Teriyaki Chicken Wings

Note: I was sent a DREO ChefMaker Combi Fryer for review, which I tested using this recipe for Teriyaki Chicken Wings. All opinions are mine alone. 

I am super late to the air fryer band wagon, but I am kind of happy I held out long enough to instead try a DREO ChefMaker Combi Fryer (paid link)! I am still becoming acquainted with all of the delicious options this appliance has, but I was so impressed with my first test run making these Teriyaki Chicken Wings that I had to share it immediately!

The ChefMaker is described on DREO’s website as “the most professional air fryer for making Michelin-starred meals.” The appliance uses “CombiCook technology” which translates professional cooking methods into intelligent algorithms that allow ChefMaker to become a fully automated master cooking machine that handles temperature, time, and atomization by itself. It also includes a water atomization system that replenishes evaporated moisture and reduces the chamber temperature to prevent food from charring and ensure the core gets evenly cooked.

There are a ton of ingredient-based presets to take a lot of the guesswork out of cooking, as well a three professional cooking modes: Chef Mode (ingredient-based master chef presets), Classic Cook (choosing a cooking style including air fry, defrost, reheat, broil, roast, toast, bake, and dehydrate), and Probe Cook (take full control of cooking temperature to create new recipes).

In addition to the appliance itself, the DREO app includes step-by-step videos for recipes while also tracking the cooking process on your phone.

Sounds kind of awesome, right? I wanted to try the ChefMaker out as soon as possible! Using the app, I found a recipe for Teriyaki Chicken Wings that I miraculously had all ingredients already on hand. I adapted the recipe slightly, but tried to stick to the step-by-step videos as possible to get a sense of the benefit of the app as well.

Ingredients (serves 2):

Wings and Dry Rub:

  • 6 whole chicken wings
  • 1 teaspoon ground paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 tablespoon cornstarch
  • 1/2 teaspoon baking powder
  • 2 teaspoons canola oil

Teriyaki Sauce:

  • 1 teaspoon canola oil
  • 3 garlic cloves, minced
  • 1/2 cup teriyaki sauce

Toppings:

  • 1 tablespoon white sesame seeds
  • 1 scallion, green parts only, chopped

Pan Seared Lingcod with Wilted Spinach

I’m back with another post using my Sitka Salmon Share! This recipe for Pan Seared Lingcod with Wilted Spinach uses Lingcod, which is a lean white fish native to the North America west coast. It has a mild flavor similar to halibut or cod so it’s very versatile.

I adapted this recipe from one on Sitka Salmon Share’s recipe website. The original recipe served this over mashed potatoes, but I went with a cauliflower puree instead. (To read more about Sitka Salmon Shares and get a promo code for a premium share, check out my other post.)

Ingredients:

  • 2 tablespoons olive oil, divided
  • 5 ounces spinach leaves
  • salt and pepper, to taste
  • 2 (6 to 8 oz) pieces lingcod
  • 1 tablespoon cornstarch
  • 2 tablespoons butter
  • 1 small shallot, finely chopped
  • 2 tablespoons chopped roasted pistachios
  • 1 lemon, divided

One Pot Jamaican Curry Chicken and Potatoes

Before I get to this awesome recipe for One Pot Jamaican Curry Chicken and Potatoes, I wanted to share with you a new addition to my kitchen that I’m madly in love with. One of the most important tools in any cook’s kitchen is a skillet. I use my skillets more than any other pot/pan in my house (although my Dutch oven gets a pretty good workout too). So having a good, sturdy, evenly cooking skillet is super important. I’m not exactly kind to my pots and pans… they get frequent use, and my husband isn’t the best at remembering not to use metal utensils on my non-stick cookware (sigh)… so having a skillet that can put up with some abuse is really important to me.

This one pot (or skillet) wonder simmers chicken and potatoes in a seasoned curry sauce until the chicken is fall-off-the-bone tender.

Ingredients:

  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 2 pounds bone-in, skinless chicken thighs and drumsticks
  • 2 tablespoons olive oil, divided
  • 1 large onion, sliced
  • 4 garlic cloves, minced
  • 1 1/2 tablespoons Jamaican mild curry powder (I used Jamaican Choice)
  • 1 habanero pepper
  • 2 medium Yukon Gold Potatoes, washed and cut into bite sized pieces
  • 2 cups chicken broth
  • 1 bay leaf

Crunchy Noodle Salad

Despite working from home for nearly a year now, I feel like I have less time to cook! I have a feeling I’m not alone, so I wanted to share a healthy, quick, and comforting recipe for a yummy Crunchy Noodle Salad that you can get on the dinner table in ~40 minutes.

