Reindeer Fuel Tea Latte

The holidays are fast approaching, so hopefully you’re ok with me doing a Christmas-themed post. I couldn’t wait to show off this yummy recipe for a Reindeer Fuel Tea Latte, and highlight some awesome holiday offerings from Adagio Teas!

Lattes are typically made with espresso and hot steamed milk, but this uses a stronger blended tea from Adagio Teas calls Reindeer Fuel, topped with steamed froth milk.

Spiced Fig and Pear Jam

Early fall is my favorite time of year. I love that it’s still warm enough to enjoy the outdoors, the selection of produce available is awesome, and the back-to-school vibe fuels me to get things done.

It’s also an awesome time of year to can some jellies and jams, like this delicious Spiced Fig and Pear Jam!

Figs and pears are in season at the moment, two of my favorite fruits, so what better time to make (and can) this Spiced Fig and Pear Jam?

Ingredients (makes about 6 8oz cans):

  • 1 1/2 pounds Bartlett pears, peeled, deseeded, and cut into small bite sized pieces
  • 1 1/2 pounds fresh mission figs, cut into eighths
  • 3 1/2 cups sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground cardamom
  • the juice and zest of 1 navel orange

Slow Cooker Spiced Blueberry Plum Butter

This may sound silly, but I woke up a few days ago and realized that summer is nearly over, and I had not canned anything! Blueberries have been particularly lovely this year, so I wanted to make a fruit butter using them as the main ingredient. I added in some plums I had and then spiced them with some autumnal flavors to mark the impending change of seasons.

The result is this Slow Cooker Spiced Blueberry Plum Butter!

Fruit butter is a jam-like product that doesn’t use any pectin, so it spreads easier than a normal jam or jelly. Fruit butters are best made by cooking the fruit low and slow, so a slow cooker is the perfect tool to make them! Although you are using a slow cooker, this recipe does require you to stir it every now and then, so you still have to stay close by.

I adapted this recipe from Food in Jar’s recipe for Slow Cooker Blueberry Butter. There are a few tools I find super helpful when canning, so I will link to those throughout this recipe, in case you wanted to know what I use.

Ingredients (makes about 5 pints, or 10 half pint jars):

  • 6 pints blueberries
  • 8 plums, quartered, pits removed
  • 3 cups sugar
  • the juice and zest of 2 lemons
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cardamom

Earl Grey Madeleines

I’m excited to share this recipe for Earl Grey Madeleines, plus an easy suggestion for a personalized gift option for tea lovers!

My sister is getting married later this year so I have been immersed in all things bachelorette, shower, and wedding over the last few months. Her bridal shower is coming up soon, so naturally, I have been thinking of different gift options to help celebrate my sister. The enameled glazed iron pot is both a kettle and teapot, and includes a stainless steel infuser basket so you can steep the tea leaves right in the pot.

I scrolled through their extensive tea selection and chose a random assortment of sample sized teas so that I could include a bunch of different types in my gift for my sister. Naturally, I picked up a few for myself as well, including Earl Grey Bravo, a blend of artisan black tea from Sri Lanka, flavored with bergamot.

It probably goes without saying that I wanted to make something that would go well with the teapot and teas, so I decided to make these yummy Earl Grey Madeleines, using Earl Grey Bravo and raw honey from Adagio.

My family loves quite a range of tea, but Earl Grey is definitely a favorite of ours, so I wanted to incorporate that into the gift.

My sister is having a display shower, where gifts will not be wrapped, so I packaged them up in a large cookie jar, along with the teapot and a few sample sized teas, including Peach Oolong, Buddha’s Dream, 40 Winks, and, of course, Earl Grey Bravo.

Ingredients (makes 2 dozen madeleines):

  • 2 cups cake flour (or all purpose flour and cornstarch, directions here)
  • 1 tablespoon baking powder
  • 3 tablespoons honey
  • 1 cup unsalted butter (2 sticks)
  • 3/4 cup plus 1 tablespoon granulated sugar
  • the zest of 2 lemons
  • 1 tablespoon loose Earl Grey tea, finely chopped
  • 3 eggs plus 1 egg white, at room temperature
  • 5 tablespoons milk, at room temperature
  • cooking spray
  • confectioners sugar, for dusting, if desired

note: you’ll need a madeleine pan to make these.

Chocolate Cherry Banana Bread

My husband and I were recently invited to go down the shore with our friends, and I wanted to bring something as a thank you for a weekend at the beach. Luckily, I had some overripe bananas sitting on my countertop, so I made this chocolate cherry banana bread to bring with us.

