Chicken Mango and Pineapple Salad

A while back, I was given the chance to taste test some of the Cheesecake Factory‘s new menu items, which they do twice a year (who knew?) I was able to sample some cocktails and bites from across the menu. I, naturally, also wanted to try to make one of the recipes at home.

Cocktails included:

  • Cucumber Mojito – Gin and St. Germain with cucumber, basil and mint
  • Blood Orange Martini – Vodka, blood orange liqueur and blood orange juice
  • Irish Coffee Manhattan – Jameson Irish coffee served ice cold and straight up
  • Espresso Martini – Vodka with cold brew coffee

Other new menu options included:

  • Korean Fried Cauliflower – crispy cauliflower tossed in a sweet and spice sauce, topped with toasted sesame seeds and green onions
  • Chicken Taquitos – Crispy corn tortillas with grilled chicken, green chile, corn, onion, cilantro and cheese. served with avocado cream and salda verde
  • Skinnylicious Chicken Pot Pie – Sauteed chicken breast, potatoes, mushrooms, onions, peas and carrots in a light cream sauce, topped with puff pastry
  • Chicken Mango and Avocado Salad – Mixed greens, fresh pineapple, tomato, cucumber, red peppers, crispy wontons and almonds
  • Pasta Napoletana – Italian sausage, pepperoni, housemade meatballs, mushrooms, peppers, bacon, onions and garlic in a tomato sauce served over parmesan cream pasta
  • Seared Ahi Tuna – Served over white rice with sriracha aioli, stir-fried vegetables and wasabi butter sauce
  • Truffle-Honey Chicken – Fried chicken breast with truffle-honey, asparagus, and mashed potatoes
  • Chicken Riesling – Chicken breast, mushrooms, bacon, onions and garlic in a white wine Riesling cream sauce with buttered parmesan pasta
  • Carne Asada Steak Medallions – Certified Angus beef with sauteed peppers, onions and cilantro, served with a creamy ranchero sauce, fresh corn and white rice
  • Chicken Parmesan “Pizza Style” – Chicken breast coated with breadcrumbs, covered with marinara sauce and melted cheese. Topped with angel hair pasta in an alfredo cream sauce
  • Crispy Pineapple Chicken and Shrimp – Crispy chicken and shrimp with snow peas, mushrooms, onions, garlic, peppers and cilantro in a sweet and spice sauce, served with white rice

(The lighting in there is very dim so please excuse the quality of these photos)

The Cheesecake Factory has over 250 items on their menu, so there is sure to be something for everyone’s taste buds.

I tried my hand at recreating the salad we were served, with some adjustments to try to make it a bit more “home cook” friendly to make this Chicken Mango and Pineapple Salad.

  • 1 boneless, skinless chicken breast

Pineapple Fried Rice with Chicken #ChineseNYeats

Next Monday begins the Year of the Monkey, according to the Chinese Lunar New Year calendar. Celebrations are held around the world, particularly in places with large Chinese populations, including Mainland China, Hong Kong, Taiwan, Singapore, Thailand, Cambodia, Indonesia, Malaysia, and the Philippines. Locally, Philadelphia’s Chinatown holds a bunch of different events to celebrate, including a parade and a midnight dance performance on the 8th.

My favorite place in the city, Reading Terminal Market, along with the Philadelphia Chinatown Development Corporation, is featuring demonstrations of the cuisine and cultures of Asia next weekend. To get in the spirit, I decided to make one of my favorite Thai dishes: Pineapple Fried Rice with Chicken.

This recipe comes together really quickly with the help of Minute Rice, Dole and Kikkoman.

For this recipe, I used White Minute Rice, Dole Pineapple Chunks, and Kikkoman Less Sodium Soy Sauce and Sriracha Sauce, which I picked up at my local Wegmans, which were found in the rice aisle, canned fruit aisle, and Asian foods aisle, respectively.

Having a blog means that I tend to do a lot of cooking for larger groups. I usually show up to any gathering with at least one appetizer or snack for a crowd. Cooking for groups can be a bit of a challenge in my small apartment, so it’s crucial that I can reuse kitchen tools while making different parts of a recipe!

