Every year, I am tasked with bringing a chocolate pumpkin dessert to Thanksgiving. Pumpkin and chocolate is my aunt’s favorite combination so I try to experiment a bit each year. This year’s recipe is actually really simple, and if you use store-bought ice cream, you can make this whole Pumpkin Ice Cream Pie in just minutes (plus freezing time)!
In fact, you can make this Pumpkin Ice Cream Pie as homemade, or as store-bought as you’d like. I personally made my ice cream, but bought the pie crust and the whipped cream.
So, I’ll be honest. I was actually trying to make a different ice cream than what I ended up with. But this oh so chocolatey Homemade Chocolate Ice Cream is so delicious, it was quite a happy mistake!
My original goal/inspiration was to recreate the now defunct Capogiro’s scuro gelato – the most decadent and beautifully silky dark chocolate gelato. It was my mom’s favorite gelato ever and she’s basically been chasing the high of Capogiro’s scuro gelato ever since they sadly closed in December 2018.
I didn’t quite get to dark chocolate status this round (don’t you worry, that will be a future post!), but I am pretty sure this is the best chocolate ice cream ever. EVER. Don’t believe me? Try this recipe out for yourself!
I personally did not grow up eating Potato Farls, probably because around me, there was no such thing as leftover mashed potatoes. (I am still a mashed potato fiend, but I’ve managed to turn it down to a more respectable level.)
But when I am visiting family in Ireland, Potato Farls is one of the foods I am most excited to eat (along with Irish Brown Bread and the rest of the components of a beautiful Ulster Fry.)
Potato Farls is just mashed potatoes kneaded with some flour, butter, salt, and pepper, then fried up into tasty little pieces, making them the perfect recipe for the day after Thanksgiving!
You didn’t think I’d let October pass without sharing multiple new pumpkin recipe, did you? Especially with all the ice cream recipes I’ve been making lately, it should come as no surprise that I wanted to share a Homemade Pumpkin Ice Cream recipe!
Pumpkin ice cream is my absolute favorite ice cream. More specifically, Woodside Farm Creamery‘s pumpkin ice cream — their version is so wonderfully rich and creamy!
So I knew it was about time I tried to make my own at home. This recipe uses egg yolks to achieve that uber creamy texture!
I will be honest. I am partial to Irish Stew made with lamb. But Irish Stew made with beef is tasty in its own right! This Slow Cooker Irish Beef Stew is a flavorful, comforting dish perfect for colder rainy days too!
This recipe is very similar to my OG Irish Stew I shared over a decade (!) ago, with a few adjustments. Recipes like this Irish Beef Stew are perfect to make in your slow cooker (paid link), which helps develop the flavors of the dish while perfectly cooking the meat and vegetables.
Ingredients:
2 tablespoons unsalted butter, divided
3 onions, chopped
3 leeks, white and light green parts only, sliced into half moons
1 tablespoon dried thyme
1 tablespoon garlic powder
salt and pepper, to taste
5 lbs stew beef
5 carrots, peeled and chopped
1 parsnip, peeled and chopped
5 cups beef stock, divided
1 (15 oz) can Guinness
1 tablespoon Worcestershire sauce
3 tablespoons pearl barley
2 lbs baby red potatoes, cut into bite sized pieces
The weather has yet to turn cold (in fact, we just had a week-long heatwave!) but I’m already thinking about colder weather foods. One of my favorite comfort foods is traditional Irish Vegetable Soup.
Unlike a chunky vegetable soup commonly found in the US, Irish Vegetable Soup is a blended soup made of potatoes, leeks, carrots, and onions that feels creamy and comforting without any cream!
The absolute best way to enjoy an Irish Vegetable Soup is with some Irish Brown Bread, but because that’s somewhat difficult to come across in the US, I substituted in a loaf of Italian bread to sop up all that vegetable goodness.
I’m sure you’re thinking to yourself, “Avocado Ice Cream? Really??”
Me making a Homemade Avocado Ice Cream is actually a long time coming. I have a coworker who absolutely loves avocados. And years ago, I mentioned that (the now shuttered and very much missed) Capogiro Gelato in Philadelphia had an avocado ice cream, and that I’d buy her a pint the next time I saw it. Well. Capogiro sadly closed at the end of 2018 without me ever bringing her a pint. So, now that I am feeling more comfortable making my own homemade ice cream, it was time to finally deliver on my promise!
This recipe might be my easiest ice cream recipe to date. It has just 4 ingredients, does not require heating the cream mixture, and doesn’t even need to refrigerate overnight!

Well, I’m sure this comes as no surprise but now that I know how easy it is to make homemade ice cream, I’m trying out more and more flavors. This recipe for Homemade Nutella Ice Cream was one of my husband’s first requests.
(He’s a HUGE Nutella fan, which is why I have quite a few Nutella-filled recipes on my blog.)
This recipe is actually even easier than the pistachio one, so I was happy to make this for him. It does not have any egg yolks in the recipe, and you don’t even have to heat the cream mixture! With just five ingredients, it comes together in no time as well!