As I mentioned in my recent post, I have quite a few cherries in my house at the moment, so I decided to snazz up the banana bread with some fresh chopped cherries and chocolate chips.

Ingredients:

  • 2 to 3 very ripe bananas
  • 1/3 cup butter, at room temperature
  • 3/4 cup light brown sugar, lightly packed
  • 1 large egg
  • 1 teaspoon almond extract
  • 1 1/2 cups all purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup cherries, pitted and roughly chopped
  • 1/2 cup chocolate chips

Homemade Maraschino Cherries

July is peak cherry season, which means I have A TON of cherries in my fridge! I was sent quite a few bags of cherries from Northwest Cherry Growers, and had to dive right in to using them! Fun fact: Northwest Cherry Growers is a group of 2,500+ farms that produce at least three-quarters of the nation’s entire sweet cherry crop.

Northwest-grown sweet cherries tend to boast the highest fruit sugar content of any cherries. The naturally high sugar content makes them such a yummy snack on their own, or great in baked goods and other recipes. They are also one of the lowest fruits on the glycemic index. (In case you’re wondering, a general rule of thumb is that the darker the cherry, the sweeter it is.)

Cherries are also a superfruit and have been credited with reducing the risk of some serious diseases. Published research points to the health benefits of sweet cherries, including a study conducted by the U.S. Department of Agriculture (USDA). The study discovered consuming sweet cherries can help prevent chronic inflammatory diseases such as cardiovascular disease, diabetes, arthritis and cancer. These powerful superfruits also contain melatonin, which may increase your quality of sleep and reduce jetlag.

Cherry season is pretty short, from July to mid-August, so I’m excited to have the opportunity to use these beautiful cherries in a bunch of different recipes. Fresh cherries keep for approximately two weeks when refrigerated in a sealed bag or container. If you want to enjoy them year-round, you can also freeze cherries by rinsing, drying, and packing them up in freezer bags.

I’m kind of in a canning state of mind after making my Blueberry Chia Seed Jam a few weeks ago, so I wanted to can some of these beautiful cherries. You may have noticed I’m a fan of cocktails, so I just had to make homemade maraschino cherries!

Maraschino cherries are named for the Marasca cherry grown originally in Croatia, which when distilled, produce a liqueur. Whole cherries that are preserved in this liqueur became known as Maraschino Cherries.

These maraschino cherries are not those bright red guys you’ll find in a Shirley Temple. No no, these are the adult, more refined version. There is no artificial coloring, and much less sweetener added. And they are perfect for cocktails and adult ice cream sundaes!

 

Ingredients:

  • 2 bags (~100 cherries) fresh cherries, pitted
  • 1 cup sugar
  • 1 vanilla bean, split and scraped
  • 2 cinnamon sticks
  • the zest and juice of 2 lemons
  • 1 cup water
  • 2 cups cherry (maraschino) liqueur

Homemade Hot Fudge Sauce

It’s no secret that I love dessert, especially ice cream. And I love toppings on my ice cream: sprinkles, chocolate chips, and most of all, hot fudge!

When I was young, my family and I would vacation in Vermont. There is a confectionary store (Mother Myrick’s) in Manchester, VT that makes THE BEST hot fudge. I love it so much that from time to time, my family will still buy it for me when they visit Vermont. Last time they brought me some, I dropped it and the jar broke into a million pieces. Sigh.

So. I’ve been craving their fantastic hot fudge sauce for a while now. I didn’t necessarily try to recreate Mother Myrick’s, but this Homemade Hot Fudge Sauce is pret-ty darn good. Best part? It only takes 15 minutes to make!

Ingredients:

  • 2 tablespoons salted butter
  • 1 (14 oz) can sweetened condensed milk (I used Eagle Brand Sweetened Condensed Milk)
  • 1/4 cup packed dark brown sugar
  • 1/4 cup cocoa powder
  • pinch of salt
  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon coffee grounds
  • 1/2 teaspoon vanilla extract
  • 1/4 – 1/2 cup heavy cream, or to taste

White Chocolate Peppermint Covered Pretzel Balls

Philadelphia has so many wonderful winter holiday events and traditions. Some of my favorites include the Christmas Light Show at Macy’s (originally Wanamaker’s), seeing the neighborhood lights in South Philly, checking out the Holiday Railroad at Reading Terminal, and of course, going to Christmas Village.

Every year my husband and I make sure to pick up a new ornament for our tree at Käthe Wohlfahrt or at one of the other amazing Christmas Ornament vendors.

This year, the Christmas Village has moved back to City Hall. The open-air German market is one of the largest in the country. Every year, I love walking through the stands to see the eighty international and local merchants and artists.

