Creamy Chicken Paprikash Over Buttered Egg Noodles

Comfort food can take on many forms, but generally, comfort food seems to always have a bit of nostalgia attached to it. Foods from my childhood have become some of my favorite adult comfort foods, like Creamy Chicken Paprikash Over Buttered Egg Noodles. Chicken Paprikash is a Hungarian dish of chicken, cooked in a creamy paprika-flavored sauce. My mom used to make this Creamy Chicken Paprikash for us on cold winter nights, and always spooned it over egg noodles to make the most of the yummy sauce.

Now that it’s February, I think it’s the perfect time to share this childhood favorite recipe! Cold winter months are the perfect time to enjoy old comfort food favorites or to try new ones, like my take on Creamy Chicken Paprikash.

Ingredients:

  • 3 pounds boneless skinless chicken thighs
  • salt and pepper, to taste
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter, divided
  • 1 large yellow onion, chopped
  • 4 garlic cloves, minced
  • 3 tablespoons paprika, sweet or hot (I’d suggest using a combo, maybe 1/2 of each for a subtle spice)
  • 3 tablespoons flour
  • 1 tablespoon tomato paste
  • 1 (15 oz) can crushed tomatoes
  • 2 cups chicken broth
  • 1 (12 oz) bag Egg Noodles
  • 1 cup sour cream
  • fresh parsley, chopped, for garnish

Slow Cooker Oxtail and Short Rib Stew

My slow cooker and I are good friends, although I’m pretty sure the slow cooker is bringing more to the relationship than me. I love coming home to a delicious smelling dinner after work that takes maybe 15 minutes of prep time in the morning on my part.

This recipe for Slow Cooker Oxtail and Short Rib Stew from Cooking Light’s latest issue uses an ingredient I’ve never used before, or honestly even noticed in the supermarket: Oxtail. Oxtail is a gelatin-rich cut, which makes it perfect for hearty stews, especially slow cooked ones. The ribs add a bit more meat to the stew, which also has carrots and potatoes to round out the flavors.

This recipe is originally made in a Dutch oven and cooks for about 2 hours so if you’re not in the mood for a slow cooker version, be sure to check out the original recipe.

Ingredients:

  • 1 tablespoon canola oil
  • 1 pound bone-in short ribs, trimmed
  • 1 pound oxtail
  • 2 cups chopped onion
  • 1/2 cup sliced shallots
  • 6 garlic cloves, crushed
  • 2 tablespoons tomato paste
  • 1 cup dry red wine
  • 3 cups unsalted beef stock
  • 1 1/4 teaspoons freshly ground black pepper
  • 3/4 teaspoon kosher salt
  • 4 thyme sprigs
  • 2 bay leaves
  • 1 tablespoon Worcestershire sauce
  • 1 pound very small Dutch Potatoes (bite size)
  • 3/4 pound carrots, cut diagonally into 2-inch-thick pieces
  • 2 tablespoons chopped fresh flat-leaf parsley
  • 2 teaspoons fresh thyme leaves
  • 2 teaspoons fresh oregano leaves
  • 1 tablespoon corn starch dissolved in cold water, if needed

Osso Buco with Gremolata

As soon as the weather begins to move into fall, I begin to think of all the hearty meals I will be making in the upcoming months. A slow cooker is such a helpful tool during colder months, it allows you to make a bunch of servings all by dropping them in a pot and just waiting. Slow cooking tough cuts of meat also turns them into the most tender fall-off-the-bone protein. I’ve never tried osso buco before, but a slow cooker version sounds basically idiot proof, so I decided to make it. I actually put this together Sunday night and when I woke up the next morning, spooned out a portion for lunch that day and froze the rest. What a great way to start the week!
I had a heck of a time finding some ingredients despite them being pretty common. So I kind of fudged some of the ingredients. For the original recipe, check it out here.
Ingredients:
  • 2/3 cup all-purpose flour
  • ¾ teaspoon ground black pepper, divided
  • ½ teaspoon kosher salt, divided
  • About 5 pounds veal (go for the cheaper cuts—its usually made with veal shank but they were all out at my market – I used cubed veal and one veal loin chop so that there was some bone)
  • 2 teaspoons butter, divided
  • 2 teaspoons olive oil, divided
  • 2 cups coarsely chopped red onion
  • 1 ½ cups chopped celery
  • 6 garlic cloves, minced
  • 4 cups beef broth
  • 2 cups dry white wine
  • 1 tablespoon fresh rosemary
  • 1 tablespoon minced anchovy fillets (the original recipe calls for 1 tablespoon anchovy paste)
  • ½ cup chopped fresh parsley
  • 1 tablespoon grated lemon rind
  • 2 garlic cloves, minced
  • 8 cups cooked egg noodles
