Mango Peach Lassi

I mentioned in a previous post that I had the opportunity to try a box of Misfits Market, a Philadelphia-based company that rescues produce from regional farms and distributes it throughout the Northeast. (Check out my last post to learn more about them!)

The box came with an assortment of fruits and vegetables: Mushrooms, Pears, Artichokes, Mango, Lettuce, Bell Peppers, Butternut Squash, Spinach, Corn and Cucumbers. I highlighted the artichokes in my recipe for Baked Stuffed Artichokes, so today I want to share a simple recipe using fresh mango.

I absolutely love mangos, and there is nothing quite like a perfectly ripe mango. They are delicious just on their own, but this recipe for Mango Peach Lassi is a simple make ahead recipe that you can enjoy for breakfast on the go!

Ingredients:

  • 3 mangoes (~3 cups), peeled, seeded, and sliced
  • 2 peaches (~2 cups), sliced
  • 1 cup Greek Vanilla yogurt
  • 1/2 cup skim milk
  • 1 teaspoon freshly grated ginger
  • 1 teaspoon honey
  • 4 fresh mint leaves, for garnish

Pressure Cooker Mango Chicken

I’ve mentioned before how awesome the Philadelphia food scene is, and it seems to only be getting better! One of the latest additions to the Philadelphia restaurant scene is Makhani, which just opened in Old City. Owned by restaurateur Shafi Gaffar, the restaurant includes a 34 seat dining room as well as a private space on the second floor for up to 50 for special events. The restaurant also provides delivery throughout Philadelphia.

Makhani, which means “with butter”, specializes in North Indian curries that usually have thick, moderately spiced and creamy gravies. The use of dried fruits and nuts , as well as the incorporation of dairy products like milk, cream, home-made cottage cheese, ghee (clarified butter) and yogurt, play an important role in the cooking of both savory and sweet dishes. Everything in the kitchen, from the breads, to the sauces, to the desserts, are made in-house and from scratch using high quality, fresh ingredients from Chef and his culinary team. Makhani will also offer authentic Indian dishes in a specially designed Tandoori clay oven brought over direct from India. On the menu, look for an extensive list of notable vegan options, as 50% of the menu is vegan.

The made-to-order, farm-to-table menu from executive chef Sanjoy Banik is a relatively uncommon approach to Indian restaurants in the region. The flavors of Indian food can take up to ten hours to develop, so many restaurants pre-batch their preparations. The menu includes modern spins on traditional North Indian cuisine, and also features some unexpected ingredients, such as lobster, scallops, and lamb shanks.

Gaffar is originally from Bangladesh, where is family owns a mango garden/farm and works as inspiration for many dishes on the menu,  including Indian Mango Chicken (shown above)- a dish made of  “spiced chicken breast cooked in our homemade mango sauce with fresh mangoes.” I decided to try to make my own version at home using my multi-pot to mimic the flavors of a dish that requires cooking for a long period of time to fully develop its flavors.

My version uses chicken thighs and differs in overall flavor to the version at Makhani, so I strongly suggest trying out their version as well!

 

Ingredients:

  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground sweet paprika
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground pepper
  • 1/2 teaspoon salt
  • 1.5 lbs boneless skinless chicken thighs
  • 8 oz frozen mango chunks
  • 1 (14 oz) can light coconut milk, thoroughly shaken
  • 1 medium onion, chopped
  • 3 garlic cloves
  • 1 teaspoon chopped ginger
  • 0-2 dried red chili peppers, depending on your spice tolerance
  • 1 teaspoon fennel seeds
  • 2 tablespoons oil (to make dairy free) or ghee
  • 6 cardamom pods, smashed
  • 2 cinnamon sticks
  • 4 tablespoons tomato paste
  • 1 cup chicken broth or water
  • 2 cups cooked rice
  • fresh cilantro, chopped, for garnish
  • fresh mango slices, for garnish

Mango Rum Kefir Lassi

I think I’m pretty sure I’m late to the Kefir game here, but at least I’ve finally arrived! Kefir is a culture milk drink that is high in nutrients and probiotics which helps aid in digestion. A 6 ounce serving of Kefir has 6 grams of protein and 20% of your recommended daily calcium, and is actually a more potent source of probiotics than yogurt.

Its tangy flavor works really well in smoothies. So when I saw Cooking Light’s recipe for a Mango Rum Kefir Lassi, I knew I had to try it out. (You can omit the rum to have a really awesome lassi for breakfast as well. But hey, who doesn’t love a cocktail that has some health benefits to it?) A lassi is typically yogurt-based, so Kefir is a really simple substitute.

