Pumpkin Cake Bites

I’ve waited long enough. It’s time to give in to the most wonderful time of year. No, not Christmas. Autumn! And the best way to really dive in to the season? Pumpkins, of course!

I love pumpkin. Like, really love pumpkin. I actually hoard Green Mountain Pumpkin Spice K-Cups around this time of year so that I can drink them year-round. From sweet to savory, pumpkin is just the best. I have so many pumpkin recipes on here so if you’re a pumpkin aficionado like myself, be sure to check them all out! (Just a sample of some pumpkin-filled recipes: Cheesecake bars, Flan, Whoopie Pies, Eggnog, Trifle, Ravioli, BreadSoup… you get the idea)

So, I came across this recipe looking for a Pumpkin Brownie. Despite this recipe being called Pumpkin Brownies in the original recipe, it is most certainly cake. But who am I to worry about semantics? It’s still delicious! I  added more pumpkin-y spices to give the pumpkin flavor a boost and added in some dark chocolate chips because, why not?

 

Ingredients:

  • 1 (15 oz) can solid-pack pumpkin
  • 4 eggs
  • 3/4 cup canola oil
  • 1/2 tablespoon vanilla powder (can substitute in 1/2 tablespoon vanilla extract)
  • 2 cups all purpose flour
  • 2 cups sugar
  • 1/4 teaspoon ground allsplice
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cardamom
  • 1 tablespoon ground cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup dark chocolate chips

Frosting:

  • 6 tablespoons butter, softened
  • 3 ounces cream cheese, softened
  • 1 teaspoon vanilla powder or vanilla extract
  • 1 teaspoon 1% milk (can substitute whatever milk you have)
  • 1/8 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 2 cups confectioners’ (powdered) sugar

Hazelnut-Mocha Banana Smoothie

I am trying to get into the habit of making (and wanting) smoothies for breakfast. They are so simple to make and work great for meals on the go. My boyfriend is a huge fan of green smoothies, where he adds various fruits to the blender along with some kale. I don’t mind them, but I thought I’d baby step my way into the smoothie world with something a little more my speed: an oatmeal banana smoothie with espresso and chocolate hazelnut. Mmmmm.

This recipe is adapted from Foxes Loves Lemons, a fellow food blogger as well as a recipe developer. Her recipes are mouthwatering and her pictures are just amazing! She also manages to post daily which just blows my mind. How she manages to deliver such amazing posts daily is beyond me!

My recipe below is a touch different than Foxes Loves Lemons because I wanted to incorporate Nocciolata, a dark chocolate and hazelnut spread, into my smoothie. To see the original version, check out her blog post here.

Nocciolata is made with no chemicals, artificial flavors, GMOs, or palm oil. What it is made with is certified organic ingredients including dark chocolate from the Antillean Islands, Italian hazelnuts (16%), brown sugar, skim milk and Bourbon vanilla extract. Yum! Ingredients:

  • 1 cup old-fashioned rolled oats

  • 1 banana, cut into chunks
  • 1/4 cup vanilla Greek yogurt
  • 1 tablespoon Nocciolata spread

  • 1 cup ice

Hot Cocoa Cookies

It’s that time of year again! I signed up for the Great Food Blogger Cookie Swap again this year and got some great ideas for what to bake for Christmas!

In its third year, the Great Food Blogger Cookie Swap helps raise money for Cookies for Kids’ Cancer, a national non-profit organization committed to funding new therapies used in the fight against pediatric cancer, which claims the lives of more children in the US than any other disease. The swap raised $13,778.40 this year, raised through blogger participants donations and matching donations from OXO, Dixie Crystals, Gold Medal, and Grandma’s Molasses. The goal was $10,000, so to get nearly $4,000 more in donations is amazing!

So here’s how the actual swapping part of this works: I was assigned three food bloggers and made one dozen cookies for each of them. In return, I received three different boxes of cookies from other bloggers.

Last year, I received a batch of hot cocoa cookies that were SO good I was craving them again this year. So I decided to make some myself! The chocolate cookies are topped with mini marshmallows, chocolate chips, and a touch of grated chocolate. I based my recipe off of Rachel Ray’s Hot Cocoa Cookies recipe.

