Shakshuka

Shakshuka (or shakshouka) is an Israeli breakfast dish of eggs poached in a chunky tomato sauce with spices. It’s a favorite of mine, and easily works as a “breakfast for dinner” option for a busy weeknight.

This recipe can be easily customized to suit your tastes. My version below, adapted from a Cooking Light recipe, has a bit of a Middle Eastern take to it, but could also be made more Mediterranean by adding in olives and  fresh basil.

Shakshuka is awesome on it’s own, but is even better with pita or crusty bread, or spooned over rice to soak up the flavors of the dish.

Ingredients:

  • 1 tablespoon olive oil
  • 1 red bell pepper cut into thin strips
  • 1 green bell pepper cut into thin strips
  • 1 yellow or orange bell pepper cut into thin strips
  • 1 red onion, sliced
  • 3 garlic cloves, minced
  • salt and pepper, to taste
  • 1 (29 oz can) tomato puree
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • a few drops hot sauce, or to taste
  • 4 large eggs
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons crumbled feta cheese (omit to make dairy free)
  • 2 cups prepared white rice (optional)
  • pita or crusty bread for dipping (optional)

(note: this recipe is gluten free if served with rice rather than bread)

Lime-Teriyaki Salmon Rice Bowls

I posted a recipe for a Salmon Teriyaki Stir Fry a while back and was craving something similar but not the exact same recipe. I found this recipe for an Asian Salmon Bowl with Lime Drizzle on Epicurious and doctored it up to suit my tastes.

This rice bowl is super satisfying and comes together really quickly. Feel free to experiment with different mix ins and toppings!

Ingredients:

  • 1 cup cooked rice, white or brown
  • 2 teaspoons olive oil, divided
  • 1 package (8 ounces) sliced baby bella mushrooms
  • 1/4 teaspoon salt
  • 1 tablespoon unsalted butter
  • 2 large garlic cloves, minced
  • 1/2 teaspoon red pepper flakes
  • 1/3 cup pure maple syrup
  • 1/3 cup fresh lime juice
  • 1/3 cup reduced-sodium soy sauce (or coconut aminos to make gluten free)
  • 2 teaspoons cornstarch
  • 4 salmon fillets (4 ounces each)
  • 1 teaspoon olive oil
  • 1 package (5 ounces) baby spinach
  • 1 red bell pepper, chopped
  • 2 teaspoons black sesame seeds

Arroz con Pollo

I love cookbooks with contributions from different chefs. It adds variety to the cookbook and recipes within it. I always end up having such trouble choosing what recipe to make from a collaborative cookbook because each and every recipe sounds so tasty! Although one recipe in this specific cookbook did stand out to me: Arroz con Pollo.
Forty world class chefs have collaborated on a new cookbook, UNICHEF, to benefit the U.S. Fund for UNICEF, the Children’s Rights and Emergency Relief Organization. The United Nations Children’s Fund (UNICEF) works in 190 countries and territories worldwide to save and improve children’s lives by providing health care and immunizations, clean water, sanitation, nutrition, education, emergency relief, and more.
Each chef complements their recipe contribution with accompanying text sharing his or her personal relationship to food in formative years and the genesis of their life’s work. This cookbook contains recipes and stories from Marcus Samuelsson, Wolfgang Puck, Cat Cora, Jamie Oliver, Mario Batali, Michael Solomonov, and many others.

This recipe for Arroz con Pollo, contributed by Chef Ingrid Hoffmann, is a great Sunday meal. This Arroz con Pollo recipe takes a bit of time but makes a ton of food and has really amazing flavor. I adapted the recipe slightly but it’s mostly intact.

 Ingredients:

  • 2-3 pounds chicken breasts and thighs
  • 1 medium yellow onion, quartered, plus ½ yellow onion, thinly sliced
  • 1 cup homemade or canned low-sodium chicken broth (240 ml)
  • 1 cup beer (240 ml) (such as lager – I used Yuengling)
  • 3 tablespoons Delicioso Adobo (20 g) (recipe below)
  • 3 tablespoons Worcestershire sauce (45 ml)
  • 1 cup chopped fresh cilantro leaves (16 g)
  • 6 garlic cloves, roughly chopped
  • 2 cups uncooked white rice (370 g)
  • 1 cup fresh or frozen green peas (120 g)
  • 2 medium carrots, finely diced
  • 8 ounces green beans (240 g), trimmed and quartered

Cheese Ravioli with Pesto

I have another busy week this week so I needed some easy meals that can be prepared quickly. Pasta is usually a great option and this recipe for Cheese Ravioli with Pesto is no exception. It comes together in about 15 minutes!

