Spritz Cookies

I’m back with another cookie recipe using some of my favorite OXO tools, specifically OXO’s cookie press, disk set, and Ceramic Pan!

Every year, OXO supports Cookies for Kids’ Cancer and the fight against pediatric cancer. Before I share my cookie recipe for Spritz Cookies, I want to share a bit about Cookies for Kids’ Cancer.

Cookies for Kids’ Cancer (CFKC) is a nonprofit founded by two OXO employees after their son, Liam, was diagnosed with pediatric cancer. Through grassroots bake sales across the country, CFKC raises funds to develop new, improved and less toxic treatments for childhood cancer. Liam Witt’s legacy lives on as the organization works toward a cure for pediatric cancer, helping children and families everywhere.

Every year, OXO supports CFKC by encouraging people to bake and share.

This year, OXO sent me a Non-Stick Pro Ceramic Coated Metal Bakeware Half Sheet Pan, a Cookie Press with Disk Storage Case, a Christmas Cookie Press Disk Set, and a 2-Cup Recycled Angled Measuring Cup (paid links). When you receive a cookie press and Christmas cookie press disk set, there’s really only one type of cookie to make: Spritz Cookies!

For every cookie baked, OXO donates $1 to Cookies for Kids’ Cancer up to $100,000, so here is my new cookie this year to support the cause and spread the word!

Ingredients (makes about 50 cookies):

Spritz Cookies:

  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 egg, at room temperature
  • 1 teaspoon almond extract
  • 2 1/2 cups flour
  • food coloring, if desired
  • sprinkles, for decorating

Optional Glaze:

  • 1/2 cup powdered sugar
  • 1/2 tablespoon corn syrup
  • 1/4 teaspoon almond extract
  • 1 tablespoon milk, or as needed

Christmas Pinwheel Cookies

It’s the holiday season which means another cookie recipe inspired by some goodies from OXO! This year, I’m making something a little different for me: Christmas Pinwheel Cookies.

I tend to gravitate toward drop cookies because they are simple, decidedly not fussy, and still delicious! These Christmas Pinwheel Cookies are slice and bake cookies instead, which means you roll them into a log, slice them into equally sized slices, and bake.

Ingredients:

  • 1 1/2 cups (3 sticks) unsalted butter, at room temperature
  • 1 1/2 cups sugar
  • 2 eggs, at room temperature
  • 1 tablespoon vanilla extract
  • 4 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon red gel food coloring
  • 1 tablespoon green gel food coloring
  • sprinkles for decorating, optional

Monster Bark

If you’re looking for a quick and easy treat for this Halloween, this Monster Bark is for you!

This recipe uses just a few ingredients: candy melts, sprinkles, candy corn, and candy eyes (paid links). That’s it!

  • 6 oz orange candy melts
  • 6 oz white candy melts
  • 1/4 cup Halloween-themed sprinkles

Carrot Cake Cupcakes

Nearly a decade ago, I shared a recipe for a Bunny Carrot Cake. Although it’s super cute, I figured it was about time I shared a decidedly less creative dessert that is still perfect for Easter and spring in general: Carrot Cake Cupcakes!

These Carrot Cake Cupcakes are based off the original recipe I shared 9 years ago, but I substituted in walnuts for the raisins. They are topped with cinnamon cream cheese frosting and then sprinkled with carrot-shaped sprinkles to make them extra adorable.

Ingredients (makes approximately 30 cupcakes):

Carrot Cake Cupcakes:
  • 4 large eggs, at room temperature
  • ¼ cup vegetable oil
  • ¾ cup melted browned butter
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 1 tablespoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1 teaspoon salt
  • 4 cups loosely packed grated carrots
  • 1 cup chopped walnuts (omit for nut-free)
Cinnamon Cream Cheese Frosting:
  • 2 (8 oz) packages of Cream Cheese, softened
  • 1/2 cup unsalted butter, softened (1 stick)
  • 1 tablespoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 2 (16 oz) packages powdered sugar
  • Easter-themed sprinkles, if desired

Valentine’s Day Almond Flour Brownies

I’m so excited to be a part of the 2021 Good Cookie Food Blogger’s Valentine’s event this year! The event brings a bunch of food bloggers together to post a Valentine’s Day themed recipe as a way to bring awareness and hopefully raise some money for Cookies for Kids’ Cancer, so I decided to make these Valentine’s Day Almond Flour Brownies.