 

 

Ingredients (get all ingredients here):

  • 8 tablespoons (1 stick) of unsalted butter
  • 1 (12 oz) package of semisweet chocolate chips
  • 1 1/2 cups flour
  • 1/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cups light brown sugar, firmly packed
  • 3 eggs, at room temperature
  • 1 1/2 teaspoons pure vanilla extract
  • 6 oz of milk chocolate chips
  • 1 package of mini marshmallows
  • 1 dark chocolate bar, for garnish (optional)

Chocolate Pumpkin Cream Cheese Truffles

I had a craving for a pumpkin treat this weekend so I went in search of a recipe I could make with stuff I already had on hand. I came across this recipe from Whole Foods for Pumpkin Cream Cheese Truffles and was all set to make them as stated in the recipe. But I find white chocolate to be such a pain to work with and honestly, I don’t really like the taste.

So although the Whole Foods recipe is the inspiration for this post, my recipe is completely different. These pumpkin truffles are made with dark chocolate and are then rolled in toasted pecans to give it some crunch.

Ingredients:

  • 1/2 cup dark chocolate chips
  • 2 Walkers Stem Ginger Shortbread cookies, crumbled
  • 3 Walkers Highlanders, crumbled
  • 1/4 cup canned pumpkin puree
  • 1 tablespoon confectioners’ sugar
  • 1/8 teaspoon ground allspice
  • 1/8 teaspoon ground nutmeg
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • pinch of fine sea salt
  • 2 ounces cream cheese, softened
  • 1/3 cup finely chopped pecans

Halloween Chewy Crispy Bars

These Halloween Chewy Crispy Bars are a great use of leftover Halloween candy, or would be a really awesome treat to give out on Halloween!

They are simple to make and can be cut into any size you please.

This recipe is adapted from Cooking Light’s October 2013 issue.

Ingredients:

  • Cooking spray and parchment paper
  • 3 tablespoons unsalted butter

Gluten Free Boston Cream Pie Cupcakes

Gluten free baking. Does it terrify anyone else? Just me? Hm.  Whelp. I finally decided it was time to conquer my fear and try my hand at it.

I was sent a copy of Kyra Bussanich’s new cookbook Sweet Cravings: 50 Seductive Desserts for a Gluten-Free Lifestyle which makes gluten-free baking seem not-so-scary. Kyra was the first gluten free  baker to win Food Network’s Cupcake Wars and has actually won twice overall so she knows her stuff! The cookbook is filled with really amazing sounding cupcakes but has a bunch of other mouthwatering baking recipes, including gluten free muffins, scones, cookies, brownies, and much more!

As I was paging through the cookbook, I came across her recipe for Boston Cream Pie Cupcakes. I just had to make them!

I used a bunch of OXO baking tools to create these cupcakes including the Cupcake Corer, the 6 Piece Measuring Spoon Set, and the 6 Piece Measuring Cup Set. These tools, along with many others, can be found during the month of September with these green stickers on them:

For every specially marked item sold, OXO is donating 25 cents in support of pediatric cancer research as a part of its $100,000 pledge to Cookies for Kids’ Cancer. Keep an eye out for the green sticker when buying your baking tools, every little bit helps!

Now, on to the recipe. I changed the frosting but kept the rest of the recipe intact.

Ingredients:

CUPCAKES:

  • 1 cup (2 sticks) butter, room temperature
  • 2 cups sugar
  • 4 eggs
  • 1 cup tapioca starch
  • 1 cup potato starch
  • 2/3 cup white rice flour
  • 1 tablespoon plus 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon xanthan gum
  • 1 1/2 cups whole milk
  • 2 teaspoons vanilla extract

VANILLA BEAN PASTRY CREAM:

  • 2 cups whole milk
  • 1/2 cup sugar
  • 6 egg yolks
  • 1/3 cup cornstarch
  • 2 tablespoons butter, room temperature
  • 2 teaspoons vanilla bean paste

DARK CHOCOLATE FROSTING

  • 1 cup heavy cream
  • 1 package dark chocolate chips (12 oz)
  • 1 teaspoon vanilla bean paste
  • Pinch fine sea salt
  • 1 tablespoon butter
  • Cocoa powder, as needed

Mini Pumpkin Blossom Honey Cakes

Rosh Hashanah, the Jewish New Year, began last night at sundown. Honey plays a significant role in Rosh Hashanah celebrations, signifying hopes for a sweet new year.  Apples or challah dipped in honey is popular, as is honey cake. Because of the time of year, honey cake typically includes flavors associated with fall. My mom had given me a Pumpkin Blossom Honey recently and I thought this would be the perfect way to use it.