This Crunchy Noodle Salad is made with glass noodles, sugar snap peas, shredded carrots, bell peppers, and crispy tofu tossed in a yummy peanut dressing, and can be served at room temperature or cold, so it makes for a great dinner-plus-leftovers option.

Don’t let the whole vegetarian/vegan/gluten-free part of this recipe throw you, it will fill you up! Pressure Cooker Mushroom Bourguignon

I’ve mentioned many times before how much I love my multi-cooker. I tend to use it a lot on weekends to help prep meals for the week, but it’s also a life saver on weeknights — you can get a delicious meal that tastes like it’s been cooking all day on the table in 45 minutes or less!

So when I heard about a new cookbook that is going to be published soon (September 24, 2019 to be exact) that has a ton of awesome multi-cooker recipes, I was excited to check it out.

I think most people know how great pressure cookers can be for tough cuts of meat, so I wanted to try one of the meatless options in the cookbook. This Pressure Cooker Mushroom Bourguignon is a simplified (and meatless) version of a French classic — typically a beef stew braised in red wine / beef broth.

Ingredients (serves 4):

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter (or margarine to make dairy free)
  • 1 (8 oz) container sliced mushrooms
  • 1 (8 oz) container whole mushrooms, cut in half

Eggplant Meatballs

The end of April can mean only one thing, Flavors on the Avenue is almost here! Held the last Sunday of every April, Flavors on the Avenue is one of my favorite annual events. The food festival is held on E Passyunk Ave from Broad St to Dickinson St this Sunday, April 28 from 11am to 5pm.

Over two dozen of the region’s best restaurants will fire up street food, small plates, and signature dishes along the Avenue, ranging on average from $3.00 to $6.00 and will be pay-as-you-go. Craft beef, wine, and seasonal sips will also be available, sold by select restaurants, plus a Founders Brewing Co. Tasting Tent. Restaurants participating include:

This year, I wanted to highlight one of the many vegetarian options that will be offered on Sunday: Eggplant Meatballs from Brigantessa! I attended a media event for Flavors this year and was struck with how many delicious meatless options will be offered this year.

Every Sunday is pasta night in my house, so we went for a meatless Sunday, substituting in these yummy Eggplant Meatballs for our usual Meatballs in Tomato Sauce.

Ingredients:

  • 1 large eggplant
  • 1/4 cup olive oil, plus more for drizzling
  • 1 small onion, finely chopped
  • 6 garlic cloves, minced (or use a garlic press)
  • 2 (28 oz) cans tomato puree
  • 1 bay leaf
  • 4 tablespoons chopped basil, divided, plus more for serving
  • salt and pepper, to taste
  • 2.5 cups bread crumbs (I used Italian bread crumbs)
  • 2 large eggs

Harira (Moroccan Lamb, Tomato, Chickpea, and Lentil Soup)

Harira is a wonderfully filling and hearty soup originally from Morocco. It can be made with many different ingredients (and can be made vegetarian), but it’s typically made with lamb, chicken, or beef, lentils, and chickpeas in a lightly spicy tomato broth.

This dish is a staple during Ramadan to break the daily fast, and also makes for an awesome dinner on chilly nights!

Ingredients:

  • 2 tablespoons olive oil, divided
  • 1 lb lamb chunks
  • 1 large onion, diced
  • 3 stalks celery, diced (or if you’re like me and don’t like the texture of celery, keep large so you can remove later)
  • 3 carrots, chopped
  • 4 garlic cloves, minced
  • 1 tablespoon ground ginger
  • 2 teaspoons ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • ½ teaspoon ground cinnamon
  • ½ to 1 teaspoon harissa paste, depending on your heat tolerance
  • 1 (28oz can) crushed tomatoes
  • ½ cup parsley, chopped, plus more for garnish
  • ¼ cup cilantro, chopped, plus more for garnish
  • 1 cup brown lentils, rinsed
  • 1 cup red lentils, rinsed
  • 1 (15 oz can) chickpeas, drained
  • 6 cups chicken broth
  • 4 oz vermicelli, broken into smaller, 1-inch pieces
  • 2 tablespoons all-purpose flour (or 1/2 tablespoon cornstarch to make gluten free)

Lamb and Roasted Cauliflower Stew with Harissa

It really takes me a while to adjust to colder weather. I feel like I’m always freezing! So a warm and hearty meal is a must this time of year, especially a soup or stew.

