Eggnog Date Nut Bread

We hosted Christmas this year for the first time, so my house is stocked with half opened and half eaten, well, everything. My husband, a lifetime grazer, is in his element, but I am still trying to best use up ingredients to make new recipes, like using up any remaining eggnog to make this Eggnog Date Nut Bread!

I had exactly one cup of eggnog left in my fridge, so when I was paging through Baking Secrets from the Bread Monk (paid link) and found this recipe for Eggnog Date Nut Bread that uses one cup of eggnog, it felt a bit like destiny.

Baking Secrets from the Bread Monk is filled with Father Dominic’s favorite tips and tricks for baking, so this cookbook is a lovely read. He even includes substitutes for common ingredients, hints for kitchen organization and storage, advice on the best baking tools for the job, and fun historical facts and kitchen wisdom.

Some of you may know Father Dominic Garramone, known as “The Bread Monk,” from the PBS cooking show Baking Bread with Father Dominic that aired from 1999 to 2001. He also has a number of cookbooks (I have another cookbook I’m excited to share with you in the new year). I recently was lucky enough to catch him at a virtual event hosted by the Hillside Public Library and loved hearing about his passion for baking.

This specific recipe for Eggnog Date Nut Bread is found in the “Food Holiday Mash-ups and Recipes for All Seasons” chapter under December and doesn’t require yeast to make, or any kneading at all.

Ingredients:

  • 2 1/4 cups all-purpose flour, plus flour for dusting pan
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup chopped pecans
  • 1 cup chopped dates
  • 2 large eggs, at room temperature, beaten
  • 1 cup eggnog
  • 1/4 cup vegetable oil

Walnut Whiskey Cake

Whiskey Cake is something that has shown up to family gatherings since before I can even remember. My mom makes this cake for basically all extended family celebrations, and it has become a favorite of mine. Recently, we were celebrating a friend’s birthday and I thought a Walnut Whiskey Cake would be the perfect birthday cake for him!

My version is a bit different than the one my mom makes, but the general gist is still there. I added some candied walnuts on top because, why not, but feel free to omit them.

The best part of this recipe is it is made with cake mix and instant vanilla pudding mix, making this cake both super easy to make and incredibly moist! Using a Bundt pan makes this cake look like it took you all day to make, but the hardest part of this recipe is patiently waiting for the glaze to soak into the cake before removing it from the Bundt pan.

Walnut Whiskey Cake Ingredients:

Cake:

  • 1 tablespoon flour
  • 1 cup chopped walnuts
  • 1 (15.25 oz) box yellow cake mix
  • 1 (3.4 oz) box instant vanilla pudding
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil or canola oil
  • 2 oz whiskey or bourbon

Glaze:

  • 4 tablespoons unsalted butter
  • 3/4 cup brown sugar
  • 1/2 cup (4 oz) whiskey or bourbon
  • the juice of 1/2 orange
  • 1 teaspoon vanilla extract

Candied Walnuts:

  • 1/4 cup chopped walnuts
  • 1 tablespoon maple syrup

Pistachio Panna Cotta

One of my favorite things about having a blog is the opportunity to try new recipes and learn new cooking methods. I have never made Panna Cotta before, but it seems to be a relatively simple dessert to make.

Panna Cotta, which means “cooked cream” in Italian, is an Italian dessert traditionally made with sweetened cream and gelatin. Because of the gelatin, it maintains the shape of whatever vessel it is in.

It would have probably made sense to try to make a class panna cotta first, but my husband and I love all things pistachio, so I decided to try to make a Pistachio Panna Cotta as a treat for us!

Ingredients:

  • 8 oz shelled roasted and salted pistachios
  • 1 tablespoon vegetable oil
  • 1/4 cup cold water
  • 2 1/4 teaspoon unflavored gelatin
  • 2 cups heavy whipping cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • chopped pistachios, for garnish

Carrot Cake Cupcakes

Nearly a decade ago, I shared a recipe for a Bunny Carrot Cake. Although it’s super cute, I figured it was about time I shared a decidedly less creative dessert that is still perfect for Easter and spring in general: Carrot Cake Cupcakes!

