Cheese Ravioli with Pesto

I have another busy week this week so I needed some easy meals that can be prepared quickly. Pasta is usually a great option and this recipe for Cheese Ravioli with Pesto is no exception. It comes together in about 15 minutes!

 

I found this recipe on Cooking Light. The pesto is more of a “pesto” and stays pretty chunky. But don’t be fooled, those little flecks of green are packed with flavor!

 

Ingredients:

  • 1 (16-ounce) package frozen cheese ravioli
  • 2 cups fresh baby spinach
  • 1 cup fresh basil leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed red pepper
  • 2 garlic cloves
  • 2 tablespoons fat-free, lower-sodium chicken broth
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 2 plum tomatoes, diced
  • 3/4 cup shaved fresh Parmesan cheese, divided
  • 1/2 cup pine nuts, toasted, divided
  • Fresh basil leaves (optional)

Cheese Ravioli with Roasted Tomatoes

Ravioli is a favorite of mine for weeknight meals when you just don’t have the energy to cook. You just throw them in the pasta pot and then toss them in a sauce. This recipe involves a bit more than just reheating sauce from the freezer, but it’s still really simple. I love ravioli in a traditional tomato sauce so this recipe for Cheese Ravioli with Roasted Tomatoes sounded great!

Roasting tomatoes brings out flavor you never even knew tomatoes had. When paired with balsamic vinegar to balance out their sweetness, roasted tomatoes are truly delicious.

 

Ingredients:

  • 1 pound cherry tomatoes
  • 2 shallots, cut into wedges
  • Cooking spray
  • 3 tablespoons extra-virgin olive oil, divided
  • 2 tablespoons balsamic vinegar
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 12 ounces cheese ravioli
  • 2 tablespoons chopped fresh basil

Butternut Squash Agnolotti with Toasted Hazelnut Cream Sauce

What is it about nuts that go so wonderfully with pumpkin and butternut squash dishes? Walnuts, pecans, and hazelnuts just pair so nicely with the flavors of squash. When I first received Buitoni’s Butternut Squash Agnolotti, I knew I wanted to make a hazelnut cream sauce with it. Hazelnuts, like most nuts, taste significantly better when toasted. I have no idea why this is, but I feel the need to always heat nuts for a little while to increase the flavor.
Ingredients:
  • 1 package of Buitoni’s Butternut Squash Agnolotti
  • 1/2 cup hazelnuts, blanched
  • 1 stick of butter
  • 1/4 cup sweet vermouth
  • 1/2 cup heavy cream
  • 1/4 teaspoon cinnamon
  • a pinch each of ginger, allspice, and nutmeg (1/8 teaspoon or less)
  • Salt and pepper, to taste
  • Sage leaves, for garnish

Butternut Squash Agnolotti Pasta Salad with Walnuts, Golden Raisins, and Snow Peas

If you’ve been following my blog for a while, you might have picked up on my obsession with pumpkin and butternut squash. I attempt to limit my gourd intake to the September and October months, but every now and then I still need my fix outside of those months. Butternut squash seems to be more socially acceptable, especially in pasta form. Buitoni’s Butternut Squash Agnolotti is the perfect way for me to have this delicious ingredient year-round.
Agnolotti is just a type of ravioli. This specific agnolotti is a “half-moon pasta filled with oven-roasted butternut squash, Impastata Ricotta, aged Parmesan and Grana Padano cheeses, accented with amoretti cookie crumbs.  I traditionally use a brown butter sage sauce with butternut squash ravioli because they are a perfect pair. I wanted to try something a little different with this agnolotti, so I instead made a cold pasta salad. It has been so unbearably hot in Philadelphia that I thought this would be a perfect (and timely) twist.Also, don’t forget to enter my giveaway to win a bunch of Buitoni goodies and free Buitoni pasta!
Ingredients:
  • 1 package of Buitoni’s Butternut Squash Agnolotti
  • ½ cup butter
  • 1 shallot, chopped
  • 1 tablespoon fresh sage leaves, roughly chopped
  • ½ cup walnuts, toasted and roughly chopped
    A handful of golden raisins, or to taste
  • 1 cup snow peas
  • The juice of one lemon
  • Salt and pepper, to taste

