Frozen Key Lime Pie

Every December, I love to share a recipe to support Cookies for Kids’ Cancer, which is why I’m bringing you this delicious Frozen Key Lime Pie!

Every year, OXO supports Cookies for Kids’ Cancer and the fight against pediatric cancer.  To date there have been 14,000 grassroots fundraising events in all 50 states and Cookies for Kids’ Cancer has granted more than $18 million to the leading pediatric cancer research centers across the country. Cookies for Kids’ Cancer (CFKC) is a nonprofit founded by two OXO employees after their son, Liam, was diagnosed with pediatric cancer. Through grassroots bake sales across the country, CFKC raises funds to develop new, improved and less toxic treatments for childhood cancer. Liam Witt’s legacy lives on as the organization works toward a cure for pediatric cancer, helping children and families everywhere.

Ingredients:

Graham Cracker Crust:

  • 1 1/2 cups finely crushed graham crackers (24 squares)
  • 1/3 cup butter, melted
  • 3 tablespoons sugar

Key Lime Filling:

  • 6 large egg yolks
  • 2 (14-ounce) cans sweetened condensed milk
  • 1 cup Key lime juice
  • the zest of 1 Key lime

Whipped Cream Topping:

  • 1 cup cold heavy whipping cream
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Optional topping:

  • 1 Key lime, thinly sliced

No Bake Chocolate Eclair Cake

It’s that time of year where there are plenty of barbecues and outdoor gatherings again. Whenever our friends host, I never want to come empty handed so I like to have a bunch of dessert recipes on hand, especially no bake dessert recipes!

This No Bake Chocolate Eclair Cake is perfect for summer meet ups – you don’t have to turn on your oven and overheat your own home, and it can be made ahead and served chilled or at room temperature.

The cake is super simple to make. It is layers of graham crackers, whipped cream pudding, and chocolate frosting, mimicking the flavors of a chocolate eclair. If you don’t want to make your own frosting, you can also buy store bought and just use that.

Ingredients:

  • 1 pint heavy whipping cream
  • 1 tablespoon vanilla extract
  • 1 (16 oz box) plus 2 tablespoons confectioners’ sugar, divided
  • 2 (3.4 oz) boxes instant vanilla pudding mix
  • 3 cups whole milk, divided
  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1 cup cocoa powder
  • 1/2 teaspoon salt
  • 1 tablespoon coffee extract
  • 1 (14.4 oz) box graham crackers

Smoker Grilled S’mores Skillet

With Memorial Day right around the corner, it’s time for more recipes using Bear Mountain BBQ Wood Pellets! This one is a bit different than my previous two posts fort Smoked Potato Salad and Smoked Wings… this time I’m bringing you dessert: a Smoker Grilled S’mores Skillet to be exact!

As a city girl, I don’t exactly get a lot of opportunities to roast some marshmallows over an open fire, but I do love s’mores!

This recipe takes a s’mores skillet one step further and lets it smoke on the grill with some of Bear Mountain’s Bourbon BBQ Wood Pellets.

Ingredients:

  • 1 cup Bear Mountain Bourbon BBQ Wood Pellets
  • 1 tablespoon butter
  • 3 milk chocolate candy bars
  • 3 dark chocolate candy bars
  • 2 cups semi-sweet chocolate chips
  • 1 (12 oz) bag marshmallows
  • graham crackers, for serving

Smores Bars

I come from a fairly large family. Growing up, my cousins and I would see each other nearly every Sunday for dinner at our grandparents. As we’ve gotten older, we clearly don’t have as many opportunities to see each other. So we decided to have a cousin barbecue for those of us that still live in the Philadelphia area.

Whenever I think of outdoor cooking, I naturally think of S’mores for dessert.

Because I was hosting, I wanted to pre-make as much of the food as I could, so I decided to make Smores Bars for us to enjoy!

These are super easy, and absolutely addicting!

Ingredients:

  • 1 1/4 cups all-purpose flour
  • 3/4 cup graham cracker crumbs
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1/2 cup packed light-brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 2 (12 oz) bags semi-sweet chocolate chips
  • 2 (14-ounce) cans sweetened condensed milk
  • 60-70 full-size marshmallows (about 1 1/2 10-ounce bags)

No Bake Blueberry Lemon Icebox Cake

I mentioned in my Blueberry Chia Seed Jam post that you’d see it pop up in a recipe shortly, and here it is! This No Bake Blueberry Lemon Icebox Cake is a great make ahead dessert that’s a beautiful end to a barbecue or summer dinner party.

If you’re not familiar with icebox cakes, they are layered frozen cakes traditionally made with whipped cream and chocolate wafers. This Bon Appetit version incorporates some of my favorite flavors, blueberries and lemon, to create a beautiful Blueberry Lemon Icebox Cake!