These Carrot Cake Cupcakes are based off the original recipe I shared 9 years ago, but I substituted in walnuts for the raisins. They are topped with cinnamon cream cheese frosting and then sprinkled with carrot-shaped sprinkles to make them extra adorable.

Ingredients (makes approximately 30 cupcakes):

Carrot Cake Cupcakes:
  • 4 large eggs, at room temperature
  • ¼ cup vegetable oil
  • ¾ cup melted browned butter
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 1 tablespoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1 teaspoon salt
  • 4 cups loosely packed grated carrots
  • 1 cup chopped walnuts (omit for nut-free)
Cinnamon Cream Cheese Frosting:
  • 2 (8 oz) packages of Cream Cheese, softened
  • 1/2 cup unsalted butter, softened (1 stick)
  • 1 tablespoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 2 (16 oz) packages powdered sugar
  • Easter-themed sprinkles, if desired

Medium Rare Sous Vide Steak

For the last few months, I’ve been messing around with a new toy: a precision cooker that allows me to cook sous vide (which means “under vacuum”).

To cook sous vide, you add ingredients to a sealed plastic bag (or glass jar) and cook it in water that has been brought to a specific temperature. Cooking using this method takes considerably longer than sautéing, roasting, or grilling, but the result is a perfectly even and tender meal! I’ve made a few things sous vide so far, but wanted to first share the most common recipe: Sous Vide Steak. This cooking method seals in moisture and results in a super flavorful steak, so you only need a simple sauce to complete your meal.

I drizzled my Sous Vide Steak with a sauce from Le Sauce & Co.: Classic Green Peppercorn Sauce. Le Sauce is a boutique, craft food company that believes every meal should be an experience. They have four different finishing sauces that elevate a meal with little effort! The Classic Green Peppercorn Sauce is the perfect complement to a perfectly cooked steak, and is made with cream, butter, shallots. cognac, and green peppercorns. Other finishing sauces include Coconut Thai Red Curry, Roasted Poblano & Garlic, and White Wine Lemon & Garlic, and all can be found on Amazon.

Ingredients:

  • 2 (8 to 12 oz) boneless beef tenderloin steaks
  • salt and pepper, to taste
  • 2 garlic cloves, peeled and smashed
  • 1 tablespoon vegetable oil or other oil with a high smoking temperature
  • 1 tablespoon butter
  • Le Sauce & Co‘s Classic Green Peppercorn Sauce
  • Freshly chopped parsley, for garnish

Tools:

  • Large pasta pot or other large container
  • Precision cooker (I used an Anova)
  • Medium freezer zip top bag, vacuum seal bag, or silicone bag

Black Forest Cupcakes

When I think of all things chocolatey, no list would be complete without Black Forest Cake, which is traditionally made of layers of chocolate cake, whipped cream, and cherries. My Black Forest Cupcakes version for #Choctoberfest uses dark chocolate cupcakes stuffed with cherry filling, topped with fresh whipped cream frosting, chocolate shavings, and maraschino cherries.

Ingredients:

Cupcakes:

  • 2 teaspoons espresso powder brewed in 1 cup water
  • 2 cups all purpose flour
  • 2 cups Imperial Sugar
  • 3/4 cup dark cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 eggs at room temperature
  • 2 teaspoons vanilla extract

Whipped Cream:

  • 3 cups heavy cream
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract

Other Ingredients:

  • 1 can cherry pie filling

Mini Pumpkin Blossom Honey Cakes

Rosh Hashanah, the Jewish New Year, began last night at sundown. Honey plays a significant role in Rosh Hashanah celebrations, signifying hopes for a sweet new year.  Apples or challah dipped in honey is popular, as is honey cake. Because of the time of year, honey cake typically includes flavors associated with fall. My mom had given me a Pumpkin Blossom Honey recently and I thought this would be the perfect way to use it.