Cookies for Kids’ Cancer is a national non-profit organization committed to funding new therapies used in the fight against pediatric cancer. This is an organization that I try to bring awareness to whenever I can. This is actually my 12th post highlighting them!

Cancer is the #1 cause of death of children by disease in the U.S. There are 40,000 U.S. children actively battling cancer right now. The National Cancer Institute’s budget for childhood cancer is less than 4%. It’s such a small number and that’s why I got involved. And with the ongoing pandemic, children are still being diagnosed with cancer. It’s imperative that we raise awareness and continue to raise funds to fund the ongoing pediatric cancer research!

Help us make a difference by donating to Cookies for Kids’ Cancer! Our goal is to raise at least $3000. Because  OXOMediavine  and Dixie Crystals have each pledged to match our donations raised through this campaign up to $3000! That means when we raise $1, it turns into $4!

Now for the recipe. This recipe was inspired by my husband, who I’m pretty sure has never met a dessert he didn’t like. He is particularly fond of anything chocolatey and covered in sprinkles. So I decided to bake him chocolate almond flour brownies topped with heart sprinkles.

Ingredients:

  • 5 tablespoons unsalted butter, melted
  • 1 3/4 cups sugar
  • 1 teaspoon almond extract
  • 3 large eggs
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 cups almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • sprinkles, if desired

Gingerbread Fudge

Note: I received a bottle of Nielsen-Massey’s Pure Vanilla Extract in order to write this post. All opinions are mine alone.

I have quite a few holiday cookie recipes on my blog. I even highlight a cookie recipe on my Instagram every day leading up to Christmas. But I have never tried to make fudge before. So when Nielsen-Massey contacted me about highlighting their Holiday Flavors Bundle, I was excited to find a holiday-themed Gingerbread Fudge in their recipe section!

The fudge uses Nielsen-Massey’s Madagascar Bourbon Pure Vanilla Extract, one of the extracts included in the Holiday Flavors Bundle. The Holiday Flavors Bundle also includes their Pure Almond Extract and their Pure Peppermint Extract, so you’re all set for your holiday baking!

Ingredients:

  • 3 1/4 cups white chocolate chips
  • 1/2 cup brown sugar (packed)
  • 1/2 cup molasses
  • 1/3 cup evaporated milk
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon Pure Vanilla Extract, like Nielsen-Massey’s Madagascar Bourbon Pure Vanilla Extract
  • sprinkles, if desired (I used red and green sprinkles)

Easter Basket Snack Pack Pudding Cups #SnackPackMixins

Holidays are a great time to come up with some creative recipes! This recipe is a cute and easy to make Easter dessert using Snack Pack Pudding Cups, Honey Maid Graham Crackers, Oreos, Coconut Flakes, and other Easter Candy to make mini Easter Baskets!

 

 

I picked up all of the ingredients for this recipe at Walmart. The SUPER Snack Packs, Honey Maid Graham Crackers, and Oreos can all be found in the same aisle (at least at my Walmart in Philly)!

 

 

Some stores even have a special display featuring the SUPER Snack Packs and ideas for mixins for Easter. The display has a recipe tear pad with more recipes if you’re looking for more inspiration. (Walmart also has a coupon for $0.50 off SUPER Snack Pack Pudding Cups at the moment.)

 

Ingredients:

  • 1 (6-pack) Creamy Chocolate SUPER Snack Packs
  • 2 Honey Maid Honey-flavored Graham Crackers
  • 6 Oreos
  • 2 tablespoons coconut flakes
  • 1 tablespoon green sprinkles, plus more for decoration
  • “Easter basket candy” of your choice (small chocolate bunnies, chocolate eggs, marshmallow chicks, etc.)
  • 6 pipe cleaners (or fuzzy sticks)

Spritz Cookies

September is Childhood Cancer Awareness Month. Annually, OXO highlights this month with a program benefiting Cookies for Kids’ Cancer, founded by two OXO employees who’s son battled pediatric cancer. Cookies for Kids’ Cancer provides inspiration and support to allow anyone to easily get involved in fundraising to find a cure for pediatric cancer.

 

To show support, OXO will donate up to $100,000* to support Cookies for Kids’ Cancer through the sales of specially marked items, bake sale matches, and other fundraising efforts.   And that’s where this post comes in! OXO sent me a set of cookie-baking tools including specially marked OXO baking products with this Cookies for Kids’ Cancer sticker:

 

OXO is donating $100 to Cookies for Kids’ Cancer for each blog post dedicated to this cause in September. (I made these Vegan Chocolate Chip Walnut Cookies and these Gluten Free Boston Cream Pie Cupcakes last year in support of Cookies for Kids’ Cancer as well.)

