Freezable Breakfast Burritos

Ironically, I’ve been having a hard time getting into a cooking groove during this pandemic. Even though I’m now home basically ALL the time, my job seems to have gotten even busier, and I’m in the process of getting my MBA so I seem to have even less time in the day to cook. Which means I need to get back into doing some food prep on my weekends more than ever, like making these Freezable Breakfast Burritos.

Breakfast is probably one of the hardest meals for me to actually make. For one, I’m not terribly good at making eggs. Plus, I’d much rather roll out of bed and start working immediately. So any make ahead recipes that I can quickly heat up are super helpful.

These Breakfast Burritos are perfect for hectic mornings.  They are freezable, so you can take them out of the freezer the night before and just microwave them quickly in the morning. Plus, they are completely customizable to whatever you like in your breakfast burrito! This makes 10 breakfast burritos, so feel free to adjust as needed (my husband and I can polish these off within 2 weeks).

Ingredients:

  • 1/2 (19 oz) bag of tater tots
  • 1 tablespoon olive oil
  • 1 lb breakfast sausage, casing removed (you may be able to find just ground breakfast sausage without the casing as well)
  • 10 large eggs
  • 1/2 cup whole milk
  • hot sauce, to taste (optional)
  • salt and pepper, to taste
  • 1 (15.5 oz) can black beans, rinsed and drained
  • 2 cups shredded Mexican cheese
  • 1 pint cherry tomatoes, quartered
  • 10 (8-inch) flour tortillas

Slow Cooker Chicken Enchiladas

I’ve been trying to use my Sundays to prepare better for the week ahead. I’m not exactly a master of food prep, but I am getting a handle on preparing a few meals (or parts of meals in some cases) ahead of time for quick reheating or assembly on weeknights.

One of the easiest ways to prepare an awesome make ahead meal is to use your slow cooker, like in this recipe for Slow Cooker Chicken Enchiladas. You just throw the ingredients for the chicken into the slow cooker and wait. Later that day, assemble the enchiladas and either cover and store for a weeknight, or cook for that evening’s dinner!

Ingredients:

  • 1 lb boneless skinless chicken breasts
  • 1 lb boneless skinless chicken thighs
  • 4 tablespoons taco seasoning mix
  • 1 medium red onion, chopped
  • 1 (14.5 oz) can diced tomatoes with green chilies
  • 1 (14.5 oz) can black beans, rinsed and drained
  • 8 flour tortillas (I used the “fajita” size); can substitute corn enchiladas to make gluten free
  • 2 (10 oz) cans enchilada sauce (I used one red, one green)
  • 3 cups shredded Mexican cheese blend, divided
  • 1/4 cup sliced green onions
  • 1/4 cup chopped cherry tomatoes
  • optional toppings: sliced black olives, sour cream, cilantro

Pressure Cooker Black Bean Dip

I love a good dip. It’s one of my favorite snack to bring to a party — it travels well and are always a hit! As a somewhat recent owner of COSORI 6 Qt Electrical Pressure Cooker and I had yet to use it for beans, so I needed to change that! In case you didn’t know, you can use an electric pressure cooker (or multi-cooker) to cook dried beans relatively quickly, without needing to soak them overnight or boil them for an hour.

This Pressure Cooker Black Bean Dip can be made in about 1 hour, and is creamy and flavorful, and comes topped with all the fixins!

Ingredients:

Seasoning blend:

  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt

Other ingredients:

  • 1 1/2 cups uncooked black beans, rinsed
  • 1 red onion, chopped and divided
  • 3 garlic cloves, minced
  • 1 (14.5 oz) can diced tomatoes, drained
  • 2 cups vegetable broth or water
  • 1 tablespoon olive oil
  • seasoning blend (above), or 1 1/2 tablespoons taco seasoning
  • the zest and juice of 1 lime
  • 1/4 teaspoon hot sauce

For serving:

  • bell peppers, finely chopped (I used mini sweet peppers for more color)
  • reserved red onion, chopped
  • cilantro
  • pico de gallo
  • sour cream (omit to make dairy-free)
  • tortilla chips

Tex Mex Stuffed Peppers

The school year has begun. I don’t have kids, but I am married to a teacher, so this time of year gets pretty hectic. Which means it’s about time I started stocking my fridge and freezer on weekends so weeknight dinners are a bit more manageable.

These Tex Mex Stuffed Peppers are a super tasty (and easy) make-ahead meal. You can cook these over the weekend and reheat during the week, or freeze before cooking, thaw, and cook when ready to eat!