This recipe for Lamb and Roasted Cauliflower Stew with Harissa from Saveur ups the warmth with some spiciness from harissa, a hot chili pepper paste used in Middle-Eastern cooking.

Ingredients:

  • 5 tablespoons olive oil
  • 4 tablespoons unsalted butter, softened and divided (omit for dairy free)
  • 2 pounds boneless lamb shoulder, trimmed and cut into 2″ pieces
  • salt and black pepper, to taste
  • 5 cloves garlic, minced
  • 4 whole tomatoes from a 14oz can of whole tomatoes (~1/2 of the can), chopped
  • 2 red onions, minced
  • 12 head cauliflower (cut into large florets)
  • 13 cup dry white wine
  • 14 cup tomato paste
  • 2 teaspoons ground cumin
  • 1 teaspoon ground cinnamon
  • 5 cups beef stock
  • 2 tablespoons cornstarch, mixed with 2 tablespoons cold water

Cherry Slab Pie

When it comes to summer get togethers, there tend to be plenty of mouths to feed. So I’m a big fan of crowd recipes that feed multiple people, or allow you to make ahead and portion out as you like!

With cherries in season, there is no better time to make a simple Cherry Slab Pie. Slab pie is just pie made in a sheet pan with sides, which is a great option for making dessert for a bunch of people. It’s a bit more rustic, so you don’t really have to worry about perfecting your pie crust skills (it will still taste awesome!)

Ingredients:

Slab pie (serves 12):

  • 8 cups fresh cherries, destemmed and pitted
  • 1/2 cup granulated sugar
  • the juice and zest of 1 large lemon
  • 1 tablespoon plus 1 teaspoon cornstarch
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 4 store bought refrigerated 9-inch pie crusts (2 packages)
  • 1 egg, plus 1 tablespoon water, whisked
  • granulated sugar, for garnish

Almond Whipped Cream:

  • 1 cup heavy whipping cream
  • 2 tablespoons granulated sugar
  • 1 teaspoon almond extract

Devils Food Cupcakes

These super chocolatey Devils Food Cupcakes are most certainly going to be a favorite of the chocoholic in your life.

There isn’t anything that specifically determines a chocolate cake as devil’s food cake, but they do tend to be a bit more airy and have quite a bit of chocolate in them!

This moist and fluffy recipe for Devils Food Cupcakes also uses coffee extract to further enhance the chocolate flavor.

Ingredients (makes approximately 30 cupcakes):

  • 3/4 cup cocoa powder
  • 1/2 cup boiling water
  • 1 1/2 cups (3 sticks) unsalted butter
  • 2 1/4 cups sugar
  • 1 tablespoon coffee extract

Blueberry French Toast Casserole

Last week, I shared a savory breakfast casserole, great for a large crowd.

So today, I wanted to share a version for those who love a sweet breakfast!

This Blueberry French Toast Casserole is easy to make the day of, or to assemble the night before for an easier next-day breakfast. My recipe is adapted from a version you can find here.

Ingredients:

French Toast Casserole

  • 1 loaf of challah bread, cut into cubes
  • 1 (8 oz) package cream cheese, cut into small cubes
  • 2 (6 oz) packages fresh blueberries
  • 12 eggs, beaten
  • 2 cups milk
  • 1 teaspoon vanilla extract
  • 1/2 cup maple syrup

Blueberry Syrup

  • 1 cup water
  • 1 cup white sugar
  • 1 tablespoon cornstarch
  • 1 (6 oz) package fresh blueberries
  • 1 teaspoon cinnamon
  • 1 tablespoon butter
  • juice of 1/2 lemon

Thumbprint Cookies

My mom and I just had a weekend of cookie baking. We ended up making ten different types of cookies!

We actually ended up making these thumbprint cookies because I misinterpreted what type my mom wanted to make. She mentioned wanting to make cookies with hard candies in them, and I decided that meant thumbprint cookies. Oops.

Anyways, who doesn’t like thumbprint cookies? They are really easy to make, and the shortbread combined with preserves is so tasty!

Ingredients:

  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1 cup sugar, plus more for rolling
  • 1 1/2 teaspoons almond extract
  • 2 cups flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • your favorite preserves, jam, or jelly (I used apricot and berry preserves)

Dark Chocolate Chip Cranberry Cookies

This is my third year participating in the Great Food Blogger Cookie Swap!