But they aren’t stopping there. For every stickered item sold, OXO will donate 25 cents in support of pediatric cancer research as part of its $100,000* pledge to Cookies for Kids’ Cancer. Look for specially marked OXO products at participating retailers in September. (Here’s a list of OXO products that include the sticker.)

So my cookie-baking set came with a Cookie Press with Disk Storage Case, as well as a Cookie Spatula and a 3 Piece Spatula Set. OXO was even kind enough to send over their newest Measuring Cups and Measuring Spoons! I have never made Spritz cookies before so I was really excited to try the Cookie Press out. Although Spritz cookies are typically thought of as a holiday cookie, OXO’s Cookie Press comes with plenty of other non-winter shapes, including a Leaf, Daisy, Sunflower, Buttercup, Fleur-de-lis, Butterfly, Shell, and Heart! (More winter-y shapes include a Bear, Snowflake, Tree, and Wreath)

For my first attempt, I stayed traditional and made a traditional Butter Spritz Cookie Dough using a recipe adapted from the Food Network to make these Spritz Cookies!

Ingredients:

  • 2 sticks (8 ounces) unsalted butter, cut into tablespoon sized pieces
  • 1 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon almond extract
  • 1 large egg
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • Sprinkles or colored sugar, for garnish
  • Food dye (optional)

Bourbon Truffles

These Bourbon Truffles are another recipe I made for New Year’s Eve. I have actually made this a few times and have altered it slightly from the original Williams-Sonoma recipe to suit my tastes.

I lowered the amount of bourbon so that there is a hint to enhance the flavor of the chocolate without overpowering. (The first round of making these it was like taking a shot with every bite, whew!) I also kept having trouble with the coating (my chocolate kept seizing) so I’ve altered that a bit to make a smoother coating that’s easier to work with.

Ingredients:

  • 1/4 cup heavy cream
  • 4 Tbs. (1/2 stick) unsalted butter
  • 6 oz. milk chocolate chips
  • 6 oz. semisweet chocolate chips
  • 3 tablespoons bourbon whiskey
  • Cocoa powder for dusting

Coating:

  • 12 oz. semisweet chocolate chips
  • 4 tablespoons (1/2 stick) butter
  • sprinkles, for garnish, if desired

Sugar Cookies

I am always so excited to make sugar cookies. To be more precise, I’m actually really excited to decorate the cookies. (Mind you, I’m awful at it. A 6 year old would beat me by a mile in a cookie decorating contest). But it is so fun to see the cookies transform from flour, sugar, and butter into cute little Christmas trees, snowmen, and candy canes. I used a traditional sugar cookie recipe from Cooking Light.

Ingredients:
Cookies:
2 1/2 cups all-purpose flour (about 11 1/4 ounces)
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup granulated sugar
10 tablespoon butter, softened
1 1/2 teaspoons vanilla extract
2 large eggs
Icing:
2 cups powdered sugar
2 tablespoons skim milk
1/2 teaspoon vanilla extract
Decorations:
Cookie cutters
Sprinkles
Other edible decorations

Add the flour, baking powder and salt to a medium bowl, stir with a whisk.
Add sugar and butter in a large bowl, beating with a mixer until combined.
Add vanilla and eggs.
Add the flour mixture to the butter mixture and mix until combined. Mine looked very very crumbly. So if yours looks like this, don’t panic.
Add the mixture to a large piece of plastic wrap and wrap tightly.
Refrigerate for an hour. Unwrap the ball after an hour. Preheat the over to 375. Split the dough in half, rolling out out half of the dough on a floured surface.
Using any cookie cutter you have, cut out shapes and place on a  cookie sheet two inches apart lined with parchment paper.
Repeat with remaining dough. Bake the cookies for 10 minutes or until lightly browned along the edges. Cool on pans for 5 minutes then remove and place on wire racks.
When completely cooled, prepare the icing. Combine the powdered sugar, vanilla, and milk stirring until smooth. I added the icing to a squeeze bottle (like a ketchup bottle) but you can also add it to a ziplock bag and cut off one of the bottom corners to make piping easier. Decorate the cookies however you like.
Allow to dry overnight.
Hehe. Aren’t they fun? You can use whatever you want. I happened to be a bit, well, sprinkle happy.
Oh yeah, they taste pretty darn good too 🙂
