Homemade Dark Chocolate Ice Cream

This Homemade Dark Chocolate Ice Cream recipe has been a long time coming! As I mentioned in my Homemade Chocolate Ice Cream post, I have been trying to emulate Capogiro’s scuro gelato – a beautifully dark chocolate gelato that I have missed since the day Capogiro closed years ago.

This recipe for Dark Chocolate Ice Cream is just that. It’s ice cream, not gelato. Gelato tends to have less egg yolks and is churned at a lower speed. Regardless of the technicality, this Dark Chocolate Ice Cream is silky, decadent, and decidedly dark chocolatey!

Ingredients:

  • 2 cups heavy cream
  • 2 cups whole milk
  • 1 1/4 cups sugar
  • 1 1/4 cups dark chocolate cocoa powder (paid link)

  • 6 egg yolks

Mexican Hot Chocolate Brownies

Ingredients included: 1 bar unsalted Plugra Premium Butter,1 container of the Spice House’s Vietnamese Saigon Cinnamon, Valrhona Manjari 64% Dark Chocolate, and Nielsen-Massey Madagascar Bourbon Pure Vanilla Extract.

Do I have a tasty recipe for you today! I was contacted recently by Plugrá Kitchens with a delicious sounding brownie recipe (these Mexican Hot Chocolate Brownies) using some of my favorite ingredients, so I knew I had to share it. This brownie recipe is based off the flavors of Mexican Hot Chocolate, which is a hot chocolate that is spiced with cinnamon and sometimes a little bit of chili to bring additional warmth and heat. 

Plugra Kitchens was nice enough to send me a package with the best goodies to make these brownies, including (of course) Plugrá Premium Unsalted Butter, Spice House Ground Saigon Cinnamon, Nielsen-Massey Madagascar Bourbon Pure Vanilla Extract, and Balrhona Manjari 64% Dark Chocolate.

Plugrá Butter is an awesome ingredient to use for baking. Made by Dairy Farmers of America, its slow-churn and extra creaminess has the perfect balance of moisture and fat for use in baking. The Spice House‘s Vietnamese “Saigon” Cassia cinnamon is the strongest and sweetest cinnamon in their collection. The Vietnamese cinnamon bark is ground in house to produce a dark, rich texture that is fiery and fragrant, making it perfect for these brownies. My love of Nielsen-Massey‘s Madagascar Bourbon is well known to those that frequent this blog. Their Madagascar Bourbon Pure Vanilla extract is made from premium, hand-selected vanilla beans cultivated in Madagascar, the world’s leading supplier of high-quality vanilla. It then utilizes a slow, cold extraction process to gently draw out and preserve all 300 natural vanilla flavor notes to create the richest tasting vanilla. Madagascar Bourbon Pure Vanilla has a flavor profile that is full, sweet, creamy, and mellow with velvety after-tones. Valrhona Chocolate has been a partner of artisans of taste since 1922 and is a pioneer and reference in the world of chocolate.

With ingredients like that, you know this recipe is going to taste good! I adapted the recipe a bit, but the overall gist is still there. These Mexican Hot Chocolate Brownies are soft and chewy, with a subtle warmth and heat that pairs really well with the richness of the chocolate.

Ingredients (makes 18 servings):

  • 1 (8 oz) bar unsalted butter, like Plugrá® European Style Butter
  • 2 cups sugar
  • 4 large eggs, at room temperature
  • 2 teaspoons vanilla extract, like Nielsen-Massey Madagascar Bourbon Pure Vanilla Extract
  • 1 cup all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1 tablespoon ground cinnamon, like Saigon cinnamon from the Spice House
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon baking powder
  • ¼ teaspoon ground cayenne pepper
  • 1 cup dark chocolate, like Valrhona Manjari 64% Dark Chocolate, chopped

Smoker Grilled S’mores Skillet

With Memorial Day right around the corner, it’s time for more recipes using Bear Mountain BBQ Wood Pellets! This one is a bit different than my previous two posts fort Smoked Potato Salad and Smoked Wings… this time I’m bringing you dessert: a Smoker Grilled S’mores Skillet to be exact!

As a city girl, I don’t exactly get a lot of opportunities to roast some marshmallows over an open fire, but I do love s’mores!

This recipe takes a s’mores skillet one step further and lets it smoke on the grill with some of Bear Mountain’s Bourbon BBQ Wood Pellets.

Ingredients:

  • 1 cup Bear Mountain Bourbon BBQ Wood Pellets
  • 1 tablespoon butter
  • 3 milk chocolate candy bars
  • 3 dark chocolate candy bars
  • 2 cups semi-sweet chocolate chips

Overnight Chocolate Chia Pudding

I have such a sweet tooth. Seriously, if I could get away with eating ice cream and only ice cream for the rest of my life, I probably would. So, I am constantly looking for ways to satisfy my sweet tooth without, well, eating a pint of ice cream.

Cue this recipe for Overnight Chocolate Chia Pudding — its dairy-free, gluten free, and vegan. And, it tastes amazing!

The Coconut Almond Whipped Cream really puts it over the top. But the pudding is pret-ty darn awesome on its own!

Ingredients:

Chocolate Chia Pudding:

  • 2 cups unsweetened almond milk
  • 1/2 cup dark chocolate chips (check the label to make sure they are vegan)
  • 1/2 cup chia seeds
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup maple syrup

Coconut Almond Whipped Cream:

  • 1/2 cup coconut milk
  • 2-4 tablespoons powdered sugar

Vegan and Gluten Free Peanut Crunch Brownies

A lot of people are pretty wary of vegan and gluten free baking. It seems like it would be difficult, but it’s surprisingly easy! Vegan baking can also be rich and decadent, like these oh so fudgy Peanut Crunch Brownies.