This isn’t a cake that involves much precision or patience, and looks pret-ty darn good even when giving off that “homemade” vibe, like mine does. You also don’t need any special tools – just a 9×5 loaf pan, some plastic wrap, and a hand mixer. An offset spatula would also come in handy if you have one.

Ingredients:

  • 1 (8 oz) container mascarpone, at room temperature
  • 3/4 cup powdered sugar
  • the zest of 1 lemon
  • 2 1/2 cups chilled heavy cream (leave in the fridge until ready to use)
  • 1 cup lemon curd, divided
  • 16 graham crackers, divided
  • 1 1/2 cups Blueberry Jam (like this Blueberry-Chia Seed Jam), divided
  • 1/3 cup fresh blueberries

Key Lime Pie Cupcakes

We’ve been pretty lucky weather-wise in Philadelphia recently, but are back to it feeling like actual winter. Blah.

I’ve been dreaming of warmer weather (and warmer weather recipes)! I must not be the only one, because the Florida Keys & Key West are hosting an awesome event tomorrow night to help the Philadelphia area dream of the sun and sand.

Tomorrow, 24 of Philadelphia’s top food writers and influencers are getting behind the stove to face off “Iron Chef style” at Walnut Hill College. The influencer who creates the best Keys-inspired dishes within the time limit will win a trip to the Florida Keys and be named an honorary Keys Chef. Guest judges from the Keys will include Chef Bobby Stoky and Philadelphia’s favorite son Pat Croce. The sold out event includes an evening of food, cocktails, fun and friendly competition.

How awesome would it be to win a trip to the Keys? The Florida Keys are a string of tropical islands off the southern tip of Florida and are known for their awesome fishing, snorkeling and scuba diving. In fact, the Keys have the only living coral barrier reef in the U.S., not to mention awesome food and drink. The most well known dish from the Florida Keys is Key Lime Pie.

I was bummed that I wouldn’t be able to attend, but still wanted to get in on the fun, so I decided to make a spin on Key Lime Pie — Key Lime Pie Cupcakes!

Key Limes are smaller than “normal” limes and are a bit more tart. These little guys don’t give off a lot of juice though, so it takes quite a bit to make this recipe. Key Lime Pie is made with key lime juice, egg yolks, and sweetened condensed milk to make a smooth, tangy pie filling with a graham cracker crust.

Ingredients:

Crust:

  • 1/2 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 2 tablespoons unsalted butter, melted

Cupcakes:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup (1 1/2 sticks) unsalted butter, at room temperature
  • 2/3 cup sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1/2 cup evaporated milk (or regular milk)
  • 1/4 cup key lime juice
  • 1/2 teaspoon key lime zest

Key Lime Curd:

  • 3 egg yolks
  • 1/4 cup plus 2 tablespoons granulated sugar
  • 1/2 cup key lime juice
  • 1/4 tsp grated key lime zest
  • 1/8 tsp salt

Frosting:

  • 1 cup (2 sticks) unsalted butter
  • key lime curd
  • 1 tsp. vanilla extract
  • 3-4 cups powdered sugar
  • ¼ cup sweetened condensed milk

Cocoa Almond Pretzel Crust Brownies

Salty-sweet combinations are just. The best. My favorite involve chocolate; the saltiness really enhances the chocolate flavor!

These Brownies are an absolutely delicious salty-sweet combo. The super chocolately, fudgy brownie is made with Endangered Species Chocolate Almond Spread with Cocoa (and 3 other different kinds of chocolate!)  while the crust is make of a deliciously salty pretzel/graham cracker combination.

 

The Almond Spread adds a different lay of flavor to the brownies. To keep the almond flavor noticeable in the brownies, I also used some almond extract. If you don’t have almond extract, or don’t want as much almond flavor, you can use vanilla extract.

What makes these brownies even more tasty is that the chocolate spread used in the brownies also helps give back: Endangered Species Chocolate donates 10% of net profits annually to 10% GiveBack Partners. In the past three years, Endangered Species Chocolate’s (ESC) 10% GiveBack program has donated more than $1.2 million for its carefully chosen beneficiaries!

 

ESC recently announced its 2016-2018 partners: Rainforest Trust and Wildlife Conservation Network (WCN). The organizations will receive 10% of ESC’s annual net profits (or a minimum annual donation of $10,000, whichever is greater) to fund projects they deem most important to achieving their conservation goals.

Rainforest Trust has saved more than 11 million acres of tropical forests to-date, but ESC’s 10% GiveBack program will be vital in expediting the organization’s goal of preserving 20 million acres by the year 2020. WCN funds projects in 24 different countries where the 10% GiveBack program will contribute to helping a myriad of at-risk species.

Past 10% GiveBack partners include SEE Turtles, SEEtheWild, Chimp Haven and, most recently, the Xerces Society and African Wildlife Foundation (AWF).

