Bacon Wrapped Stuffed Figs

From August to October, figs are in season. Whenever I come across fresh figs, I just have to buy them!

I’ve shared recipes in the past using this yummy ingredient — everything from adding it to a flatbread to turning it into a cookie filling to using it in a jam.

So today I figured I’d go a little simpler with a favorite appetizer: Bacon Wrapped Stuffed Figs!

This recipe is so easy, and uses just 4 ingredients. They are great for parties or just as an appetizer with friends.

Ingredients:

  • 12 fresh black mission figs
  • 2 oz blue cheese
  • 6 slices of bacon, cut in half crosswise
  • freshly ground pepper, to taste

Lamb Stuffed Mediterranean Peppers

I’m not going to lie, I didn’t love stuffed peppers when I was younger. However, as I realize that there are multiple ways to make them, like these Tex-Mex Stuffed Peppers and this recipe for Lamb Stuffed Mediterranean Peppers I’m about to share, I’ve come around on how awesome they can really be!

This recipe is based off one a friend gave me years ago that I used to make Mediterranean Stuffed Mini Peppers. The recipe was so darn good, I figured it was about time I shared a main-meal version!

Ingredients:

  • 6 bell peppers, tops removed and seeded
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 garlic cloves, minced or pressed
  • 1 lb ground lamb
  • 1  teaspoon cinnamon
  • 1 teaspoon cumin
  • 1/2 teaspoon cloves
  • Salt and pepper, to taste
  • 2 plum tomatoes, seeded and chopped
  • 2  tablespoons tomato paste
  • 1/2 cup golden raisins
  • 1/4 cup toasted pine nuts
  • 1 cup cooked farro (substitute rice to make gluten free)
  • 1/2 cup Feta, crumbled (omit to make dairy free)

Baked Stuffed Artichokes

I really like stuffed artichokes, but the idea of making them has always kind of intimidated me. I finally got up the courage to try them out when I received a box from Misfits Market with four lovely artichokes inside.

If you’ve never heard of Misfits Market, it was born from a mission to bring delicious, fresh, and affordable misfit produce to people everywhere and reduce food waste at a scale that creates positive and lasting impact.

You’ll see more posts from me showing how I used my box, but let’s get back to the artichokes! My mother-in-law makes a batch of stuffed artichokes around Christmas and I am always amazed with the amount of work they can take! So this version for Baked Stuffed Artichokes is a bit of a cheat. Cutting them in half and baking them takes some of the “stuffing” work out, but not all of it.

Ingredients:

  • 4 artichokes
  • 3 lemons, juiced
  • 4 tablespoons (1/2 stick) unsalted butter
  • 1 large shallot, minced
  • 3 garlic cloves, minced
  • 1/4 cup dry white wine
  • 2 cups Italian breadcrumbs
  • 1 tablespoon fresh parsley, chopped, plus more to taste
  • salt and pepper, to taste

Tex Mex Stuffed Peppers

The school year has begun. I don’t have kids, but I am married to a teacher, so this time of year gets pretty hectic. Which means it’s about time I started stocking my fridge and freezer on weekends so weeknight dinners are a bit more manageable.

These Tex Mex Stuffed Peppers are a super tasty (and easy) make-ahead meal. You can cook these over the weekend and reheat during the week, or freeze before cooking, thaw, and cook when ready to eat!

Ingredients:

  • 1 pound ground beef
  • 4 tablespoons taco seasoning
  • 1 cup jarred salsa (mild or medium)
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (8 oz) box of yellow rice, cooked according to package directions
  • 6 bell peppers
  • 1/4 cup water
  • 1 cup shredded Mexican cheese blend

Stuffed Jalapeno Poppers

I was sent quite a few jalapenos as part of my Door-to-Door Organics box, more than I could really use in a normal time frame. So as part of #MyFarm2Table dinner, I decided to make Stuffed Jalapeno Poppers as one of the side dishes to use up the jalapenos.

 

I’m not the biggest fan of super spicy dishes, so after cutting and seeding the jalapenos, I placed them in a bowl of water for at least an hour to try to take some of the heat out of them. There was still some in the peppers, but it did help! (Note: there were still a couple of peppers that packed a punch, so be aware that every pepper is different in terms of heat).