 

I found this recipe on Cooking Light. The pesto is more of a “pesto” and stays pretty chunky. But don’t be fooled, those little flecks of green are packed with flavor!

 

Ingredients:

  • 1 (16-ounce) package frozen cheese ravioli
  • 2 cups fresh baby spinach
  • 1 cup fresh basil leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed red pepper
  • 2 garlic cloves
  • 2 tablespoons fat-free, lower-sodium chicken broth
  • 2 tablespoons olive oil

Jerk Chicken with Grilled Pineapple Salsa

I have been in full on grilling mode recently. I can’t seem to get enough of recipes made on the grill! So as the end of summer continues to creep closer, I am trying to get in all of the grilling I can. As much as I would love to grill in the colder months, I’m a wimp and know I just won’t stand out in the cold.

 

 

I’ve used indoor counter top grills in the past and really wasn’t thrilled with the cooking results — it didn’t seem to heat up enough to get proper grill marks, all of the juices would flow out of the grill making for a very dry protein, and I’d always under or overcook the meat.

So when I was contacted to test out the T-fal OptiGrill as part of T-fal’s OptiGrill Blogger Bash, I had some reservations about if this grill would really live up to expectations. Well, I was really pleasantly surprised! What sets the OptiGrill apart is its Precision Grilling Technology that adjusts the cooking time and temperature depending on the type of protein and the thickness of whatever you’re cooking.

The T-fal OptiGrill has a cooking level indicator  with a color changing display that notifies you when your protein has reached rare, medium, or well-done. It also beeps when your food reaches each of the cooking stages. (Keep in mind that if you want your meat to rest before slicing, it continues to cook. So if you wanted a steak at medium rare and planned to let it rest for 5 minutes, you should probably take it out when the OptiGrill hits the “rare” notification.)

The grill comes pre-programmed with 6 settings that adapt cooking temperature and times for different types of food: burger, poultry, sandwich, pork/sausage, red meat, and fish/seafood. There is also a frozen food function button so that you can cook your protein even when frozen; just push the snowflake button and then one of the 6 pre-programmed buttons.  The grill will defrost and cook the protein in one easy step! When cooking fruits and veggies, just use the manual mode, which allows you to determine when the food is done cooking. The OptiGrill also takes into account the thickness of your food using an integrated thickness sensor so that the protein is fully cooked correctly.

 

 

The grill is made of brushed stainless steel with die-cast aluminum plates with a non-stick coating. The plates are removable for easy cleaning and are even dishwasher safe. The plates are angled so that drippings can flow into the removable drip tray, which surprisingly doesn’t leave the meat tough, dry, or chewy.

 

 

Want to see the grill in action? I decided to test it out with a yummy recipe from Cooking Light that uses both chicken thighs and chicken breasts. Chicken is so easy to overcook leaving a dry meal so I thought it would be a perfect way to test what this grill can really handle. This recipe also includes grilled pineapple so I was able to test out the manual setting as well. I made the marinade from this recipe for Jerk-style Chicken and the salsa from this recipe for Jerk Chicken with Grilled Pineapple Salsa.

Spicy Flank Steak Tacos with Watermelon Salsa

When I first spotted this recipe in the August issue of Cooking Light, I knew I wanted to make it. I have never used watermelon in a savory recipe before and it sounded like a perfect summer dinner! This recipe comes together in no time (and is really simple to make), making it a great weeknight meal option.

 

 

The rub on the steak is only four ingredients: salt, black pepper, white pepper, and red (cayenne) pepper. If you don’t have white pepper you can just substitute in more black pepper. But each pepper does bring it’s own taste to the rub.

 

Black and white pepper comes from the same pepper plant but white peppercorns have the outer layer removed, leaving the seed inside. White pepper has a more subtle flavor than black pepper. Red pepper, or cayenne pepper, is ground from hot peppers so it has a nice level of heat to it. The three together add a nice spiciness to the steak without being overwhelming.

