My husband really likes chia seeds. He will even just add them to water and have them that way. As (un)appealing as that sounds, I’ve been trying to incorporate them into some recipes that make the most of chia seeds while being a bit more… tasty, like this recipe for Overnight Chia Seed Breakfast Pudding Jars.
Chia seeds are pretty bland, so they are easy to add to recipes without impacting taste. When soaked in a liquid, they expand and thicken whatever liquid they are added into, making them perfect for pudding or jam.
This recipe for Chia Seed Breakfast Pudding is an easy make ahead recipe for breakfast on the go. My husband and I just grab one of these pre-made jars and bring with us to work to eat.

Everyone loves a nice, fluffy cupcake. I love when a cupcake is light and airy, with smooth and creamy frosting on top! One of the easiest ways to keep a cupcake moist and fluffy is to use yogurt in the batter. But that doesn’t mean your cupcakes can’t be dairy-free or vegan-friendly!
I really enjoy making vegan cupcakes; they are surprisingly simple to make and taste just as delicious as normal cupcakes (or, dare I say it, even better!) I became interested in vegan baking when I made cupcakes for my sister-in-law a couple of years ago. Since then, I’ve noticed how easy it is to make delicious baked goods that are dairy and egg free!
Silk dairy-free products are perfect for cupcakes, because they add additional flavor to the batter through their Vanilla and other flavored yogurts and milks.
To make these Vanilla Almond Cupcakes with Plum Frosting, I went to Walmart to pick up a Silk Half Gallon Vanilla Almond Milk and a couple of Silk Vanilla Yogurts. You can find them in the dairy aisle, with the normal milk and yogurts.
Silk Almond Milk has 50% more calcium that dairy milk, with no cholesterol and no saturated fat. Silk offers seven almond milk options, all 100 calories or less. I love Vanilla Almond Milk in my cereal, its so tasty! Silk yogurt, made from soy, has 6 grams of soy protein per serving with no cholesterol and no artificial flavors or colors. The yogurt is dairy-free, gluten-free, and vegetarian.
Plums are in season at the moment and I absolutely love their flavor, so I decided to make a plum frosting. The delicious flavor of plums is enhanced with almonds and vanilla, so Silk products are perfect with plum!
Cupcakes:
1 stick margarine (8 tablespoons), at room temperature
I love the flavor that grilling adds to a recipe but I struggle with grilling protein to the correct temperature. This means we sometimes end up with dry, chewy and overcooked food or, even worse, super rare/raw meat.
Luckily, Verizon Wireless’ Philadelphia Tri-State Region team gave me the opportunity to try out an iGrill thermometer that not only displays the temperature, but also uses Verizon’s LTE 4G network to send me an alert when my protein has reached the temperature I want!
I was so excited about this product that I decided to really test it out and used it on a pretty finicky meat: lamb. Lamb is a protein that should be cooked to medium rare and not much more. It gets really tough and chewy if overcooked. It’s pretty easy to overcook as well; lamb continues to cook after being removed from heat so it has to be removed before reaching the ideal internal temperature for medium rare. Plus, it’s a pretty expensive meat so you want it to be perfect!
The iGrill Thermometer takes a lot of the guesswork out of the process. The thermometer comes with two probes so you can track the temperature of two meats at the same time. You just insert the probe into the thickest part of the meat (not touching a bone). The thermometer pairs with your phone through Bluetooth. Using the iGrill app on your smartphone, you can set a temperature or a timer to alert you when your meat is finished cooking. Pretty nifty, right?
Ingredients:
2 racks of lamb, rib bones frenched
salt and pepper, to taste
2 garlic cloves, crushed
1 cup plain 0% Greek yogurt
2 tablespoons olive oil
the zest of 1 lemon
1/2 teaspoon saffron threads, finely crumbled
note: “Frenched rib bones” means that the meat has been cut away from the end of the rib so that part of the bone is exposed
I am trying to get into the habit of making (and wanting) smoothies for breakfast. They are so simple to make and work great for meals on the go. My boyfriend is a huge fan of green smoothies, where he adds various fruits to the blender along with some kale. I don’t mind them, but I thought I’d baby step my way into the smoothie world with something a little more my speed: an oatmeal banana smoothie with espresso and chocolate hazelnut. Mmmmm.
This recipe is adapted from Foxes Loves Lemons, a fellow food blogger as well as a recipe developer. Her recipes are mouthwatering and her pictures are just amazing! She also manages to post daily which just blows my mind. How she manages to deliver such amazing posts daily is beyond me!
My recipe below is a touch different than Foxes Loves Lemons because I wanted to incorporate Nocciolata, a dark chocolate and hazelnut spread, into my smoothie. To see the original version, check out her blog post here.

I fell in love with this recipe for Chilled Raspberry Shooters initially just on the photo; they are so pretty! The original recipe from Taste of Home is actually more of a savory dish but one of the comments mentioned using vanilla yogurt instead of sour cream so I decided to take their suggestion. This take some preparation, so if you plan on using this to impress guests with a slightly different but amazing dessert, be sure to give yourself a few hours before the event.
After making pumpkin pie milkshakes this weekend, I thought it was time to make a savory dish using pumpkin. The weather changed literally overnight giving Philly a very November-like day, so I was craving a warm soup that also would deliver some spicy heat. This recipe for Curried Pumpkin Soup with Spicy Pumpkin Seeds from All You seemed perfect. I kept the recipe mostly intact, adding more ginger and switching out the chili for cayenne.