This recipe for Peanut Crunch Brownies is adapted from Heather Saffer’s well-named cookbook Crazy Easy Vegan DessertsHeather Saffer, founder and CEO of Dollop Gourmet, has been featured on Shark Tank and Cupcake Wars for her delicious vegan desserts that can be enjoyed by anyone. I was sent a review copy and have loved paging through the recipes, they really are crazy easy!

The cookbook begins with a review of some dairy free and gluten free alternatives that can be used in baking.

 

So let’s dig into this recipe for Peanut Crunch Brownies, because, well, it’s delicious!

These cookies really bring the chocolate: dark chocolate cocoa powder gives the cookies their dark color, espresso granules enhance the chocolate flavor, and chopped hazelnuts add some crunch!

 

Ingredients:

  • 1 stick butter (8 tablespoons), at room temperature
  • 1 cup firmly packed dark brown sugar (or light brown sugar with 1 tablespoon molasses added)
  • 2 eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 cup flour

Banana Chocolate Chip Hemp Muffins

Because it’s Sunday, I have my mind on the week ahead. I really struggle to have an on-the-go breakfast option that actually tastes good and doesn’t load on the calories. I love making homemade muffins because then breakfast is set for the week, but it’s kind of tough to justify much nutritional value in most muffins.

But these little guys are amped up with Just Hemp 50% Protein Powder, which is a plant-based protein powder with essential amino acids vitamins and minerals. Flourless Chocolate Cake with Dark Chocolate Ganache

I can’t believe I’ve never tried to make a flourless chocolate cake before. This oversight will happily be corrected with the help of #Choctoberfest with Imperial Sugar!

This Flourless Chocolate Cake with Dark Chocolate Ganache is a dense, rich, chocolate cake. Because there is no flour in the recipe, it is also gluten free!

Because this is #Choctoberfest and you can never have too much chocolate, this cake is finished off with a yummy dark chocolate ganache topping.

Black Forest Cupcakes

When I think of all things chocolatey, no list would be complete without Black Forest Cake, which is traditionally made of layers of chocolate cake, whipped cream, and cherries. My Black Forest Cupcakes version for #Choctoberfest uses dark chocolate cupcakes stuffed with cherry filling, topped with fresh whipped cream frosting, chocolate shavings, and maraschino cherries.

Vegan Chocolate Peanut Butter Nests

Every Easter, my fiance’s mom makes peanut butter nests for her sons to take home. They are made with chow mein noodles, mixed in a melted peanut butter sauce, shaped into little nests and topped with egg-shaped chocolate candies. And I absolutely love them! I look forward to eating more than my share of them each year, but this year I just couldn’t wait.

 

I had a craving for something chocolatey and peanut buttery so, I decided to make mine with semi-sweet chocolate as well as peanut butter. We were visiting my fiance’s brother and his wife last weekend, so I used them as an excuse to make the recipe!

 

They try to eat vegan as much as possible, so when I began assembling the ingredients for this recipe and realized how simple this recipe would be to make vegan, I did so! You can easily make these Vegan Chocolate Peanut Butter Nests non-vegan if you so choose.

 

Ingredients:
1 (12 oz) package chow mein noodles
1 cup roasted unsalted peanuts
12 oz vegan semi-sweet chocolate morsels
1 cup creamy peanut butter
~12 oz Jordan almonds or dark chocolate covered almond “eggs” (or any other candy that is egg-shaped if not making vegan) — you’ll need roughly 85 egg shaped pieces

Spiked Mint Coconut Milk Hot Chocolate

Today (February 19) is National Chocolate Mint Day! With the cold temperatures across most of the U.S., I think we can all use a nice warm beverage to keep us toasty, and this is the perfect food holiday for such a beverage! So, I present: Spiked Mint Coconut Milk Hot Chocolate!

Blue Chair Bay must feel the same way, so I developed this non-dairy hot chocolate beverage to pair with their Coconut Spiced Rum. The coconut rum, spiced with cinnamon, nutmeg, and clove is the perfect accompaniment to hot chocolate, don’t you think? To enhance the coconut flavor in the rum, I decided to use coconut milk which makes a rich and creamy hot chocolate base.

Rum always reminds me of warmer weather, and the Coconut Spiced Rum is no exception. Dark Chocolate Chip Cranberry Cookies

This is my third year participating in the Great Food Blogger Cookie Swap!

In its fourth year, the Great Food Blogger Cookie Swap helps raise money for Cookies for Kids’ Cancer, a national non-profit organization committed to funding new therapies used in the fight against pediatric cancer, which claims the lives of more children in the US than any other disease.

 

In the past, I’ve made Hot Cocoa Cookies and Oatmeal, Chocolate Chip, and Pecan Cookies so I decided to do another spin on Chocolate Chip Cookies this year!

 

I adapted a recipe from Sally’s Baking Addiction. She has these fantastic Soft Baked cookies on her blog, and I used her Soft Baked White Chocolate Chip Cranberry Cookies as the inspiration for this recipe. The secret to these soft and chewy cookies is the addition of cornstarch.. who would’ve thought??

 

 

I changed Sally’s original recipe just a touch, adding dark chocolate chips instead of white, using light brown sugar instead of dark, and substituting in almond extract for the vanilla extract.
