Homemade Ube Ice Cream

When I first realized how surprisingly easy it is to make homemade ice cream, Homemade Ube Ice Cream was at the top of my list. I’ve been doing my best to space out my ice cream recipes so you don’t think this has completely changed into just an ice cream blog, but this one is too good to keep to myself much longer!

If you haven’t had ube before, ube is a sweet purple yam with a slightly nutty and vanilla flavor which lends itself perfectly for desserts. To add ube flavor, this recipe uses both Ube Halaya and Ube Flavor. Ube Halaya is mashed purple yam combined with condensed milk. Ube Flavor, or extract, obviously adds more ube flavor, but it also contains purple dye in it to amp up that beautiful purple color. Both ube halaya and ube flavor can be found at most Asian grocery stores.

Let’s get churning!

Recommended tools (paid links):

Ingredients:

  • 2 cups heavy cream
  • 2 cups whole milk
  • 6 egg yolks
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1 tablespoon vanilla extract
  • 1 tablespoon ube flavor
  • 1/2 cup ube halaya

It is most certainly Instant Pot season! Work (at least for me) is busy this time of year, and yet, I crave meals that take a while to cook! Using an Instant Pot saves me a ton of time, so I tend to use it a lot this time of year.

Vegan Chocolate Zucchini Bread

Note: I was sent samples of Divine Chocolate’s cocoa powder in order to write this post for #Choctoberfest. Opinions are mine alone.

I love baking, especially when it helps me prepare for a busy week ahead while also relieving some of my stress. I do a lot of my food prep for the week during the weekends. When I can, I like to make something for breakfast that is easy to bring to work during the week. One of my favorite make ahead breakfasts is this Cranberry Pistachio Zucchini Bread, so when I received samples from Divine Chocolate, I thought it would be a great opportunity to make a chocolate version for #Choctoberfest. (For more information about #Choctoberfest and details about the giveaway, see my post here.)

Divine Chocolate’s baking like consists of three premium quality flavors ranging from 55% to 100% cocoa for a wide variety of delicious desserts. To make this Vegan Chocolate Zucchini Bread, I used Divine Chocolate’s Cocoa Powder. The unsweetened cocoa powder is made with the finest fair trade cocoa, in compliance with fair trade standards.  Plus, the packaging is gorgeous!

I wanted to highlight vegan baking in this recipe as well, which isn’t nearly as difficult as it seems. This tasty bread is make without butter or eggs, but includes ingredients that are really easy to come by.

Dulce De Leche Brownies

Note: I was sent a case of Imperial Sugar for #Choctoberfest in order to write this post. Opinions are mine alone.

When I first signed up for this year’s #Choctoberfest, I knew I wanted to share this recipe! (for more information on #Choctoberfest, plus the chance to enter our giveaway, check out my post here.)

I haven’t made a brownie recipe in a while, but wanted to make something special for this event. If you aren’t familiar with dulce de leche, its a caramel-like sauce that is made by slowly heating sweetened condensed milk until is is light brown and wonderfully sweet.

I used Imperial Sugar, one of the sponsors of #Choctoberfest, in the brownie batter part of this recipe. I wanted to remind you that they are currently hosting their annual Scary Scramble, featuring delicious fall-inspired recipes using Imperial Sugar’s high-quality sweeteners. Imperial Sugar has been a kitchen staple for over 175 years!

Ok. Back to the recipe. Dulce de leche and chocolate are a match made in heaven. These brownies are sure to become a favorite of yours!

Ingredients:

  • 1/2 cup (1 stick) unsalted butter, plus more to grease the pan
  • 1 cup sugar (I used sugar from our sponsor Imperial Sugar)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder

Pressure Cooker Mushroom Bourguignon

Note: I was sent a copy of The Big Book of Instant Pot Recipes: 240 Must-Try Dishes for Your Multi-Function Cooker for review. Opinions are mine alone.

I’ve mentioned many times before how much I love my multi-cooker. I tend to use it a lot on weekends to help prep meals for the week, but it’s also a life saver on weeknights — you can get a delicious meal that tastes like it’s been cooking all day on the table in 45 minutes or less!

So when I heard about a new cookbook that is going to be published soon (September 24, 2019 to be exact) that has a ton of awesome multi-cooker recipes, I was excited to check it out.

The Big Book of Instant Pot Recipes: 240 Must-Try Dishes for Your Multi-Function Cooker (paid link) by Kristy Bernardo, Emily Sunwell-Vidaurri, Amy Rains, and Stefanie Bundalo contains 240 recipes for every occasion that the authors have adapted for the Instant Pot, and the vast majority of these recipes take less than 45 minutes, making home-cooking and family meal time simple, fast, and delicious for readers of all levels of cooking experience.

Divided into eight thorough chapters, Breakfast, Lunch, Soups and Stews, Pastas, Mains, Sides, Desserts, and Condiments and Sauces, The Big Book of Instant Pot® Recipes offers readers a plethora of healthy dishes that will take less than 45 minutes to prepare and are great for every occasion. Moreover, nearly all the dishes are either vegan, gluten-free, dairy-free, or paleo-friendly, accommodating all dietary needs.

