As we transition into fall, I start craving comfort food-type dishes, especially ones that don’t take all day to make, because despite still working from home, I find that I have even less time to cook!
This recipe for Bratwurst and White Beans with Sage is a quick and easy dinner that also only uses one pan, so it has quickly become a favorite of mine.
The recipe has under 10 ingredients too, so it’s an easy one to add to your grocery list.
Ingredients:
1 tablespoon olive oil
4 bratwurst, sliced into coins
3 whole garlic cloves
4 fresh sage leaves, plus more for garnish
2 (15 oz) cans cannellini beans, rinsed and drained

Unsurprisingly, I have quite the affinity for dishware. I especially love plates, bowls, and platters that are matte (they present and photograph beautifully!) I wanted to show off my snazzy new plate with a recipe that’s really become a staple in my household: Marinated Swordfish, served over rice with sautéed baby bok choy. I’m not going to pretend it’s the prettiest recipe, but it sure looks nice on the Dadasi plate, doesn’t it? It’s amazing what a difference a good looking plate can make to the presentation of a meal!
This recipe requires very little hands-on time, but you do need to allot some time for the swordfish to marinate.

I’m not going to lie, pressure cookers have always kind of intimidated me. I was under the impression that they were difficult to use, and easy to mess up.
Well, after trying out the Cosori Premium 6qt pressure cooker over the past couple of weeks, I’m here to tell you they are actually quite easy to use!
Pressure cookers are definitely having a moment right now, but they’ve actually been around since the 1600’s in some form or another. Pressure cookers use steam pressure to help cook food faster. When cooking tough meat, pressure cookers help tenderize the meat and cook it surprisingly quickly in the process.
The Cosori Premium 6qt pressure cooker is actually a multicooker – it’s a pressure cooker, hot pot, steamer, slow cooker, food warmer, sauté pan, yogurt maker, and rice cooker – all in one! I couldn’t wait to test the pressure cooker out! I immediately thought of barbacoa – super tender and shredded meat (typically lamb or beef) with seasonings, so it’s time to try making Pressure Cooker Barbacoa Beef Tacos!
We eat a lot of tacos in my house, so I knew this would be a perfect test of the pressure cooker’s ability. This recipe actually uses two of the features available -” sauté/brown” and “meat/stew” pressure cooking. 1 medium onion, peeled and quartered

As I’ve mentioned in the past, pasta night is a very important night in my house. Both my husband and I come from (partially) Italian backgrounds, so pasta once a week is basically a necessity.
There is something about pasta dishes that is so comforting. It’s the meal that my grandmother would make for me every time my sister and I visited, and it’s the meal we most look forward to when visiting my husband’s parents. Pasta dishes always feel like they are cooked with love, don’t they?
I also have quite a love of cheese, so baked ziti ranks pretty high on my list of favorite pasta dishes. Pasta + love + cheese = the perfect comfort food!
Food, especially cheesy food is one of the best ways to show love for those who are special to you. This weekend, I made a super cheesy, meaty, baked ziti for my husband and me, with the help of Borden® Cheese. This casserole-style dish is the perfect way to know you’ll have leftovers for later in the week, or to feed a large (or hungry) family!
This baked ziti is tossed in a ricotta-tomato mixture with ground meat. It is then topped with Borden® Cheese Mozzarella Shreds, which results in a wonderfully gooey, cheesy dish.

This recipe for Pomegranate Baby Back Ribs is based on a Martha Stewart Recipe for short ribs. My husband loves baby back ribs, so I decided to adapt the recipe to use them instead. And because I love using my slow cooker, I made it a slow cooker recipe!

I made this recipe for Chicken Chilaquiles Casserole recently for dinner using OXO’s 3 quart baking dish (9×13). Chilaquiles are actually typically a breakfast recipe, using lightly fried tortillas and salsa. This version is a casserole take on the traditional, and uses grilled corn tortillas baked with a quick homemade tomatillo salsa, rotisserie chicken, and cheese.
Ingredients:
meat from 1 rotisserie chicken, shredded (~3 cups)
1 cup 1% low-fat milk
1/3 cup packed fresh cilantro leaves
1 (26 oz) can whole tomatillos, drained
1 (4.5 oz) can chopped green chilies, drained
1/2 cup chopped scallions
1 cup finely chopped Monterey Jack cheese, divided
Shakshuka (or shakshouka) is an Israeli breakfast dish of eggs poached in a chunky tomato sauce with spices. It’s a favorite of mine, and easily works as a “breakfast for dinner” option for a busy weeknight.
This recipe can be easily customized to suit your tastes. My version below, adapted from a Cooking Light recipe, has a bit of a Middle Eastern take to it, but could also be made more Mediterranean by adding in olives and fresh basil.
Shakshuka is awesome on it’s own, but is even better with pita or crusty bread, or spooned over rice to soak up the flavors of the dish.
Ingredients:
1 tablespoon olive oil
1 red bell pepper cut into thin strips
1 green bell pepper cut into thin strips
1 yellow or orange bell pepper cut into thin strips
1 red onion, sliced
3 garlic cloves, minced
salt and pepper, to taste
1 (29 oz can) tomato puree
1 teaspoon smoked paprika
1 teaspoon cumin
a few drops hot sauce, or to taste
4 large eggs
1 teaspoon fresh thyme leaves
2 tablespoons crumbled feta cheese (omit to make dairy free)
2 cups prepared white rice (optional)
pita or crusty bread for dipping (optional)