Ingredients:
For crust:

  • 1 stick (8 tablespoons) unsalted butter, melted
  • 1.5 cups crushed pretzels (about 2 cups mini pretzels before crushed)
  • 1/2 cup ground graham crackers
  • 1/2 cup brown sugar

For brownies:

  • 2 sticks (16 tablespoons) unsalted butter
  • 1.5 cups (~9 oz) semisweet chocolate chips
  • 4 ounces (1 baking bar) unsweetened chocolate, chopped
  • 1 (9.7 oz) jar Endangered Species Chocolate Almond Spread with Cocoa
  • 2 cups sugar
  • 4 large eggs
  • 1/2 tablespoon almond extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt

Indoor S’mores Bar

There is nothing quite as nostalgically delicious as biting into a s’more. The gooey, chocolatey, crunchy dessert reminds me of campfires, childhood, and summer camp. But living in Philadelphia means roasting s’mores over an outdoor campfire is a bit unlikely. I was having friends up for the weekend and I thought it would be fun to roast s’mores indoors like the urbanite I am, because who says s’mores can only be done around a campfire out in the woods?

Making a s’mores bar is really simple and doesn’t take long to set up. You just need your main ingredients and a heat source and you’re good to go!

I set up a little s’mores bar in the kitchen, with s’mores ingredients and a s’mores roasting station made from a planter box with sternos and filled with rocks. I added some wire netting on top so that the marshmallows didn’t come into direct contact with the flame.

 

For the tablescape, I used a gingham tablecloth, wood rounds for the s’mores ingredients, and a chalkboard for a truly awful (amazing?) pun. I also printed out a quote from one of my favorite movies (The Sandlot) about how to make s’mores. A little owl made an appearance as well to finish off the outdoors-indoors theme.

The bar included all of the traditional fixin’s – Hershey’s Milk Chocolate bars, Honey Maid Graham Cracker Squares, and Kraft’s Jet Puffed Marshmallows.

I then snazzed it up a bit with a few different options to give more selection – Reese’s, Hershey’s Mini Candies (Krackel, Mr Goodbar, and Dark Chocolate), Banana Chips, and fresh Strawberries and Bananas.

I found all of the ingredients I needed at Walmart; they currently even have a display with all the traditional goodies you need! (The Honey Maid Graham Cracker Squares are exclusively found at Walmart and are the perfect size for s’mores making.)

To make indoor s’mores, first add a Honey Maid Graham Cracker Square to a plate.

Top the Graham Cracker Square with Hershey’s Milk Chocolate (or another chocolatey candy bar). If you’d like to add fresh fruit or other ingredients, place them on top of the chocolate.

Add a Jet Puffed Marshmallow to a skewer and hold the marshmallow over the flame and roast, turning occasionally to brown evenly.

Once browned to your liking, place the marshmallow on top of the chocolate and use a second graham cracker square to pull the skewer from the marshmallow.

I love how the warmed marshmallow slightly melts the chocolate making a gooey, crunchy, and oh so tasty little snack.

We naturally had a taste test to see which options were the best. Favorite combinations from the group included Reese’s and Banana slices, Krackel and Strawberry slices, and Mr. Goodbar and banana chips.

 

You could go really crazy and make a “double decker” s’mores: graham cracker, chocolate, marshmallow, graham cracker, another chocolate, another marshmallow, and a final graham cracker!

Or if you didn’t want to work with an open flame, melt the chocolate in a bowl, dip the marshmallows in the chocolate, and then sprinkle with crushed graham crackers for a s’mores pop on a stick!

My friends and I had so much fun toasting marshmallows around our “campfire,” and it was really simple to set up! The indoor s’mores bar would be a great addition to any get-together, or rainy day gathering. As a winter baby, I will probably set this back up again for my birthday to get a taste of summer in the cold months!

Pumpkin Pie Milkshakes

It’s the most wonderful time of the year, pumpkin season! My love of pumpkin flavored, well, anything, is well known among my group of friends. September means I am actually allowed to dive into my pumpkin obsession but it is still a bit warm so we will begin with a chilled version of my favorite gourd – Pumpkin Pie Milkshakes!

I had a Pumpkin Pie Milkshake post on here from 2011, but when I switched my blog over to WordPress, the post got a little funky. So I decided to make the milkshake again with a few changes.

Ingredients (makes 2 servings, multiply as needed):

  • 2 cups vanilla ice cream
  • 1 cup vanilla almond milk
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1/4 cup firmly packed light brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground cardamom
  • 1 graham cracker (I used cinnamon graham crackers), crumbled

Plum Swirled Cheesecake Bars

This recipe for Plum Swirled Cheesecake Bars is a result of me going a little off the grocery list last time I went food shopping. Have you ever seen an ingredient in the supermarket and decided you just have to make something with it? This happens to me quite a bit.

