Pulled Pork Tacos with Jalapeno Slaw

I was recently invited to a tasting event, which was conveniently in my own neighborhood. Nick’s Roast Beef, an Old City staple, has changed their name to Nick’s Bar and Grille and has a snazzy new menu to go with it’s new name.

Nick’s Bar & Grille in Old City, established in 1969, is “the” neighborhood corner bar of Philadelphia. In 2012, bartender-turned-owner Joseph Schultice hung up most of his infamous shorts and trimmed his signature long hair to usher in a new era for the long-time Old City staple. Today, Nick’s continues to serve as a laid back and friendly alternative to neighboring clubs and upscale fine dining restaurants.

The new barbecue-themed menu is filled with house-smoked meats, including smoked applewood chicken wings, St. Louis BBQ spare ribs, pulled pork with jalapeno slaw, mac ‘n cheese, house-made sauces, and more.

Nick’s long-time dishes that will remain on the menu include the Ground Bacon Burger, Roast Beef and Pork, six flavors of chicken wings and other bar favorites. New cocktails and spirits will be added to the drink menu, and customers can look for drink tastings with local purveyors.

The tasting took place in Nick’s newly renovated dining room which included custom-designed tables and whiskey barrel high-tops, a new community tasting table, old-time Old City imagery on the walls, and embellishments to the walls and ceilings.

The food was super tasty, I really loved the smoked wings and ground bacon burger. But my favorite tasting of the night had to be their new Pulled Pork with Jalapeno Slaw. The smokiness of the pork was offset by crunchy and slightly spicy jalapeno slaw, making for one awesome sandwich.

I wanted to try to recreate a version of the pulled pork with jalapeno slaw, but I (obviously) don’t have a smoker hanging out in my tiny apartment. So I made a slow cooker version with a Chipotle-Guinness barbecue sauce to add some smokiness to it, so here are my Pulled Pork Tacos with Jalapeno Slaw!

Pulled Pork:

  • 2 tablespoons paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon brown sugar
  • 1 tablespoon dry mustard
  • 3 tablespoons coarse salt
  • 1 tablespoon olive oil
  • 1 (7 pound) pork shoulder or Boston butt
  • corn tortillas

Chipotle-Guinness Barbecue Sauce

  • 1 tablespoon olive oil
  • 1 medium sized yellow onion, chopped
  • 3 garlic cloves, minced
  • 1 (~12 oz) bottle of Guinness
  • 1 (14.5 oz) can tomato puree
  • 1/4 cup molasses
  • 1/4 cup cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon of the sauce from a can of chipotle peppers in adobo
  • 1 tablespoon dijon mustard
  • 2 tablespoons tomato paste

Jalapeno Slaw

  • 1/3 cup fresh lime juice
  • 1 teaspoon sugar
  • 3/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoons olive oil
  • 1/2 cup thinly vertically sliced red onion
  • 1/2 cup chopped fresh cilantro
  • 1 (10-ounce) package shredded red cabbage
  • 2 jalapeño peppers, diced

Chipotle Tofu Tacos with Avocado Cream

Slow Cooker Beef and Bean Chili

We have had a pretty moderate fall so far, but the cold weather isn’t too far off. This time of year, I like to fill my freezer with different meals so I always have comfort food on hand for busy weeknights. One of my favorites, of course, is chili.

 

I was sent Rubbermaid’s Easy Find Lids 20-Piece Storage Set to try out, so it was the perfect time to make my annual batch of chili!

 

Rubbermaid Easy Find Lids are a life saver – I typically just keep the containers from take out and they are all just shoved into a cabinet net to my stove, with no organization to them whatsoever. So i spend a good 10 minutes finding the right top to go with whatever container I’ve chosen. Rubbermaid’s storage set takes the annoyance out of trying to find the right top — the Lids snap on to the bottom of their respective containers so you can find them in no time! The containers also nest inside each other so you can have a small stack of all of your containers and lids in one spot.

On to the recipe! This time around, I went for a classic – ground beef and beans with some bratwurst meat for additional flavor (I used beef bratwurst, but you can use any type you’d like).

