Homemade Hot Fudge Sauce

It’s no secret that I love dessert, especially ice cream. And I love toppings on my ice cream: sprinkles, chocolate chips, and most of all, hot fudge!

When I was young, my family and I would vacation in Vermont. There is a confectionary store (Mother Myrick’s) in Manchester, VT that makes THE BEST hot fudge. I love it so much that from time to time, my family will still buy it for me when they visit Vermont. Last time they brought me some, I dropped it and the jar broke into a million pieces. Sigh.

So. I’ve been craving their fantastic hot fudge sauce for a while now. I didn’t necessarily try to recreate Mother Myrick’s, but this Homemade Hot Fudge Sauce is pret-ty darn good. Best part? It only takes 15 minutes to make!

Ingredients:

  • 2 tablespoons salted butter
  • 1 (14 oz) can sweetened condensed milk (I used Eagle Brand Sweetened Condensed Milk)
  • 1/4 cup packed dark brown sugar
  • 1/4 cup cocoa powder
  • pinch of salt
  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon coffee grounds
  • 1/2 teaspoon vanilla extract
  • 1/4 – 1/2 cup heavy cream, or to taste

Overnight Iced Coffee

I decided to use the Takeya Flash Chill Tea Maker to make the overnight iced coffee and sweetened my coffee with Equal Spoonful. Ingredients:

  • 10 tablespoons coarsely ground coffee
  • ~2 quarts water
  • ice cubes (or coffee ice cubes)

  • 1/4 cup creamer or half and half
  • 1 teaspoon vanilla extract (optional)

Brownie Petit Fours

Here’s another delicious dessert I made for New Years Eve – Brownie Petit Fours. (You can read about my New Years Eve party and get a recipe for Honey Citrus Champange Cupcakes here) The original BHG recipe included bourbon, but I already had Bourbon Truffles on the menu so I decided to go without it in this recipe.

I was a little wary of making these little guys, petit fours seem pretty difficult to make. But I was surprised with how simple it was to make these!

Ingredients:

  • BROWNIES
  • 1/2 cup butter
  • 3 ounces unsweetened chocolate, coarsely chopped
  • 1/4 cup milk
  • 2 tablespoons  coffee grounds (I measured them out from a k cup)
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • MILK CHOCOLATE FROSTING & SEMISWEET CHOCOLATE GLAZE
  • 1 cup whipping cream
  • 11.25 ounce milk chocolate pieces
  • 16 ounce package semisweet chocolate pieces

Mini Chocolate Swirled Pumpkin Pies

Just because Thanksgiving has passed doesn’t mean I can continue to deliver pumpkin-y goodness on this blog. This recipe for Chocolate Pumpkin Pie was featured on The Chew and I just loved the idea of it but wanted to make it a little bit my own, so instead I went with Chocolate Swirled Pumpkin Pies.

I didn’t want the pumpkin flavor to be lost in the chocolate so I decided to swirl a bit in at the end. And, because I’m apparently on a mini kick, I went with mini Chocolate Swirled Pumpkin Pies!

 

Ingredients:

  • 3 oz Semisweet Chocolate Chips
  • 2 tablespoons Unsalted Butter (cut into small pieces)
  • 1/2 teaspoon Coffee or Espresso Grounds
  • 1 15 oz Can Pumpkin
  • 1 12 oz Can Evaporated Milk
  • 3/4 cup Packed Light-Brown Sugar
  • 3 Large Eggs
  • 1 tablespoon Cornstarch
  • 1 teaspoon Vanilla Extract
  • 3/4 teaspoon Ground Cinnamon
  • 3/4 teaspoon Ground Ginger
  • 1/4 teaspoon Ground Nutmeg
  • Pinch of Ground Cloves
  • Mini pie crusts