 

For this recipe, I used local jalapeno peppers, and Apple Tree Goat Cheese, both from my Door-to-Door Organics box.

 

Ingredients:

  • 8 jalapeno peppers, halved lengthwise and seeded
  • 4 ounces goat cheese
  • 4 ounces cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons thinly sliced green onions
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon salt

Vegetarian Stuffed Zucchini Boats

These Zucchini Boats were my favorite part of my Farm-to-Table Meal last weekend. Stuffed with mushrooms and mozzarella cheese, the boats were nice and hearty and had great flavor!

Stuffed Mushrooms

Stuffed mushrooms are one of my favorite appetizers, they always hit the spot! So when Jimmy Dean contacted me about their new Fully Cooked Sausage Crumbles, I knew I wanted to use the crumbles in stuffed mushrooms.

I adapted this recipe from one I found on the Jimmy Dean website. It comes together very quickly, in about 30 minutes. It’s simple enough to whip up when you need an appetizer in no time!

Ingredients:

  • 12 oz medium sized mushrooms, stems removed
  • 1 package Jimmy Dean® Sausage Crumbles, Original
  • 1 garlic clove, minced
  • 2 eggs
  • ¾ cup dry Italian bread crumbs, divided
  • ½ cup (2 ounces) grated Parmesan cheese, divided
  • ¼ cup chopped fresh parsley

Stuffed Chicken and Herb Gravy with Creamy Polenta

I am seriously starting to think that Cooking Light has a way to read my thoughts. It’s like they know exactly what ingredient I want to work with next, or a particular product I might be craving, like this recipe for Stuffed Chicken and Herb Gravy. And I don’t mind that one bit.

The latest issue has a recipe for Stuffed Chicken and Herb Gravy with Creamy Polenta that upon seeing in the magazine, I immediately put on my boots, coat, hat, scarf, gloves, etc. etc. and headed for the supermarket, despite the slippery and freezing walk I had ahead of me (it’s a whopping 5 blocks away, but I still managed to almost fall a good 3 times). And I have to tell you, it was worth it.

Chicken breasts stuffed with prosciutto and provolone, over creamy polenta, topped with an herb gravy… What’s not to like? The recipe suggested making it with bacon green beans, but we had some Brussels sprouts in the freezer that I wanted to use so I substituted them in instead.

Ingredients:

CHICKEN AND GRAVY:

  • 4 (6-ounce) skinless, boneless chicken breast halves
  • 2 very thin prosciutto slices (about 1/2 ounce), halved
  • 4 (2/3-ounce) slices reduced-fat provolone cheese
  • 1 tablespoon canola oil
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons minced shallots
  • 1 tablespoon chopped fresh thyme
  • 1 1/2 cups unsalted chicken stock, divided
  • 1 tablespoon all-purpose flour
  • 1 1/2 tablespoons unsalted butter
  • 1 tablespoon chopped fresh flat-leaf parsley
  • 1 1/2 teaspoons chopped fresh tarragon

POLENTA

  • 2 cups 1% low-fat milk
  • 1/3 cup unsalted chicken broth
  • 1/2 cup uncooked polenta (I just used yellow corn meal)
  • 1/4 teaspoon kosher salt
  • BACON BRUSSELS SPROUTS
  • 12 ounces frozen Brussels sprouts
  • 3 tablespoons water
  • 2 bacon slices, chopped
  • 1/8 teaspoon black pepper

Caprese Stuffed Grilled Balsamic Portobello Mushrooms

With grilling season here, I am in search of recipes that aren’t just, well, burgers. I love a good grilled burger, but they can get old pretty quickly. I realized recently that I haven’t had many mushroom recipes lately so this is the perfect time to try grilling a portobello mushroom! I kind of combined two recipes for inspiration for this post. The mushrooms are first brushed with a soy-balsamic marinade and grilled. They are then filled with a mixture of tomatoes, mozzarella, roasted garlic, and basil.