In its fourth year, the Great Food Blogger Cookie Swap helps raise money for Cookies for Kids’ Cancer, a national non-profit organization committed to funding new therapies used in the fight against pediatric cancer, which claims the lives of more children in the US than any other disease.

 

In the past, I’ve made Hot Cocoa Cookies and Oatmeal, Chocolate Chip, and Pecan Cookies so I decided to do another spin on Chocolate Chip Cookies this year!

 

I adapted a recipe from Sally’s Baking Addiction. She has these fantastic Soft Baked cookies on her blog, and I used her Soft Baked White Chocolate Chip Cranberry Cookies as the inspiration for this recipe. The secret to these soft and chewy cookies is the addition of cornstarch.. who would’ve thought??

 

 

I changed Sally’s original recipe just a touch, adding dark chocolate chips instead of white, using light brown sugar instead of dark, and substituting in almond extract for the vanilla extract. Slow Cooker Pulled Pork with Bourbon Peach Barbecue Sauce

Summer months are just meant for barbecue. And not just barbecued foods on the grill; your slow cooker can make some mean pulled pork for you as well! This recipe for Pulled Pork with Bourbon Peach Barbecue Sauce is perfect for a crowd and is great on a kaiser bun with some coleslaw!

I found this recipe in my Cooking Light magazine, made it over the weekend, and enjoyed it during the week for a quick meal to assemble. I also froze half of the pork to bring to the beach for my extended family to enjoy and it held up great! I changed the recipe a bit because I ended up with a 5.5 pound pork shoulder so I altered the amounts to compensate for that.

Ingredients:

  • 1 tablespoon plus 1 teaspoon Spanish smoked paprika
  • 2 teaspoons kosher salt, divided
  • 1 teaspoon freshly ground black pepper
  • 1 (5 1/2-pound) bone-in pork shoulder roast (Boston butt), trimmed
  • 1 tablespoon olive oil
  • 1 cup unsalted chicken stock
  • 2/3 cup balsamic vinegar
  • 2/3 cup molasses
  • 1/4 cup lower-sodium soy sauce (or coconut aminos to make gluten free)
  • 2 teaspoons crushed red pepper
  • 1 8 oz jar peach preserves
  • 2 cups vertically sliced onion
  • 8 garlic cloves, roughly chopped
  • 1/2 cup bourbon
  • 3 tablespoons cold water
  • 1 tablespoons cornstarch

Caramel Apple Pie

You can never have too many pie recipes during the holidays! This one for Caramel Apple Pie is a great spin on a traditional apple pie that adds caramel to really amp up the flavor. The recipe comes from Organic Valley and uses their Salted Butter, Whole Milk, and Eggs.   Note: I was sent a coupon to receive one Organic Valley product for free.

Organic Valley is a co-op of organic farmers based in La Farge, Wisconsin. The cooperative was founded in 1988 and markets its products in all 50 states as well as Canada and Japan.  Organic Valley promotes organic agricultural methods, with each participating farm certified as organic by the National Organic Program.

A problem I still run into when cooking/baking is I rarely read the directions all the way though before starting (a huge no no). So I made a completely different pie crust by accident because I got confused as to where the sugar and egg was supposed to go in the original recipe. Luckily it turned out fine (whew!) but for the original recipe, be sure to head over to the Organic Valley website.

  • 1 ½ cups Organic Valley Salted Butter, cut into ½-inch cubes, chilled in freezer at least 15 minutes
  • 2/3 cup Organic Valley Whole Milk, cold
  • ½ tsp salt
  • Organic Valley Large Egg
  • 1 tbsp sugar
  • FILLING:
  • 2 pounds organic Granny Smith apples (10-11 medium-sized apples or 4 large), peeled, cored and cut into ½-inch thick slices (coat slices with juice of 1 lemon to prevent browning)
  • 4 tbsp Organic Valley Salted Butter
  • 1 cup sugar
  • 2 tbsp cornstarch
  • 2 tbsp apple cider
  • 1 tsp cinnamon
  • 1/8 tsp cardamom
  • 1/8 tsp allspice
  • 1 tsp vanilla extract (I used vanilla powder but vanilla extract works just as well)
  • OTHER:
  • Organic Valley Large Egg
  • 1 tbsp sugar