Clorox Green Works has a great new product, Pump ‘N Clean, now available in Target. Green Works Pump ‘N Clean can be found in the green section of the cleaning aisle, with the rest of the Clorox Green Works line.

The whole Clorox Green Works line cleans thoroughly and powerfully without using harsh chemicals or leaving any residue. The line includes wipes, dish soaps, detergents, and cleaners that are made with plant- and mineral-based cleaning ingredients. The products are not tested on animals and use environmentally sustainable packaging whenever possible.

From June 14-July 11, you can use the Target Cartwheel app to save 10% on all Green Works products.

The Pump ‘N Clean product is both a time saver and a way to keep your kitchen clean and safe. It’s food-safe, so you can use it to clean your knives and cutting boards in between cutting veggies and fruits! (Green Works Pump ‘N Clean is not to be used to clean up after raw meat or raw fish.) To use, just place a dish towel or sponge on top of the Pump ‘N Clean and press down to dispense the liquid. Use the dish towel/sponge to clean your knifes, counters, stove top, whatever needs cleaning! It’s easy to clean are you are cooking, which is a huge time saver!

I wanted to make two different salsas for a friend’s party, a traditional fresh salsa, and a fruit salsa. The traditional salsa is made of fresh tomatoes, red onion, and jalapeno, while the fruit salsa is filled with berries, pineapple, oranges and kiwifruit.  Obviously, mixing the flavors of these two would ruin them both, so it was important that I was able to quickly clean both my knife and my cutting board!

Ingredients:

Fresh Salsa:

  • 3 plum tomatoes, chopped and seeded
  • 1 red onion, finely chopped
  • 2 garlic cloves, minced
  • 1 jalapeno, finely chopped
  • 1/4 cup chopped fresh cilantro
  • 3 tablespoons fresh lime juice
  • 1/2 teaspoon kosher salt

Fruit Salsa:

  •  1/2 cup strawberries, finely chopped
  • 1/4 cup blueberries, halved
  • 1/4 cup raspberries, quartered
  • 1 medium orange, peeled and chopped
  • 3 medium kiwifruit, peeled and chopped
  • 1  (8 oz) can unsweetened crushed pineapple, drained
  • the juice of 1 lemon
  • 1 teaspoon sugar

Jerk Chicken with Grilled Pineapple Salsa

I have been in full on grilling mode recently. I can’t seem to get enough of recipes made on the grill! So as the end of summer continues to creep closer, I am trying to get in all of the grilling I can. As much as I would love to grill in the colder months, I’m a wimp and know I just won’t stand out in the cold.

I’ve used indoor counter top grills in the past and really wasn’t thrilled with the cooking results — it didn’t seem to heat up enough to get proper grill marks, all of the juices would flow out of the grill making for a very dry protein, and I’d always under or overcook the meat.

Source: https://optigrill.t-falusa.com/

So when I was contacted to test out the T-fal OptiGrill as part of T-fal’s OptiGrill Blogger Bash, I had some reservations about if this grill would really live up to expectations. Well, I was really pleasantly surprised! What sets the OptiGrill apart is its Precision Grilling Technology that adjusts the cooking time and temperature depending on the type of protein and the thickness of whatever you’re cooking.

Source: https://optigrill.t-falusa.com/

The T-fal OptiGrill has a cooking level indicator  with a color changing display that notifies you when your protein has reached rare, medium, or well-done. It also beeps when your food reaches each of the cooking stages. (Keep in mind that if you want your meat to rest before slicing, it continues to cook. So if you wanted a steak at medium rare and planned to let it rest for 5 minutes, you should probably take it out when the OptiGrill hits the “rare” notification.)

Source: https://optigrill.t-falusa.com/

The grill comes pre-programmed with 6 settings that adapt cooking temperature and times for different types of food: burger, poultry, sandwich, pork/sausage, red meat, and fish/seafood. There is also a frozen food function button so that you can cook your protein even when frozen; just push the snowflake button and then one of the 6 pre-programmed buttons.  The grill will defrost and cook the protein in one easy step! When cooking fruits and veggies, just use the manual mode, which allows you to determine when the food is done cooking. The OptiGrill also takes into account the thickness of your food using an integrated thickness sensor so that the protein is fully cooked correctly.