I haven’t posted a beef recipe in quite a while, so I’m happy that the one I’m sharing is absolutely delicious! It’s really simple to make as well! This recipe is from the latest Cooking Light and works great as a weeknight dinner. I paired it with the suggested side, Cilantro-Cumin Quinoa, which was also really tasty.
I found the portion of my steaks to be too big, so the below ingredients is a smaller cut than is shown. The beef tenderloin steaks are topped with a simple bell pepper saute and chipotle butter, so a flavorful dinner is ready in no time!

I am kind of obsessed with Zwilling JA Henckel’s knife of the month. It became my favorite knife overnight! The ZWILLING Pro 8″ Ultimate Serrated Chef’s Knife lives up to its name. This bad boy can be used for basically anything. The serrated edge is comprised of large and small scallops, which helps the knife stay share longer than a fine-edged chef’s knife.

I have been using it for anything and everything; fruits, veggies, meat, you name it! I typically gravitate towards Santoku knifes so I was surprised how comfortable I was using this chef’s knife. It works great to chop and thinly slice, but is super sharp so be sure to take care where your fingers are when using it (as you should when using any knife).
I chose a recipe highlighting this knife’s chopping skills, but it also works great on produce with more delicate out layers like tomatoes, and can even be used to slice chicken breasts with ease.
This recipe is adapted from a Rachel Ray recipe, so you know it’s a quick and simple recipe with tons of flavor. Per her suggestion, you should definitely have a loaf of bread on hand to dip into the yummy sauce!

I’m in another busy period of work, so expect a lot of quick weeknight dinner meals! Seafood is always a favorite quick meal of mine, and this recipe from Cooking Light’s latest issue is ready in no time! I paired it with an adaptation of a Bon Appetit Couscous recipe.
The trout is pan seared and then topped with a chunky warm parsley-caper vinaigrette. I’d suggest doubling the recipe so you have some to toss into the couscous!

Summer Vegetables and Pearl Couscous
4 cups cooked Israeli (pearl) couscous (~1 cup dry)
One of my favorite cookbooks is Love and Olive Oil‘s Breakfast for Dinner. (I did a post highlighting their Huevos Rancheros Tacos a while back.) So it’s probably not surprising that I make a few recipes from this cookbook on a regular basis. One that I love to make in particular is their version of the Hawaiian dish Loco Moco.
Typical Loco Moco is usually made with white rice, topped with a hamburger patty (or spam), a fried egg, and brown gravy. Love and Olive Oil’s version substitutes coconut sticky rice for the white rice, uses ground pork instead of the hamburger patty, and finishes the dish off with a sweet-spicy-salty soy sauce reduction rather than brown gravy.
I decided to alter their recipe slightly to give it a local spin; this version is topped with pork roll (or Taylor ham) instead of the ground pork, and this recipe for New Jersey-style Loco Moco was born!
Pork Roll is originally from Trenton, New Jersey (hence the name of this post), but can also be found in parts of Pennsylvania, Delaware, and Maryland. The pork product is thinly sliced and pan fried and is a staple in most breakfast places in the area.
This Slow Cooker Saucy Chicken Over Rice is one of my favorite go-to recipes, so I was really surprised to find that I hadn’t shared it on my blog yet!
My fiance is a runner, so I tend to make this recipe a few days before the race because it has a nice balance of carbs and protein with no dairy. (Note: every runner is different and has their own preferred menu on the days leading up to a race, this just happens to be one of my fiance’s favorites.)
This recipe from MyRecipes.com is a really simple slow cooker meal that involves about 15 minutes prep in the morning before popping everything into the slow cooker. The result is a yummy, tender, chicken recipe that freezes and reheats great as well! I’ve adapted the recipe slightly, but the general concept is still there.