Ingredients:

  • 6 cloves garlic, unpeeled
  • 2 tablespoons extra-virgin olive oil
  • salt and pepper
  • 1/4 cup balsamic vinegar
  • 1 tablespoon low sodium soy sauce
  • 1 tablespoon Dijon mustard
  • 4 large portobello mushrooms
  • 3 tablespoons extra-virgin olive oil
  • 3 small to medium sized tomatoes, chopped
  • 8 ounces fresh mozzarella, chopped
  • 1/4 cup chopped fresh basil leaves

Mediterranean Stuffed Mini Peppers

I am less than one month away from attending Eat Write Retreat in Philadelphia and am getting so excited for it! Not only is the lineup awesome, but I get to meet a ton of other bloggers, what could be better? As we get closer to the big weekend, the attendees were sent a secret ingredient and were asked to try to incorporate into an appetizer recipe. I received California raisins, which people tend to think of more for sweet foods, but play off savory dishes oh so well. It goes without saying that I haven’t been able to get California Raisins’ classic commercial out of my head since I received them! OXO generously also sent us a few spiffy tools to help create our recipe; I can never have enough of their products!

Raisins are a great addition to a meal to add some sweetness without any added sugar. The dried fruit is loaded with antioxidants and fiber while being fat free and cholesterol free. Did you know that one serving of raisins (just 1/4 cup) has more potassium than a banana?

 I have a friend that absolutely raves about Mediterranean Stuffed Peppers that her grandmother used to make for her, with rice, nuts, spices, and golden raisins. I decided to make an appetizer version, using mini sweet peppers. My version of these Mediterranean Stuffed Mini Peppers are stuffed with a lamb-farro mixture that includes tomatoes, raisins, pine nuts, and a touch of lemon zest (using my new snazzy OXO zester (paid link)). The peppers are then topped with feta cheese and broiled to make this recipe for Mediterranean Stuffed Mini Peppers!

Ingredients (serves 8):

  • 16 mini sweet peppers, seeded
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped (no more than ½ cup)
  • 2 garlic cloves, minced
  • ½ lb ground lamb
  • 2/3  teaspoon cinnamon
  • 1/3 teaspoon cumin
  • Salt and pepper, to taste
  • 1 plum tomatoes, seeded and chopped
  • 1  tablespoon tomato paste
  • the zest of 1 lemon
  • 2 tablespoons golden raisins
  • 2 teaspoons raisins
  • 2 tablespoons toasted pine nuts
  • ½ cup cooked farro – I used Tuscan Fields vegetable farro
  • ¼ cup Feta, or to taste

Strawberry Banana Stuffed French Toast

It’s spring! And spring means (among other things) that strawberries are back in season. So what better way to use them than for a delicious weekend brunch? This Strawberry Banana Stuffed French Toast uses strawberries three ways: fresh, in a strawberry sauce, and for an extra touch of strawberry goodness, in a strawberry jam. And because I love bananas, I threw in a couple slices of that as well. I found the strawberry sauce recipe here and my French toast recipe is based off of this post.
Ingredients:
4 challah rolls
2 eggs, beaten
1/2 cup vanilla almond milk (unsweeted)
2 tablespoons sugar
1 1/4 cup sliced strawberries, divided
3 tablespoons honey
the juice and zest of one lemon
4 ounces low fat cream cheese
1 tablespoon strawberry jam
1/4 teaspoon vanilla extract
1 banana, sliced
1 tablespoon butter

Begin by slicing the challah rolls in half. In a large bowl, add the eggs, almond milk and 2 tablespoons sugar.
Add the roll halves and mix to coat.
Cover and refrigerate for one hour.

Add 1 cup sliced strawberries, 3 tablespoons honey, and the lemon juice and zest to a bowl and mix to combine.
Allow to stand for 1 hour. (I actually ended up leaving both for over an hour. Whoops.)

Combine the cream cheese, vanilla extract and strawberry jam.
Slice the rest of your strawberries and your banana.
Heat a saute pan over medium high heat and add 1 teaspoon butter. Add  1 set of challah rolls to the saute pan and cook for three minutes.
Flip and cook for three more minutes.
While waiting for the side to cook, add 1 tablespoon of the cream cheese mixture to one piece of roll.
Add slices of strawberry and banana.
When the bread is done cooking, assemble the pieces of bread. Add one to two tablespoons of the strawberry sauce and a few more slices of banana.
Repeat with remaining rolls. How good does that look?
The challah rolls were crispy while the cream cheese mixture was nice and creamy.
The strawberry sauce was tangy, just enough to complement the sweetness of the rest of the French toast.
And as usual, I am a big fan of the already portioned serving. It gives me a better chance of not being a piggy. 🙂
I loved this! I wish I could eat this every spring day. Except I think people would begin to judge me…