Naturally there are quite a few food stands as well as stations to pick up hot mulled wine and other beverages served in a snazzy 2016 Collectors Mug.

This year, the Village also as a Carousel that you can purchase tickets to ride. (Check out my Instagram feed to see video of me enjoying the carousel maybe a little too much.)

While walking around the Christmas Village, I snacked on Pretzelphoria’s Peppermint Party, which are pretzel balls coated in white chocolate and crushed candy canes.

The peppermint coated pretzel balls were an awesome combination of minty, sweet, and salty. I wanted to make my own spin at home!

Ingredients:

  • 2 (12 oz) bags of white chocolate chips (I used mini)
  • 1 tablespoon peppermint extract
  • 1 (8 oz) bag mini pretzel balls

Apple Butter Swirled Gingerbread Bars

September is Pediatric Cancer Awareness Month. Every year, OXO donates up to $100,000 to support an organization called Cookies for Kids’ Cancer. The organization was founded by two OXOnians (OXO employees) who were inspired by their son Liam’s battle with pediatric cancer, a disease which claims the lives of more children in the US than any other disease. Cookies for Kids’ Cancer provides inspiration and support to allow anyone to easily get involved in fundraising to find a cure for pediatric cancer.

Each year, OXO donates $100 to Cookies for Kids’ Cancer for each blogger post up to their $100,000 commitment. This year, OXO asked us to use a recipe from Dorie Greenspan’s newest cookbook, Dorie’s Cookies while using some of OXO’s great baking tools. Dorie’s Cookies includes over 200 recipes from classics to brownies to savory cookies, with some great baking tips thrown in.
 
I decided to make a recipe in the cookbook named Mary’s Maine Bars, named after a recipe developed by Dorie’s recipe tester (Mary Dodd) after a family trip to Maine. The bars are a delicious, chewy gingerbread that is perfect for the fall. One of the alternative to the recipe suggested swirling apple butter into the batter, so I tried it out!

Ingredients:

  • 1½ cups (204 grams) all-purpose flour
  • 1½ cups (204 grams) whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon fine sea salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon freshly grated nutmeg
  • ¾ teaspoon ground cloves
  • 1 cup (200 grams) sugar
  • ¾ cup (180 ml) unsulfured molasses
  • ½ cup (120 ml) flavorless oil, such as canola
  • 1 large egg, at room temperature
  • ¼ cup (60 ml) buttermilk, at room temperature
  • 1/4 apple butter, spiced
  • Sanding or granulated sugar, for sprinkling

Kourambiethes (Greek Christmas Cookies)

It’s time for my annual Great Food Blogger Cookie Swap post!

The Great Food Blogger Cookie Swap hosted is by Lindsay of Love & Olive Oil and Julie of The Little Kitchen. For the past five years, the Great Food Blogger Cookie Swap has helped raise money for Cookies for Kids’ Cancer, a national non-profit organization committed to funding new therapies used in the fight against pediatric cancer, which claims the lives of more children in the US than any other disease.

 

In the past, I’ve made Hot Cocoa Cookies and Oatmeal, Chocolate Chip, and Pecan Cookies and Dark Chocolate Chip Cranberry Cookies. This year, I went for something completely different: Kourambiethes!

Kourambiethes are Greek Christmas Cookies, but also show up for really any celebratory event, so they are an all-year kind of treat. They are nut butter cookies, typically made with almonds or walnuts, which are then rolled in confectioners sugar. The result is a shortbread cookie that melts in your mouth!

Ingredients:

  • 2 cups walnuts
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup confectioners’ sugar
  • 2 large egg yolks
  • 2 tablespoons brandy
  • 1 tablepsoon vanilla extract
  • 3 tablespoons orange flower water
  • 1 cup confectioners’ sugar

Chai Toddy

Spiced Oatmeal M&Ms Cookies

As the holiday season approaches, I have been thinking about all of the holiday traditions my family has, from decorating the tree together to opening one gift on Christmas Eve. My sister and I still don’t live too far from our parents, so we keep up most of our traditions to the day. One of my favorites (and I’m sure this comes as no surprise) is food-related: assembling trifles and baking cookies with my mom.

 

For as long as I can remember, a few Saturdays before the holidays, my mom would turn on Christmas carols and call us into the kitchen to help bake dozens of cookies – chocolate chip, peanut butter, and oatmeal were always on the list.

So even though I haven’t lived home in years, I still go over to my parent’s house to bake cookies. They don’t seem to mind it too much. 🙂

 

My mom and I did a test run this weekend (you can never have too many cookie baking weekends!) and made some Oatmeal Cookies with M&M’S® Holiday Baking Minis.