I think most people know how great pressure cookers can be for tough cuts of meat, so I wanted to try one of the meatless options in the cookbook. This Pressure Cooker Mushroom Bourguignon is a simplified (and meatless) version of a French classic — typically a beef stew braised in red wine / beef broth.

Ingredients (serves 4):

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter (or margarine to make dairy free)
  • 1 (8 oz) container sliced mushrooms
  • 1 (8 oz) container whole mushrooms, cut in half
  • 1 (4 oz) container gourmet mushroom blend
  • 1 medium yellow onion, chopped
  • 2 medium carrots, peeled and sliced into rounds
  • 1 celery rib, chopped (or kept in larger pieces if you intend to remove)
  • salt and pepper, to taste
  • 1/2 teaspoon dried thyme
  • 2 cloves garlic, grated
  • 1 tablespoon balsamic vinegar
  • 1 cup dry red wine
  • 1 cup water
  • 3/4 cup beef or vegetable stock, divided

  • 2 tablespoons tomato paste
  • cooked egg noodles (optional, substitute mashed potatoes for gluten free)
  • fresh parsley, chopped, for garnish

Sumac Scented Eggplant and Chickpeas

Have you ever used ground sumac? Ground sumac is made from dried ground berries from the sumac bush, which is native to the Middle East. The flavor is similar to lemons, sour and tangy, but less tart than lemon juice.

I purchased ground sumac a while back patiently waiting for the “right” recipe to cross my path. After receiving eggplant in my most recent Hungry Harvest, I came across this recipe for Sumac Scented Eggplant and Chickpeas, which I knew I had to make!

I ended up cooking dried chickpeas in an electric pressure cooker, made my own pomegranate molasses, but using canned chickpeas and store bought pomegranate molasses works just as well. I adapted this recipe from New York Times Cooking.

Ingredients:

  • ½ cup olive oil, divided
  • 2 pounds eggplant, cut into 1-inch cubes
  • Salt and pepper, to taste
  • 1 (28-ounce) can crushed tomatoes
  • 1 tablespoon ground sumac
  • 3 garlic cloves, minced
  • 3 tablespoons pomegranate molasses
  • 2 cups cooked chickpeas, or 1 (14-ounce) can chickpeas, drained
  • 4 scallions, sliced, light green and white parts separated from dark green parts
  • 1/4 cup chopped fresh mint, plus more for garnish
  • 2 cups cooked white rice, for serving
  • ½ cup Greek yogurt, for serving (omit for dairy free/vegan)
  • Toasted pita, for serving (omit for gluten free)

Pressure Cooker Mashed Sweet Potatoes

I really love sweet potatoes. I have a pretty bad sweet tooth, so sweet potatoes are right up my alley. Growing up, we used to always have them mashed with a ton of butter and topped with roasted marshmallows. Mmm.

This version for Pressure Cooker Mashed Sweet Potatoes is a bit more stripped down, no marshmallows here. The natural sweetness is allowed to shine through (although I do enhance it a bit with some maple syrup)!

Plus, because I cooked the sweet potatoes in my Pressure Cooker, this recipe is done in no time!

Ingredients:

  • 4 lbs sweet potatoes, peeled and cut into similar sized pieces
  • 1 cup water
  • 1/4 cup unsalted butter (or coconut oil to make dairy free/vegan)
  • 1 tablespoon cinnamon
  • 1 tablespoon maple syrup
  • 1/2 teaspoon salt
  • thyme, for garnish

One Pot Chicken with Orzo

Who doesn’t love a “one pot” meal? No one wants to do a ton of dishes after dinner!

I love cooking with my cast iron skillet, which is actually my grandmothers. Cast iron does a great job of evenly heating food and searing meat, and stands the test of time. Every meal I make in my cast iron feels kind of special, knowing my grandmother also used to cook in the same skillet.

This recipe, adapted from Epicurious, is a nice comfort food dinner, with juicy chicken thighs, sautéed fennel and leeks, and hearty orzo, and is perfect for chilly nights.

Ingredients:

  • 6 boneless skinless chicken thighs, patted dry
  • salt and pepper
  • 3 tablespoons unsalted butter, divided
  • 1 fennel bulb, chopped
  • 1 leek, white and pale green parts only
  • 8 ounces orzo
  • 1/3 cup dry white wine
  • 2 1/2 cups low-sodium chicken broth, divided
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon finely grated lemon zest

Ranch Chickpea Cucumber Salad

I’ve been trying to think up more bring-to-work lunch ideas recently. We tend to just eat leftovers or traditional salads for lunch, which can get boring quickly.

So when my Hungry Harvest (note: this is a referral link) came with absolutely huge cucumbers, I figured I could make a slightly different lunch (or a make ahead side for dinner) with it!

This dish has chickpeas to make it a bit more hearty, red onions for flavor (and color), and of course, cucumbers. I tossed all of those in a lemony, zesty ranch Greek yogurt mixture.