 

Ingredients:

  • 1 tablespoon unsalted butter (omit for dairy free)
  • 1 tablespoon olive oil
  • 2 pounds ground beef
  • 1 pound bratwurst, removed from its casing
  • 5 garlic cloves, minced
  • 1  onion, chopped
  • 1 chipotle from can of chipotles in adobo sauce, finely chopped (seeds removed if preferred)
  • 1 tablespoon adobo sauce from can of chipotles in adobo
  • 2 red bell peppers, chopped (or whatever color you prefer)
  • 2 (15.5 oz) cans red kidney beans, drained
  • 1 (15.5 oz) can black beans, drained
  • 1 (28 oz) can crushed tomatoes
  • 1 (28 oz) can diced tomatoes, undrained
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon ground chili powder
  • 1 teaspoon cumin powder
  • 1/2 tablespoon dried parsley
  • 1/2 tablespoon dried basil
  • 1/2 teaspoon cayenne
  • 1 cup beef stock

Beef Tenderloin Steaks with Chipotle Butter and Bell Pepper Sauté

I haven’t posted a beef recipe in quite a while, so I’m happy that the one I’m sharing is absolutely delicious! It’s really simple to make as well! This recipe is from the latest Cooking Light and works great as a weeknight dinner. I paired it with the suggested side, Cilantro-Cumin Quinoa, which was also really tasty.

 

I found the portion of my steaks to be too big, so the below ingredients is a smaller cut than is shown. The beef tenderloin steaks are topped with a simple bell pepper saute and chipotle butter, so a flavorful dinner is ready in no time!

 

 

Ingredients:

  • 1 tablespoon olive oil, divided
  • 1/4 cup sliced onion
  • 3 garlic cloves, sliced
  • 1 small red bell pepper, sliced
  • 1 small orange bell pepper, sliced
  • 1/4 cup dry sherry
  • 1/2 teaspoon freshly ground black pepper, divided
  • 3/8 teaspoon kosher salt, divided
  • 2 (4-ounce) beef tenderloin steaks or 1 (8-ounce) sirloin steak
  • 1 tablespoon butter, softened
  • 1/2 tablespoon finely chopped chipotle chile in adobo sauce

Fish with Pineapple Salsa and Tomato Avocado Salad

Now that the weather is finally warming up, it’s time to start incorporating more “summery” foods into my dinner. The June issue of Cooking Light included a recipe for Fish with Pineapple Salsa and Tomato Avocado Salad that sounded like the perfect warm-weather dinner.

 

I used turbot instead of tilapia, but you can substitute in whatever whitefish you’d prefer. I also added some paprika to the fish for a bit more flavor and color.

Ingredients:

  • 1 cup chopped pineapple
  • 2 tablespoons finely chopped red onion
  • 1/2 jalapeño pepper, seeded and finely chopped
  • 2 tablespoons chopped fresh cilantro
  • 3 tablespoons fresh lime juice, divided
  • 3/4 teaspoon kosher salt, divided
  • 1/2 cup thinly vertically sliced red onion
  • 1/4 cup thinly sliced fresh basil
  • 1 medium tomato, cut into thin wedges

Slow Cooker Pork Carnitas

My poor slow cooker never gets a break. Even in the summer, I use it quite a bit! Slow cooker meals are great because they don’t heat up your entire kitchen, and usually make at least 8 servings, great for a party or for leftovers. Plus, you can put the ingredients in a slow cooker, go to work, and have dinner nearly finished when you return!

My love of tacos is fairly obvious on my blog. I’ve made everything from Huevos Rancheros Tacos to Steak Tacos with Lime Mayo to even Kung Pao Chicken Tacos. But I’ve basically avoided doing a pork taco, mainly because I just don’t eat much pork.

But I need some variety every now and then, so I decided to finally try my hand at making some. This recipe for carnitas from myrecipes.com is really simple. All of the ingredients can be found in your local grocery store.

 

Ingredients:

  • 1 (3-pound) boneless pork shoulder
  • 10 whole garlic cloves, peeled
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 3/4 cup fresh orange juice
  • 2 chipotle chiles canned in adobo sauce, drained and chopped
  • 20 (6-inch) corn tortillas, warmed
  • 2/3 cup chopped onion

Steak Tacos with Lime Mayo

I had corn tortillas left over from making the Fish Tacos with Tomatillo Sauce. I needed another taco recipe that was completely different flavor-wise than the fish tacos, so I went for Cooking Light’s Steak Tacos with Lime Mayo in the May issue. (Note: the May issue has a ton of taco recipes, even a dessert one!)