Artichoke, Spinach, and Feta Stuffed Shells

I have been making a bunch of freezer-friendly meals lately. You never know when you will come home and just be too exhausted to cook, and frozen meals can really save the night. This one also happens to be vegetarian. I found this recipe in an old Cooking Light. I absolutely love artichokes and spinach so I knew I’d like this!
Ingredients:
(makes 5 servings. serving size 4 shells)
1 teaspoon dried oregano
1/4 cup chopped pepperoncini peppers (they come in a jar)
1 (28-ounce) can fire-roasted crushed tomatoes, undrained
1 (8-ounce) can no-salt-added tomato sauce
1 cup (4 ounces) shredded provolone/mozzarella cheese, divided
1 cup (4 ounces) crumbled feta cheese
1/2 cup (4 ounces) fat-free cream cheese, softened
1/4 teaspoon freshly ground black pepper
1 (9-ounce) can artichoke hearts, chopped
1/2 (10-ounce) package frozen chopped spinach, thawed, drained, and squeezed dry
2 garlic cloves, minced
20 cooked jumbo shell pasta (about 8 ounces uncooked pasta)
Cooking spray

Cook the shell pasta according to directions on the box. Drain and set aside on a cookie sheet lined with tin foil so they don’t stick together. Take a 13×9 cooking dish and spray it with cooking spray.
Preheat your oven to 375 degrees. Add the oregano, pepperoncini peppers, crushed tomatoes, and tomato sauce to a medium saucepan over medium heat. Cook for 12 minutes, stirring occasionally. Remove from heat and set aside.
In a medium bowl, combine 1/2 cup provolone/mozzarella (I used “pizza” cheese) and the feta, cream cheese, black pepper, artichokes, spinach, and garlic.
To make it easier to fill the shells, add the mixture to a ziplock bag. Close the bag, and snip off one of the bottom corners.
Pipe the mixture into the shells. (Note: some of the artichokes might get stuck a bit while doing this so be careful you don’t end up with more mixture than you want coming out!) Add the stuffed shells to a 13×9 baking dish coated with cooking spray.
Spoon the tomato mixture over the shells.
Sprinkle with the remaining 1/2 cup shredded cheese. Bake at 375 degrees for 25 minutes or until thoroughly heated and cheese melts.
You can freeze them after stuffing the shells, freezing the tomato mixture separately and doing the last few steps later. I personally prefer frozen meals that can just be popped into the microwave or oven and the only additional step is that I have to consume the meal.
This is really an awesome recipe. I usually only have plain stuffed shells with tomato sauce and cheese so I liked the addition of the spinach and artichokes. The peppers added a little bit of pizazz to the dish without making them really spicy. (You can leave them out if you don’t want a little heat).
I did, however, crave a little bit of extra sauce (I love love sauce), so I’d suggest adding another can of puree to the mix. Past that, a good solid recipe!

Couscous-Stuffed Chicken

I haven’t posted a chicken recipe on here since September! I figured it was definitely time to change that. I really don’t eat much chicken so I guess I’ve gone a long time without even making it without realizing. I have been on a couscous kick so when I came across Cooking Light‘s recipe for Couscous Stuffed Chicken I was pretty pumped. However, I apparently do not possess the skill to create pinwheels with chicken. What they lack in beauty though they most certainly make up for in flavor!
Ingredients:
1/3 cup fat-free, lower-sodium chicken broth
1/4 cup uncooked couscous
1/2 teaspoon salt, divided
1/2 teaspoon black pepper, divided
3 tablespoons chopped plum tomato
2 tablespoons kalamata olives, chopped
2 tablespoons crumbled feta cheese
2 tablespoons extra-virgin olive oil
2 teaspoons chopped fresh parsley
1 teaspoon grated lemon rind
1 minced garlic clove
2  skinless, boneless chicken breasts
Cooking spray