This Cooking Light recipe is most certainly not a traditional lassi, but it’s really tasty and is packed with good-for-you ingredients: kefir, coconut water, honey, turmeric, cinnamon, mango, and bananas. Yum!

Ingredients (makes 3 servings):

  • 1 cup plain low-fat kefir
  • 1/2 cup coconut water
  • 1/4 cup spiced rum (I used a coconut-spiced rum), if desired
  • 3 tablespoons honey
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 (12 oz) bag frozen chopped mango
  • 1 ripe banana
  • ancho chile powder, for garnish

Frozen Mango Daiquiri

About this time every year, I start wishing for warmer weather. And yet, this time every year, we tend to get one more winter storm to prove that it’s not quite spring just yet.

So, given that it’s still freezing in Philadelphia, I decided to make a frozen cocktail, a Frozen Mango Daiquiri, that can help me pretend it’s nice and warm outside.

This is a fairly traditional frozen daiquiri, although I added in some cinnamon to complement the mango.

I used frozen mango chunks to make this, so it’s a super easy recipe.

Ingredients (makes 2 servings):

  • 2 cups ice
  • 1 (12 oz) bag frozen mango chunks
  • 4 oz white rum
  • the juice of 3 limes, plus more if needed
  • 1 tablespoon white sugar, plus more for rimming the glasses
  • 1 teaspoon ground cinnamon
  • lime wedge, for garnish

Chicken Mango and Pineapple Salad

A while back, I was given the chance to taste test some of the Cheesecake Factory‘s new menu items, which they do twice a year (who knew?) I was able to sample some cocktails and bites from across the menu. I, naturally, also wanted to try to make one of the recipes at home.

Cocktails included:

  • Cucumber Mojito – Gin and St. Germain with cucumber, basil and mint
  • Blood Orange Martini – Vodka, blood orange liqueur and blood orange juice
  • Irish Coffee Manhattan – Jameson Irish coffee served ice cold and straight up
  • Espresso Martini – Vodka with cold brew coffee

Other new menu options included:

  • Korean Fried Cauliflower – crispy cauliflower tossed in a sweet and spice sauce, topped with toasted sesame seeds and green onions
  • Chicken Taquitos – Crispy corn tortillas with grilled chicken, green chile, corn, onion, cilantro and cheese. served with avocado cream and salda verde
  • Skinnylicious Chicken Pot Pie – Sauteed chicken breast, potatoes, mushrooms, onions, peas and carrots in a light cream sauce, topped with puff pastry
  • Chicken Mango and Avocado Salad – Mixed greens, fresh pineapple, tomato, cucumber, red peppers, crispy wontons and almonds
  • Pasta Napoletana – Italian sausage, pepperoni, housemade meatballs, mushrooms, peppers, bacon, onions and garlic in a tomato sauce served over parmesan cream pasta
  • Seared Ahi Tuna – Served over white rice with sriracha aioli, stir-fried vegetables and wasabi butter sauce
  • Truffle-Honey Chicken – Fried chicken breast with truffle-honey, asparagus, and mashed potatoes
  • Chicken Riesling – Chicken breast, mushrooms, bacon, onions and garlic in a white wine Riesling cream sauce with buttered parmesan pasta
  • Carne Asada Steak Medallions – Certified Angus beef with sauteed peppers, onions and cilantro, served with a creamy ranchero sauce, fresh corn and white rice
  • Chicken Parmesan “Pizza Style” – Chicken breast coated with breadcrumbs, covered with marinara sauce and melted cheese. Topped with angel hair pasta in an alfredo cream sauce
  • Crispy Pineapple Chicken and Shrimp – Crispy chicken and shrimp with snow peas, mushrooms, onions, garlic, peppers and cilantro in a sweet and spice sauce, served with white rice

The Cheesecake Factory has over 250 items on their menu, so there is sure to be something for everyone’s taste buds.

I tried my hand at recreating the salad we were served, with some adjustments to try to make it a bit more “home cook” friendly to make this Chicken Mango and Pineapple Salad.

