I know I’m a little late to the “whipped coffee” or Dalgona coffee trend, but I wanted to hold out for St. Patrick’s Day to make this awesome Whipped Irish Coffee!
Whipped coffee became quite the trend early in the pandemic. It’s made by whisking equal parts instant coffee granules, sugar, and hot water until it holds stiff peaks. You serve it on top of hot or warm milk, and then stir to combine, so adding whiskey to this lovely mix seemed like a no brainer to me.
Irish coffee is actually traditionally enjoyed the opposite way… kind of. Whiskey, sugar, and coffee are stirred together and then topped with heavy cream, while this whipped Irish coffee has the milk on the bottom rather than on top (although with whipped coffee, you do stir the milk and coffee together before enjoying). This recipe is to make the whipped Irish coffee iced, but you can easily adapt it to use warmed milk instead. Ingredients (makes 2 servings):
1/4 cup instant coffee granules (normal ground coffee won’t work!)
1/4 cup sugar (or brown sugar to make it a touch more of a traditional Irish coffee)
I’m having a little bit of a red velvet takeover on this blog. After making the Red Velvet Crinkle Cookies, I knew I wanted to make a Whoopie Pie version perfect for the holidays, specifically Red Velvet Peppermint Whoopie Pies! In case you don’t know what a whoopie pie is, they are cake-like cookies with creamy goodness sandwiched in between. They are quite popular in the Philadelphia area due to the influence of the Pennsylvania Dutch. In fact, I had whoopie pies at my wedding (along with cannolis and cupcakes)!
Whoopie pies are a lot easier to make than they look (I promise). These little guys are filled with a peppermint cream cheese filling, so they will get you right in the holiday spirit in no time!
Ingredients (makes 12 whoopie pies):
Red Velvet Cookies (makes 24 cookies):
1/2 cup (1 stick) unsalted butter, at room temperature
1 cup brown sugar, packed
1 large egg
2/3 cup whole milk
1 tablespoon white vinegar
1 tablespoon vanilla extract
1 (0.67 oz) tube gel red food coloring, about 1 tablespoon
2 cups flour
3 tablespoons unsweetened natural cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
Peppermint Cream Cheese Filling:
2 (8 oz) blocks cream cheese, at room temperature
1/2 cup (1 stick) unsalted butter, at room temperature
I’m all about making as many things as possible ahead of time to make actual dinners or events easier to manage. And Thanksgiving is certainly no different. Slow Cooker recipes, like this Slow Cooker Creamed Corn, are perfect for make ahead sides for Thanksgiving!
This recipe for Slow Cooker Creamed Corn is super easy and can be made a few days ahead of time if needed. But, because it’s in your slow cooker, it’s also easy to make the day of while not using precious stovetop and oven space!
Ironically, I’ve been having a hard time getting into a cooking groove during this pandemic. Even though I’m now home basically ALL the time, my job seems to have gotten even busier, and I’m in the process of getting my MBA so I seem to have even less time in the day to cook. Which means I need to get back into doing some food prep on my weekends more than ever, like making these Freezable Breakfast Burritos.
Breakfast is probably one of the hardest meals for me to actually make. For one, I’m not terribly good at making eggs. Plus, I’d much rather roll out of bed and start working immediately. So any make ahead recipes that I can quickly heat up are super helpful.
These Breakfast Burritos are perfect for hectic mornings. They are freezable, so you can take them out of the freezer the night before and just microwave them quickly in the morning. Plus, they are completely customizable to whatever you like in your breakfast burrito! This makes 10 breakfast burritos, so feel free to adjust as needed (my husband and I can polish these off within 2 weeks).
Ingredients:
1/2 (19 oz) bag of tater tots
1 tablespoon olive oil
1 lb breakfast sausage, casing removed (you may be able to find just ground breakfast sausage without the casing as well)

It seems like everyone has really taken to home baking while staying-at-home during this pandemic. I’ve been impressed with everyone’s sourdoughs, banana breads, and other baked goods! So why not add another awesome option to your repertoire: Cinnamon Rolls, or more specifically, Brioche Cinnamon Rolls!
Nielsen-Massey recently published a new video showing how to Knead Dough by Hand, which comes in handy while making this recipe.
This recipe for Brioche Cinnamon Rolls is based off a recipe from the Nielsen-Massey website as well.
Ingredients:
Dough:
2 tablespoons milk
2 1/4 teaspoons active dry yeast
1 2/3 cups flour, divided
1/4 cup sugar
1 1/4 teaspoon salt
3 large whole eggs, divided
7 tablespoons unsalted butter, cold, cubed
Cinnamon Roll Filling:
1 cup almond flour
1 egg white
1/4 cup brown sugar
2 tablespoons plus 1 teaspoon unsalted butter, melted
2 tablespoons water
1 teaspoon ground cinnamon
1/8 teaspoon salt
2 1/2 teaspoons Nielsen-Massey Pure Vanilla Extract
1/2 teaspoon Nielsen-Massey Pure Almond Extract