Preheat the oven to 400 degrees. First make the couscous. Add the broth to a small pot and bring to a boil. Remove from heat and stir in the couscous. Cover and let stand for 4 minutes.
Add the couscous to a small bowl and fluff with a fork. Allow to cool. Add the chopped tomato, olives, feta, olive oil, parsley, lemon zest, and garlic. Season with salt and pepper.
Place chicken between two sheets of plastic wrap and pound to 1/4 inch thickness. (I failed at this step. My pounding brought it by no means close to 1/4 inch thickness. Next time I make this, I think I’ll try it with chicken tenderloins instead).
Add the couscous mixture on top of each piece of chicken.
Roll up and secure with wooden picks. Pretty sure this should have looked prettier than mine ended up.
Season chicken with salt and pepper. Heat a large oven proof saute pan over medium-high heat. Coat with cooking spray and add the chicken rolls. Cook for six minutes until the chicken is browned. Turn over and bake at 400 degrees.
The original recipe said 5 minutes. Because my pieces were so thick it took closer to 20 minutes.
So yeah. My presentation isn’t going to win me any awards. BUT this dish tastes so good! The chicken remained really moist and flavorful.
The couscous mixture was fantastic. I am not the biggest fan of olives so I included fewer in my rolled up chicken (which meant my olive-loving boyfriend got more in his mixture. No complaints from him).
I think thin chicken tenderloins would work much better with these if you are big on presentation.

Goat Cheese Stuffed Lamb Burgers

Oh yes, you read that correctly. A delicious grilled lamb burger, with goat cheese inside. I have been craving Goat Cheese Stuffed Lamb Burgers for a good week now and finally managed to find ground lamb (which was surprisingly difficult for some reason) to make them. I used a recipe off of Finish Your Broccoli‘s blog that she made a while back to make the actual burger. I took some liberty in making it but for the most part it’s basically the same.

 

Ingredients:
  • 1 pound ground lamb
  • 3 tbsp plain yogurt
  • 1/2 cup panko breadcrumbs
  • 2 tbsp minced fresh mint
  • 1 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 1 tsp ground cumin
  • Pinch cayenne
  • 4 oz log goat cheese
  • 1 tbsp olive oil
  • 1 tbsp chopped parsley
  • 1 tbsp chopped basil
  • Tzatziki
  • Sliced cucumber
  • Pita bread or hamburger buns, toasted

Add the ground lamb, plain yogurt, panko, mint, salt, pepper, cumin, and cayenne to a large bowl.

Mix to combine.

Add the goat cheese, olive oil, parsley, and basil to a small bowl.

Mix to combine.

Take the meat mixture and divide it evenly into four patties.

Make a well in each patty and add an equal amount of the cheese mixture into each well.

Form the meat patty around the cheese mixture.

Heat a grill pan (or grill) and cook the burger to your liking. Because they are so thick, you might need to cook them long and slow.

Grill the hamburger buns or pita bread.

Top the burger with tzatziki and sliced cucumber.

And there you have it!

You bite in and get a really delicious, moist burger.

With a flavorful, gooey center.

Mmmm.

This is EXACTLY what I was craving. And it’s really quick! What more could you ask for?

Crab Stuffed Mushrooms

Who honestly doesn’t love crab stuffed mushrooms? Little bite sized bits of happiness: mushroom, crab meat, cheese, and crunchy bread crumbs. I always have my fingers crossed that these party staples show up as an appetizer at any and all social events. So I thought it was about time that I attempted to make them myself. I finally whipped up a batch of theses crab stuffed mushrooms to eat while watching the games on Sunday. They are actually quite easy to make and are awesome right out of the oven or cooled to room temperature. Taste of Home had a great recipe I decided to try. My only “big” change was that I substituted Old Bay in for the cayenne. I’ve spent many a summer on the Chesapeake and now can’t eat crab without at least a little bit of this seasoning!
 
Ingredients:
  • 1 medium tomato, seeded and diced
  • 1/2 cup panko bread crumbs
  • 2 tablespoons mayonnaise
  • 1 tablespoon minced fresh parsley
  • 2 garlic cloves, minced
  • 1/4 teaspoon salt
  • ¼ teaspoon Old Bay
  • 1 can (8 ounces) crabmeat, drained, flaked and cartilage removed 
  • 2 containers of fresh baby bella mushrooms
  • 1 tablespoon olive oil
  • 1/4 cup shredded Parmesan cheese 
  • Cooking spray