Unfortunately, I normally do not have a recipe lined up to take advantage of my new purchase. I wanted to take a break from some peach recipes I’ve been making recently (Brown Sugar Cinnamon Peach Pie, Peach Cobbler, and Bourbon-Peach Lemonade to name a few) and focus on a relative of peaches: the plum. I haven’t worked with plums much in the past (I actually only have once recipe: Plum Sweet and Spicy Chicken) but I just could not resist how great they looked!

I decided to take a Martha Stewart recipe for Apricot Cheesecake Bars and instead make my own Plum Compote as a substitute for the Apricots, resulting in these Plum Swirled Cheesecake Bars.

Ingredients:

Plum Compote:

  • ½ cup port wine
  • ½ cup sugar
  • 1 cinnamon stick
  • 1 vanilla bean, cut lengthwise
  • The zest of one orange
  • 6 plums, stones removed and sliced

Cheesecake:

  • 18 graham crackers (I used cinnamon graham crackers)
  • ¾ cup plus 1 tablespoon sugar, divided
  • 2 teaspoons vanilla powder (I used Nielsen Massey)
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 packages (8 ounces each) cream cheese, room temperature
  • 1/2 cup sour cream, room temperature
  • 1/2 teaspoon vanilla bean paste or pure vanilla extract (I used Nielsen Massey)
  • Coarse salt, to taste
  • 2 large eggs, room temperature

“Dirt” Flower Pots

“Dirt” cake reminds me of hot summers, barbecues, and outdoor eating. When I was a kid, I used to get so excited for dessert once I spotted the flower pot set out on checkered tablecloth with the other desserts. This “Dirt” Flower Pots dessert is really easy to make, requires no cooking, and looks just adorable. You can really dress it up with flowers, worms, or even mini Scottie dogs.

As a member of the Walkers Shortbread Ambassador program, I was sent packs of Walkers’ pure butter Scottie Dog Shortbread cookies, which help support the company’s sponsorship of The American Society for the Prevention of Cruelty (ASPCA).   • 2 graham crackers (optional)
  • 2 packs of instant chocolate pudding
  • 1/2 cup confectioners sugar
  • 3 cups milk
  • 8 oz cream cheese
  • 8 oz whipped topping
  • 1 box of Walkers Scottie Dog Shortbread Cookies (Chocolate or Original)
  • Gummy worms (optional)

For decoration (optional):

  • small flower pots (I used 6 inch pots)
  • organic flowers, or fake flowers
  • straws

Peeps S’mores

Anyone else still have a house full of Peeps following Easter? Those poor little marshmallow leftovers are past even their somewhat stale crunchy stage and are just kind of hanging around at this point. So I decided it was about time to put them to good use. Peeps S’mores time!

Ever since I made the S’mores Milkshakes, I have had S’mores on my mind. So what better way to utilize a house full of sugar coated marshmallows than by making a batch of festive after-Easter Peeps S’mores?

Ingredients (makes 2 servings):

  • 2 graham crackers, halved
  • 1 chocolate candy bar, halved (milk or dark, I prefer dark)
  • 2 Peeps

S’mores Shake

I am so excited to share this cookbook with you. It’s an entire cookbook dedicated to Milkshakes! I have a serious ice cream addition, so it should go without saying that I love milkshakes. Although I’m never one to turn down a simple chocolate or cookies and cream milkshake, this cookbook brings milkshakes to a completely different level. Malts & Milkshakes: 60 Recipes for Frosty, Creamy, Frozen Treats has everything from the classics, to modern flavors, and even boozy shakes. The Author, Autumn Martin, is the founder of Hot Cakes Molten Chocolate Cakery in Seattle, so she knows her desserts!

All of the recipes can be made using ingredients found in your supermarket, but it also includes recipes for making your own homemade ice cream if you’re feeling particularly fancy. There are so many inventive recipes in this book: eggnog, earl grey, salted caramel, and mango rose milk shakes to name a few. And those don’t even include the boozy milkshakes! My two favorite ones from that section: Chocolate Espresso Whiskey Malt and Chipotle Spice Sipping Chocolate Shake. This book is not messing around!

Another favorite was the S’mores Shake. Few things symbolize wonderful summer memories like S’mores. Chocolate, Marshmallow, and Graham Crackers sound like a perfect combination in a milkshake too! I changed the recipe up ever so slightly, but the general idea is still in tact.

Ingredients:

  • 2 tablespoons unsalted butter
  • 8 marshmallows, roasted
  • 1/4 cup milk (I used skim)
  • 6 scoops vanilla ice cream (~3 cups)
  • 2 scoops chocolate ice cream (~1 cup)
  • 1/2 cup crumbled graham crackers, plus more for garnish