  • 1/2 teaspoon plus 1/8 teaspoon kosher salt, divided
  • 1/4 teaspoon freshly ground black pepper

Slow Cooker Chicken Chickpea Tagine

Tagine or Tajine dishes are Moroccan slow cooked dishes named after the pot they are cooked in. The dishes are typically a stew with a protein, spices, and fruit. Cooking Light had a version with chicken and chickpeas that sounds delicious. This recipe for Slow Cooker Chicken Chickpea Tagine combines both sweet and spicy elements to make a really flavor-filled dish.

This recipe takes a bit more prep time that my usual slow cooker recipes, so be prepared for that. This recipe is great for a Saturday: prepare everything in the morning, run whatever errands you have for the day, and come back to an amazing smelling kitchen and dinner mostly ready! I shredded my chicken and served it over couscous but you can keep the chicken whole and eat it as is.

Ingredients:

  • 1 1/2 tablespoons olive oil
  • 1 1/2 lbs boneless skinless chicken thighs
  • 1 1/4 teaspoons salt, divided
  • 1/2 teaspoon black pepper
  • 1 large or two medium onions (about 2 1/2 cups), chopped
  • 6 to 8 garlic cloves, minced
  • 1 1/4 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 3/4 teaspoon ground turmeric
  • 1/2 teaspoon ground ginger
  • 1 cup unsalted chicken stock
  • 1 1/2 teaspoons honey
  • 1 (3-inch) cinnamon stick
  • 2/3 cup dried apricots
  • 2 (15-ounce) cans chickpeas, rinsed and drained
  • 1/4 cup cilantro leaves, for garnish

Cedar Plank Fired Salmon

As the weather cools down, I want more and more comfort food. I gravitate towards pastas, all forms of a warm meal, and food with a little spice to it to keep me feeling toasty, like this Cedar Plant Fired Salmon.

Carrabba’s must know I’m not alone. They have recently launched a new Fire Finished menu and I was lucky enough to do a tasting of it! Last week, I  headed over to a local Carrabba’s and tried the following:

  • Fire Roasted Mushrooms stuffed with sausage, red bell peppers, fennel, sauteed onions, brioche breadcrumbs, artichoke hearts, and romano cheese.

  • Cedar Plank Fired Salmon first pan-seared then topped with a crab cake and fire-roasted on a cedar plank then finished off with a lemon butter sauce. Served with roasted asparagus mushrooms and red bell peppers.

  • Bistecca Ardente: Center-cut sirloin wood-grilled then topped with blue cheese, roasted tomatoes, and basil.

  • Rigatoni al Forno: Rigatoni tossed in housemade marinara sauce, romano and mozzarella cheese and topped with Italian fennel sausage, mozzarella and fresh ricotta cheese finished off in a wood-burning oven.

  • Nonna Testa: Penne pasta with wood-grilled chicken in a housemade pesto cream (basil, pine nuts, walnuts) with spinach and zucchini, topped with mozzarella and baked in a wood-burning oven.
  • Creme Brulee prepared with Madagascar vanilla bean topped with torched turbinado sugar, whipped cream, and strawberries.

The fire-roasted mushrooms were a great start to the meal. I love fennel so I was happy this flavor came through. The mixture is lightly stuffed in the mushrooms so they remain nice and light. Really tasty!

The cedar plank-fired salmon was one of my favorite dishes. I loved it so much, I tried to recreate it! The salmon was perfectly cooked and the crab cake was a great addition. The cedar flavor shown through without being overpowering. Check out my recipe below to make at home.

The Bistecco Ardente was so juicy, especially for being cooked to medium-well. The blue cheese can be a tad overpowering though so I scooped a bit off so that I could get the taste of the steak, tomatoes, and basil as well.

The Rigatoni al Forno gave me more of my beloved fennel flavor. I liked that the pasta on top got crispy from the wood-burning oven, but would’ve liked more sauce to complement the pasta.

Nonna Testa was another of my favorites. Man this was good. The wood-grilled chicken was really juicy and flavorful and there was the perfect amount of pesto cream on the pasta (lightly dressed so it’s not overly heavy). I love spinach and zucchini so I couldn’t have been happier with this dish!