We usually deliver the baked goods to neighbors, so using Glad® Holiday Packaging adds a nice touch.

Dark Chocolate Hazelnut Cookies #OXOGoodCookies

Each year in the fall, OXO adds a little sticker to select baking items to help spread the word and raise money for Cookies for Kids’ Cancer. A portion of the proceeds from each product sold with the sticker is donated to the cause.

 

Cookies for Kids’ Cancer is a recognized 501c(3) public charity duly incorporated under the laws of the state of New Jersey. Donations are tax deductible to the fullest extent allowable by law. 100% of proceeds raised by Cookies for Kids’ Cancer fund pediatric cancer research.

So, here is this year’s blog post for #OXOGoodCookies! I have been in a chocolatey mood since participating in #Choctoberfest last week, so why not add a bit more chocolate to our lives?

 

These cookies really bring the chocolate: dark chocolate cocoa powder gives the cookies their dark color, espresso granules enhance the chocolate flavor, and chopped hazelnuts add some crunch!

 

Ingredients:

  • 1 stick butter (8 tablespoons), at room temperature
  • 1 cup firmly packed dark brown sugar (or light brown sugar with 1 tablespoon molasses added)
  • 2 eggs, at room temperature
  • 1 teaspoon vanilla extract

Salsa Recipe & Beginners Guide to Canning #CanItForward

This Saturday marks Jarden Home Brands fifth annual Can-It-Forward Day, which will be broadcast live online at FreshPreserving.com from 11AM – 4PM EST from the new state-of-the-art Jarden Home Brands headquarters in Fishers, Indiana.

 

An event celebrating the joys of fresh preserving, the -It-Forward Day webcast will have an integrated chat function where viewers can submit their home canning questions to be answered in real time. New this year, there will also be an exciting celebrity mason jar auction unveiled during the webcast!

 

To celebrate, I was sent a Ball Canning Discovery Kit (paid link), Ball Blue Book Guide to Preserving (paid link), Red Design Series Lids, and Ball Fiesta Salsa Mix (paid link).

 

My future sister-in-law is big into canning, and I’ve “helped” (a.k.a kept her company in the kitchen) once before, but the process of canning is really intimidating to me. I was told that if I can boil water, I can can, so I was both wary and excited to try this out!

I need to give a little shout out to my city, because the Mason jar was, in fact, invented and patented in Philadelphia in 1858 by local tinsmith John Landis Mason. So, this should be in my blood, right?

 

 

  • The Ball Canning Discovery Kit  is a great beginners kit; it comes with a canning rack that fits into most pasta pots, a recipe guide, and three jars. The kit is really affordable ($11.99) and allows you to assess if canning is for you before investing fully into the process.
  • My sister-in-law assured me that if I had a Ball Blue Book Guide to Preserving, I’d be just fine canning. So. WHEW. This book lays out each step of the process (and even tells you why you are doing it this way) to ensure a successful canning process. The step-by-step guides are particularly helpful as a beginner.
  • The Red Design Series Lids are normal lids and bands, just prettier.  🙂 The lids can only be used once during canning, so it’s helpful to have extras on hand. (You can reuse the jars and bands as many times as you want)
  • The Ball Fiesta Salsa Mix makes the process of seasoning salsa super easy. You just need fresh or canned tomatoes, a splash of vinegar, and the mix to make a yummy salsa!

 

I decided to make a salsa from the Ball Blue Book, but adapted it slightly to include the Ball Fiesta Salsa Mix. The recipe is simple, and is basically just cutting up the ingredients, so this post is more about the canning process than the actual recipe.

I am absolutely a beginner with this, but luckily was able to glean some tips from my sister-in-law and the Ball Blue Book, which I will share as well.

Zesty Salsa (adapted from Ball Blue Book Guide to Preserving)

Yields ~3 pint jars

Ingredients:

  • 5 cups chopped cored peeled tomatoes (fresh or canned)
  • 4 green bell peppers, seeded and chopped (~2.5 cups)
  • 1 large onion, chopped (~2.5 cups)
  • 1 large jalapeno, seeded and finely chopped (~3 tablespoons)
  • 2 garlic cloves minced
  • 2/3 cup cider vinegar
  • 1 tablespoon fresh cilantro, finely chopped
  • 1/4 cup Ball Fiesta Salsa Mix

Gear:

  • Ball canning rack with lifter
  • 3 Ball Pint Jars with lids and bands (I used the Red design series lids and bands)
  • Large stockpot (at least 7.5 inches tall and 9.5 inches in diameter)
  • a non-metallic spatula (I ended up using chopsticks. They worked just fine)
  • A clean, damp towel to wipe rims of jars