Ingredients:

  • 1 large (or two medium) cucumber(s), cut into bite sized pieces
  • 1 (15.5 oz) can chickpeas, rinsed and drained
  • 1 small red onion, finely chopped
  • 1/4 cup plain Greek yogurt
  •  1 1/2 teaspoons ranch seasoning mix
  • the zest and juice of 1 lemon
  • salt and pepper, to taste
  • 2 tablespoons fresh dill, chopped

Chocolate Cherry Banana Bread

Note: I was sent Northwest Cherries in order to write this post and recipe for Chocolate Cherry Banana Bread. All opinions are mine alone.

My husband and I were recently invited to go down the shore with our friends, and I wanted to bring something as a thank you for a weekend at the beach. Luckily, I had some overripe bananas sitting on my countertop, so I made this chocolate cherry banana bread to bring with us.

As I mentioned in my recent post, I have quite a few cherries in my house at the moment, so I decided to snazz up the banana bread with some fresh chopped cherries and chocolate chips.

Ingredients:

  • 2 to 3 very ripe bananas
  • 1/3 cup butter, at room temperature
  • 3/4 cup light brown sugar, lightly packed
  • 1 large egg
  • 1 teaspoon almond extract
  • 1 1/2 cups all purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup cherries, pitted and roughly chopped
  • 1/2 cup chocolate chips

Homemade Maraschino Cherries

Note: I was sent Northwest Cherries in order to write this post. All opinions are mine alone.

July is peak cherry season, which means I have A TON of cherries in my fridge! I was sent quite a few bags of cherries from Northwest Cherry Growers, and had to dive right in to using them! Fun fact: Northwest Cherry Growers is a group of 2,500+ farms that produce at least three-quarters of the nation’s entire sweet cherry crop.

Source: nwcherries.com

Northwest-grown sweet cherries tend to boast the highest fruit sugar content of any cherries. The naturally high sugar content makes them such a yummy snack on their own, or great in baked goods and other recipes. They are also one of the lowest fruits on the glycemic index. (In case you’re wondering, a general rule of thumb is that the darker the cherry, the sweeter it is.)

Cherries are also a superfruit and have been credited with reducing the risk of some serious diseases. Published research points to the health benefits of sweet cherries, including a study conducted by the U.S. Department of Agriculture (USDA). The study discovered consuming sweet cherries can help prevent chronic inflammatory diseases such as cardiovascular disease, diabetes, arthritis and cancer. These powerful superfruits also contain melatonin, which may increase your quality of sleep and reduce jetlag.

Cherry season is pretty short, from July to mid-August, so I’m excited to have the opportunity to use these beautiful cherries in a bunch of different recipes. Fresh cherries keep for approximately two weeks when refrigerated in a sealed bag or container. If you want to enjoy them year-round, you can also freeze cherries by rinsing, drying, and packing them up in freezer bags.

Source: nwcherries.com

I’m kind of in a canning state of mind after making my Blueberry Chia Seed Jam a few weeks ago, so I wanted to can some of these beautiful cherries. You may have noticed I’m a fan of cocktails, so I just had to make homemade maraschino cherries!

Maraschino cherries are named for the Marasca cherry grown originally in Croatia, which when distilled, produce a liqueur. Whole cherries that are preserved in this liqueur became known as Maraschino Cherries.

These maraschino cherries are not those bright red guys you’ll find in a Shirley Temple. No no, these are the adult, more refined version. There is no artificial coloring, and much less sweetener added. And they are perfect for cocktails and adult ice cream sundaes!

Ingredients:

  • 2 bags (~100 cherries) fresh cherries, pitted
  • 1 cup sugar
  • 1 vanilla bean, split and scraped
  • 2 cinnamon sticks
  • the zest and juice of 2 lemons
  • 1 cup water
  • 2 cups cherry (maraschino) liqueur

Elote (Mexican Grilled Corn)

One of my favorite summer foods is corn. A nice grilled corn on the cob just makes my day!

But I had never tried Elote before, so I figured it was time to do so!

Elote, or corn on the cob in Spanish, is a Mexican grilled corn brushed with a creamy mixture of mayo, sour cream, cotjia cheese, chili powder, and cilantro.

The result is absolutely crave-worthy!

  • 1/2 teaspoon chili powder, plus more for serving

Farro with Vidalia Onion and Asparagus

Note: I was sent a box of Vidalia onions to make this post for Farro with Vidalia Onion and Asparagus. Opinions are mine alone.

I’m still working through my box of Vidalia onions. No complaints here, they are incredibly versatile! These sweet onions are perfect for low and slow cooking that allow the sugars to caramelize and develop another layer of flavor.

I know it’s difficult to even see the Vidalia onions in the final photos of this Farro with Vidalia Onion and Asparagus, but I promise you, they are the star of this dish — their flavor is in each and every bite, and results in one of the best sides I’ve made in a long time!

This recipe for Farro with Vidalia Onion and Asparagus from Trisha Yearwood is definitely a keeper. Plus, it comes together pretty easily!

Ingredients:

  • drizzle of olive oil