I adapted my recipe from one found on Epicurious and gave it my own pumpkin-y spin. Pumpkin Blossom Honey is created by bees that solely pollinate pumpkins and pumpkin blossoms. It has a darker amber color and has a really nice spice flavor at the end.  I thought it would work great with some traditional fall spices thrown in!

Ingredients:

Cake:

  • 2 1/2 cups cake flour (or all purpose flour)
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • ¼ teaspoon ground cardamom
  • 3 large eggs
  • 1 cup sugar
  • 1 1/4 cups vegetable oil (I used sunflower oil)
  • 1 cup Pumpkin Blossom honey
  • 8 oz lukewarm pumpkin coffee (I used Green Mountain’s)
  • The zest of one orange

Chocolate glaze:

  • 1/2 cup shaken canned unsweetened coconut milk (not light)
  • 2 teaspoons light corn syrup
  • 4 ounces dark chocolate, finely chopped
  • Flaky sea salt for garnish, optional

Vegan Dark Chocolate Cupcakes with Peanut Butter Frosting

I made these Vegan Dark Chocolate Cupcakes with Peanut Butter Frosting for a lovely vegan bride-to-be for her bridal shower this weekend. I’m not going to lie, I was going to do a test run of these, and if I didn’t like them, she was getting normal egg-filled, buttercream-topped cupcakes. But. These are good. Really really good.

So when I did my test run, I passed them around to friends and family and conveniently left the word “vegan” out of the description until after they tasted the cupcakes. My “test subjects” didn’t seem too upset with my experiment, many went for seconds!

These cupcakes use dark chocolate (versus milk chocolate), and have no eggs, butter, or milk. And they are still super fluffy and moist. The best part, most of the ingredients are probably either in your pantry or really easy to find!

Ingredients (makes 2 dozen) adapted from the Curvy Carrot:

Dark Chocolate Cupcakes:

  • 2 cups all purpose flour
  • 1 1/2 cups sugar
  • 1 tablespoon cream of tartar
  • 2 teaspoons baking soda
  • 1/2 teaspoon kosher salt
  • 3/4 cup dark chocolate cocoa powder
  • 2 oz vegan dark chocolate, finely chopped
  • 3/4 cup sunflower oil
  • 1 1/4 cups vanilla almond milk
  • 3/4 cup cinnamon applesauce
  • 1 tablespoon vanilla extract
  • 1 tablespoon cider vinegar

Peanut Butter Frosting:

  • 1 cup creamy peanut butter
  • 1/2 cup vegan margarine
  • 2 cups powdered sugar
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons vanilla almond milk

Dark Chocolate Brownies with Ice Cream and Grilled Fruit

Whenever I visit my friends who live on the Chesapeake, I try to bring some food. I found a recipe for a Tart with Grilled Fruit in a cookbook called Crazy About Pies that I bookmarked for my next trip to Maryland because we always end up grilling and I thought it would make a great complement to a barbecued dinner. I decided to instead make a dark chocolate brownie to go with the grilled fruit instead of the tart. (I will have a post about Crazy About Pies in the near future, there are some amazing sounding recipes in this cookbook!) The brownie recipe is adapted from an Alton Brown recipe.

Ingredients (makes 16 servings):

  • 2 pints of ice cream, preferably fruit based (I used a strawberry almond milk ice cream)

Brownies

  • 4 large eggs
  • 1 cup sugar
  • 1 cup firmly packed brown sugar
  • 8 ounces melted butter (2 sticks) plus more for greasing
  • 1 cup dark chocolate cocoa
  • 2 teaspoons vanilla extract
  • 1/2 cup flour
  • 1/2 teaspoon kosher salt

Fruit

  • Fruit of your choice (about 1 cup): I used pineapple, kiwi, and watermelon
  • the juice of 2 oranges
  • 2 tablespoons firmly packed brown sugar
  • 3 tablespoons butter, melted

Chocolate Bark

Bark is one of my favorite holiday treats to make. Why? Because it is so darn simple. And people LOVE it. It is basically melted chocolate with some other deliciousness thrown in. Candy, pretzels, nuts.. whatever makes you happy. I wanted to make some bark to supplement my cookies this year and found this fantastic recipe from Baked Bree. Bree included some Rice Krispies cereal in between the layers to add a little bit of extra crunch to the bark, brilliant! The red and green M&Ms and candy canes make this the perfect holiday treat.