The grill is made of brushed stainless steel with die-cast aluminum plates with a non-stick coating. The plates are removable for easy cleaning and are even dishwasher safe. The plates are angled so that drippings can flow into the removable drip tray, which surprisingly doesn’t leave the meat tough, dry, or chewy.

Want to see the grill in action? I decided to test it out with a yummy recipe from Cooking Light that uses both chicken thighs and chicken breasts. Chicken is so easy to overcook leaving a dry meal so I thought it would be a perfect way to test what this grill can really handle. This recipe also includes grilled pineapple so I was able to test out the manual setting as well. I made the marinade from this recipe for Jerk-style Chicken and the salsa from this recipe for Jerk Chicken with Grilled Pineapple Salsa.

I also am giving away one T-fal OptiGrill to one lucky reader, courtesy of T-fal OptiGrill! Details below the recipe.

Note: I was sent a T-fal OptiGrill to test for this review. T-fal is also offering one I Can Cook That reader the chance to win their own T-Fal OptiGrill. All opinions are my own.

Fish with Pineapple Salsa and Tomato Avocado Salad

Now that the weather is finally warming up, it’s time to start incorporating more “summery” foods into my dinner. The June issue of Cooking Light included a recipe for Fish with Pineapple Salsa and Tomato Avocado Salad that sounded like the perfect warm-weather dinner.

I used turbot instead of tilapia, but you can substitute in whatever whitefish you’d prefer. I also added some paprika to the fish for a bit more flavor and color.

Ingredients:

  • 1 cup chopped pineapple
  • 2 tablespoons finely chopped red onion
  • 1/2 jalapeño pepper, seeded and finely chopped
  • 2 tablespoons chopped fresh cilantro
  • 3 tablespoons fresh lime juice, divided
  • 3/4 teaspoon kosher salt, divided
  • 1/2 cup thinly vertically sliced red onion
  • 1/4 cup thinly sliced fresh basil
  • 1 medium tomato, cut into thin wedges
  • 1 peeled ripe avocado, cut into 8 wedges
  • 2 tablespoons extra-virgin olive oil, divided
  • 4 (6-ounce) whitefish fillets
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chipotle chile powder

Dark Chocolate Brownies with Ice Cream and Grilled Fruit

Whenever I visit my friends who live on the Chesapeake, I try to bring some food. I found a recipe for a Tart with Grilled Fruit in a cookbook called Crazy About Pies that I bookmarked for my next trip to Maryland because we always end up grilling and I thought it would make a great complement to a barbecued dinner. I decided to instead make a dark chocolate brownie to go with the grilled fruit instead of the tart. (I will have a post about Crazy About Pies in the near future, there are some amazing sounding recipes in this cookbook!) The brownie recipe is adapted from an Alton Brown recipe.

Ingredients (makes 16 servings):

  • 2 pints of ice cream, preferably fruit based (I used a strawberry almond milk ice cream)

Brownies

  • 4 large eggs
  • 1 cup sugar
  • 1 cup firmly packed brown sugar
  • 8 ounces melted butter (2 sticks) plus more for greasing
  • 1 cup dark chocolate cocoa
  • 2 teaspoons vanilla extract
  • 1/2 cup flour
  • 1/2 teaspoon kosher salt

Fruit

  • Fruit of your choice (about 1 cup): I used pineapple, kiwi, and watermelon
  • the juice of 2 oranges
  • 2 tablespoons firmly packed brown sugar
  • 3 tablespoons butter, melted

Cinnamon Rum-Spiked Grilled Pineapple with Ice Cream

When I was creating my Labor Day Round Up post, I realized one of my favorite grilling recipes was conspicuously missing. My friends and I love to soak pineapple in a rum-sugar mixture, heat it on the grill until the sugars caramelize, and dig in. Although I have been butchering the recipe all summer, I used this Cooking Light recipe as inspiration for our favorite summer grilling treat. Now that I am making this in my kitchen on a grill pan, I’m actually able to pair it with the ice cream for the full effect.
Ingredients:
1/4 cup packed brown sugar
1/4 cup dark spiced rum (such as Captain Morgan’s)
1 pineapple, peeled, cored, and sliced
1 tablespoon butter
1 pint vanilla ice cream
Cinnamon, to taste