I adapted my recipe from one found on Epicurious and gave it my own pumpkin-y spin. Pumpkin Blossom Honey is created by bees that solely pollinate pumpkins and pumpkin blossoms. It has a darker amber color and has a really nice spice flavor at the end.  I thought it would work great with some traditional fall spices thrown in!

Ingredients:

Cake:

  • 2 1/2 cups cake flour (or all purpose flour)
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • ¼ teaspoon ground cardamom
  • 3 large eggs
  • 1 cup sugar
  • 1 1/4 cups vegetable oil (I used sunflower oil)
  • 1 cup Pumpkin Blossom honey
  • 8 oz lukewarm pumpkin coffee (I used Green Mountain’s)
  • The zest of one orange

Chocolate glaze:

  • 1/2 cup shaken canned unsweetened coconut milk (not light)
  • 2 teaspoons light corn syrup
  • 4 ounces dark chocolate, finely chopped
  • Flaky sea salt for garnish, optional

Huevos Rancheros Tacos

There is something so fun about having breakfast for dinner. Not only is it an easy way to whip up a meal with things you probably already have on hand, but it is so nice to have something so familiar and yet out of the ordinary.

Lindsay Landis and Taylor Hackbarth (of Love and Olive Oil) have compiled a cookbook filled with breakfast treats with a spin, making them perfect for  dinner. The cookbook, Breakfast for Dinner: Recipes for Fritatta Florentine, Huevos Rancheros, Sunny-Side-Up Burgers, and More! is plain drool-worthy. The photos are fantastic and each recipe sounds better than the last! It has a little bit of everything in its pages, including main dishes, appetizers, and desserts. Each recipe has an inventive twist on a traditional breakfast dish, which made it so difficult to decide which recipe to try first! When I asked my boyfriend to help choose, he responded, “Mmm… can’t we just make every one of them?”

We were finally able to decide on the Huevos Rancheros Tacos because we are big taco fans (I have 7 listed on this blog as of this post) and I loved the idea of turning Huevos Rancheros into delicious dinner!

Ingredients:

Ranchero Sauce

  • 1 tablespoon extra-virgin olive oil
  • 1/2 medium yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 large jalapeno, seeded and chopped
  • 1 (15 ounce) can fire-roasted diced tomatoes
  • 1/2 cup vegetable broth
  • 1 tablespoon chopped fresh cilantro
  • 2 tablespoons chopped fresh oregano
  • 1 chipotle pepper in adobo sauce, seeded and chopped, plus 1/2 tablespoon adobo sauce
  • 1/4 teaspoon salt
  • freshly ground pepper, to taste

For tacos

  • 1 (15 ounce) can refried black beans
  • 3 tablespoons vegetable oil, divided
  • 8 corn tortillas
  • 1/3 cup shredded cheddar cheese
  • 8 large eggs
  • 2 tablespoons chopped fresh cilantro or oregano

Apple Cinnamon Donut Holes

I wanted to make another batch of the Applejack Spiked Hot Cider but *gasp* I couldn’t find any apple cider anywhere! There must have been a Thanksgiving rush, but I wanted some darn Apple Cider. But then I remembered I bought a Babycakes Cake Pop Maker (paid link) and figured I could at least make Apple Cinnamon Donut Holes as a sweet apple-y substitute. (Because I couldn’t find apple cider, I substituted apple juice)

 

Ingredients (this makes 2 1/2 – 3 dozen):

  • 1¼ cups all-purpose flour
  • ½ cup plus 1 tablespoon sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1/8 teaspoon allspice
  • ¼ cup vegetable oil
  • 1 egg
  • ½ cup apple juice
  • ¾ cup sugar
  • 1½ teaspoons cinnamon