 

Ingredients (adapted from BakedBree.com)

  • 16 oz package dark chocolate chips
  • 16 oz package white chocolate chips
  • 1 cup Rice Krispies
  • 4 candy canes
  • 1 bag red and green M&Ms

Note: this will make one cookie sheet worth of bark. I suggest making 2-3 sheets so you have plenty to share!

Marble Peanut Butter & Dark Chocolate Cookies

This time of year, I love finding recipes that incorporate candy bars. I tend to have an influx of candy in my house so I might as well use it to make awesome baked goods right? I received a couple of Equal Exchange Candy Bars recently and couldn’t stop snacking on them!
Equal Exchange is the nation’s leading Fair Trade brand of coffee, chocolate and tea. They recently launched a new line of organic, fairly traded candy bars with flavors including milk chocolate peanut butter, milk chocolate crisp with puffed rice and quinoa, and dark chocolate fruit and nut with raisins and almonds.
The milk chocolate crisp lives up to its name, the puffed rice and quinoa added a nice crunch to the milk chocolate. The dark chocolate fruit and nut is the perfect mix of chocolately goodness, nuts, and fruit. The website describes it perfectly as trail mix in candy bar form.  My favorite of the three though was the milk chocolate peanut butter bar a perfect and classic combination for a reason! I decided to use the chocolate peanut butter bars in a cookie but wanted to find a cookie that sort of resembled the chocolate bar itself.
I adapted this cookie recipe for Marble Peanut Butter & Dark Chocolate Cookies from a Bakergirl recipe for Marbled Peanut Butter & Chocolate Snickers cookies.
Ingredients:
Peanut Butter Dough
  • 2 cups creamy peanut butter
  • 2 cups granulated sugar
  • 2 eggs
  • 1 cup mini chocolate chips

Chocolate Dough

  • 1 cup (2 sticks) butter, at room temperature
  • 1 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 3/4 cup all-purpose flour
  • 1 1/4 cup cocoa powder
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 2 Equal Exchange Milk Chocolate Peanut Butter bars
  • 3/4 cup peanut butter chips

Homemade Chipwiches

I have many childhood memories of me chasing down the ice cream truck to get my absolute favorite ice cream treat: a Chipwich. I mean, honestly, what more could you ask for in a dessert? Two chocolate chip cookies with ice cream sandwiched in between. Mmm.
So I was, well, horrified, to find out that the Chipwich brand name is no longer in existence as of 2007. At that time, Nestle bought the rights to the name and stopped all production because it competed with their “Chocolate Chip Cookie Sandwich.” I mean, come on.  The name Chipwich is exponentially more catchy. But hey, whatever floats their boat.
Since finding out this information, I can’t get the idea of making my own Homemade Chipwiches or Chocolate Chip Cookie Sandwiches out of my head.
I was sent an Airbake cooking sheet recently and wanted to test it out. The Airbake Nonstick Insulated sheets are pretty snazzy. They are made of 100% aluminum and are comprised of two sheets surrounding a layer of air. This is said to reduce the temperature of the metal that actually comes in contact with the food which should result in more even baking. Airbake also claims that cookie bottoms won’t burn, win! (They also have natural sheets if you don’t want nonstick)
I decided to use a recipe from David Lebovitz for Salted Butter Chocolate Chip Cookies because the only way I can think to enhance my homemade chipwiches would be to add a little salt to bring out the flavor.
Ingredients (makes about 12 hand-sized chipwiches, make cookies larger if desired):
  • 4 ounces salted butter, at room temperature
  • 2/3 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg, at room temperature
  • 1/2 teaspoon vanilla extract
  • 1 1/3 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon flaky sea salt or kosher salt
  • 1 1/3 cups semisweet chocolate chips
  • 1 pint vanilla ice cream (or your favorite ice cream)
  • Mini chocolate chips, for decorating (optional)