Guest Post: Gourmet Turkey Burger with Island Slaw from Positively Cooking

I have another amazing guest post for you today! Adrienne, from Positively Cooking, agreed to share one of her delicious recipes with us. Positively Cooking is chock full of delicious and nutritious meals that use easy to find ingredients. Her Gourmet Turkey Burger with Island Slaw is not only beautiful (I mean, look at these photos) but it is a healthy and delicious meal as well. Check out her recipe below and be sure to pop over to Positively Cooking to see all of the other mouth watering recipes her blog has to offer!
A savory, juicy burger is pretty hard to beat. When that burger is full of nutrients, easy on your waistline, easy on your budget, and needless to say tastes delicious, a burger is near impossible to beat.  Using ingredients you probably already have in your kitchen, I have developed my Gourmet Turkey Burger w Island Slaw from my own personal cravings for a filling, tasty meal.
You don’t need to wait until sweet summertime to enjoy burgers from the grill. Since I am an Ohio girl (and stuck inside during the winter months… ugh), I grilled mine stovetop on a griddle and also tried it on my George Foreman – both will leave your burgers beautifully cooked through and juicy. That being said, I am already looking forward to enjoying this recipe with some Sangria this weekend because hey, enjoying refreshing dishes like this helps an Ohio girl like me get through the winter!Enjoy!

Gourmet Turkey Burgers
1 lb. ground turkey
1 bell pepper, chopped and seeded
3 cloves garlic, crushed
2 cups spinach, roughly chopped
1 egg, beaten
½ cup breadcrumbs
¼ cup Parmesan cheese
1 tbsp. chili powder
1 tsp. salt
Honey Mustard, to garnish
Avocado, to garnish
Cheese slices, to garnish
Whole wheat buns
In a medium-size mixing bowl, place your ground turkey. Add in all ingredients [OTHER than garnishes – Honey Mustard, Avocado, and Cheese] Combine thoroughly.
With meat-mixture, form into one big “ball” and divide into 4-6 even sections. Form each section into a burger patty. [Tip: make the center of your patty thinner than the rim, to ensure it is cooked through.]
Grilling? Place patties on foil, and grill at medium-high heat for about 8 minutes on each side. Remember, your George Foreman counts!
Cooking stovetop?Lightly coat skillet with cooking spray. Cook patties over medium-high heat for 8-10 minutes, turning once.
Serve your burgers with desired toppings [As mentioned before, I suggest honey mustard, avocado, cheese, and of course Island Slaw]
Tips: Sub ground beef for the ground turkey if that is what you prefer.
Island Slaw
1 bag shredded cabbage
¾ cup All-Natural Light Coleslaw Dressing OR Light Poppyseed Dressing
1 can pineapple tidbits, drained
1 can mandarin oranges, drained
½ cup walnuts, crumbled
In a medium bowl, combine all ingredients for coleslaw. Mix thoroughly. Refrigerate until ready to serve.
Tips: I encourage you to enjoy the Island Slaw right on top of your Gourmet Turkey Burger
Doesn’t this sound like the perfect way to make you feel like warmer weather really is just around the corner? The Island Slaw has such beautiful colors in it; pineapple, mandarin oranges and walnuts together must be heavenly! And that is one snazzy looking burger; I love that it has spinach as well as chili powder to add some extra flavor.
Many thanks to Adrienne for sharing this recipe! Don’t forget to stop over at Positively Cooking to say hello and check out all the other yummy meals Adrienne has cooked up! Review of Routin 1883 Gourmet Syrups & Cocktails

One of my favorite parts of blogging is when I’m given the opportunity to sample products and give my honest review of them. I love the chance to try something new and to incorporate it into recipes. So when Routin 1883 contacted me to sample some of their gourmet syrups, I was excited to dust off my bartending kit and concoct some tasty beverages. The company produces gourmet flavors for use in cocktails, specialty coffees, Italian sodas, etc. The syrups, manufactured in the French Alps, have no preservatives, GMO’s, or high fructose corn syrup (they are even gluten free). Routin 1883 was kind enough to send me a bunch of different samples so I tried to highlight each of them to review.