Now I’m pretty sure I’ve never met a creme brulee I didn’t like but this version was really really tasty. The vanilla flavored custard was so creamy and I loved the light touch of torched sugar to give a very thin crust to the dish without overpowering the custard with too much sugar.

Needless to say, I left super full and really happy with the tasting. The staff at the Springfield Carrabba’s were so attentive and helpful too! Thanks for a great meal!

CRABCAKES (makes 9, only use 2 and save the rest for up to one day):

  • 1 tablespoon butter
  • 1 red bell pepper, finely diced
  • 1/2 small onion, diced
  • 1 lb jumbo lumb crab meat
  • 1/3 cup panko
  • 1/2 cup mayo
  • 1 tablespoon Old Bay seasoning
  • 1/4 teaspoon ground pepper
  • the zest of one lemon

CEDAR PLAN FIRED SALMON

  • 1 tablespoon butter
  • 2 8-oz salmon fillets
  • salt and pepper, to taste
  • 1 cedar plank board

LEMON BUTTER SAUCE

  • 1 stick (8 tablespoons) butter, divided (I used ghee, a clarified butter)
  • 1/2 onion, diced
  • 2 garlic cloves, smashed
  • 1/3 cup white wine
  • the juice of two lemons

Gazpacho with Grilled Pickapeppa Shrimp

Cooking Light’s August issue had a recipe for Pickapeppa Chicken and Mango Kebabs (that I plan on making soon) that required me to buy a bottle of Pickapeppa sauce. I had never heard of this sauce before and I was intrigued. It’s a Caribbean condiment referred to as “Jamaican ketchup” that is basically a sweeter A1 sauce, made with tomatoes, onions, mangoes, peppers, and other spices.

I thought this sauce sounded like it would be great on shrimp, so I decided to incorporate it into another Cooking Light recipe from the same issue: Gazpacho with Shrimp.

Ingredients:

  • 1 (10-ounce) container grape tomatoes, divided
  • 1 1/2 cups sliced English cucumber, divided
  • 1 cup diced red bell pepper, divided  (about 2 peppers)
  • 3/4 cup diced Vidalia or other sweet onion, divided
  • 3 tablespoons extra-virgin olive oil, divided
  • 2 tablespoons sherry vinegar
  • 5/8 teaspoon kosher salt, divided
  • 1/2 teaspoon freshly ground black pepper, divided
  • 3 garlic cloves
  • 1 (28-ounce) can San Marzano tomatoes, drained
  • The juice of one lemon
  • 1 garlic clove, minced
  • ¼ cup pickapeppa sauce
  • 20 medium shrimp, peeled and deveined (about 8 ounces)

Slow Cooker Marinara

Making a large batch of marinara sauce and freezing it for later use makes dinner on really hectic weeknights significantly easier. My mom used to make pots upon pots of tomato sauce during the first snow of the season which always made the house smell oh so good, especially after coming in from the cold. We haven’t had our first snow yet, but that’s not going to stop me from trying out this slow cooker marinara from Cooking Light. The sauce can be frozen and used for months.

The original recipe used fresh tomatoes but I hate peeling tomatoes and the plum tomatoes this time of year just aren’t very attractive. So I used the next best thing, canned whole peeled plum tomatoes. If it’s summer when you make this, go for the fresh ones!

Ingredients:

  • 3 tablespoons extra-virgin olive oil
  • 3 cups chopped onion (about 2 onions)
  • 3/4 cup sliced carrot (about 2 carrots
  • 1/2 cup diced celery
  • 1/4 cup minced garlic (a good dozen garlic cloves)
  • 1 tablespoon dried oregano
  • 1/4 teaspoon crushed red pepper
  • 2 tablespoons unsalted tomato paste
  • 1/2 cup dry red wine (such as cabernet sauvignon)
  • 3 28 oz cans of Whole Peeled Plum Tomatoes
  • 2 dried bay leaves
  • 2 tablespoons chopped fresh oregano
  • 3/4 cup chopped fresh basil
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon freshly ground black pepper