Ingredients:

  • 20 baby sweet peppers
  • Cooking spray
  • 1 teaspoon ground chipotle chile pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 1 (1-pound) flank steak, trimmed
  • 3 tablespoons canola mayonnaise

Chilean Sea Bass Tacos with Chipotle Cream

I have never made a taco recipe from Cooking Light that I didn’t love. Honestly, how do they manage to deliver fantastic recipe after fantastic recipe? This one for Chilean Sea Bass Tacos with Chipotle Cream is no different, although the original recipe was made with red snapper. I’ve been having really bad luck recently coming across the fish I want when I go to the market, so I had to sub in Chilean sea bass instead.
Ingredients:
  • 1/2 cup fat-free sour cream
  • 1/8 teaspoon salt
  • 1 canned chipotle chile in adobo sauce, seeded and minced
  • 1 1/2 cups chopped onion, divided
  • 1 1/2 cups chopped tomato, divided
  • 2 tablespoons butter
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 4 garlic cloves, minced
  • 3 tablespoons chopped fresh cilantro
  • 1 pound Chilean sea bass
  • 1 teaspoon grated lime rind
  • 2 tablespoons fresh lime juice
  • 4 (8-inch) fat-free flour tortillas

Barbecue Elk Brisket Sandwiches

I am having way too much fun trying out all these new meats through Arganica. This week I thought I’d try to conquer elk. Elk has a similar taste to beef and is low in both fat and cholesterol. I thought it was another perfect excuse to use my slow cooker, and to invent my own barbecue sauce! I decided to make a Chipotle-Guinness barbecue sauce.

 

Ingredients:
1 tablespoon olive oil
1 medium sized yellow onion, chopped
3 garlic cloves, minced
1 (~12 oz) bottle of Guinness
1 (14.5 oz) can tomato puree
1/4 cup molasses
1/4 cup cider vinegar
1/4 teaspoon red pepper flakes
1 tablespoon brown sugar
1 tablespoon Worcestershire sauce
1 tablespoon of the sauce from a can of chipotle peppers in adobo
1 tablespoon dijon
1 tablespoon tomato paste
2 lbs Elk brisket (can substitute beef brisket)
Salt and pepper, to taste
4 Buns, toasted

Southwestern Burgers with Chipotle Sweet Potato Fries & Chili Aioli

The high humidity continues in Philadelphia so I decided to just give in and have a summery meal. I made this inside on a grill pan, but the burger can be made on an outdoor grill just as easily. I will focus more on making the fries, because the burger is mostly stacking ingredients.
Ingredients:
Burger:
  4 hamburger patties
  4 slices of pepper jack cheese
  1/2 a red onion, thinly sliced
  1 avocado
  4 hamburger buns
Sweet Potato Fries:
  4 larger sized sweet potatoes, cut into wedges
  Salt
  1/2 stick unsalted butter
  2 teaspoons chipotle powder
Chili Aioli:
  1/3 cup mayo
  1 tablespoon chili sauce (like Sriracha)

Preheat the oven to 450 degrees. Peel the sweet potatoes and cut into wedges. I honestly don’t think I succeeded in actually getting “wedges” but oh well. Place on a baking sheet lined with tin foil and sprinkle with salt.
Melt the butter, either on a stovetop or in the microwave.
Drizzle the melted butter and sprinkle the chipotle powder over the sweet potato wedges.
Cook for 30-40 minutes, turning each piece over half way through so that they cook evenly.
While the fries are cooking, combine the Sriracha and mayo in a bowl.
Cook the burgers to desired degree of doneness. Toast the buns on the grill as well.  Add about 1 teaspoon of the aoili to the tops of each bun. Top each burger with one slice of cheese, a slice of red onion and 1/4 of the avocado.
Serve with the fries and the aioli.
I am in love with this dinner. I seriously considered making this again the next night. The sweet potato fries were the perfect mix of sweet and spicy, especially when paired with the aioli. I could eat the fries and aioli by themselves! I always love avocado on burgers, and the addition of pepper jack cheese and red onion made it even more delicious. This is a must try meal!

Pulled Chicken Sandwiches

It’s difficult to not associate barbecues with Labor Day weekend. The unofficial end of summer is usually spent the same way summer began on Memorial Day: relaxing (preferably at a beach) and enjoying the company of friends and family while eating burgers, hot dogs, and grilled chicken. Well, there was no beach for me this weekend, but I was still able to “grill” despite the kind of crummy weather so that I still got my barbecue fix. Cooking Light has a surprisingly simple looking recipe for Pulled Chicken Sandwiches that I just had to try.

