed on a chestnut puree, then drizzled with a blood orange vinaigrette. I added some dandelion greens, which have a subtle bitterness to them that is a nice contrast to the sweet chestnut puree.
Ingredients:
  • 1 cup packaged precooked chestnuts
  • 1/2 cup packaged precooked chestnuts, finely chopped
  • 1 cup whole milk
  • 1/2 teaspoon kosher salt, divided
  • 1/2 teaspoon freshly ground black pepper, divided
  • 2 1/2 tablespoons fresh blood orange juice
  • 1 tablespoon red wine vinegar
  • 1 tablespoon olive oil
  • 16 diver sea scallops (about 1 1/2 pounds)
  • 1 tablespoon canola oil
  • 2 tablespoons unsalted butter
  • 1 1/2 teaspoons chopped fresh thyme

Seared Salmon Fillets with Orzo Pilaf

Now that Lent is in full swing, I thought I’d add even more salmon recipes to my blog. (If you haven’t picked up on it yet, I love salmon. I would eat it every day if I could.) This recipe from Cooking Light has a bit of a Mediterranean flare to it: a simple seared salmon filet over orzo pilaf with kalamata olives, roasted red peppers, and dill.

Ingredients:

  • 5 teaspoons olive oil, divided
  • 3/4 cup uncooked orzo
  • 1 1/2 cups unsalted chicken stock
  • 1/2 teaspoon salt, divided
  • 1/4 cup bottled roasted red bell peppers, thinly sliced
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons fresh lemon juice
  • 1 ounce chopped pitted kalamata olives
  • 4 (6-ounce) salmon fillets
  • 1/2 teaspoon black pepper

Seared Scallops with a Champagne Vanilla Butter Sauce

Cooking for your Valentine on February 14th and looking for something really different and fun? This recipe from Emeril Lagasse is perfect for a romantic dinner. I really wasn’t sure what to expect with Vanilla and Scallops, but it highlights the sweetness of scallops nicely.  I paired this with a champagne risotto based on a recipe from Giada de Laurentiis to make this recipe for Seared Scallops with a Champagne Vanilla Butter Sauce.

Ingredients:

For the risotto:

  • 2 thin slices prosciutto
  • 3 cups reduced-sodium chicken broth
  • 1 tablespoon olive oil
  • 1 shallot, finely chopped
  • 1 garlic clove, minced
  • 3/4 cup Arborio rice
  • 3/4 cup Champagne
  • 1/4 cup freshly grated Parmesan
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

For the Scallops:

  • 2 tablespoons minced shallots
  • 1 cup dry brut Champagne
  • 1/2 vanilla bean, split and scraped
  • 1/2 cup heavy cream
  • 1/2 cup (1 sticks), cold unsalted butter cut into small pieces, plus 1 tablespoon
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon freshly ground  pepper
  • 10 jumbo sea scallops, cleaned
  • 1 tablespoon olive oil
  • 2 tablespoons chopped fresh chives

Seared Steak with Mushroom Marsala Sauce

I live near-ish Kennett Square, PA, the “mushroom capital of the world.” For the last 28 years, Kennett Square has hosted an amazing Mushroom Festival the first weekend following Labor Day. I love this festival. There are cooking demonstrations, contests, farm tours, and of course, a ton of mushroom filled dishes. But honestly the best part of the festival is the ability to stock up on all different kinds of mushrooms.

So for the week following the Mushroom Festival each year, I gorge myself on all things mushroom. You may have noticed that each year this blog gets very fungi-filled in September. (Past posts: Mushroom Risotto, Mushroom Green Bean and Farro Salad with a Poached Egg and Warm Bacon Vinaigrette, and Slow Cooker Boeuf Bourguignon).

Beef and Mushrooms are really wonderful together, which is why you see them paired so often. To get the most flavor out of these ingredients, I wanted to sear steak (I used filet tail), cook the mushrooms in the same pan, and then make a sauce with some of the browned bits left in the pan.

I made this one-pot dish in a new offering from Calphalon and Williams-Sonoma: the Elite Nonstick line of pans. I received a 3-piece set which includes a 10″ Fry Pan and a 3 quart Saute Pan with a lid. These are some snaz-zy pans. I literally swooned when I opened them up. There are a bunch of great qualities to these pans that make them perfect for this recipe. Seared Scallops and Steak with Manhattan Sauce

I tend to make dinner based on what I’m in the mood for and my boyfriend just has to at least pretend to enjoy it. That involves a lot of fish, pasta, and rice which I’m sure can get a bit boring. So I thought it might be nice if I finally made some steak. But, naturally, I still included some scallops, because I’m still the one cooking! This recipe for Seared Scallops and Steak with Manhattan Sauce from Rachael Ray is simple, quick, but absolutely delicious. It’s a perfect date night meal.

Ingredients (serves 2):

  • Extra-virgin olive oil, for drizzling, plus 1 tablespoon
  • 2 New York Strip Steaks
  • 4 large diver sea scallops
  • Salt and pepper
  • 1 large shallot, chopped
  • 2 cloves garlic, chopped
  • 1/3 cup sweet vermouth
  • 2 tablespoons butter
  • 1/2 pound asparagus spears, trimmed
  • 1/2 lemon, juiced
  • 1 tablespoon chives

Seared Chicken with Avocado Salsa

I have inexplicably been picking up an avocado each and every time I buy groceries. I didn’t have a recipe for the avocados, I just kept buying them. I guess my subconscious really wanted one. So I finally sat down and found a recipe highlighting them: Seared Chicken with Avocado. I added some tomato to give it a bit more freshness but the rest of the recipe is pretty intact.
Ingredients:
  • 1 1/2 teaspoons blackened seasoning
  • 4 skinless, boneless chicken breast halves
  • 1 teaspoon coconut oil
  • 1 diced peeled avocado
  • 2 tablespoons chopped fresh cilantro
  • 1 jalapeño pepper, seeded and finely chopped
  • 2 tablespoons fresh lime juice (about 1 lime), plus the zest of the lime
  • 1/2 a tomato (or one plum tomato), diced