Chicken Puttanesca with Angel Hair Pasta

I border on having an obsession with seafood. If I could eat it every night I would. (I have over 60 seafood recipes listed on this blog alone!) But I apparently have caused my boyfriend to be “fished out” so I decided to make a chicken dish with another favorite ingredient of his: olives. Pasta Puttanesca normally includes a tomato sauce with olives and capers. This Cooking Light version of Chicken Puttanesca is simplified to make it easy enough for a weeknight dinner.
Ingredients:

  • 8 ounces uncooked angel hair pasta
  • 2 teaspoons olive oil
  • 4 (6-ounce) skinless, boneless chicken breast halves
  • 1/2 teaspoon salt
  • 2 cups tomato-basil pasta sauce
  • 1/4 cup pitted and coarsely chopped kalamata olives
  • 1 tablespoon capers
  • 1/4 teaspoon crushed red pepper
  • 1/4 cup (1 ounce) pre-shredded mozzarella cheese
  • Chopped fresh basil

Wine Infused Thanksgiving Leftover Empanadas

One of the best parts of Thanksgiving doesn’t even take place on Thursday. I (and I’m assuming many others) look forward to the leftovers as much as the original meal. Friday always includes a Thanksgiving sandwich (which you can actually get a version of in Delaware all year long at Capriotti‘s called the “Bobby” mmm). Saturday tends to be my own version of the Wawa Turkey Bowl. By Sunday, I’m starting to run out of creative ways to mush my leftovers into a new meal.

The makers of Clos de los Siete came to my rescue! Clos de los Siete is an Argentine red wine that is made from seven vineyards in the foothills of the Andes. The wine is a mixture of 57% malbec, 15% merlot, 15% cabernet sauvignon, 10% syrah and 3% petit verdot that is a really nice complement to turkey. Azul Argentine Bistro in New York created a recipe that uses Thanksgiving leftovers along with some spices to create Wine Infused Thanksgiving leftover Empanadas, how fantastic does that sound?

Ingredients:

  • 1 green pepper, finely chopped
  • 1 red pepper, finely chopped
  • 1 medium white onion, finely chopped
  • 1 garlic clove, minced
  • 1 sweet potato, peeled and finely diced (about 1 cup)
  • 1 pound turkey breast, shredded (about 1 cup)
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 1 cup Clos de los Siete wine
  • 1-2 packages store-bought empanada discs (note: mine have annatto in them which is why they are orange)
  • 1 egg, lightly beaten
  • ¼ cup water

Salmon Teriyaki Stir Fry

 There is a good chance I have a rice problem, I love all things rice. My go-to meal in a pinch is always risotto. So when DailyBuzz Food had an opportunity to work with RiceSelect through their Tastemaker program, I jumped at the chance. RiceSelect is one of my favorite rice brands.  You may notice their nifty containers popping out of a bunch of my posts so I was really excited to work with their rice. The catch was that they sent me one of RiceSelect’s rice randomly, I didn’t get to choose it. When I opened up the package, I discovered brown rice. Hum. I’ve never worked with brown rice before, but I was up for the challenge!
I decided to make a stir fry teriyaki dish using my favorite protein, salmon. Normally stir fry is a quick dinner choice but brown rice takes quite a bit of time to cook. But it gives you plenty of time to prep your veggies and hang out with your dinner guests!
Ingredients: (I cut this recipe for Salmon Teriyaki Stir Fry down to two servings to make it easier. Multiply as needed)
  • 1/2 cup RiceSelect Texmati Brown Rice
  • 1 cup water
  • 1 tablespoon peanut oil
  • 1 medium yellow onion, chopped
  • 1 red pepper, chopped
  • 1/2 cup broccoli florets
  • 1/2 cup snow peas
  • 1/2 cup sliced water chestnuts (I used canned)
  • 1/2 pound salmon
  • 1/2 cup Teriyaki sauce, divided (recipe below)
  • 1/2 cup low sodium soy sauce
  • 1/4 cup water
  • 2 tablespoons rice wine
  • 1 tablespoon, plus 2 teaspoons brown sugar
  • 1/4 cup sugar
  • 1 1/2 teaspoons minced garlic
  • 1 1/2 teaspoons minced ginger
  • 1 tablespoon toasted sesame oil

