Crunchy Noodle Salad

Despite working from home for nearly a year now, I feel like I have less time to cook! I have a feeling I’m not alone, so I wanted to share a healthy, quick, and comforting recipe for a yummy Crunchy Noodle Salad that you can get on the dinner table in ~40 minutes.

This Crunchy Noodle Salad is made with glass noodles, sugar snap peas, shredded carrots, bell peppers, and crispy tofu tossed in a yummy peanut dressing, and can be served at room temperature or cold, so it makes for a great dinner-plus-leftovers option.

Don’t let the whole vegetarian/vegan/gluten-free part of this recipe throw you, it will fill you up! I this recipe uses Nasoya’s Organic Super Firm Tofu that delivers 15g of protein per serving to keep you full. Ingredients (serves 4):

  • 6 oz glass noodles
  • 8 oz sugar snap peas
  • 1 package Nasoya Organic Super Firm Tofu, cubed
  • 3 tablespoons cornstarch
  • 1/2 cup carrots, shredded
  • 1 red bell peppers, thinly sliced
  • 2 scallions, sliced
  • 1/2 cup plus 1 tablespoon vegetable oil, divided
  • 2 tablespoons rice wine vinegar
  • 1/4 cup tamari (or low sodium soy sauce if you don’t need this recipe to be gluten-free)
  • 1 1/2 tablespoons toasted sesame oil
  • 1 teaspoon honey
  • 1 garlic clove, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup smooth peanut butter
  • 1 tablespoon roasted white sesame seeds, plus more for garnish

Creamy Snap Peas with Feta

Some nights, you just want to sauté or grill up a protein and have a quick go-to side to make a nice meal without much effort.

Pappardelle Pasta with Snap Peas

 

Last Sunday, my boyfriend ran in the ODDyssey Half Marathon. So the Friday before, I wanted to make a pasta dish for him to “carb load,” but I didn’t want to give him our normal protein-heavy meat sauce.

 

 

This recipe from Food Network was a perfect choice! It uses fresh veggies and herbs to deliver the flavor instead of meat and tomatoes.

 

 

Ingredients:

  • Kosher salt
  • 1 tablespoon extra-virgin olive oil
  • 3 tablespoons unsalted butter
  • 1 bunch scallions, cut into 1/2-inch pieces (about 1 cup of chopped scallions)
  • 1/2 pound sugar snap peas, roughly chopped
  • 1 jalapeno pepper, seeded and minced
  • 1 cup roughly chopped fresh parsley
  • 1 bunch fresh chives, thinly sliced (about 3 tablespoons)
  • 1/2 pound dry pappardelle pasta
  • 3/4 cup crumbled ricotta salata
  • ground pepper, to taste

Seared Wild Striped Bass with Sauteed Spring Vegetables

Spring has some of the best vegetables and it’s about time I put some of them to use! Anne Burrell has this fantastic recipe for Seared Wild Striped Bass with Sauteed Spring Vegetables using some of bright green veggies available right now and pairs it with a method for cooking seared wild striped bass that gets the skin super crispy without it curling up.

Ingredients:

  • Salt
  • 1 bunch asparagus, snapped where it wants to naturally break
  • 2 cups sugar snap peas, tips and strings removed
  • 1 cup shelled fava beans
  • Extra-virgin olive oil
  • 3 cloves garlic
  • 1/2 cup morel mushrooms, cleaned and cut lengthwise in 1/2
  • 1/2 cup chicken or vegetable stock
  • 4 (6-ounce) wild striped bass fillets, with skin

Summer Lemon-Vegetable Risotto

As I hear rumblings of all things pumpkin just around the corner (yay!), I realized that my days of beautiful, fresh vegetables are numbered (boo). Which means I needed a recipe that used some of summer’s best. This risotto recipe from Cooking Light fit the bill: Asparagus, Sugar Snap Peas, Zucchini, Yellow Squash.. mmm.
Ingredients:
  • 8 ounces asparagus, trimmed and cut into 1-inch pieces
  • 8 ounces sugar snap peas, trimmed and cut in half
  • 5 teaspoons extra-virgin olive oil, divided
  • 1 (8-ounce) zucchini, halved lengthwise and cut into 1/2-inch-thick slices
  • 1 (8-ounce) yellow squash, halved lengthwise and cut into 1/2-inch-thick slices
  • 4 3/4 cups organic vegetable broth
  • 1/2 cup finely chopped shallots
  • 1 cup uncooked Arborio rice
  • 1/4 cup beer (I used a pilsner)
  • 1/2 cup (2 ounces) grated fresh parmesan cheese
  • 1/4 cup chopped fresh chives
  • 1 teaspoon grated lemon rind
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon unsalted butter