Lobster Ravioli with Saffron Cream Sauce

Everyone needs a quick but really impressive meal in their cooking arsenal. My go-to is usually ravioli; it cooks in a few minutes and all you really have to do is make an awesome sauce.
You can make the meal in a half hour, and most of the ingredients are relatively easy to have on hand. (I know it’s a bit odd to have saffron threads in my spice collection but Trader Joe’s sells some that isn’t terribly expensive.) You can buy lobster ravioli if/when it goes on sale and store it in your fridge until needed which means this seemingly fancy recipe for Lobster Ravioli with Saffron Cream Sauce is actually a quick and easy dinner option!
I was pretty excited when I came across this recipe because it sounded amazing. Um, it was beyond amazing. Seriously. This is one of my favorite sauces I’ve ever made. Mmm. Ok, sorry. I should probably share it with you now.
  • 1/2 cup panko breadcrumbs, optional
  • 1 package lobster ravioli
  • 2 tablespoons butter
  • 1 shallot, minced
  • ½ cup dry white wine
  • 2 cups whipping cream
  • 2 pinches saffron threads
  • 1/2 teaspoon ground turmeric, optional
  • Salt and pepper to taste

Pumpkin Ravioli with Gorgonzola Sauce

Are you getting sick of my pumpkin recipes? I think this recipe for Pumpkin Ravioli with Gorgonzola Sauce actually brings me to over a dozen posts on pumpkin-flavored desserts/meals. I wasn’t lying when I said I was pumpkin obsessed! Anyways, I’ve been trying to make this recipe for Pumpkin Ravioli with Gorgonzola Sauce from Cooking Light for almost 2 weeks, but for the life of me could not find wonton wrappers. I finally just adapted the recipe to use fresh pasta sheets from By George in Reading Terminal.

Ingredients (makes 3 servings):
1 1/4 cups canned pumpkin
2 tablespoons panko breadcrumbs
2 tablespoons fresh grated Parmesan cheese
1/2 teaspoon salt
3/4 teaspoon minced fresh sage
1/4 teaspoon freshly ground black pepper
1/4 teaspoon ground nutmeg, divided
6 pieces of fresh pasta lasagna sheets, rolled thinner if desired (I used pumpkin pasta, no surprise there!) – about 1 lb.
1 cup fat-free milk
1 tablespoon all-purpose flour
1 1/2 tablespoons butter
1/2 cup (2 ounces) crumbled Gorgonzola cheese
1 tablespoon egg substitute or one egg, mixed
3 tablespoons hazelnuts, chopped
Fresh sage leaves for garnish

Note: It would be super helpful to have a ravioli stamp, (or ideally, to have a ravioli maker!) but you can get the same results by pressing firmly and separating using a knife.

 

To make the Pumpkin Ravioli with Gorgonzola Sauce, add a salted pot of water to your stove over high heat. Bring to a boil.

Begin by making the ravioli stuffing. Add the pumpkin, panko, Parmesan, minced sage, salt, pepper, and 1/8 teaspoon nutmeg to a bowl. Mix to combine.

If you’d prefer to make the pasta as thin as possible, use a rolling pin to roll out the dough even more. Place a generous teaspoon of the pumpkin mixture on one sheet of pasta, evenly spaced (I used my stamp as a guide). My sheets were able to hold about 6 teaspoons of the pumpkin mixture.
Using a brush, surround the pumpkin mixture with a thin layer of eggwash. This will help hold the pasta pieces together.

Place another lasagna sheet on top of the original sheet, covering the pumpkin mixture.

Using the ravioli stamp, press firmly around each pocket of pumpkin mixture. If you do not have a ravioli stamp, just use your hands.
Using a knife or a pizza cutter, cut the ravioli into individual pieces. Repeat with remaining pumpkin mixture and lasagna sheets.
Your pot should now be boiling. Add half of the ravioli to the pot. Cook for about six minutes or until the ravioli begins to rise to the top.
While waiting for the past to cook, make your sauce. Add the milk and flour to a saucepan, stirring with a whisk. Bring to a boil and cook for one minute until it thinks slightly.
 