Some recipes, like this one for Italian Sausage Bread, are so easy and yet are oh so satisfying. My mother-in-law seems to have an endless supply of sausage bread prepared at her house, so I never really thought to make it myself until this past year. Now that I have, I know it is the perfect make-ahead option to keep in your freezer!
This sausage bread can be made with either hot Italian sausage or sweet Italian sausage. I suggest changing the color of the pepper you use inside so that when you have it out for snacking, everyone knows what they are about to bite into. (I used red in these photos because I was making one with hot Italian sausage; I use green in my sweet Italian sausage breads.)
Ironically, I’ve been having a hard time getting into a cooking groove during this pandemic. Even though I’m now home basically ALL the time, my job seems to have gotten even busier, and I’m in the process of getting my MBA so I seem to have even less time in the day to cook. Which means I need to get back into doing some food prep on my weekends more than ever, like making these Freezable Breakfast Burritos.
Breakfast is probably one of the hardest meals for me to actually make. For one, I’m not terribly good at making eggs. Plus, I’d much rather roll out of bed and start working immediately. So any make ahead recipes that I can quickly heat up are super helpful.
These Breakfast Burritos are perfect for hectic mornings. They are freezable, so you can take them out of the freezer the night before and just microwave them quickly in the morning. Plus, they are completely customizable to whatever you like in your breakfast burrito! This makes 10 breakfast burritos, so feel free to adjust as needed (my husband and I can polish these off within 2 weeks).
Ingredients:
1/2 (19 oz) bag of tater tots
1 tablespoon olive oil
1 lb breakfast sausage, casing removed (you may be able to find just ground breakfast sausage without the casing as well)
During these stay-at-home orders, there have been a few foods that I’ve been craving that I would order frequently from local restaurants. One of my biggest recent cravings was for Messina Social Club‘s pierogis. So, when I accidentally ordered 10 pounds of potatoes (?!), I figured it was the perfect time to try to make my own Homemade Pierogis.
This recipe is a very basic version, but once you try it out, you can add different stuffings to create different flavor profiles.
They also freeze really well, so feel free to double the recipe and stock your freezer for future meals!

January is the time of year where many set goals for themselves for the next 12 months, with a lot of those goals centered around diet and exercise. I am not a registered dietician, and am not here to tell you what’s best for you to eat, but I do hope to offer a range of recipes for you to peruse.
Adding to my repertoire, this recipe is adapted from a Keto-inspired cookbook called The Dirty, Lazy, Keto Cookbook. The cookbook is written by Stephanie Laska, who lost more than half her body weight be adjusting the traditional keto diet into something she could stick with without using expensive, hard-to-find ingredients and without adhering to so many strict rules.
The general gist of the keto diet is based on a low-carb, high fat, adequate-protein diet that forces the body to burn fats rather than carbohydrates for weight loss. These Bacon Egg Bites have very few carbs per serving, but will keep you full through a busy morning. The addition of multiple types of dairy make for fluffy, creamy eggs that can be transported to work or eaten quickly before heading out the door, a perfect breakfast for busy mornings!
What I really like about this recipe is it’s completely adaptable to what you might have on hand. I used this as a bit of a fridge cleaner, so feel free to substitute ingredients as you see fit!

Ingredients:
4 strips no-sugar added bacon, cooked and crumbled
6 large eggs
1 cup shredded cheese of your choice (I used manchego)
1 (8 oz bar) full-fat cream cheese
1/4 cup sour cream
1/8 teaspoon salt
1/8 teaspoon pepper
1/4 cup baby arugula (or whatever greens you have on hand – kale or spinach would also work)
One of my favorite cookbooks right now is Run Fast. Cook Fast. Eat Slow by Shalane Flanagan and Elyse Kopecky. If you haven’t heard of it, be sure to check it out. It’s filled with awesome recipes geared toward athletes, so I reference it all the time to make quick meals for my runner husband on weeknights.
A favorite recipe of ours from the cookbook is Pesto Pasta with Sardines, which got me thinking about anchovies, and how awesome they would be incorporated into classic pesto for an added boost of omega-3s, vitamin A, protein, iron, and a whole bunch more (those little guys really pack a nutritional punch!)
This pesto is freezable so it’s perfect as a make ahead condiment for super busy nights. It’s also super quick to make!

A few weeks ago, I became an aunt! My sister and brother-in-laws are new parents to a beautiful baby girl. My husband went up to visit them recently, so I sent him up with some frozen food options to stock their freezer, including some of these Mandu Korean Dumplings.
I thought dumplings would be a perfect freezer friendly meal that also doesn’t add much to the cook time. You can cook mandu straight from the freezer, no need to thaw!
This version has a mixture of ground beef, pork, and vegetables, but the recipe can easily be adapted to fit whatever you have on hand, or have a craving for.
This recipe actually builds from the two previous, with some minor changes. For simplicity, the entire recipe from start to finish is below so you don’t have to go to multiple posts to make it. The multi-pot shortens the time of making a solid chicken soup, but it is still a labor of love. Total time to cook is roughly 3 hours.
It freezes well, so it’s a great recipe to make now to have on hand for sick days!