Ingredients (serves 2):

  • 1 boneless, skinless chicken breast
  • 1 tablespoon teriyaki sauce (store bought, or recipe below)
  • 5 oz baby lettuce mix
  • 1/4 cup fresh pineapple chunks
  • 1/4 cup fresh mango, cut into chunks
  • 2 tablespoons julienned carrots
  • 2 tablespoons tortilla strips, plus more for garnish
  • 2 tablespoons grape tomatoes, halved
  • 1/2 red bell pepper, cut into thin strips
  • 1/4 cucumber, cut in half lengthwise and sliced thin
  • 1 tablespoon almond slivers, toasted
  • 1/2 tsp black sesame seeds
  • 1 teaspoon fresh mint, thinly sliced

Dressing

  •  1/4 cup extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon low sodium soy sauce
  • 1 tablespoon honey
  • 1 tablespoon minced ginger
  • 1/2 teaspoon toasted sesame oil
  • 1 teaspoon Dijon mustard
  • pinch of salt and pepper
  • juice of 1/2 an orange

Teriyaki Sauce (makes 1/2 cup – you’ll need ~1/4 cup for this recipe):

  • 1/4 cup low sodium soy sauce
  • 1/2 cup water
  • 1/4 tsp ground ginger
  • 1/8 tsp garlic powder
  • 2 tablespoons brown sugar
  • 1 tablespoon honey
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water

Grilled Sirloin Steak with Mango Chile Salad

I realized a few days ago that I rarely make steak. I tend to gravitate towards fish and shellfish recipes because they are usually so simple and quick to prepare on weekdays. But grilled steak is also a really great quick option, especially on hot days when you don’t want to use your stove. (Are you seeing a theme in my posts recently? My apartment is on the top floor and it gets quite warm up there in the summer months so my stove gets a break for the most part from June to August.)

The latest Cooking Light had a recipe for a simple grilled sirloin steak served with a really beautiful mango chile salad. The whole recipe from start to finish took less than 30 minutes, perfect for a weeknight!

Ingredients (serves 4):

  • 1 pound sirloin steak, trimmed
  • 1 teaspoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Cooking spray
  • 2 tablespoons chopped fresh cilantro
  • The juice of one lime
  • 1 medium ripe mango, peeled and diced (I used a Haden mango)
  • 1 red jalapeno pepper, seeded and roughly chopped (you can use green if you can’t find red)
  • 2 tablespoons chopped unsalted, dry-roasted peanuts

Cumin Spiced Fish Tacos with Avocado Mango Salsa

With Cinco de Mayo this past weekend, I couldn’t stop thinking about making some kind of Mexican-themed meal this weekend. So I was pretty excited when my boyfriend suggested Fish Tacos on Sunday. My trusty Cooking Light obviously had the perfect recipe to fulfill our craving. These Cumin Spiced Fish Tacos with Avocado Mango Salsa get an extra boost of flavor from toasting the cumin seeds before grinding. If you can’t find cumin seeds, ground cumin will work for the recipe as well, just skip the toasting part.
Ingredients:
  • 1 tablespoon cumin seeds
  • 3/4 teaspoon salt, divided
  • 1/2 teaspoon paprika
  • 1/4 teaspoon freshly ground black pepper
  • 2 garlic cloves, minced
  • 1 pound tilapia fillets
  • 1 tablespoon coconut oil
  • 1 cup sliced peeled avocado
  • 2/3 cup finely chopped peeled ripe mango
  • 1/4 cup chopped green onions
  • 1/4 cup finely chopped red onion
  • 2 tablespoons finely chopped fresh cilantro
  • the juice of one lime
  • 1/4 teaspoon ground red pepper
  • 1/2 can black beans, rinsed
  • 8 oz sour cream
  • 2 tablespoons chopped cilantro
  • the juice and zest of 1/2 a lime
  • 8 (6-inch) corn tortillas

Black Bean Mango Salsa on Jalapeno Parmesan Crisps

You can never have too many quick appetizers on hand. I am loving the Kitchen Table Makers Crisps. I already did one post on the Rosemary Parmesan Crisps, so it was time to get a little spicy. I used Kitchen Table Makers Jalapeno Parmesan Crisps and topped it with a yummy Black Bean Mango Salsa. The original recipe had jalapenos within the salsa, but after tasting the Crisps, I decided they had enough heat that the additional jalapeno might be too much. If you’re a huge spice fan, feel free to add a bit of chopped jalapeno to the salsa.
Ingredients:
  • 1 can (15 oz.) black beans, rinsed and drained
  • 1 firm, ripe mango, diced
  • 1  tomato cored and chopped
  • 1 orange bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1/4 of an onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 clove garlic, peeled and minced
  • the juice of 2 limes plus zest
  • Salt, to taste
  • Jalapeno Crisps