Ingredients:

  • 1 pound ground beef
  • 4 tablespoons taco seasoning
  • 1 cup jarred salsa (mild or medium)
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (8 oz) box of yellow rice, cooked according to package directions
  • 6 bell peppers
  • 1/4 cup water
  • 1 cup shredded Mexican cheese blend

Arepas Pabellón

This recipe for Arepas Pabellón is inspired by a visit to an absolutely delicious Venezuelan restaurant. Last week, I checked out one of Philly’s newest restaurants: Puyero Venezuelan Flavor.

source: puyeroflavor.com

Located just off of South Street on S 4th, the restaurant serves Venezuelan street food including arepas, patacones and tequenos, plus yummy desserts like churros.

The 22-seat restaurant is vibrant and colorful, very welcoming. I enjoyed reading a selection of Venezuelan sayings that decorate one of the walls; my favorite: “Más hambre que piojo en peluche” or “I’m hungrier than a tick on a teddy bear.”

Owned by brothers Simon and Gil, and Gil’s wife Manuela, the restaurant has a very “homey” feel to it. The entire menu is available for lunch and dinner, with brunch options coming in the spring. You can also order delivery through Caviar (which I’ve totally already done. Hence the photos below, showing my delivery food).

While there, I tried quite a few menu items, but my favorites were the tequenos, white cheese wrapped in deep fried dough, and arepas pabellon, which is an arepa filled with shredded beef, black beans, fried sweet plantains, and white cheese.

I wanted to try to make Arepas Pabellón for myself at home. This recipe can be made ahead of time, reheated, and assembled when ready to eat.

Shredded Beef:

  •  garlic cloves, minced
  • 1 tablespoon dried oregano
  • 2 tablespoons tomato paste
  • 1 cup crushed tomatoes
  • 4
  • 1/4 tsp pepper
  • 1 tablespoon hot sauce

Arepas:

  • 1 1/2 cups masarepa (a type of cornmeal found in the international section of most supermarkets. white or yellow is fine)
  • 1 1/2 cups water, or more if needed
  • 1 teaspoon vegetable oil
  • 1 tablespoon salt
  • 1 tablespoon unsalted butter

Fried Sweet Plantains:

Other Fillings:

  • 1 can black beans, rinsed and drained

Cowboy Caviar

Note: I was sent some products from Bob’s Red Mill, including Orca Beans. All opinions are my own.

There are some ingredients that catch your eye, and you just know you have to use them in a recipe. Orca beans are definitely one of those ingredients. Luckily, Bob’s Red Mill sent me a bag of their orca beans, which are grown in Moses Lake, Washington exclusively for the company.

Orca beans, also known as calypso beans, are black and white splattered, and keep their cool coloring even after cooking. This heirloom bean is high in fiber and iron, and work great in any recipe where you would normally use beans.

But. They are so darn pretty I wanted to let them stand out by using them in a very colorful dish.

Cowboy Caviar seemed like the perfect way to show the orca beans off. Typically made with black eyed peas, cowboy caviar is a bean salad / salsa that is great as a party app, on top of  grilled chicken, or just on it’s own!

Ingredients:

  • 1/2 cup dried orca beans
  • 4 cups water, plus more if needed
  • 1 cup black beans, rinsed and drained
  • 1 cup tomatoes, finely diced
  • 1 cup frozen corn kernels, defrosted
  • 1/2 cup red onion, finely diced
  • 1/2 cup red bell pepper, finely diced
  • 1 jalapeno pepper, finely diced
  • 1/2 cup cilantro, chopped
  • 1/2 cup scallions, thinly sliced

Dressing:

  • 2 tablespoons olive oil
  • the juice of 1 lime
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 teaspoon garlic powder

Mexican Spaghetti Squash Egg Boats

Every Sunday night is pasta night in my house. Most of the time, that means taking out a batch of tomato sauce from the freezer and cooking whatever dry pasta we have one hand, but it’s nice to switch it up every now and then, like making this recipe for Mexican Spaghetti Squash Egg Boats.

I have never worked with spaghetti squash before, so I thought Sunday night would be a great time to try it.

This recipe for Mexican Spaghetti Squash Egg Boats tops the spaghetti squash with a flavorful chunky salsa, plus an egg that is cooked to over-easy (slightly runny), and then (if you are in the mood) topped with cheese and avocado slices.

These Mexican Spaghetti Squash Egg Boatss are very hearty without being too heavy. They take some time to prepare, so these are good for a weekend meal rather than trying to make these on a busy weeknight.

Ingredients:

  • 2 spaghetti squash, halved
  • 1 small yellow onion
  • 2 plum tomatoes, diced
  • 1 green bell pepper, diced
  • 1 jalapeno, minced
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 2 teaspoons oregano
  • 1 teaspoon chili powder
  • salt and pepper, to taste
  • 1 (15 oz) can black beans, rinsed and drained
  • 1/2 cup grated cheddar cheese, optional
  • 2 avocados, sliced
  • Cilantro, to taste
  • 2 limes, halved

Slow Cooker Beef and Bean Chili

Note: I was sent a Rubbermaid’s Easy Find Lids 20-Piece Storage Set to review. All opinions are mine alone.

