These Halloween Chewy Crispy Bars are a great use of leftover Halloween candy, or would be a really awesome treat to give out on Halloween!
They are simple to make and can be cut into any size you please.
This recipe is adapted from Cooking Light’s October 2013 issue.
Ingredients:
- Cooking spray and parchment paper
- 3 tablespoons unsalted butter
- 1 (10 ounce) package mini marshmallows
- 6 cups rice cereal
- 2/3 cup candy corn, plus more for decoration
- 2/3 cup M&M’s, plus more for decoration
Prepare a 13 x 9 inch pan with edges either by lining it with parchment paper.
Melt the butter and marshmallows in a large pot over medium-low heat.
Stir in the cereal until fully coated.
Follow with the candy corn and M&M’s and stir until combined.
Add the mixture your prepared pan and top with more candy corn and M&M’s, if desired.
Press down evenly (I suggest taking another piece of parchment paper and placing it on top of the mixture, then pressing down gently).
Let cool for one hour, then cut into bars. Spray a cutting knife with cooking spray before cutting to make it easier to do.
I brought these to visit some friends and they were gone in no time!
They are so simple and are so good. I especially loved the bites of chocolate throughout the bars!
I was thinking after I cut these that they would be so cute if you used cookie cutters to cut them into Halloween themed shapes, like witches hats, black cats, pumpkins, or ghosts!
