Ingredients:
- 2 tablespoons unsalted butter, divided
- 3 onions, chopped
- 3 leeks, white and light green parts only, sliced into half moons
- 1 tablespoon dried thyme
- 1 tablespoon garlic powder
- salt and pepper, to taste
- 5 lbs stew beef
- 5 carrots, peeled and chopped
- 1 parsnip, peeled and chopped
- 5 cups beef stock, divided
- 1 (15 oz) can Guinness
- 1 tablespoon Worcestershire sauce
- 3 tablespoons pearl barley
- 2 lbs baby red potatoes, cut into bite sized pieces
- 1 cup frozen peas
