Oatmeal Chocolate Chip Cookies

I decided to make the cookie that started it all, a recipe for Chocolate Chip Oatmeal Cookies that was developed for Cookies for Kids’ Cancer’s first bake sale.

This recipe is legit.  They are the perfect balance of chewy, buttery, and chocolately. It’s no wonder the recipe is so popular!

Ingredients:

  • 1/2 lb  (2 sticks) unsalted butter, at room temperature
  • 1 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 large egg yolk, at room temperature
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup old fashioned rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups semi-sweet chocolate chips

Preheat your oven to 325 degrees F. Line your cookie sheets with parchment paper if you have it (this keeps the bottoms of the cookies from browning too much).

Add the butter and sugars to a large bowl and beat with an electric mixer until smooth and creamy.

Add the whole egg, beating until combined.

Add the egg yolk, once again beating until combined.

Follow with the vanilla extract, beating well.

Combine the flour, oats, baking powder, baking soda, and salt in a large bowl, mixing well.

Add the mixture to the butter mixture, beating until well incorporated.

Scrape down the sides of the bowl. Add in the chocolate chips and mix well.

Form the dough into heaping teaspoon sized balls. Place about 2 inches apart on the prepared cookie sheet.

Gently press down on the balls. Add to your preheated oven and bake until the cookies begin to brown at the edges, 12 to 15 minutes.

Allow to cool for 5 minutes on the cookie sheet. Transfer the cookies to a wire rack and repeat with the remaining dough.

I cannot say enough good things about these cookies. I was initially a bit worried about how many chocolate chips were in the recipe but every single one of those chocolate chips is needed!
