Fresh Juiced Apple Cider

‘Tis the season for apple cider! Every year, I make sure to pick up some store-bought apple cider to enjoy. But this year, I wanted to try to make my own Fresh Juiced Apple Cider using my Hurom Juicer (paid link) and was surprised with how easy and delicious it was to make!

You can make this fresh juiced apple cider with whatever your favorite apple is, but I suggest aiming for a sweeter apple, like Honeycrisp.

I like to add rye to my cider to make a spiked cider. You can also add bourbon, spiced rum, or drink as is for a non-alcoholic beverage!

Ingredients (makes about 6 cups, multiply as needed):

  • 12 apples, cored and sliced
  • 10 whole black peppercorns
  • 8 whole allspice berries
  • 5 whole cloves
  • 2 cinnamon sticks
  • 1/2 teaspoon vanilla extract
  • the zest of 1 orange
  • the zest of 1 lemon
  • 9 oz (or 6 shots) rye, bourbon, or spiced rum (omit to make non-alcoholic)

Irish Plum Pudding

In the 11 years I’ve been writing posts for this blog, I have never posted on Christmas Day!

This year, I decided to finally rectify that and bring a recipe for a Christmas Pudding. Plum Pudding is quite a misnomer (at least to us Americans) – it does not include any plums, and pudding is actually a cake, not a custard-like substance. The method of cooking the plum pudding was new to me too; you actually steam it on your stovetop rather than bake it!

This recipe for Irish Plum Pudding is adapted from a cookbook I have owned for a while (Christmas Flavors of Ireland– paid link), although, I have to admit, I think I royally Americanized the recipe into something different. So, here’s my American Not-Plum Bundt Cake!

Note: You’ll need a 6 cup bundt pan (paid link), and a pot large enough to fit the bundt pan inside (I used a large pot I use to make tomato sauce).

Ingredients:

  • 1 cup raisins
  • 1 cup golden raisins
  • 1/4 cup dried figs, chopped
  • 1/4 cup dried apricots, chopped
  • 1/4 cup candied cherries (paid link), halved
  • 2 tablespoons candied orange peel, chopped
  • 2 tablespoons candied lemon peel, chopped
  • 1/3 cup spiced rum
  • the juice and zest of 1 orange
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1/2 cup light brown sugar
  • 3 large eggs
  • 1/4 cup stem ginger (paid link), finely chopped
  • 1 apple, peeled, cored, and grated
  • 1 1/4 cups flour
  • 1 cup plain breadcrumbs
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon ground cinnamon

Optional Bourbon Butter, for serving:

  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1 1/2 cups powdered sugar
  • 2 tablespoons bourbon

Mango Rum Kefir Lassi

I think I’m pretty sure I’m late to the Kefir game here, but at least I’ve finally arrived! Kefir is a culture milk drink that is high in nutrients and probiotics which helps aid in digestion. A 6 ounce serving of Kefir has 6 grams of protein and 20% of your recommended daily calcium, and is actually a more potent source of probiotics than yogurt.

Its tangy flavor works really well in smoothies. So when I saw Cooking Light’s recipe for a Mango Rum Kefir Lassi, I knew I had to try it out. (You can omit the rum to have a really awesome lassi for breakfast as well. But hey, who doesn’t love a cocktail that has some health benefits to it?) A lassi is typically yogurt-based, so Kefir is a really simple substitute.

This Cooking Light recipe is most certainly not a traditional lassi, but it’s really tasty and is packed with good-for-you ingredients: kefir, coconut water, honey, turmeric, cinnamon, mango, and bananas. Yum!

Ingredients (makes 3 servings):

  • 1 cup plain low-fat kefir
  • 1/2 cup coconut water
  • 1/4 cup spiced rum (I used a coconut-spiced rum), if desired
  • 3 tablespoons honey
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 (12 oz) bag frozen chopped mango
  • 1 ripe banana
  • ancho chile powder, for garnish

Fall Sangria

Summer stuck around for a while in Philadelphia; it’s now October and the weather is just starting to feel like fall, so it’s time for some Fall Sangria!

I’ve wanted to make a fall sangria for weeks now, but wanted to wait for cooler weather to truly enjoy it!

I picked up a bottle of spiced rum from a local distiller, Cooper River Distillers a while ago, and have been patiently waiting for fall weather to enjoy their Driftwood Dream Spiced Rum in a recipe.

This fall sangria recipe includes red wine, apple cider, pomegranate juice, and spiced rum to make a tasty fall-inspired sangria.

Sangria:

  • 1 bottle red wine
  • 1 cup apple cider
  • 1/4 cup pomegranate juice
  • the juice of 1/2 orange
  • 3/4 cup spiced rum
  • 1/4 cup spiced simple syrup (recipe below)
  • 1 apple, cored and thinly sliced
  • 1/2 orange, thinly sliced into half moons
  • 1/4 cup pomegranate seeds
  • cinnamon-sugar, for garnish, if desired

Spiced Simple Syrup:

  • 1 cup sugar
  • 1 cup water
  • 5 cinnamon sticks
  • 4 allspice berries
  • 2 cardamom pods, smashed
  • 2 whole cloves
  • 1/2 teaspoon vanilla extract