To try the vanilla, I added the syrup to a traditional White Russian (I thought it sounded like it would be delicious, I was right!)
Ingredients:
2 ounces vodka
1 ounce Kahlua
1/2 ounce vanilla syrup
Top with cream
To make, add ice cubes to a glass. Pour vodka and Kahlua over the ice. Add the vanilla syrup and stir. Fill with light cream and serve.
The vanilla syrup held up nicely to the strong coffee flavor of Kahlua and was an awesome complement to this already delicious drink. After a sniff of the syrup I decided to go with a 1/2 ounce instead of an ounce because it seems to be quite strong.
The coconut syrup meant I could pretend it is summer. I added it to rum and pineapple juice for a taste of the islands.
Ingredients:
2 ounces light rum
1 ounce coconut syrup
fresh pineapple juice
Add ice cubes to a tall glass. Pour rum and syrup over the ice. Fill with pineapple juice and serve.
This is so refreshing. It’s a perfect escape from the winter weather and would also be perfect as a pitcher in the summer months. Coconut and pineapple just go so well together.
I decided to use the raspberry syrup to make a raspberry rickey: a gin rickey with raspberry flavoring.
Ingredients:
1 1/2 ounce gin
the juice of 1/2 a lime
club soda
1 ounce raspberry syrup
Add ice to a short glass. Add gin, lime juice , and raspberry syrup and top with club soda.
This was another really refreshing drink. The syrup wasn’t sugary so it didn’t take away from the bite you’d normally get in the original version of this drink. You could also serve it straight up (no ice) if you’d like. Just mix it in a shaker and pour into a glass.
For the caramel syrup, I thought it might be fun to try a flavored martini. I happened to have sour apple liqueur in my apartment (I have no idea why) so a Caramel Apple Martini immediately popped into my mind.
Ingredients:
2 ounces sour apple liqueur
1 ounce vodka
1 ounce caramel syrup
Add ice to a shaker. Pour in apple liqueur, vodka, and caramel syrup and shake. Strain into a martini glass rimmed with a cinnamon-sugar mixture.
This tasted exactly like a candied apple. The caramel’s sweetness really helped tone down the sour apple flavor of the liqueur.
Next up, a frozen strawberry-champagne daiquiri. I had some champagne left over from New Years Eve that I just put into an ice cube tray. I thought this would be a perfect use of those champagne ice cubes.
Ingredients:
2 ounces light rum
1/2 ounce triple sec
1 ounce strawberry syrup
6 strawberries
juice of one lime
1/2 teaspoon sugar
5 champagne ice cubes
5 normal ice cubes
You’ll need normal ice in there too because champagne doesn’t freeze entirely. Add all of the ingredients to a blender and blend until frothy. The champagne might bubble a bit. Pour into a glass and serve.
I think champagne should be the base of every strawberry daiquiri from now on. The strawberry syrup added a much bolder flavor to the daiquiri than strawberries alone would without adding a typically syrupy, sugary taste to it. It really enhanced the daiquiri!
Last but not least, I made what I’ve dubbed a Toasted Martini.
Ingredients:
2 ounces chocolate liqueur
1 ounce espresso (cooled)
1 ounce roasted hazelnut syrup
Add ice to a shaker. Add the chocolate liqueur, espresso, and syrup and shake. Strain into a martini glass rimmed with cocoa powder.
Do I even have to mention how amazing this was? I could drink this all day. It was like a grown up chocolate milk, definitely my favorite. The hazelnut flavor was amazing!
Overall I think I gravitated more to the syrups that would go nicely in coffees (which is next on my list to try): Roasted Hazelnut, Vanilla, Caramel, and Coconut. But the fruit flavors were really nice as well! They are actually flavored with real fruit juice which is very noticeable. They don’t have that normal “syrupy” taste at all. Routin 1883 has tons of different flavors on their site so be sure to check them all out. They also have plenty of recipes if you’re looking for inspiration!