Mango Couscous with Salmon

I really don’t like winter. I know we are having quite a mild winter in Philly this year but it goes past the cold and snow. I miss sunlight. And sitting outdoors. And most of all, I miss summer foods. So I decided it was time for a little peek into summer: Mango Couscous with Salmon. (I found the recipe on Taste of Home).
Ingredients:
  Salmon:
1 tablespoon olive oil
2 garlic cloves, minced
Salt & pepper, to taste
2 tablespoons minced fresh parsley, divided
2 salmon fillets (6 ounces each)
  Couscous:
1 cup chicken broth
1 tablespoon butter
1/2 cup couscous (I used tricolor, because it’s so darn pretty)
1 plum tomato, chopped
1 medium mango, peeled and chopped
  Mango Sauce:
1 medium mango, peeled and cut into chunks
the juice of 1 lemon
1 tablespoon honey
2 fresh basil leaves
1 tablespoon minced fresh parsley
1 tablespoon water
1 tablespoon Dijon mustard

In a pot, bring the broth and butter to a boil. Stir in couscous. Cover and remove from heat and let stand for 5 minutes.
Stir in tomatoes, mango, and 1 tablespoon parsley.
Combine the olive oil, garlic, salt, pepper, and 1 tablespoon parsley in a bowl.
Rub on the salmon.
Heat a grill pan over medium high heat. Spray lightly with cooking spray. Add the salmon to the pan skin side up. Cook for 3 minutes. Flip the salmon and cook for 4 minutes, or until cooked to your liking.
While the salmon is cooking, combine the mango, lemon, honey, basil, parsley, water, and mustard in a blender.
Puree for 1-2 minutes.
To serve, add the salmon and couscous to a plate. Spoon the sauce over the salmon.
Look at those colors!
What I love most about this dish is you get to enjoy mango two ways: sweet within the couscous and tangy within the sauce.
I made this for my boyfriend and he loved it! He was all but licking his plate clean. He even started trying to eat off of mine!
So.. I think it’s safe to say this is a winner. 🙂

Mango Shrimp Kebabs

Earlier this week, I wrote a post reviewing Cooking Light’s new App. I have been playing around with the app for about a week and kept coming back to this Mango Shrimp Kebab recipe. The colors are amazing, and it sounded so delicious! I cut the recipe in half (makes 2 servings) but kept the original recipe mostly intact.

 

Ingredients:
3/4 pounds large peeled and deveined shrimp
Salt and pepper, to taste
1 large red bell pepper, cut into 1-inch pieces
1 mango, peeled and cut into 1-inch cubes
1/2 small red onion, cut into 1-inch pieces
Juice and zest of 1 lime, cut into wedges
Cooking spray

Preheat your grill to medium-high heat. Prepare your mango, pepper, and onion.

 

Thread shrimp, bell pepper, mango, and onion alternately onto 4 skewers. Sprinkle with salt, pepper, and lime zest. Note: the original recipe did not include zest. But I thought it might be an easy addition to the flavors, you’re using a lime anyways!

Coat the grill with cooking spray. Place the skewers on the grill rack and cook for 2 minutes on each side, or until shrimp are cooked (Mine took closer to 3-4 minutes per side, I blame my little indoor grill. If using a normal grill, 2 minutes on each side should be plenty.)

Serve with  lime wedges. Squeeze the wedges over kebabs before eating.

 

Before I go on, I want to give special thanks to my “Sous Chef” and friend Ericka for helping me out. I am pretty darn scared of knives and cutting slippery fruit stresses me out quite a bit, so I am forever grateful to Ericka for her amazing mango-chopping skills.

We made this along with the Corn with Lime and Chipotle, also suggested by the app. And I couldn’t be happier with the results. The pairing was perfect! We actually ended up using some of the leftover chipotle butter mix on some of the shrimp, just to try it out.

Ericka thought maybe marinating the shrimp in a jerk marinade before adding to the skewers would really bump this recipe up a notch and I agree. However, the original recipe is delicious on its own, and quite simple and fast to make. Look out for my post on the Corn, these two really should be eaten together!

The ingredients were wonderful together, sweet, tangy and fresh. Ericka kept referring to getting a piece of each ingredient in one bite “the perfect bite” and I have to agree with her.

Do not forget to squeeze the lime over the skewers before enjoying. The citrus adds a whole new dimension to this already delicious dish.