Kung Pao Chicken Tacos

I have no idea who decided that different foods should get taco-fied, but I am all for this movement. I love tacos, and Cooking Light comes up with the best taco recipes. These Kung Pao Chicken Tacos are everything I want in a meal: quick and easy to make, colorful, a hint of spice, and full of many ingredients I already had on hand.
Kung Pao chicken is a spicy stir-fry Chinese dish that includes peanuts, vegetables, chili peppers, and chicken. It is usually served over rice, but Cooking Light took some inspiration from Korean taco trucks and added the Kung Pao chicken to corn tortillas.
Ingredients:
  • 6 skinless, boneless chicken thighs, cut into bite-sized pieces
  • 3 tablespoons lower-sodium soy sauce, divided (or coconut aminos to make gluten free)
  • 1/4 cup plus 1 1/2 teaspoons cornstarch, divided
  • 1/4 teaspoon kosher salt
  • 2 tablespoons canola oil, divided
  • 1 1/2 tablespoons honey
  • 1 tablespoon dark sesame oil
  • 2 teaspoons rice vinegar
  • 1 teaspoon sambal oelek (ground fresh chile paste)
  • 1 large garlic clove, minced
  • 3 tablespoons coarsely chopped dry-roasted peanuts
  • 3/4 cup diagonally sliced celery (about 2 stalks)
  • 8 (6-inch) corn tortillas
  • 1/3 cup sliced green onions
  • 1/2 medium red bell pepper, thinly sliced
  • 4 lime wedges

Shrimp Fried Rice

This dish for Shrimp Fried Rice is an attempt to make a takeout favorite a bit healthier. To do so, Cooking Light cut the amount of rice, added a bunch of veggies, and cut out some of the salt. So because of this, I think this recipe should more be called “Shrimp Fried Rice” (There’s a lot of shrimp, a little bit of fried, and an itty bit of rice. Have no fear, you won’t even miss it.)

Ingredients:
1 cup broccoli florets
7 teaspoons canola oil, divided
1 medium red bell pepper, cut into thin strips
1 medium yellow bell pepper, cut into thin strips
1 medium orange bell pepper, cut into thin strips
1 cup snow  peas, trimmed and halved crosswise
1 tablespoon grated peeled fresh ginger
1 cup cooked long-grain white rice, chilled
1 tablespoon dark sesame oil
1 pound peeled and deveined medium shrimp
1/4 cup lower-sodium soy sauce (or coconut aminos to make gluten free)
1 1/2 tablespoons rice vinegar
1 teaspoon Sriracha
1/4 cup thinly diagonally sliced green onions

This recipe works best with day-old rice but I didn’t have the foresight to do that. So I made my rice in my rice cooker and popped it in the refrigerator.
To make, bring a pot of water to a boil. Add the broccoli to a steam basket and steam over the boiling water for 4 minutes or until crisp-tender. (I cheated and steamed my broccoli in my rice cooker after making the rice).  Add to a large bowl.

Prepare your vegetables.

 

Add 1 teaspoon canola oil to  a saute pan over medium high heat. If you have a wok, use it here. If not (like me) just use your largest saute pan. Add the peppers and snow peas and stir fry for 2 minutes.

 

 

Remove the vegetables and place in a large bowl with the broccoli. Add 2 tablespoons canola oil to the pan and swirl to coat. Add the ginger, cooking for 10 seconds. Add the chilled rice and cook for 5 minutes or until the rice is lightly browned.
Remove the rice and add to the bowl with the vegetables.
Mix the soy sauce, vinegar and Sriracha in a bowl. Set aside.
Wipe the pan with paper towels and return to medium-high heat. Add the sesame oil (I used toasted sesame oil, you can use regular as well), and swirl to coat.  Add the shrimp and cook for 1-2 minutes, stirring constantly.
Stir in the soy sauce mixture and bring to a boil.
Cook for 3 minutes or until the liquid slightly thickens.
Add back in the vegetables plus the sliced green onions, stirring to combine. Cook for 1 minute and serve.
So easy right? And look at those beautiful colors!
There is a ton of flavor in this dish, and it ends with a slight spiciness. I would by no means call this a spicy dish though, it’s really great!
With so many vegetables in the dish, the rice became more a complement than the entire meal which was actually quite refreshing.
I wish I had taken the tails off the shrimp though, I wanted to just inhale this meal and the tails kept slowing me down!