Remove from heat. Add the butter, stirring until it fully melts. Stir in the crumbled Gorgonzola. Add more minced sage leaves if you’d like.

Add 6 ravioli each to three plates. Drizzle with 3 tablespoons  of the Gorgonzola sauce.  Add a teaspoon of chopped hazelnuts, a few sage leaves, and a sprinkle of nutmeg.

This Pumpkin Ravioli with Gorgonzola Saucewas pretty darn good. I think it could handle a boost in nutmeg though; there was something missing from the overall flavor of the dish.

I strongly suggest adding a lot of sage leaves to the plate, a bite of fresh sage with every forkful was delicious!
I liked using fresh pasta instead of wontons; wontons tend to break apart in the cooking process, especially with a heavier filling like pumpkin.
I wish I knew what ingredient would really kick this recipe up from good to great; please feel free to leave suggestions in the comments!

Sauces for Ravioli

As much as I love cooking, sometimes I am just too exhausted at the end of the day to whip together a tasty meal. But why should my taste buds be punished?  So I always keep a few different types of ravioli in my freezer for a quick meal. Tomato sauce on meat or cheese ravioli is great, but I tend to lean towards mushroom, pumpkin, butternut squash, or spinach fillings.  So here is a short list of a few different sauces (besides tomato) that you can cook in the time it takes to cook the ravioli.

White Wine Sage Sauce
(great with mushroom ravioli)

Ingredients:
1 teaspoon olive oil
1 clove minced garlic
1 tablespoon dried sage
1/2 cup white wine (whatever you have open, I have been using a Pinot Grigio recently)
Optional ingredients:
Truffle oil
Panko bread crumbs
Parmesan cheese (grated or shaved)
Note: This is for one serving, so multiply as needed!

To make, add the olive oil to a saute pan. Heat over medium-high heat, and add the garlic and sage. Let cook for one minute. Add the white wine, and turn the heat down to medium-low. Let simmer for a few minutes until it reduces. Remove from heat and pour over cooked ravioli. I really enjoy adding a little drizzle of truffle oil and then topping the ravioli off with panko and parmesan cheese. The truffle oil enhances the flavor of the ravioli and the panko adds a bit of a light crunch to the dish.
Brown Butter Sage Sauce
(great with pumpkin or butternut squash ravioli)
Ingredients:
1 tablespoon butter
4 sage leaves
Lemon juice, to taste
Parmesan cheese, to taste
Note: This is for one serving, so multiply as needed!
To prepare, melt butter in a saute pan until a light brown color appears (about 3 minutes). Add the sage leaves and cook for one minute more (to help the leaves get a little crispy). Remove from heat and add a few drops of lemon juice. Add some Parmesan cheese and mix. Pour over the ravioli and serve.
Brown Butter Sage Sauce with Dried Cranberries
(great with pumpkin or butternut squash ravioli)
Ingredients:
1 tablespoon butter
1 teaspoon dried sage
1-2 teaspoons dried cranberries
Salt, to taste
Pepper, to taste
Note: This is for one serving, so multiply as needed!
To prepare, melt butter in a saute pan. Add the sage and dried cranberries and cook until a light brown color appears (about 3 minutes). Remove from heat. Add salt and pepper and mix. Pour over the ravioli and serve. Note: If you have walnuts, they would be fantastic in this dish, I just didn’t have any. Toast the walnuts in the oven at 350 degrees for 8 to 10 minutes. Add the walnuts to the melted butter when you add in the sage and dried cranberries.
Roasted Walnuts – more of a topping than a sauce
(great with cheese or spinach ravioli)
Ingredients:
2 tablespoons olive oil
1 clove chopped garlic
1/4 cup chopped walnuts
1/2 teaspoon lemon juice
Salt, to taste
Pepper, to taste
1 teaspoon chopped fresh parsley
Parmesan cheese (grated or shaved), to taste
Note: This is for one serving, so multiply as needed!
To prepare, heat the oil in a saute pan over medium heat. Add the garlic and walnuts and cook until the walnuts are slightly toasted, stirring frequently (about 5 minutes). Add lemon juice, salt, pepper, and parsley. Remove from heat and pour over ravioli. Top with the Parmesan cheese.