We have had a pretty moderate fall so far, but the cold weather isn’t too far off. This time of year, I like to fill my freezer with different meals so I always have comfort food on hand for busy weeknights. One of my favorites, of course, is chili.

I was sent Rubbermaid’s Easy Find Lids 20-Piece Storage Set to try out, so it was the perfect time to make my annual batch of chili!

Rubbermaid Easy Find Lids are a life saver – I typically just keep the containers from take out and they are all just shoved into a cabinet net to my stove, with no organization to them whatsoever. So i spend a good 10 minutes finding the right top to go with whatever container I’ve chosen. Rubbermaid’s storage set takes the annoyance out of trying to find the right top — the Lids snap on to the bottom of their respective containers so you can find them in no time! The containers also nest inside each other so you can have a small stack of all of your containers and lids in one spot.

The 20-piece set comes with  3 (0.5 Cup), 3 (1.25 Cup), 1 (2 Cup), 2 (3 Cup), 1 (5 Cup), and 10  respective Easy Find Lids. The plastic is dishwasher, freezer, and microwave safe and is also BPA-free.

On to the recipe! This time around, I went for a classic – ground beef and beans with some bratwurst meat for additional flavor (I used beef bratwurst, but you can use any type you’d like).

Ingredients:

  • 1 tablespoon unsalted butter (omit for dairy free)
  • 1 tablespoon olive oil
  • 2 pounds ground beef
  • 1 pound bratwurst, removed from its casing
  • 5 garlic cloves, minced
  • 1  onion, chopped
  • 1 chipotle from can of chipotles in adobo sauce, finely chopped (seeds removed if preferred)
  • 1 tablespoon adobo sauce from can of chipotles in adobo
  • 2 red bell peppers, chopped (or whatever color you prefer)
  • 2 (15.5 oz) cans red kidney beans, drained
  • 1 (15.5 oz) can black beans, drained
  • 1 (28 oz) can crushed tomatoes
  • 1 (28 oz) can diced tomatoes, undrained
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon ground chili powder
  • 1 teaspoon cumin powder
  • 1/2 tablespoon dried parsley
  • 1/2 tablespoon dried basil
  • 1/2 teaspoon cayenne
  • 1 cup beef stock
  • 1 tablespoon espresso grounds
  • For garnish: 1 tablespoon fresh cilantro, chopped; 4 oz sour cream; 4 oz cheddar or pepper Jack cheese, shredded

Slow Cooker Sausage and Sweet Potato Chili

Nothing warms you up quite like a bowl of homemade chili. I love how hearty chili is while still being a relatively healthy dinner choice. And when made in a slow cooker, it’s waiting to greet you when you get home!

It’s no secret that I am a huge fan of slow cooker recipes; I have almost 30 slow cooker recipes on my blog as of this post!  And chili is a perfect slow cooker meal — brown your meat, saute the onions and peppers, throw everything else in, cover, and let the slow cooker do it’s magic.

I was sent this slow cooker chili recipe from Redpack tomatoes for Slow Cooker Sausage and Sweet Potato Chili, along with a kit containing some of their yummy crushed tomatoes. I had never made chili with sweet potatoes in it before but it sounded absolutely delicious! I adapted my recipe slightly, mainly due to me using a 28 oz can of diced tomatoes instead of a 14.5 oz can (oops).

Redpack also will be hosting an awesome promotion from today, Oct. 22 to Nov. 12 during which they will give away two slow cookers a day for three weeks on its Facebook page — that’s 44 slow cookers! Just go to RedPack Tomatoes Facebook Page to enter.

Ingredients:

  • 1 lb sweet Italian sausage, removed from its casings
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 2 cups beef broth
  • 1 (28 oz) can Redpack Crushed Tomatoes in Thick Puree
  • 1 (28 oz) can Repack Petite Diced Tomatoes in Juice
  • 2 (15 oz) cans black beans, drained and rinsed
  • 2 medium sweet potatoes, peeled and cut into large chunks
  • 1 cup shredded Mexican cheese blend
  • 1 jalapeno, minced (optional)
  • cilantro leaves, chopped (optional)

Black Bean Brownies

So, I’ve avoided making this recipe for months. Seriously, MONTHS. Black bean brownies always sounded really um… not tasty… to me.

This recipe is from a cookbook I received ages ago called Vegan Beans from Around the World: Adventurous Recipes for the Most Delicious, Nutritious and Flavorful Bean Dishes Ever. There are some seriously awesome recipes in here, from African Peanut Soup to Curried Dal with Cauliflower. But I was really curious about the Black Bean Brownies and wanted to make them. So after months of putting it off I finally tried it. And this recipe really changed my mind about black bean brownies! The consistency is spot on, and the chocolate flavor comes through really well. Who knew?