On weekends, I do my best to prepare some meals for the week. Typically, that means dinners, but every now and then I’ll bake muffins to have for breakfast. My husband is much more of a “savory” than a “sweet” breakfast eater, so he was thrilled when I was saw this recipe for Slow Cooker Paleo Frittata Jars in Bailey Fischer’s Slow Cooker Paleo Cookbook.
This cookbook is filled with awesome and easy slow cooker meals that are also Paleo, taking out much of the effort of maintaining a paleo diet. Some other delicious recipes include Coconut-Lime Poached Halibut, Simmering Hawaiian Fajitas, and Pumpkin-Maple Pudding.
The concept of these jars is brilliant and can easily be adapted to include whatever you want (perfect opportunity for a “fridge cleaning” breakfast).
Ingredients:
2 2/3 cups thawed hash browns (~2/3 cup per jar)
1 1/3 cups diced butternut squash (~1/3 cup per jar)
1 1/3 cups diced green bell peppers (~1/3 cup per jar)
12 eggs
1/2 cup dairy-free milk (I used unsweetened almond milk)
I mentioned in a previous post that I had the opportunity to try a box of Misfits Market, a Philadelphia-based company that rescues produce from regional farms and distributes it throughout the Northeast. (Check out my last post to learn more about them!)
The box came with an assortment of fruits and vegetables: Mushrooms, Pears, Artichokes, Mango, Lettuce, Bell Peppers, Butternut Squash, Spinach, Corn and Cucumbers. I highlighted the artichokes in my recipe for Baked Stuffed Artichokes, so today I want to share a simple recipe using fresh mango.
I absolutely love mangos, and there is nothing quite like a perfectly ripe mango. They are delicious just on their own, but this recipe for Mango Peach Lassi is a simple make ahead recipe that you can enjoy for breakfast on the go!

I was thrilled to try this partnership from two brands with tons of Philadelphia history, more than 250 years of combined history in Philly! I headed over to Reading Terminal Market (fun fact: my husband and I were actually married in Reading Terminal) to try the limited-edition milkshake item. Kirby the Krimpet, the Tastykake mascot, even made an appearance!
The milkshakes are made with Bassetts’ cookies and cream ice cream, chunks of Tastykake’s Cookies & Crème Mini Donuts, and chocolate syrup, topped with whipped cream and garnished with a Cookies & Crème Donut. The shakes are sold at Bassetts’ original retail location in Reading Terminal Market for a limited time.
I swear they made these Donuts and milkshakes just for me, Cookies and Cream is my favorite! So naturally, I wanted to try to make my own version at home, this recipe for Cookies and Cream Donut Milkshakes. I picked up two pints of Bassetts’ cookies and cream ice cream, a bag of Tastykake Cookies & Crème Mini Donuts, milk, chocolate syrup, and whipped cream, and I was ready to go!
Tomorrow, March 19th, is the Feast of St. Joseph, an important feast day in Italy or more specifically, Sicily. St. Joseph is particularly important to Sicilians, because he is credited with preventing a famine in Sicily during the Middle Ages through prayer. Each year, a large feast is prepared in his honor. Desserts typically include Zeppoli and Italian Fig Cookies.
Italian Fig Cookies, or Cuccidati, also tend to show up around Christmastime, so they are more of a “celebratory” cookie than linked to any specific holiday.
I wasn’t ready to conquer Zeppoli just yet, so I thought I’d try Italian Fig Cookies! This recipe is based off a recipe from Epicurious.

Happy National Pancake Day! Also known as Shrove Tuesday, coincides with Mardi Gras, the end of Carnevale, and the beginning of Lent. It’s a day to indulge, but you can indulge while still eating something nutritious!
To celebrate National Pancake Day, Krusteaz sent me a box of their new Buttermilk Protein Pancake & Flapjack Mix. This mix is packed with 15 grams of protein per serving! This pancake mix needs just water to become light and fluffy pancakes. For added protein, you can substitute in milk and add eggs to the mix as well!
I decided to up the nutrition of these pancakes with the addition of mashed sweet potato. Not only does it add a bit of sweetness to the pancakes, sweet potatoes are a great source of Vitamins A and C.
With all of the protein and vitamins in this recipe, a little bit of browned butter won’t hurt, right? 🙂 I topped these pancakes with a bit of browned butter chopped pecans and a drizzle of maple syrup to make these Sweet Potato Pancakes with Brown Butter Pecans.
Shepherd’s Pie is one of my absolute favorite cold weather meals. It’s really simple to make and has all the components of a solid meal, just stacked into a layered pie form!
I like to make shepherd’s pie on weekends, assemble, refrigerate, and then cook later in the week on a busy weeknight. This recipe is based off a shepherd’s pie recipe from the Food Network.

I try to do a few make ahead recipes when I have the time on my weekends to make weekdays a bit easier. I tend to focus on dinners for busy weeknights, but from time to time I’m able to whip up some make ahead breakfasts as well. My favorite make ahead breakfasts? Muffins, of course! So I decided to make Peanut Butter Banana Muffins!
Not only are muffins an easy way to make a huge batch of future breakfasts, but they also freeze well! We always have bananas around the house, so when we end up with some overripe bananas, I love to use them in muffins. This recipe adds in some PBfit powder for peanut butter-y goodness!
PBfit is peanut butter powder made by pressing roasted peanuts, grinding those peanuts and mixing in some coconut palm sugar, and a pinch of salt. The result is a delicious peanut butter powder that has 87% less fat and 1/3 the calories of traditional peanut butter. Because it’s in powder form, it works great in baked goods!
But I’m sick of waiting for spring to arrive to make delicious spring food!
So this recipe for Spinach Lemon Ricotta Pasta has spring ingredients that are still comforting in chilly weather – spinach with a lemony ricotta sauce over fettuccine.
I make more frosting (and desserts!) than I probably should. Luckily, I have friends, family, and coworkers more than willing to help me out with my baking experiments, and this recipe for Chocolatey Buttercream Frosting is definitely a favorite!
So it’s about time I shared my ultimate chocolatey buttercream frosting!
The secret to this frosting is a hint of coffee to really enhance the chocolatey flavor. I use Nielsen Massey’s Pure Coffee Extract to bring out the best chocolate flavor.