Tim Tam Tarts with Raspberries and Rose Water Whipped Cream

Tim Tam Tarts. Isn’t that oh so fun to say? A Tim Tam is a chocolate cookie from Arnott’s in Australia. You might see them every now and then in America, but don’t be fooled, those are made by Pepperidge Farm and I’m sorry, they just don’t live up to the originals. These happy little biscuits covered in chocolate are absolutely delicious. Their motto is “The Most Irresistible Chocolate Biscuit” but I think it’s more appropriately “Visitors to Australia’s Biggest Australian Obsession”. Seriously. They are the best.

So when one of my friends traveled to Australia recently and asked what I’d like, I basically yelled in her face “TIM TAMS!” which can be quite alarming to someone who has zero idea what a Tim Tam is. I clearly made an impression, because she returned with two boxes! Now, Tim Tams are perfectly delicious on their own, maybe with some milk. But I’m a food blogger, so I had to try to turn the cookies into something even better. A Dark Chocolate Tart with Tim Tam Crust, Raspberries, and Rose Water Whipped Cream? YES! (I adapted this recipe for Tim Tam Tarts with Raspberries and Rose Water Whipped Cream from taste.com.au)

Note: I am currently taking the Melt Buttery Spread Challenge and am substituting any and all butter/oils with Melt. I wrote a review of Melt a while back, which you can read here. If you can’t find Melt in your supermarket, use other coconut oil spreads, or just butter in this recipe)

Ingredients:

For the tart:

  • 1 box of original Tim Tams
  • 2 ounces Melt , melted (about 1 tablespoon in its original form)
  • 1 cup heavy whipping cream
  • ~7 oz dark chocolate (200g if you’re using a scale), roughly chopped (I used almost 5 dark chocolate candy bars!)
  • 1 teaspoon vanilla extract
  • 2 egg yolks
  • Raspberries and Rose Water Whipped Cream, to serve

For the Rose Water Whipped Cream:

  • 1/2 cup heavy whipping cream
  • 1 tablespoon sugar
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon rose water

Homemade Hot Chocolate with Marshmallow Hearts

The simplest actions can really make your day. Sometimes all you need to turn a day around is a simple pick me up. This hot chocolate is a really easy way to put a smile on your, or your loved ones, face(s). It’s also a perfect Valentine’s Day drink! I found this cute recipe on Martha Stewart.
Ingredients:
(this makes 2 cups)
  • 4 cups whole milk
  • 2 tablespoons sugar
  • 2 tablespoons plus one teaspoon unsweetened Dutch-process cocoa powder
  • 4 tablespoons finely chopped dark chocolate
  • 2 marshmallows

Strawberries with Chocolate Cream

Valentines Day has come early to I Can Cook That! Ok, not really. I made them for a party recently, but they would be perfect for a Valentines Day dessert, or with your coffee in the morning! I found this recipe on Taste of Home. After reading the reviews, a few people suggested adding some powdered sugar to sweeten up the chocolate cream. I love anything sweet, so I took their suggestion!
Ingredients:
1-1/2 ounces dark chocolate, grated, divided
1 package (8 ounces) cream cheese
1 teaspoon vanilla extract
1 cup powdered sugar
1 cup whipped topping
2 containers of fresh strawberries, halved

I used  dark chocolate bars from Trader Joe’s. They come in 1.75 oz little bars so I used two of those 1.75 oz bars. Take the first bar and melt over low heat, stirring until smooth. Remove from heat and cool to room temperature.
In a small bowl, add the cream cheese, vanilla, powdered sugar and whipped topping. Beat with a hand mixer until smooth.
Add the melted chocolate and beat until combined. Add the mixture to a plastic zip lock bag.
Cut off the lower corner and pipe onto the strawberries, with the cut side up.
 Using a grater, grate the remaining chocolate over the strawberries.

These are really simple, and really tasty too!

I think the addition of the powdered sugar was a good idea. Fresh strawberries can be a bit tart, so it was nice to add some extra sweetness within the chocolate cream.

The cream cheese adds a nice smoothness to the chocolate cream. They are so pretty too, aren’t they?

You can make these ahead of time and then pop them in the refrigerator until needed.