I adapted this recipe slightly from the original: I doubled the recipe to make a thicker brownie and used a different baking dish so the cooking time is different as well. I also limited the cinnamon because when I originally made these, I felt like the cinnamon flavor was too strong.

Ingredients:

  • 2 (15.5 ounce) cans of black beans, rinsed and drained
  • 1/4 cup plus 2 tablespoons vegetable oil
  • 1/4 cup plus 1 tablespoon freshly ground flax seeds
  • 1/4 cup plus 2 tablespoons warm water
  • 1/2 cup brown sugar
  • 1/2 cup plus 2 tablespoons cocoa powder
  • 2 teaspoons baking powder
  • 1/4 tsp salt
  • 2 teaspoons vanilla extract
  • 2 teaspoons lukewarm coffee (I just used what was left from my morning coffee)
  • 1 teaspoon cinnamon
  • 1/4 cup – 1/2 cup walnuts

Black Bean Soup with Orange Jalapeno Salsa

Every food blogger dreams of walking out of their day job and never looking back to pursue a full-time career in food. Most keep this as a fun little pipe dream to think about while sipping on their morning coffee. Michael Natkin, however, did the unthinkable. He took a sabbatical from his job as a software engineer and spent 6 months immersed in food, experiencing Italy and Israel through food with his family and interning in the kitchen at Cafe Flora. He dove into the world of food full time this year.
His blog, Herbivoracious, has been going strong since 2007. If you’ve never seen it, go there. Now. I’ll wait…. Fantastic, right?!

Michael’s cookbook based off his super popular blog, Herbivoracious: A Flavor Revolution with 150 Vibrant and Original Vegetarian Recipes, was released on May 9. Michael has been touring America to promote his book and recently came through Philadelphia. He hosted a food blogger event at the fantastic R2L, where local bloggers (like yours truly) were treated to bites from the kitchen and the opportunity to chat with Michael himself.

So, the cookbook is vegetarian. It honestly doesn’t even need to be mentioned though because the recipes inside the pages of this book are not wimpy, skimpy meals. As his blog states “You Don’t Have To Be A Vegetarian To Love This Cookbook!” and he is so right. The recipes are really inventive and sound so appetizing that you won’t even wonder where the meat is. Michael kindly allowed me to pick any recipe I wanted from the book to use for this post and boy did I have a problem. I am not exaggerating when I tell you I tagged over 50 recipes as possibilities.
see?
I finally decided on this recipe for Black Bean Soup with Orange Jalapeno Salsa when I mentioned it to my boyfriend and his eyes lit up. I altered the recipe ever so slightly, so check out the original at the link. You should check it out anyways because Michael gives some really great tips prior to the recipe.
Ingredients:
  • 6 cans black beans
  • Vegetable broth
  • 2 bay leaves
  • 3 tablespoons olive oil
  • 1 white onion, diced
  • 1 yellow bell pepper, diced
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground chipotle
  • 6 mandarin oranges (or fewer, larger oranges)
  • 1/4 cup red onion, finely diced
  • 1jalapeno pepper, finely diced
  • 1 handful cilantro leaves
  • salt to taste
  • Sour cream
Each recipe in the cookbook mentions any dietary restrictions that are satisfied within the recipe. This soup is vegetarian, vegan if the sour cream is omitted, and is gluten-free. This recipe serves 6.

Cumin Spiced Fish Tacos with Avocado Mango Salsa

With Cinco de Mayo this past weekend, I couldn’t stop thinking about making some kind of Mexican-themed meal this weekend. So I was pretty excited when my boyfriend suggested Fish Tacos on Sunday. My trusty Cooking Light obviously had the perfect recipe to fulfill our craving. These Cumin Spiced Fish Tacos with Avocado Mango Salsa get an extra boost of flavor from toasting the cumin seeds before grinding. If you can’t find cumin seeds, ground cumin will work for the recipe as well, just skip the toasting part.
Ingredients:
  • 1 tablespoon cumin seeds
  • 3/4 teaspoon salt, divided
  • 1/2 teaspoon paprika
  • 1/4 teaspoon freshly ground black pepper
  • 2 garlic cloves, minced
  • 1 pound tilapia fillets
  • 1 tablespoon coconut oil
  • 1 cup sliced peeled avocado
  • 2/3 cup finely chopped peeled ripe mango
  • 1/4 cup chopped green onions
  • 1/4 cup finely chopped red onion
  • 2 tablespoons finely chopped fresh cilantro
  • the juice of one lime
  • 1/4 teaspoon ground red pepper
  • 1/2 can black beans, rinsed
  • 8 oz sour cream
  • 2 tablespoons chopped cilantro
  • the juice and zest of 1/2 a lime
  • 8 (6-inch) corn tortillas