Ingredients:

For the chicken:
2 tablespoons light brown sugar
1 teaspoon paprika
1 teaspoon chili powder
3/4 teaspoon ground cumin
1/2 teaspoon ground chipotle chile pepper
1/2 teaspoon salt
1/4 teaspoon ground ginger
2 pounds skinless, boneless chicken thighs
Cooking spray

For the sauce:
2 teaspoons canola oil
1 onion, finely chopped
2 tablespoons light brown sugar
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon dry mustard
1/4 teaspoon ground allspice
1/8 teaspoon ground red pepper
1 cup ketchup
2 tablespoons cider vinegar
1 tablespoon molasses

Remaining ingredients:
8 sandwich rolls, toasted
Pickles, your choice

Don’t let the number of ingredients deter you from making this. It really is simple! The original recipe actually used dark brown sugar, but I had light brown sugar on hand. Feel free to use whichever one you happen to have. You can substitute chicken breasts for this, but thigh meat adds extra juiciness to the sandwich that you really don’t want to miss out tasting.
Begin by preheating your grill. I was stuck indoors, so I just used a grill pan.
Combine first 7 ingredients (light brown sugar through ginger) in a small bowl. I somehow misplaced my measuring spoons so I kind of eyeballed all of these ingredients. Don’t worry about getting the perfect amounts, it’s more about the proportion to the other spices.
Rub the mixture evenly over the chicken.
Place chicken on a grill rack coated with cooking spray.
Cover and cook for 20 minutes, or until a thermometer registers 180 degrees, turning occasionally.
Let stand for 5 minutes.
Shred with 2 forks.
Set to the side for now.
Prepare your onions. If needed, slice your pickles. My boyfriend prefers sweet pickles so we bought the mini ones and minced them for an easy topping.
To prepare sauce, heat oil in a medium saute pan over medium heat. Add onion and cook for 5 minutes or until soft. Stir in 2 tablespoons brown sugar, and the next 5 ingredients (chili powder through ground red pepper) and cook for 30 seconds.
Add ketchup, vinegar and molasses.
Bring to a boil, reduce heat, and simmer for 10 minutes or until slightly thickened, stirring occasionally.
Stir in chicken and cook for 2 minutes, making sure the chicken is thoroughly coated in the sauce.
Toast the buns.
Place about 1/3 cup chicken mixture on bottom halves of the toasted roll.
Top with pickles if desired.
This recipe was promising from the start. I haven’t seen my boyfriend so excited for a meal I’m cooking in a long time; he even offered to help out! (He worked on grilling and shredding the chicken while I prepped and worked on the sauce, it really sped up the cook time). And this recipe really delivered. It tasted like it had slow cooked for hours, subtly sweet and spicy at the same time. I really don’t like pickles, but my boyfriend had his topped with pickles and said it really made the sandwich that much better.
This meal could easily be used in the winter months to remind you of the warmer weather. You could make this as I did on a grill pan, or to really enhance the flavor, you could cook the chicken in a slow cooker for 5 hours on low.

Grilled Corn with Chipotle-Lime Butter

After reading just the title, how could you not be excited for this recipe? Grilled corn is one of my favorite treats in the summer, and I refuse to let my city dwelling keep me from it! I cooked this on a counter top grill and loved it, so I can only imagine how delicious this is on an actual outdoor grill.

 

This is another recipe from Cooking Light’s “Quick & Healthy Menu Maker App“. I cut the recipe in half, to make only two servings. We ate this along side the Mango Shrimp Kabobs.

 

Ingredients:
Cooking spray
2 ears shucked corn
1/2 tablespoon butter
1/4 teaspoon chipotle chile powder
Zest from 1 lime
Salt and pepper, to taste

Begin by shucking your corn. Take care to remove as much of the silk as possible. 

Side note: this was probably the most stressful part of the process for me. I was using corn from my CSA share and had read a post from another CSA share member, One Curly Fry in a Box of the Regular, about the horror she found under the husk. Oh the joys of organic produce. Thankfully, I had a bit more luck than she did. Look how wonderful that corn looks!

Preheat your grill. I set mine for medium-high. Coat the grill with cooking spray and add the corn.

Cook until grill marks begin to appear, about 10 minutes (closer to 8 minutes for a normal grill). Turn the corn frequently to allow it to evenly cook.

 

While the corn is cooking, place the butter in a microwave-safe bowl. Microwave for 30 seconds or until the butter has melted. Add the chile powder, zest, pepper and salt.

ok. It’s not much to look at, but it tastes good!

 

Remove the corn from the grill and brush the butter mixture over the corn.

 

I loved the subtle smokiness of the chipotle chile powder with the corn. We had some leftover limes from the kebobs and took full advantage of the lime juice on the corn, which really worked well with the butter mixture. I honestly had trouble taking photos of this, because as soon as it was done, we couldn’t control ourselves and scarfed it down! Definitely a keeper.
